Water-Environment-Economic nexus analysis of household food waste impacts: A case study of Korean households

  • Food waste has increasingly become a global issue of concern among the researchers and policymakers due to its significant environmental and economic impacts, and other associated unsustainable use of resources, including water resources. While food wastage occurs at each stage of the supply chain with food loss at the upstream and food waste at the downstream, the impacts of food waste occurring at the consumption side are enormous due to the accumulated added values. In this study, the embedded water resources, greenhouse gas emissions, and economic loss of household food waste were investigated. The primary granular data of household food waste was collected through direct sampling from 218 selected households of the Buk-gu community in Daegu, South Korea from July 2019 to May 2020. The water footprint, which was based on the water footprint concept, i.e., indirect water use, and GHG emission potential factor for each of the food items were adopted from the literature, while the retail prices and disposal cost were used to assess the economic cost of wasted food items. The water footprint, GHG emission associated with environmental impacts, and the economic cost of 42 major identified wasted food items were conducted. The findings showed that an average of 0.73 ± 0.06 kg/household/day edible food waste was generated among the sampled households, with leafy vegetable, watermelon, and rice responsible for 10, 9, and 4%, respectively, of the total weight of the 42 food wasted items. The water footprint and environmental impact of the household food waste resulted in 0.46 ± 0.04 m3 and 0.71±0.05 kg CO2eq, respectively. Beef, pork, poultry, and rice accounted for 52, 9, 5, and 4% of the total water footprint, while beef, pork, rice, tofu/cheese had 52, 8, 6, and 6% of the total emissions, respectively, embedded in the food wasted. Furthermore, the average estimated economic cost associated with wasted food items was 3855.93±527.27 Korean won, with beef, fish, and leafy vegetable responsible for 21, 13, and 10%, respectively, of the total economic cost. A combined assessment using water-environmental-economic nexus indicated that animal-based food had the highest footprint impacts, with beef, pork, and poultry indicating high indices of 0.3, 0.08, and 0.06 respectively, on a scale of 0 to 1, compared to corn and lettuce with lowest impacts of 0.02. Other food items had moderate impact values ranging from 0.03 to 0.05. This study, therefore, provides insight into the enormity of environmental and economic implications of household food waste among Korean households.

A Case Study on Reflection-in-practice in Science Teachers' Teaching Changes (반성적 실천을 통한 과학교사의 교수실행변화에 관한 사례 연구)

  • The purpose of this study is to understand how a teacher's teaching can be changed while he or she teaches the same contents in different classes. The qualitative research method was used in this study. Data were collected from classroom observations, several in-depth interviews, and stimulated-recall interviews after each class. All the data were transcribed and analyzed interpretively, and then, the results of the analysis were checked by each participating teacher. The results are as follows: First, changes appeared in each class in terms of the teaching items, tools, sequence, and time, even though the same teacher taught the same contents. It showed that the teacher's teaching practice changed immediately and intuitively in class. Second, teachers tried to implement "exploratory teaching" or "move-testing teaching" to address the emerging problems during their teaching. They then reflected on and modified their own teaching. This type of change, which happened during the teaching practice, can be an example of "Reflection-in-practice." Thus, the results of this study can provide helpful insights into how teachers might adapt and reflect in their teaching. It suggests that teachers need to recognize their subconscious teaching changes and learn "Reflection-in-practice."

Effect of Protein and Energy Levels on Performance and Carcass Rate in Cross Bred Chicks (단백질 및 대사 에너지 수준이 유색 육용계의 생산성 및 도체율에 미치는 영향)

