일시 수확형 고추의 숙성도와 재배 요인에 따른 화학적 특성 (Changes of Various Chemical Components by the Difference of the Degree of Ripening and Harvesting Factors in Two Single-harvested Peppers (Capsicum annuum, L.))

  • SR211과 SR213은 모두 색소 함량이 매우 높았으며 매운맛 특성을 좌우하는 capsaicinoids 함량은 SR211의 경우 숙성도와 상관없이 150 mg/100 g 이상의 매우 높은 함량을 갖는 것으로 분석된 반면, SR213은 5 mg/100 g 미만의 매우 낮은 함량을 갖는 것으로 분석되었다. 재배시기에 따른 품질 특성 변화를 3년간 모니터링 한 결과, 두 품종 모두 고유의 매운맛과 색상 특성을 안정적으로 유지하는 경향을 보여 SR211은 고색소의 강한 매운맛 고추, SR213은 고색소의 약한 매운맛 고추를 생산하는데 적합한 품질을 갖는 것으로 나타났다. 또한 두 품종 모두 유리당 함량과 ascorbic acid 함량이 높아 화학적 품질이 매우 높은 것으로 나타났다. 따라서 이러한 고품질의 일시수확형 고추의 개발 및 보급이 이루어진다면 한국산 고추 특유의 맛뿐만 아니라 영양학적, 상품적 가치가 매우 높은 고품질 제품화가 가능할 것이며, 이는 국제적인 브랜드 상품으로 발전하기 위한 윈동력이 될 것으로 사료된다.

팥을 첨가한 막걸리의 품질특성 (Quality Characteristics of Makgeolli added with Red Bean)

  • 건조 쌀 중량 기준으로 팥 5%, 10%, 15%를 첨가하여 팥 막걸리를 제조하였고 이들의 품질특성과 기호도를 조사하였다. 그 결과, 막걸리의 품질을 평가하는 항목인 산도, 알코올 함량, 환원당, 효모계수에서 대조군을 포함한 모든 실험구에서 유의적 차이가 나타나지 않은 반면, 플라보노이드 함량은 팥 첨가 함량이 증가할수록 유의적으로 증가하였고(p<0.05) 항산화 활성(DPPH)은 팥 10% 첨가구가 가장 높게 나타났다. 또한 관능평가 결과, 팥 10% 첨가구는 향미(Flavor), 단맛(Sweetness), 신맛(Sourness), 쓴맛(Bitterness)과 전체적인 기호도(Overall acceptance)에서 대조군과 유의적인 차이가 없었고(p<0.05) 대조군과 같이 높은 점수를 받았다. 이러한 결과로 보아 막걸리의 항산화 활성이 가장 높으며 관능평가 결과에서 높은 점수를 받은 팥 10%를 첨가하여 제조한 막걸리가 가장 적합하다고 판단된다. 플라보노이드 등 기능성 물질을 다량 함유하고 있는 팥을 첨가하여 막걸리를 제조함으로서 막걸리의 기능성과 관능적인 측면을 향상시켜 전통주 시장에서의 경쟁력을 가질 수 있을 것으로 기대된다.

냉풍 및 적외선 건조에 따른 건조 복숭아의 품질 특성 (Quality Characteristics of Cold-air and Infrared-dried Peaches)

  • 복숭아를 이용한 고부가가치 제품의 개발을 위하여 복숭아의 냉풍 및 적외선 건조 방법에 따른 품종별 건조 복숭아의 품질 특성을 조사하였다. 건조 방법에 따른 품종별('천홍', '유명') pH 및 가용성 고형분 함량은 전반적으로 적외선 건조에서 냉풍 건조 보다 높게 나타났으며, '천홍' 품종보다 '유명' 품종에서 pH 및 가용성 고형분 함량이 높은값을 나타내었다. 색도는 L과 ${\Delta}E$ value은 적외선 건조에서 높게 나타났고, 반면에 a, b value는 냉풍건조에서 높은 값을 보였다. 유리당 분석결과 조성은 sucrose > fructose > glucose 순이었고, 그 함량은 sucrose에서 50.71 mg/100 g으로 가장 높게 나타났으며, 적외선 건조가 냉풍 건조에 비해 전반적으로 높은 함량을 나타내었다. 유기산은 품종 및 건조 방법에 상관없이 oxailic acid, malic acid, citric acid가 동정되었으며, 그 중 citric acid 함량이 6.17 mg / 100 g으로 가장 높게 나타났다. 무기질은 모든 조건에 상관없이 K의 함량이 높게 나타났으며, 그 조성은 K > Mg > Ca > Na > Fe > Zn > Cu > Al의 순으로 나타났다. 전반적으로 적외선보다 냉풍 건조에서 높게 나타났고, '천홍'보다 '유명' 품종에서 함량이 높게 나타났다. 관능검사 결과 외관과 맛은 적외선 건조에서 높게 평가되었고, 색도와 조직감에서는 냉풍 건조에서 높게 평가되었다. 또한 NaCl로 전처리하였을 때 기호성이 높게 평가되어 건조와 함께 전처리를 병용하면 건조 과실의 기호성 향상에 기여할 것으로 생각된다. 이상의 결과에서 적외선 건조 방법으로 제조한 건조 복숭아의 품질이 전반적으로 우수하다고 판단되며, 건조 복숭아 제조 방법으로 적합할 것이라 사료된다.

