Quality characteristics of spread jam using low-salt Lentinula edodes soybean paste (저염표고된장을 활용한 스프레드잼의 품질특성)

  • In this study, a low-salt Lentinula edodes soybean paste (LSLESP) with improved palatability and storability relative to traditional Korean soybean paste was developed by utilizing low quality log cultivation of L. edodes. We also conducted quality characteristic analyses of spread jam made from low-salt L. edodes soybean paste (SJLLESP). The lowest salinity content and the highest L (brightness) value was found in LSLESP. According to proximate compositions analysis, crude protein, crude fat, and ash content were higher in commercial soybean paste than in LSLESP. Glucose, fructose, and maltose were the only free sugars detected in commercial soybean paste, whereas arabinose and fucose were additionally detected in LSLESP. Only two types of organic acid, were detected in common in commercially available soybean paste and LSLESP. Four types of organic acid, were detected in SJLLESP due to its added ingredients. The major free amino acids in commercially available soybean paste and LSLESP are histidine, glutamic acid, and arginine. Total amino acid, content was higher in LSLESP (54.81 mg%) than in commercial soybean paste (49.26 mg%). Total free amino acid, content in SJLLESP was 43.01 mg%. Ergosterol and β-glucan contents were highest in SJLLESP. The elevated ergosterol and β-glucan content in low-salt LSLESP relative to commercial soybean paste was significant. In conclusion, LSLESP and SJLLESP contain useful components from L. edodes, and offer the advantage of low salinity. LSLESP and SJLLESP could thus contribute to the development of health foods using L. edodes.

The Problem on Riboflavin Content Inference of Common Foods for Korean (한국인 상용식품중의 리포블라빈 함량추정에 관한 문제점)

  • In order to study on the riboflavin content of common foods for Korean and the rates of destruction of riboflavin during cooking 26 kinds of the foods were selected and 3 kinds of menu were cooked by standardized method. For each food item and menu riboflavin content was measured by AOAC method. The experimental values of 13 kinds of food such as rice oak mushroom carrot squarsh tangle dried large anchovy apple(Fuji) dried laver ramyun pork soybean curd fried soybean curd and danmugi were almost consistent with food compo-sition values. Whereas those of 12 kinds of foods such as cabbage onion potato kimchi beef sausage dried medium anchovy hair tail soybean paste and egg were considerably different from food composition table values, up to now Alaskan pollack maize loaf bread hamburger bread etc have not been analyzed in food composition table, The rates of retention of riboflavin in menu 1, 2, and 3 cooked by standardized method were 24% 69% 46% respectively. The overally retention rate was in inverse proportion to the time of sunlight exposure during cooking.

Isolation Enhancement between Two Dual-Band Microstrip Patch Antennas Using EBG Structure without Common Ground Plane (독립된 접지면을 갖는 EBG 구조를 이용한 이중 대역 마이크로스트립 패치 안테나 사이의 격리도 향상)

  • In order to enhance the isolation level between two dual-band E-slot microstrip patch antennas, EBG structure which operates in UMTS Tx(1.92~1.98 GHz) and Rx(2.11~2.17 GHz) band is proposed. The proposed EBG structure made with a periodic array of two different size EBG unit cells which has a modified mushroom-type for isolation improvement between two antennas. They do not share a common ground plane of the microstrip patch antenna. Overall size of the fabricated antenna is $210.5mm{\times}117mm$. The two different EBG unit cell sizes are $15.6mm{\times}4mm$ and $17.4mm{\times}4mm$, respectively. It was etched on the FR-4 substrate(thickness=3.93 mm, ${\varepsilon}_r$=4.6). The experiment results show that the isolation level between antennas in Tx/Rx band were improved by about 9 dB and 12 dB, respectively, through the use of the proposed EBG structure.

The Development of High fiber Food for Constipation (변비 환자를 위한 고섬유질 음식 개발에 관한 연구)

  • In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.

