Effect of Enrobing and Adding Antioxidants on the Quality of Pork Patties

  • The effect of applying edible coating and addition of antioxidants (butylated hydroxyanisole (BHA) plus butylated hydroxytoluene (BHT) in a 1:1 ratio) on pork patties were investigated prior to achieve desired physico-chemical, microbiological and sensory qualities. For this, five treatments were conducted as (i) control (neither coated nor antioxidants treated); (ii) coated without antioxidants treated; (iii) coated and antioxidants added in the batter mix only (100 ppm); (iv) coated and antioxidants added in meat mix (100 ppm) only; and (v) coated and antioxidants added both in the batter mix (50 ppm) and the meat mix (50 ppm). Addition of antioxidants both in the batter mix and the meat mix significantly (p<0.05) reduced the microbial loads and thiobarbituric acid (TBA) values. The TBA values significantly (p<0.05) increased up to day 14 and then progressively increased with the advancement of each interval of storage days up to 28 days. Total plate count significantly (p<0.05) increased with the increase in storage days.Coliform and Staphylococcus aureus were absent throughout the storage days in all samples. Staphylococcus aureus however, were present in the control group at day 14 and in enrobed (coated) patties (without antioxidants treated) at 28th day. Addition of antioxidants to batter mix and meat mix did not substantially enhance bacteriostatic activity. Application of coatings and antioxidants retarded the loss of firmness, flavor, changes in appearance and color, and also other sensory attributes. Control patties were better with respect to microbial quality and TBA values but had poorer sensory quality than coated patties.

단순가공 패류의 수산물의 가공 공정 중 미생물학적 및 이화학적 위해요소 분석 (Microbiological and Physicochemical Hazard Analysis in Processing Process of Simple-Processed Shellfish Products)

  • The object of this study is to assess physicochemical and microbiological hazards involved during the processing of shellfish products such as oysters, clam, and mussels. Samples including raw materials, intermediates, and final products in the processing process were collected from seven simple-processed shellfish facilities. In the samples obtained from the facilities, viable cell count and coliform group were detected less than that of the Korean Government guidelines. In addition, the high-risk bacterial pathogens such as Escherichia coli O157:H7, Salmonella sp., and Listeria monocytogenes were not identified in raw materials and final products. However, the low-risk pathogens, Staphylococcus aureus and Vibrio parahaemolyticus, were detected in some final products. The level of heavy metal content in the final products tested in this study meets the recommendations by the Korean Government standard guidelines. No foreign materials in the final products were also observed. Considering these results, it was concluded that no significant food hazards exists in the processing process of simple-processed shellfish products. However, it is essential to improve the food safety control in the shellfish processing facilities since S. aureus, a personal sanitary indicative bacterium, was continuously detected over seven simple-processed shellfish facilities.

Effect of Fermented Spinach as Sources of Pre-Converted Nitrite on Color Development of Cured Pork Loin

  • The effect of fermented spinach extracts on color development in cured meats was investigated in this study. The pH values of raw cured meats without addition of fermented spinach extract or nitrite (negative control) were higher (p<0.05) than those added with fermented spinach extract. The pH values of raw and cooked cured meats in treatment groups were decreased with increasing addition levels of fermented spinach extract. The lightness and yellowness values of raw cured meats formulated with fermented spinach extract were higher (p<0.05) than those of the control groups (both positive and negative controls). The redness values of cooked cured meats were increased with increasing fermented spinach extract levels, whereas the yellowness values of cooked cured meats were decreased with increasing levels of fermented spinach extract. The lowest volatile basic nitrogen (VBN) and thiobarbituric acid reactive substances (TBARS) values were observed in the positive control group with addition of nitrite. TBARS values of cured meats added with fermented spinach extract were decreased with increasing levels of fermented spinach extract and VBN values of curing meat with 30% fermented spinach extract was lower than the other treatments. Total viable bacterial counts in cured meats added with fermented spinach extract ranged from 0.34-1.01 Log CFU/g. E. coli and coliform bacteria were not observed in any of the cured meats treated with fermented spinach extracts or nitrite. Residual nitrite contents in treatment groups were increased with increasing levels of fermented spinach extract added. These results demonstrated that fermented spinach could be added to meat products to improve own curing characteristics.

