Changes in quality characteristics of raw ginseng(Panax ginseng C.A. Meyer) pudding during storage (수삼 푸딩의 저장중 품질특성 변화)

  • Healthy ginseng pudding was made with different doses of two gelling agents and stored at $37^{\circ}C$ for eight weeks. And then quality characteristics and palatability were measured. Sweetness and pH level increased in newly made ginseng puddings but decreased during storage. Acid taste decreased but increased during storage in A (pectin 0.2%+agar 0.6%). But it increased but subsequently decreased in B (agar 0.8%). Acidity in C (agar 1%) remained unchanged until six weeks but slightly increased at 8 weeks of storage. Texture increased in all specimens but subsequently decreased. Chromaticity value of L decreased in all specimens before increasing while the values of a and b increased and subsequently decreased. In texture examination, hardness and adhesion were higher in C (agar 1%) and lower in A (pectin 0.2%+agar 0.6%). There were no differences in elasticity among three specimens. Cohesion was higher in C (agar 1%) while it showed a similar level in A (pectin 0.2%+agar 0.6%) and B(agar 0.8%). Stickiness and chewiness were higher in C(agar 1%) but lower in A(Pectin 0.2%+agar 0.6%), compared with C(agar 1%) specimen. In sensory test, overall palatability was higher in A (Pectin 0.2%+agar 0.6%). In conclusion, ginseng pudding with 0.6% agar and 0.2% pectin exhibited better quality. And ginseng pudding has potential to be developed as healthy dessert considering ample physiological and functional properties.

Quality Characteristics of Barley Dasik added with Maesil Extracts (매실농축액을 첨가한 보리다식의 품질 특성)

  • This study assessed the quality of barley Dasik manufactured, according to traditional methods, with various levels of Maesil (Prunus mume) extracts at weight percentages of 0% (BD1), 10% (BD2), 20% (BD3), 30% (BD4), 40% (BD5). The Dasik were analysed with proximate analysis, a sugar content analysis, Hunter's color value test, mechanical characteristics test and a sensory evaluation. Increased ratios added Maesil extracts led to the moisture content, crude ash, and crude fat to significantly increase (p<.001). 10% (BD2) had significantly higher levels of crude protein (p<.01). Sugar contents was highest in 0% (BD1) and decreased as the amount of added Maesil extracts increased. This increase also led to higher L-values and b-values of chromaticity (p<.001) and the a-value of 0% (BD1) was significantly higher than the sample groups (p<.001). Changes in texture profile analysis, hardness and gumminess values were highest in the control group and the values of those in the sample group decreased with increasing amounts of Maesil extract (p<.001). It should be noted that, among the samples evaluated, barley Dasik that contained 10% Maesil extract (BD2) had the highest commercial value.

The Qualities and Functionalities of the Fermentation Broth of Fruits, Vegetables and Medicinal Herbs (과일, 야채 및 한약재 발효액의 품질과 기능성에 대한 연구)

  • This study were investigated the changes in chemical components, quality characteristics of the fermented broth, and physiological functionality during fermentation period of fruit, vegetables, and medicinal herbs. pH and $^{\circ}$Bx gradually decreased and the viscosity increased. The chromaticity of L, a, and b all increased. The total number of germs dropped from $10^5{\sim}10^6\;to\;10^2{\sim}10^3$ CFU/ml, and that of lactobacilli also decreased noticeably. According to the result of the effect on fat oxidation, a very low level of TBARS was shown. After thirty days of fermentation, the amount of each fermentation broth increased more or less, but as it declined considerably after ninety days, it was found that the binding effect of $Fe^{2+}$ ion was small and insignificant. The electron donating ability, though not reaching 0.5% ascorbic acid, showed a high level of activity from $33.71{\sim}72.15%$ before fifteen days and $44.76{\sim}75.20%$ ninety days after fermentation. Among them, the fruit fermentation solution showed the highest activity. It was also found that the organic functions for each fermentation broth decreased more or less depending on the fermentation period and the thirty-days-old fermentation broth were favored most. On the basis of the above experiment results, it can be concluded that the optimum fermentation period for fruit, vegetables, and medicinal herb is thirty to ninety days.