  • The experiment were protein and metabolizable energy level in performance and carcass rate in cross bred chicks. One day old, 720 male and female cross bred chick were used for the experiments, and 20 chicks were placed at each pen. The energy level of feed was maintained about 2,950, 3,000, 3,050 kcal/kg, and protein content was adjusted about 19, 20, 21% from 0 to 5 weeks and energy level was maintained about 3,100, 3,150, 3,200 kcal/kg, and protein content was adjusted about 17, 18, 19% from the 6 to 10 weeks old of the experiment. At the whole time, ME 3,100 (2,950), 3,150 (3,000) and 3,200 (3,050) kcal/kg treatment groups was not significant difference in weight gain, feed intake, but 3,150 (3,000), 3,200 (3,050) kcal/kg treated groups revealed to show improved feed conversion rate than the group treated with ME 3,100 (2,950) kcal (P<0.05). And CP 17 (19), 18 (20), 19 (21)% treatment groups did not significant difference weight gain and feed intake but CP 19 (21)% treated group wan significant difference feed conversion rate than the CP 17 (19)% treated group (P<0.05). ME level of 3,100 (2,950), 3,150 (3,000), 3,200 (3,050) kcal/kg treatment groups in carcass rate and abdominal fat rate was not signficant difference and protein of 17 (19), 18 (20), 19 (21)% treatment groups after end of experiment. Between ME and CP of dietary was significant appeared to interact at 6~10 weeks (P<0.05).

Effects of Pregnant Rate after Embryo Transfer in Oxygen Consumption of Embryos in Korean Cattle (한우 수정란의 산소 소비량이 수청란이식 수태윷에 미치는 영향)

  • Oxygen consumption has been regarded as a useful indicator for assessment of mammalian embryo quality. This study was performed to investigate whether oxygen consumption reflects morphological grade of in vivo derived bovine blastocyst-stage embryos (blastocyst). The oxygen consumption of in vitro produced blastocyst was compared to its total cell number. In addition, pregnant rate was measured after transplantation of in vivo blastocysts with different oxygen consumption. The quality of blastocyst collected on day 7 after artificial insemination was categorized as grade I and II (G I and G II) based on microscopic observation of the morphology. Oxygen consumption of blastocyst was measured using a scanning electrochemical microscopy (SECM) and total cell number of in vitro blastocyst was enumerated by counting cells stained by propidium iodide. Pregnancy of recipient cow was confirmed with rectal palpation after 60 days of embryo transfer. The oxygen consumptions of G I blastocysts were significantly higher than those of G II blastocysts ($10.2{\times}10^{15}/mol\;s^{-1}$ versus $6.4{\times}10^{15}/mol\;s^{-1}$, p<0.05). Total cell numbers of in vitro blastocysts were 74.8, 90.7, and 110.2 in the oxygen consumption of below 10.0, 10.0~12.0, and over $12.0{\sim}10^{15}/mol\;s^{-1}$ respectively. Total cell number was significantly increased in embryos with high oxygen consumption (p<0.05). Pregnant rate in recipient cow was 0, 50, and 85.7% in the transplantation of embryo with the oxygen consumption of below 10.0, 10.0~12.0, and over $12.0{\times}10^{15}/mol\;s^{-1}$, respectively. These results suggest that measurement of oxygen consumption may help increase the pregnant rate of bovine embryos.

  • Dioxin contamination on agroproducts is one of the most important issue in food safety. Herein, we measured concentration of 17 dioxins polychlorinated dibenzo-p-dioxins (PCDDs) and polychlorinated dibenzofurans (PCDFs) and 14 dioxin like-polychlorinated biphenyls (DL-PCBs) in the main grain (rice and barley) that were produced in Korea. The 36 rice samples were collected from rice processing complex at eight provinces, and the average concentrations of each province were ranged from 2.98 pg/g wet weight (w.w) to 4.98 pg/g w.w. as total PCDD/Fs and DL-PCBs. The seven barley samples were collected from Jeon-nam and Jeon-buk provinces, and their average total concentrations of PCDD/Fs and DL-PCBs were 3.00 pg/g w.w. and 3.24 pg/g w.w. respectively. The residual amounts and toxic equivalent (TEQ) of DL-PCBs in rice and barley were higher than PCDD/Fs. The average total TEQ of rice and barley were 0.0056 pg-TEQ/g and 0.0092 pg-TEQ/g on lower bound estimation respectively. Estimated daily intake of dioxins from rice and barley were calculated 1.03 pg-TEQ/day/person and 0.0534 pg-TEQ/day/person respectively. These were estimated 0.46% and 0.03% of Korean TDI based on 55 kg body weight.