The Quality Characteristics of Commercial Gwamegi by Product Types

  • This study was performed to investigate the physical, chemical and microbial characteristics of Gwamegi to provide basic data for the standardization of marine processed foods and for the improvement of the quality of commercial Gwamegi. The acid values of commercial Gwamegi were 5.8, 5.3 and 5.2 mg KOH/g for fillet type (F-type), "two divide" type (T-type) and whole type (W-type), respectively, and the peroxide values were 51.6, 51.5 and 53.2 meq/kg for each. There was a positive correlation between the acid value and the peroxide value (r=0.555) at confidence intervals (CI) of 99%. Trimethylamine (TMA) content of F-type, T-type and W-type products were 2.9, 2.6 and 3.6 mg%, respectively, while volatile basic nitrogen (VBN) contents were 22.4, 21.5 and 21.8 mg%. There was a strong positive correlation between TMA and VBN (r=0.961) at a CI of 99%. The histamine content was detected to be as much as 122 mg/kg, with about 36 % of the samples exceeding the CODEX criteria for histamine of 100 mg/kg. The total microbial count of 4 products exceeded 5 Log CFU/g and coliform group of 11 products exceeded the criteria of less than 1 Log CFU/g. Staphylococcus aureus in 27% of the samples exceeded the criteria of less than 2 Log CFU/g.

북만의 해수 및 굴의 세균학적 특성 (A Bacteriological Study on the Sea Waters and Oyster in Puk Ma , Korea)

  • 북만 해수의 물리 화학적 및 미생물학적 특성과 북만에서 양식되고 있는 굴에 대한 세균학적 수질을 조사하여 수출용 패류생산지정 해역수질에 합당한가를 파악함과 동시에 지표세균의 조성, 병원성 세균 등을 조사한 결과를 요약하면 다음과 같다.사 기간중 불반 해수의 수온은 6.8 -23.$0^{\circ}C$, 투명도는 2.7-5.9m, COD 1.55-2.12 mg/1, DO 6.3-10.1 mg/1, 용존질소 1.63-20.87 $\mu\textrm{g}$-at/1, 인산염 0.16-1.66 $\mu\textrm{g}$-at/1, Chlorophyll. a는 1.04-6.78 mg/ ㎥범위였으며 염분농도는 31.57-34.47$\textperthousand$였다. 북만 해수의 세균학적 수질은 통영항, 인평포, 법송포 및 북신만 안쪽의 일부 해역을 제외하고는 수출용 패류의 생산해역의 수질기준에 합당하였다. 대장균군의 최확수는 양식을 하지 않는 조사지점 1과 2를 제외하고 해수 100ml 당 < 3.0-4,600의 범위였으며 230을 초과하는 시료의 비율은 10.7%였고, 분변계 대장균의 최확수는 <3.0-1,100의 범위였으며 43을 초과하는 시료의 비율은 9.5%로 한계치 10%를 약간 상회하였다. 대장균군의 분류겨로가 Escherichia coli가 약 52%나 되어 오염원의 주류가 분변오염임을 알 수 있었다. 살모넬라, 시겔라, 콜레라균 등 수인성 병원세균은 검출되지 않았다. 병원성 비브리오균은 여름철인 6-8월 사이에는 시료의 9-22%에서 양성으로 나타났다. 굴 내에 생균수는 2.0 x $10^{2}$-1.6 x $10^{3}$범위였고 대장균군의 최확수는 <18 - 16,000, 중앙치는 176, 분변계 대장균은 <18-2,400, 중앙치는 었다.

군용 지하수의 수질 특성에 관한 조사 연구 (A Study on Analysis of Groundwater Quality in Army Base Area)

  • This study was carried out to evaluate water quality based on physicochemical properties, including ammonium nitrogen ($NH_3-N^+$), nitrate nitrogen ($NO_3-N^-$), consumption of $KMnO_4$ and microbial indicators, such as total colony counts and total surveyed a group of 30 samples three times in 2005 (January to March, July to September, October to December). The mean concentration values of ammonium nitrogen ($NH_3-N^+$), nitrate nitrogen ($NO_3-N^-$) and the consumption of $KMnO_4$, were 0.01 mg/L (range 0.00~0.09 mg/L), 0.48 mg/L (range 0.00~3.31 mg/L) and 0.61 mg/L (0.0~3.42 mg/L), respectively. Based on the results, total colony count was detected in the ranges of 0~412 CFU/mL. In details, 84.4% of test samples was ${\leq}30CFU/mL$, 10.0% was 30~100 CFU/mL and 5.6% was ${\geq}100CFU/mL$. The detected rate of total coliforms was 6.6%. In conclusion, the ground water quality of 30 military facilities in Seoul, Kyunggi-do, and Inchon-city was acceptable for drinking except for a few detection of total colony count and total coliforms over standard.