Quality Properties of Appenzeller Cheese Added with Fish Surimi (수리미 아펜젤러 치즈의 품질 특성)

  • The effects of adding fish surimi to Appenzeller cheese on quality characteristics during ripening were investigated. Cheese samples were prepared with 1.0% surimi. Changes in chemical composition, lactic acid bacterial population, pH, non-casein nitrogen, non-protein nitrogen, water-soluble nitrogen, a consumer sensory evaluation test, chromaticity, texture, and proteolysis were monitored during ripening. The electrophoretic patterns of cheese proteins and the functional components originating from the surimi were investigated. Adding surimi did not affect the appearance or consumer sensory characteristics of the cheeses. Significantly higher amounts of crude fat and moisture were observed in the cheese supplemented with surimi than in cheese without added surimi.

Quality Characteristics of Sourdough Bread using Fermented Fig (무화과 액종을 이용한 Sourdough Bread의 품질 특성)

  • This study investigated quality characteristics of sourdough bread using fermented fig. Bread containing sourdough, compared with control group, showed high inclination in moisture content. Sample with 20% of sourdough was the highest, and sample with 40% of sourdough was the lowest. There was a significant difference among samples. As for appearance and cross structure of sourdough bread with fermented fig, there was an inclination that the bigger sourdough bread is, the bigger cell is and the more even its structure is. As for the chromaticity, sample with 20% of sourdough showed the lowest value of L and value of b. Value of L and b got lower as its volume got bigger. Value of a, on the one hand, showed no fixed inclination. As for textural characteristics, sourdough bread showed lower hardness, cohesiveness, and gumminess, and higher springiness and cohesiveness than control group. There were significant differences among all items, but there was no significant difference in hardness, springiness, cohesiveness, and gumminess among samples. Changes in result of sensory analysis suggested that sample with 20% of sourdough showed the highest overall preference including color, flavor, taste, and appearance. On the other hand, sample with 40% of sourdough showed the lowest overall preference. Considering preference through sensory analysis and quality characteristics of sourdough bread with fermented fig, therefore, it seemed that sourdough bread with 20% of sourdough had the best characteristics.

  • The M/sub 1-x/Na/sub 2x/Al₂(BO₃)₂O (M = Ca and Sr) solid solution systems have been shown interstitial solid solutions and continuous substitutional solid solutions. The symmetry around the Eu site of yEu/sup 3+/ : M/sub 1-x/Na/sub 2x/Al/sub 2-y/Mg/sub /(BO₃)₂O (M = Ca and Sr) changes the intensities and the chromaticities of transitions. The Eu/sup 3+/ion can be very bright and efficient and have the desired emission wave-length depending on the site symmetry of the Eu/sup 3+/ion site. As the amount of Na in the Eu/sup 3+/ion doped Ca/sub 1-x/Na/sub 2x/Al₂(BO₃)₂O system increases, the Eu site symmetry is going to be a noncentrosymmetric site. With increasing x, the decreased intensity in the /sup 5/D/sub 0/→/sup 7/F₁(590 nm) transition relates to the low symmetry of the Eus/up 3+/-doped Ca/sub 1-x/Na/sub 2x/Al₂(BO₃)₂O system, because of the Ca-centered octahedron in the CaAl₂(BO₃)₂O compound. The SrAl₂(BO₃)₂O compound also provides an improved chromaticity due to the lower site symmetry of Eu/sup 3+/ion.

Enhancing the Antioxidant Activities of Wines by Addition of White Rose Extract

  • White rose petal extract (WRE) contains large amounts of phenolic compounds and is considered edible. In this study, red and white wines were prepared by the addition of WRE (0.10% or 0.25% (w/v)), followed by fermentation at $25^{\circ}C$ for 15 days. The fermentation profiles, colors, sensory test results, and antioxidant activities of the wines were compared. As reported herein, the fermentation profiles of the pH, $CO_2$ production rate, and final ethanol concentration were not affected by the addition of WRE, but a slow consumption rate of sugar was observed in 0.25% WRE-added wine. In contrast, the total polyphenol concentrations in WRE-added wines increased significantly (p < 0.05) in a dose-dependent manner, resulting in appreciable enhancement of the antioxidant activities of the wines. Chromaticity tests showed slight changes in the redness and yellowness, but sensory tests showed that the overall flavor qualities of the WRE-added wines were acceptable to the panels. This study demonstrates that addition of WRE to wine confers beneficial health effects and this treatment results in better outcome in white wine.