색 물들인 무초절임의 품질 특성 및 초등학생, 중학생, 고등학생, 대학생들의 관능 평가 비교 (Quality Characteristics of Pickled Color Radish and Sensory Evaluation by Elementary, Middle, High and University Students)

  • The principal objective of this study was to evaluate the quality characteristics of pickled radishes (RP) containing gardenia fruits (RPG), beet (RPB), and spinach (RPS) juice. We have conducted the moisture, salinity, sweetness, pH, titable acidity, Hunter's color values, and mechanical characteristics with a sensory evaluation by elementary, middle, high and university students on the colored radish pickles. The moisture contents of RP, RPG, RPB and RPS are not significantly different. The salinity and pH of RP were significantly higher than that of RPG, RPB, RPS (p<0.05; p<0.01). The sugar contents of RPS are significantly higher than the of RP, RPG and RPB (p<0.001). The titrable acidity of RPB and RPS is significantly higher than that of the RP and RPG (p<0.001). The lightness (L) of RP, the redness (a) of RPB and the yellowness (b) of RPS are the highest in sample group. For changes in texture profile analysis, the hardness level of RPB is higher than that of RP, RPG and RPS (p<0.01), but the chewiness of RPG is higher than those of RP, RPB and RPS (p<0.001). In the sensory evaluation, RPB scores the highest in color, taste, and overall acceptability, whereas RPS scores the lowest in color and overall acceptability. Based on the above results, we expect that radish pickles with beet juice have good characteristics and acceptances within the school food services.

백삼건조 조건이 품질에 미치는 영향 (Effects of Drying Conditions on the Quality of White Ginseng)

  • In order to investigate the optimal drying condition of white ginseng by using bulk air drier(130 x 62 x 65cm), drying curves, diffusion coefficient at various drying temperature, the energy of activation, variation of color intensity and chemical components during drying of white ginseng were studied. Fick's second low of diffusion for diffusion out of spheres was successfully applied to describe the drying of white ginseng. It was found that the diffusion coefficient of water was 2.2x107, 9.0x107 cm2/sec at drying temperature 4$0^{\circ}C$, 55$^{\circ}C$, respectively. An Arrhenius type temperature dependency of moisture diffusivity was found, the energy of activation being 18.8 Kcal/g mol. Color intensity of white ginseng dried at various drying temperature was increased with an increase in drying temperature. The contents of crude protein, reducing sugar and crude saponin during drying of white ginseng were gradually decreased as increasing of drying time. And with the sensory evaluation by multiple comparison difference analysis, the optimal drying temperature of white ginseng was between 45$^{\circ}C$ and 5$0^{\circ}C$.

강낭콩 앙금 혼합율에 따른 양갱의 기계적.관능적 특성 (Instrumental and Sensory Characteristics of Yanggaeng Mixed with Kidney Bean Sediment)

  • The proximate composition and calorie of kidney bean sediment, amylogram, color, texture and sensory evaluation of Yanggaeng mixed with kidney bean sediment. Significant differences in the protein and fat contents were noticed among kidney bean sediment samples. The amylograms of sediment mixed with sugar and/or agar showed no peak and increase of viscosity compared with the control. When the Yanggaeng was prepared from the mixture of sediments of red bean and kidney bean, noticiable color changes were observed at 30% level of kidney bean sediment. Hardness and cohesiveness of Yanggaeng were increased but elasticity decreased as the proportion of kidney bean sediment increased. Sensory evaluation of Yanggaeng stored at $4^{\circ}C$ for 24 hr revealed that the product prepared from the mixture of red bean sediment (70%) and kidney bean sediment (30%) was not significantly different (p<0.05) compared with that from the 100% red bean sediment.