Ethylene Oxide 처리와 Gamma가 조사가 건조 농산물의 품질에 미치는 영향 (Effects of Ethylene Oxide Fumigation and Gamma Irradiation on the Quality of Dried Agricultural Products)

  • 주요 농산 건조가공품에 오염된 미생물의 효과적인 살균법 개발을 목적으로, 현행방법인 ethylene oxide 훈증처리와 감마선 조사에 따른 미생물의 살균효과와 이화학적 품질에 미치는 영향을 검토한 결과는 다음과 같다. 시료의 미생물 오염도는 고추장 분말, 참깨, 느타리버섯 분말, 당근 flake의 순이었으며, 전세균이 $4.6{\times}10^{3}/g~1.5{\times}10^{6}/g$, 내열성 세균이 $1.3{\times}10^{3}/g~1.4{\times}10^{6}/g$, 산저항성 세균이 $8.4{\times}10^{2}.g~8.8{\times}10^{5}/g$, 내삼투압성 곰팡이를 포함한 곰팡이류는 $4.0{\times}10^{2}/g~1.5{\times}104/g$, 대장균군은 당근 flake를 제외한 나머지 시료에서 $4.0{\times}10^{3}/g~2.7{\times}10^{5}/g$ 정도로 오염되어 있어 위생적인 살균처리가 요구된다. 살균효과 실험에서는 대부분의 시료가 7~10 kGy의 감마선 조사로서 모든 미생물의 사멸이 가능하였으나 ethylene oxide 처리구에서는 전반적으로 전세균과 내열성 포자균 및 곰팡이의 살균이 불충분하였다. Ethylene oxide 처리는 시료의 색소, 아미노산, 무기질, 색도 등에 상당한 영향을 미쳤으나 적정선량의 감마선 조사는 이들에 대해 비교적 안전하였으며, 실온에서 3개월 동안 저장된 시료의 전반적인 기호도는 감마선 조사구가 ethylene oxide 처리구나 대조구보다 우수하게 나타났다.

양파껍질 추출물 함유 음료의 품질특성 (Quality Characteristics of Beverage Adding Onion Peel Extract)

  • This study provided basic data for the commercialization of healthy functional beverages by examining the physicochemical characteristics, nutrient content, and microbiological safety of onion peel beverage. The total acid of onion peel beverage was 0.12 mg/g and the pH was 6.07. According to the storage period, the total acid decreased and the pH increased in all temperature ranges(25℃, 35℃, and 45℃). After 30 days of storage, it showed 0.06 mg/g in all temperature sections and maintained the pH 7 range. The total phenol content, which is a nutritional component of onion peel beverage, was 0.93 mg/g, flavonoid content was 0.25 mg/g, and quercetin content was 0.17 mg/g. The flavonoid content decreased according to the storage period, and in the case of storage temperature of 25℃, it contained 50% content up to 120 days of storage, but in the case of 35℃ and 45℃, it had a flavonoid content up to 90 days and 30 days, respectively. In the case of quercetin, a residual rate of about 50% was shown for 150 days of storage at 25℃ and 35℃. In the case of 45℃, it decreased to 35% at 30 days of storage. On the other hand, onion peel beverage maintained a viable cell count of less than 5 CFU/mL for 150 days of storage, and no coliform group was detected. As a result of analyzing the quality characteristics of onion peel beverage according to storage period, quality stability was confirmed in physicochemical characteristics and microbiological safety. Research on changes in biological activity according to low-temperature distribution or storage period is necessary.