Influence of shading and polyethylen vinyl mulching on growth and yield of Cinidium officinale Makino (차광(遮光), 비닐피복(被覆)이 궁궁이(천궁(川芎))의 생육(生育) 및 수량(收量)에 미치는 영향(影響))

  • The study was carried out to elucidate the influenced of shading and mulching with polyethylen vinyl on growth and yield of Cinidium officinale Makino, and improve the cultivation method of those medicinal plants in northern area of Gyeong-buk province, Korea. Top fresh weight of Cinidium officinale Makino was increased by both 35 % and 55% shading compared to the non-shadingand decreased by 75 % shading, but that of Ligusticum chuanxing Hart. Was decreased by the shading tested The summer wilt of Cinidium officinale Makino severely occurred in non-shading but greatly reduced by 55 % or 75 %shading, while no difference was observed in Ligusticum chuanxing Hort, between the shading and the non-shading. Dry root yield Cinidium officinale Makino was increased by 17 % and 19 % in 35 % and 55 % shading levels, respectively, compared to the dry root yield(254kg/10a) in non-shading. However, it was decreased in Ligusticum chuaxing Hort. by the shading. Emergence ratio of Cinidium officinale Makino was increased by black polyethylen vinyl mulch but decreased by transparent polyethylen vinyl mulch, compard to non-mulch. Polyethylen vinyl mulch increa­sed the top fresh weight of Cinidium officinale Makino Especialy black polythylen vinyl mulch was very effective on increasing the top fresh weight. Dry root yield of Cinidium officinale Makino was increased by 32 % and 30 %, respectively, compared to the non-shading.

Comparison of Plant Growth Characteristics and Biological Activities of Four Asparagus Cultivars by Cultural Method (재배방법에 따른 아스파라거스 4 품종의 생장과 생리활성 비교)

  • In the present study, we investigated the plant growth characteristics and biological activity of four asparagus cultivars grown using two cultural methods and tested the possibility of domestic open field. The number of shoots, buds, roots, shoot and root fresh and dry weights, and total dry weight of the four asparagus cultivars grown in a plastic house were higher than those of the same cultivars grown in an open field. Of the cultivars grown in the open field, Jersey Giant had greater shoot number than the other cultivars. In plastic house cultivation, the number of buds in Jersey Supreme was greater than the other cultivars. The total flavonoid content of the Jersey Giant was greater than the other cultivars, but cultural method was unaffected. The total polyphenol contents in asparagus cultivars grown in the plastic house were higher than those of cultivars grown in the open field. The total polyphenol content of the Jersey Giant grown the plastic house was significantly higher than those of other cultivars. Antioxidant activity such as catalase (CAT) and peroxidase (POX) did not differ significantly with cultural methods and among the cultivars. Ascorbate peroxidase (APX) activity of asparagus cultivars grown in the open field was higher than that of cultivars grown in the greenhouse; the highest APX activity was detected in UC157. Thus, greenhouse cultivation is expected to improve plant growth characteristics and biological activities of asparagus cultivars; each cultural method should be considered when selecting a suitable cultivar for high yield and high bioactive compound content.

Estimation of Environmental Effect and Genetic Parameter on Reproduction Traits for On-farm Test Records (농장검정돈의 번식형질에 미치는 환경효과 및 유전모수의 추정)

  • The purpose of this study was to estimate the genetic parameters and trend of Landrace and Yorkshire pigs, which were raised on private farms from 1999 to 2005 and tested for their reproductive performance by the Korea Animal Improvement Association. Prior to analysis, records without pedigree or having value with larger than±3×standard deviation for the Total number of born were excluded. The effects of breed and environmental factors were estimated with least square method(Harvey, 1979), and estimation of breeding values and genetic parameters were performed on the data of 1’st litter only with GIBBSF90(Misztal, 2001) which was programmed according to Gibbs Sampling method based on Bayesian Inference by Gianola and Fernando(1986), Jensen(1994) and others. Gibbs sampling was performed 50,000 times for each parameter, and the first 5000 samples were regarded as those in burn-in period and thus, excluded for post hoc analysis. Total number of born and total number of accident were statistically significant(p<0.01) for the breed, farrowing year, farrowing season and parity effects, and the number born alive at birth was statistically significantp<(0.01) for the breed, farrowing year, farrowing season and parity effects. No particular trend was observed in the genetic and phenotypic improvement of the total number of born and number born alive at birth before 2001, when the piglet registration system started, but the tendencies of increasing for the total number of born and number born alive and decreasing for the total number of accident were observed since 2001. Somewhat higher heritability estimates of our study seems to be attributed to the situations that first parity records with poor farrowing performances were used in the analyses and it was impossible to obtain accurate reproductive performance due to the absence of criteria for record keeping at the level of individual farms.