Effect of Spent Mushroom Compost of Pleurotus pulmonarius on Growth Performance of Four Nigerian Vegetables

  • Spent mushroom compost (SMC) of Pleurotus pulmonarius (an edible fungus) was used as soil conditioner for the improvement of growth of four common Nigerian vegetables (Abelmoschus esculentus, Lycopersicum esculentum, Capsicum annum and Capsicum chinense). The results of these investigations showed that the vegetables responded well to the SMC treatment. Each of them attained its best growth and gave the highest number of flowers and fruits when planted on 6 kg of depleted garden soil supplemented with 600 g of SMC. The control experiment that has the seedlings of the vegetables planted on 6 kg of depleted garden soil only, without the application of SMC, showed stunted and poor growth, with few or no flower and fruit production. A. esculentus was the best utilizer of iron utilizing 118.0 mg/kg in the SMC used. Similarly; this vegetable utilized 1.48 mg/kg of nitrogen in the SMC. The highest height in each vegetable was attained with 6 kg of depleted garden soil supplemented with 600 g of SMC. At 9 wk, A. esculentus has the mean height of 85.0 cm while these values significantly increased to 100.00 cm at 14 wk ($p{\leq}0.05$). At 9 wk, L. esculentum has the highest mean height of 65.00 cm which increased to 71.00 cm after 14 wk. It was also observed that A. esculentus has the highest mean number of fruits (9.00), followed in order by C. chinense (8.00) and L. esculentum (7.00) ($p{\leq}0.05$) while, C. annum produced the least mean number of fruits (5.00). No fruits production was seen in the control experiments. The results of these findings were discussed in relation to the usage of SMC as possible organic fertilizer for the improvement of growth of vegetables in Nigeria.

A Brief Chronicle of the Genus Cordyceps Fr., the Oldest Valid Genus in Cordycipitaceae (Hypocreales, Ascomycota)

  • The earliest pre-Linnaean fungal genera are briefly discussed here with special emphasis on the nomenclatural connection with the genus Cordyceps Fr. Since its valid publication under the basidiomycetous genus Clavaria Vaill. ex L. (Clavaria militaris L. Sp. Pl. 2:1182, 1753), the genus Cordyceps has undergone nomenclatural changes in the post-Linnaean era, but has stood firmly for approximately 200 years. Synonyms of Cordyceps were collected from different literature sources and analyzed based on the species they represent. True synonyms of Cordyceps Fr. were defined as genera that represented species of Cordyceps Fr. emend. G. H. Sung, J. M. Sung, Hywel-Jones & Spatafora. The most common synonyms of Cordyceps observed were Clavaria and Sphaeria Hall, reported in the 18th and in the first half of the 19th century, respectively. Cordyceps, the oldest genus in the Cordyceps s. s. clade of Cordycipitaceae, is the most preferred name under the "One Fungus = One Name" principle on priority bases.

Aroma constituents, ergosterol and proximate analysis of Neolentinus lepideus (잣버섯의 일반성분 및 에르고스테롤, 향기성분)

  • Nutritional and functional components, such as approximate, and volatile flavor compounds, ergosterol and proximate analysis of artificially cultivated Neolentinus lepideus were analyzed. The common elements of N. lepideus were analyzed to have 6.3% crude ash, 19.1% crude protein, 1.9% crude fat, and 8.9% crude fiber, respectively. The volatile flavor compounds of N. lepideus were characterized as 3-Octanone, 3-Octanol and 1-Octanol. The ergosterol content of N. lepideus was shown to be 145.9 ppm.

Mushroom Flora of Ulleung-gun and a Newly Recorded Bovista Species in the Republic of Korea

  • We conducted five times surveys, in June, September and October in 2012; June and September 2013, to catalog the mushroom flora in Ulleung-gun, Republic of Korea. More than 400 specimens were collected, and 317 of the specimens were successfully sequenced using the ribosomal DNA internal transcribed spacer barcode marker. We also surveyed the morphological characteristics of the sequenced specimens. The specimens were classified into 2 phyla, 7 classes, 21 orders, 59 families, 122 genera, and 221 species, and were deposited in the herbarium of Korea National Arboretum. Among the collected species, 72% were saprophytic, 25% were symbiotic, and 3% were parasitic. The most common order was Agaricales (189 specimens, 132 species), followed by Polyporales (47 specimens, 27 species), Russulales (31 specimens, 22 species), Boletales (10 specimens, 7 species), and so on. Herein, we also reported the first Bovista species in Korea, which was collected from Dokdo, the far-eastern island of Korea.