Enhancing Raw Bovine Milk Quality using Ultraviolet-C (UV-C) Irradiation: A Microbial and Lipid Peroxidation Study

  • This study investigated the efficacy of ultraviolet-C (UV-C) irradiation in enhancing the quality of raw bovine milk by targeting microbial populations and lipid peroxidation, both of which are key factors in milk spoilage. We categorized the raw milk samples into three groups based on initial bacterial load: low (<3 Log 10 CFU/mL), medium (3-4 Log 10 CFU/mL), and high (>4 Log 10 CFU/mL). Using a 144 W thin-film UV-C reactor, we treated the milk with a flow rate of 3 L/min. We measured the bacterial count including standard plate count, coliform count, coagulase-negative staphylococci count, and lactic acid bacteria count and lipid peroxidation (via thiobarbituric acid reactive substances assay) pre- and post-treatment. Our results show that UV-C treatment significantly reduced bacterial counts, with the most notable reductions observed in high and medium initial load samples (>4 and 3-4 Log 10 CFU/mL, respectively). The treatment was particularly effective against coliforms, showing higher reduction efficiency compared to coagulase-negative staphylococci and lactic acid bacteria. Notably, lipid peroxidation in UV-C treated milk was significantly lower than in pasteurized or untreated milk, even after 72 hours. These findings demonstrate the potential of UV-C irradiation as a pre-treatment method for raw milk, offering substantial reduction in microbial content and prevention of lipid peroxidation, thereby enhancing milk quality.

식초절임 무의 HACCP 시스템 적용을 위한 미생물학적 위해 분석 (Microbiological Hazard Analysis for HACCP System Application to Vinegared Pickle Radishes)

  • 본 연구는 식초절임 무의 HACCP (Hazard Analysis Critical Control Point)시스템 구축을 위하여 생물학적 위해요소분석을 위한 목적으로 2012년 2월 1일~6월 31일까지 약 150일 동안 수행하였다. 일반적인 식초절임 무 제조업체의 제조공정을 참고로 하여 공정도를 작성하였으며, 식초절임 무의 원료 농산물(무), 용수, 첨가물과 포장재료에 입고, 보관, 정선, 세척, 표피제거, 절단, 선별, 충진, 내포장, 금속검출, 외포장, 보관 및 출하공정에 대하여 작성하였다. 원료 무의 세척 전, 세척 후의 Coliform group, Staphylococcus aureus, Salmonella spp., Bacillus cereus, Listeria Monocytogenes, E. coli O157:H7, Clostridium perfringens, Yeast 와 Mold를 측정한 결과 Bacillus cereus는 세척 전 $5.00{\times}10$ CFU/g이었으나, 세척 후 검출되지 않았으며, Yeast 와 Mold 는 세척 전 $3.80{\times}10^2$ CFU/g, 세척 후 10 CFU/g로 감소되었으며 나머지 병원성균은 검출되지 않았다. 조미액의 pH(2~5)별 미생물의 변화를 시험한 결과 모든 균이 검출되지 않은 pH 3~4를 조미액의 pH로 결정하였다. 작업장별 공중낙하균 (일반세균수, 대장균, 진균수) 시험결과 내포장실, 조미액가공실, 세척실, 보관실의 미생물수는 10 CFU/Plate, 2 CFU/Plate, 60 CFU/Plate 그리고 20 CFU/Plate 가 검출되었다. 종사자 손바닥 시험결과 일반세균수 346 $CFU/Cm^2$, 대장균군 23 $CFU/Cm^2$로 높게 나타나 개인위생관리에 대한 교육 및 훈련이 요구 되었다. 제조설비 및 기구의 표면오염도를 검사한 결과 모든 시료에서 대장균군은 검출되지 않았고, 일반세균은 PP Packing machin과 Siuping machine (PE Bulk)에서 가장 많은 $4.2{\times}10^3CFU/Cm^2$, $2.6{\times}10^3CFU/Cm^2$ 검출되었다. 위의 위해분석 결과 병원성미생물을 예방, 감소 또는 제거할 수 있는 조미액 가공 공정이 CCP-B (Biological)로 관리되어야 하고, 한계기준은 pH 3~4로 결정하였다. 따라서 전통한과생산에의 HACCP 모델 적용을 위한 미생물학적 위해도 평가에서와 같이 조미액 가공 공정의 관리기준 및 이탈시 조치방법, 검증방법, 교육 훈련과 기록관리 등 철저한 HACCP 관리계획이 필요할 것으로 생각된다.