Physicochemical Characteristics of Rice Flour Developed as Rice Powder and Quality Characteristics of Rice Cakes (쌀가루전용 품종들의 이화학적 특성 및 설기의 품질 특성)

  • This study attempts to analyze the physicochemical characteristics of rice flour developed as rice powder for exclusive use, steamed rice cake recipes developed as basic recipefor rice cakes. The study also aims to compare the quality characteristics of steamed rice cakes in an effort to establish the possibilities of developing various rice cake recipes. The moisture content and amylose content increased as the rice powder particles for exclusive use became finer. With regards to water uptake, in the case of the Hungara type, the water uptake increased as rice powder particles increased in size. In the case of the Shingil and commercial types, the water uptake decreased as rice powder particles increased in size, and solubility and swelling force decreased as rice powder particles increased in size. In the case of chromaticity, Sulgidduk made with rice powder for exclusive use the brightness (L value) increased as powder particles became finer and the yellow indexes (b value) decreased, and this was especially pronounced in the Shingil type. The measurements of changes in the mechanical textures of Sulgidduk showed that rice types with larger particles led to lower hardness, cohesiveness, springiness, and chewiness.

Effect of the container and temperature on the quality of buckwheat (Fagopyrum esculentum) Soksungjang during storage (용기 및 온도에 따른 저장 중 메밀 속성장의 품질특성)

  • This study was performed to provide fundamental information regarding the quality change of buckwheat soksungjang (BWS) during its storage. BWS was divided into three different containers (pot, plastic, and glass) and was stored at three different temperatures (5, 15, and $25^{\circ}C$), and the changes in pH, acidity, amino-type nitrogen, total bacterial count, and chromaticity were examined during the storage period. The pH (0 day, pH 4.37) and acidity (0 day, 2.93% acidity) of the samples, except at the 15 and $25^{\circ}C$ pots, did not show any significant change during storage, but 98 days after storage, the pH values of the 15 and $25^{\circ}C$ pots were pH 5.6 and 7.4, and their acidity values were 1.85 and 0.71%, respectively. At 98 days, the amino-type nitrogen of the $25^{\circ}C$ plastic sample had slightly increased to $0.75{\pm}0.01%$, and that of the $25^{\circ}C$ pot had drastically risen to $0.92{\pm}0.01%$. It was also shown that little change in the total bacterial count was found during the experiment period in every sample. The chromaticity results confirmed that the L (lightness), a (redness), and b (yellowness) values of the $25^{\circ}C$ pot sample showed relatively large changes during storage compared to the other samples. These results suggest that the desirable storage temperature of BWS is in the range of $5-15^{\circ}C$, and that a glass container is the most suitable container for BWS as it can reduce the quality alteration during storage.

Characteristics of Hericium erinaceus fruit body genesis in winter (동절기 노루궁뎅이버섯 자실체 발생 특성)

  • In this study, we observed differences in the fruit body genesis in with seasonal changes. The mushrooms generated different spines even when under same environmental conditions in equivalent growth chambers during different seasons. The growth chamber conditions were set at $18^{\circ}$, 1000 ppm CO and 95% humidity for uniform primordium formation. Following this, the humidity was reduced to 85% during growth and development. The characteristics of the fruit body were measured: yield (weight), length (size), hardness, and chromaticity. Each measure was relatively compared owing standard data for. We investigated the environmental factors to assess the cause of variation in fruit body. Change in temperature and humidity were especially focused on, apart from climate that can affect mushroom growth. It was observed that temperature and humidity both influence fruit body growth. Not the absolute value of the elevation, there was a change of climate which the temperature is lowered and lowered the humidity can be assumed that the changes in the environmental conditions inside the growth chamber the mushroom growth.