Effect of Continuous Cultivation Years on Soil Properties, Weed Occurrence, and Rice Yield in No-tillage Machine Transplanting and Direct Dry-seeding Culture of Rice (벼 무경운 기계이앙 및 건답직파 연속재배년수가 토양특성, 잡초발생 및 벼 생육에 미치는 영향)

  • This experiment was conducted to figure out the change of soil physical properties, rice growth and yield with the years of continuous cultivation in direct dry-seeding and no-tillage machine transplanting. Experiments were conducted at NHAES(National Honam Agricultural Experiment Station, RDA, Iksan, Cheon Buk Province, South Korea) with a rice variety "Dongjinbyeo" from 1995 to 2000. In no-tillage machine transplanting cultivation, organic matter in soil was higher than that on direct dry-seeding and was significantly high in topsoil. Problematic weed species were E. crus-galli B., A. keisak H., and L. japonica M. Plant height and tiller number m-2 were higher in common-tillage during the total growth duration. The highest weedy rice occurrence of 27.5% was observed in live years' continuous direct dry-seeding and followed by 6.2%, in four years', and 3.7%, in three years'. The highest yield reduction of 38% was observed in five years' continuous direct dry-seeding. The reduction may resulted from the competition between weedy rice and cultivated rice.

A Study on The Status of Health Examination and Health Management of Industrial Companies in the Taegu and Kyungbook Areas (일부 경북지역 산업장의 제특성에 따른 건강진단과 보건관리 실태)

  • The purpose of this study was to find the status of health examination and health management of industrial companies located in Taegu and Kyung book areas. It will provide basic information for the provision of effective health management of industrial workers. 49 companies were selected as a study sample group, and data was collected by using a structured Questionnaire which was developed by the members of the Community Health Nursing Academy of Korean Nursing. The health managers of the companies filled out the Questionnaire. The data was gathered from Dec 20, 1992 to Jan 20. The results of the study was as follows : 1. The Study sample showed 85.7% manufacturing companies having 300 or more workers. 2. All the companies had health managers, and companies which had 1,000 or more workers had industrial physicians and nurses. Only 12.2% of the industrial physicians were full time employees, and almost all industrial nurses were full time employees. Except for industrial physicians and nurses, the proportion of hygienists (6.1%), nurses aids (4.1%), and environmental engineers (22.4%) with full time employment statuss was very low. The mean age of industrial physicians was 49.2 while that of industrial nurses was 27.2. The length of work experiences currently ranges for 1 to 3 years for all health workers: physicians, nurses, hygienists, and environmental engineers. 3. Health examination and follow up care 94.31% took general health examinations. Of those, the proportion of the workers, who were determined as C grade(in need of close examination) was 43.86%. The proportion of the workers who were determined as D grade was 22.19%. 13.28% of the workers evaluated at the D grade were taken as a gauge for temporary leave from work. While 8.7% and .09% of them were taken as gauge for a change in job, and or shortening work hours respectively. The proportion of workers who must have taken special examination was 65.04% and of those the proportion of the workers who actually took, the examination was 98.55%. 75% of the workers who were recommended for follow up care were given follow up care. The special examinations were done the most frequently to detect the effects of physical agents (59.2%). Direct notice to individual workers was used the most frequently as a method of notification after a special examination (61.2%). The length of time taken to receive the result of a special examination was less than 1 month (38.9%) and 36.7% had taken up to two months (36.7%.). Most results of special examination were obtained within 2 months. The referral rate of consulting special examination by health managers was estimated at 95.9%. 4. 89.8% of the companies had. their own company dispensaries and 75.5% of those. had separate dispensaries. 32.7% of the companies designated local clinics for health management of workers. Industrial nurses performed health examination the most frequently(1.4 points). Health appraisal for work places were. done the least(0.83 points).