Investigation on ecological habitats in Armillaria gallica mushrooms (천마버섯(Armillaria gallica )의 생태학적 서식지 조사)

  • Armillaria gallica was ecologically surveyed to investigate its relationship with Gastrodia elata in cultivation areas of Korea in 2012. In the observation made around October 17 in the area of Namyangju (Gyeonggi), Sangju (Gyeongbuk) and Gimcheon (Gyeongbuk) in Korea, the fruit bodies of A. gallica were consistently found near the cultivation areas of Gastrodia elata across these cultivation areas. Since the temperature and rainfall have been considered as important factors of fruiting of A. gallica, we checked the temperature and rainfall around two weeks ago of mushroom fruiting. The average temperature of all cultivation areas was $9.9{\sim}17.5^{\circ}C$ (the lowest temp.: $3{\sim}23^{\circ}C$, the highest temp.: $15{\sim}26^{\circ}C$) and the annual rainfall was 0.5~1.0mm on October 10 which can be compared to 2.5~4.5mm on October 17. Fruiting bodies were generally developed at weedy field in which G. elata were cultivated five years ago. The field was inclined 15 degrees, east-facing and consists of loam. The fruit bodies were formed on both sides of a small ditch between the Gastrodia elata cultivation fields and neighboring fields, and the areas were common weeds and moisture at all times. The fruiting bodies were growing above the soil rather than oak wood. Gregarious, but also occurs to 1-5 fruiting bodies occur sporadically. Results observed in detail the growing areas, some fruit bodies were developed along the black and thick rhizomorph formation.

Clinical Study on Closed Thoracotomy (폐쇄식 흉관삽관술에 관한 임상적 고찰)

  • Reexpansion of the lung is the most desirable method of filling the pleural space whether it`s contents may be, and closed thoracotomy connected to a water-seal drainage remains the basic therapeutic modality in the treatment of the problems of the pleural space. We usually used rubber mushroom tubes, size No. from 16 to 34 Fr., and performed closed thoracotomy after preliminary thoracentesis to determine the exact depending position. Author reviewed 576 cases of closed thoracotomy which were performed in the Department of Thoracic and Cardiovascular Surgery, Pusan National University Hospital, since Jan., 1980 to June, 1984. The results were as follows: 1. The age distribution was 10 days to 76 years old and mean age of the patients was 36.6 year, and the most prevalent age group was twenties, and sex predisposition was male dominant, 86.9%. 2. The most common etiologic disease group was pneumothorax and the most common etiologic disease was traumatic hemothorax. 3. Sites of tubing were predominantly at posterior axillary line, 7th intercostal space and midclavicular line, 2nd intercostal space even though frequent presence of free pleural space. The two sides, right and left difference of occurrence rate was more frequent at right side, 51.2%. 4. Usually the durations of tubing was less than 10 days, 52.6%, and the number of tubes used to the same patient concomitantly was one, 73.9%, and the time of tubing to the same patient was 1st, 83.6%. 5. The common symptom and sign were dyspnea, 50.0%, chest pain, 30.7%, cough, 10.7%, fever, 6.5%. Especially, fever and cough was the most common symptom and sign in pyogenic empyema, 59.3%. 6. The common etiologic lesions of pneumothorax were blebs and bullae, 73.3%, and of pyogenic empyema was pneumonia, 69.0%. 7. The complication rate of closed thoracotomy was 26.0%. Among these complications, infection was 44.7%, and intercostal neuralgia was 25.3%. 8. 70.9% of all patients recovered with only closed thoracotomy and the rest of patient needed additional some necessary managements such as open thoracotomy [Blebectomy, Resection, Pleurodesis, Decortication, Bleeding control], open drainage, thoracoplasty and so on to have successful results.