딸기의 유통실태와 성숙중의 품질변화 (Circulation State of Strawberry and Quality Changes during Ripening)

  • Circulation state and changes in quality during ripening of strawberry were investigated. Tissue damage of the fruit happened when it was harvested and selected. Strawberry has been harvested without considering of fruit temperature in the farm. It takes 25 hours from Goreung which is main production area of strawberry to retailer, and seasonal variation in the price was severe. Shelf-life of strawberry from Feb to Mar was 5-6 days, and was 24-30 hours from May to June. Desirable ripening stage was 28-30th day after blooming and 40th day and after this was over ripening stage when the degree of ripening estimated by color "a" value and color saturation. Overall eating quality and vitamin C contents and sugar content were more higher in the fruit of the desirable ripening stage than that of unripening and over ripening stage. The dark redness degree was high in the over ripening stage.

Enhancing the Organoleptic and Functional Properties of Jujube by a Quick Aging Process

  • Black jujube was made by aging dried jujube and its physiochemical characteristics, antioxidant activities and ${\alpha}$-glucosidase inhibitory activities were evaluated. The moisture and sugar contents were increased depending on the period of aging times and the pH was reduced thereby increasing acidity. The color of black jujube extract was changed from red to black resulting in decreases of Hunter color values L, a and b. As the aging progressed, sucrose was decomposed by increasing glucose and fructose, indicating higher contents of the total reducing sugars. Among the six different types of organic acids extracted from dried jujube, the levels of oxalic acid and citric acid were increased as the aging progressed. The total polyphenol contents in ethanol and water extracts of dried jujube were 7.74 and 8.12 mg/g, respectively. The water extract of black jujube aged for 48 hr contained the highest polyphenol contents at 16.82 mg/g. The 5'-hydroxymethylfurfural (5'-HMF) contents of black jujube extract significantly increased by longer aging times, and contained higher contents in the ethanol extract than water extract. The ethanol extract of black jujube showed the highest 5'-HMF content with 338.89 mg% after aging for 3 days. Also, $IC_{50}$ values of black jujube aged for 72 hr evaluated by DPPH and ABTS radical assays were 0.54 and 0.59 mg/mL, respectively. ${\alpha}$-Glucosidase inhibitory activities of black jujube at the concentration of 3.33 mg/mL (ethanol extract) increased from 65 to 80 % after aging for 72 hr.

천년초 열매 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Added with Cheonnyuncho Fruit Powder)

  • This study is performed to investigate the quality characteristics of sulgidduk added with cheonnyuncho fruit powder. Sulgidduk was prepared with freeze-dried cheonnyuncho, rice flour, sugar syrup and salt. The sulgidduk was made with various amounts (0, 3, 6, 9, 12%) of added cheonnyuncho fruit powder. The proximate composition, pH, Hunter's color value, texture profile analysis, sensory characteristics and SEM of cheonnyuncho sulgidduk were being examined. The addition of cheonnyuncho fruit powder has a tendency to decrease the moisture contents of sulgidduk while the crude ash, crude lipid and crude protein increased. The pH of sulgidduk decreased when the amounts of cheonnyuncho fruit powder increased. As the amount of cheonnyuncho fruit powder increased, the lightness (L) decreased, while the redness (a) and yellowness (b) increased. In texture profile analysis, the hardness decreased with increasing cheonnyuncho fruit powder contents, whereas cohesiveness, springiness, gumminess and brittleness increased. The results of sensory evaluation showed that the sulgidduk with 3%, 6% of cheonnyuncho fruit powder got the highest scores on the color, taste, springiness and acceptability. The air cells of sulgidduk observed by SEM were big and uniform with the amount of cheonnyuncho fruit powder increased. In conclusion, these results show that the quality and preference increased when 3%, 6% of cheonnyuncho fruit powder was added to the sulgidduk.

야콘 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk with Yacon Powder)

  • In this study, Sulgidduk samples were prepared with 0%, 3%, 5% and 7% yacon powder. Sulgidduk samples were then examined for quality characteristics such as moisture content, general components, color, texture profile analysis, sensory qualities, and sugar content, in order to determine the optimal ratio of yacon powder in the formulation. Regarding the general components of yacon Sulgidduk, the contents of crude protein and lipid decreased as the ratio of yacon powder increased. The L-value for color decreased, whereas a- and b-values increased. In the texture profile analysis, 7%-added yacon showed significantly lower hardness, whereas 7% yacon powder showed the highest values for cohesiveness, springiness, and chewiness. The contents of sucrose, fructose, and glucose in yacon Sulgidduk were found to be 3%, 5%, and 7% by LC, respectively. Sucrose showed a decreasing trend with increased yacon powder content, but fructose and glucose increased with increased amount of yacon powder. For sensory qualities, taste/flavor, texture, hardness, and overall acceptability were not significantly different among the 0%, 3%, and 5% yacon powder samples.
