The aim of this study was to investigate the applicability of Chinese mung bean as a natural antioxidant agent. This study evaluated the phenolic compounds content and antioxidative activity of methanol extract from Chinese mung bean. Antioxidative activities were measured by in vitro models such as 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, and 2,2-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid(ABTS) radical scavenging activity. The contents of total phenolics and total flavonoids of Chinese mung bean extract were $174.83{\pm}2.90GAE\;mg/g$ and $68.87{\pm}2.84QE\;mg/g$, respectively. The antioxidative activities of Chinese mung bean extract were significantly increased in a dose dependent manner on DPPH radical scavenging and ABTS radical scavenging(p<0.05). The concentration of Chinese mung bean extract that reduces the free radical ABTS about 50%($IC_{50}$) was 2.85 mg/mL. These results suggest that Chinese mung bean may have great potential as a natural antioxidant source linked with health benefits.
The lectins were separated from Korean and Chinese mung bean seeds finally via chromatography using Sephadex G-100 and their biochemical features were studied and compared. They showed no hemagglutination with human red blood cells regardless of trypsin treatment and showed hemagglutination with only trypsin treated rabbit red blood cells. The molecular weights of two lectins were identified as 54 kDa and 28 kDa by SDS-PAGE. It was found that while the optimal reaction temperature of the lectin from Korean mung bean was $60^{\circ}C$, that of the lectin from Chinese mung bean seeds was $50^{\circ}C$. It was found also that the most thermal stable temperature of the seed lectin from Korean mung bean seeds was $50^{\circ}C$ and the lectin from Chinese mung bean was $40-50^{\circ}C$. The lectin from Korean mung bean seeds showed the highest activity at pH 3.2 and the lectin from Chinese mung bean showed the highest activity at pH 6.2. It was identified that when treating a denaturant, thiourea and guanidine-HCl resulted in no hemagglutination, so they induced denaturalization. It was identified also that there was no hemagglutination with urea, so it did not induced denaturalization. They showed no septicity to 6 types of carbohydrates including D-glucose. In addition, the lectins from the two mung bean seed had specificity to metal ions.
To compare the physicochemical and gel properties of mung bean starches prepared by different purification methods, starches from Korean Eohul variety and Chinese mung bean (MB) with or without hull using alkaline solution or water as solvent were purified. The optimum conditions for making muk were investigated. Apparent amylose and total dietary fiber contents, water binding capacity, solubility and pasting properties by RVA were analyzed. The characteristics of starch gels (10% dry basis) were measured for 0 and 4 day stored at $4^{\circ}C$. The protein and ash contents were significantly different (p<0.05) and lowered in starch from dehulled MB using alkaline solution. The starches from dehulled MB using alkaline solution showed the lowest color differences. Apparent amylose contents of Eohul and Chinese starches showed 37.06-39.03% and 31.57-32.74%, respectively. Chinese starch was higher in water binding capacity but lower in solubility at $85^{\circ}C$ than others. Peak, trough, cold, and breakdown viscosities of Eohul starch were higher than those of Chinese one. Mung bean starch gel made immediately exhibited clear and glossy appearance but became whiter like milk. The crystallinities of starch and starch gel showed A and B types, respectively. The hardness, gumminess, and resilience of starch gel made immediately and hardness, cohesiveness, gumminess, and resilience of 4 day stored gels were different significantly (p<0.05). Especially, Eohul starch gels purified from hulled MB showed higher resilience (bending property) and hardness. Therefore, it was suggested that high quality muk would be made using MB starch purified from hulled Korean mung bean using water as solvent.decreased in contain more than 20% of SGP added groups. The optimal concentration of SGP was found in the range of less than 10%.
This study investigated the diversity of 323 mung bean accessions from Korea, China, and India, along with six cultivars, using 22 agronomical traits. The standardized Shannon-Weaver index (H') for the qualitative traits ranged from 0.11 (terminal leaflet shape) to 0.98 (pubescence density of pod). Likewise, the coefficient of variation for the quantitative traits ranged from 8.76% (days to maturity (DM)) to 79.91% (lodging rate (LR)), indicating a wide genetic variance. Hypocotyl color, pod color, seed shape, and seed coat surface lust showed different distributions among Korean, Indian, and Chinese accessions. Chinese accessions had the highest average germination rate, DM, days from flowering to maturity, and one-hundred seeds weight, followed by Korean and Indian accessions, while the number of seeds per pod (SPP) displayed the opposite trend, with all except SPP showing significant variation (p < 0.05). Similarly, plant height, days to flowering, and number of pods per plant increased in the order of India > Korea > China, with LR showing the opposite trend (p < 0.05). The mung bean accessions were grouped into four major clusters using hierarchical cluster analysis supported by principal component analyses, and all of the quantitative traits showed significant variations between the clusters (p < 0.05). Generally, the mung bean accessions investigated in this study exhibited wide phenotypic trait variations, which could be beneficial for future genomics studies. Moreover, this study identified 77 accessions that outperformed the controls. Consequently, these superior accessions could provide a wide spectrum of options during the development of improved mung bean varieties.

Mung bean(Vigna radiata (L.) R. Wilczek var. radiata) is a legume that originated in India. It is the third most cultivated legume in Korea after soybean and adzuki bean. Recently, the use of mung bean seeds and sprouts in trendy foods such as rice noodles and Chinese-style stir-fry is expanding thereby increasing its demand. Subsequently, improvement of mung bean varieties is also being actively conducted. In this study, the important agricultural characteristics of 324 mung bean germplasm were recorded and statistically investigated. Seeds of the mung bean germplasm were cultivated at an experimental field located in the National Agrobiodiversity Center (Jeonju, Korea) and 10 quantitative agricultural traits were investigated. Basic statistics, correlation analysis, and principal component analysis were then performed. The results showed significant variations of the quantitative traits among the germplasms (p < 0.05). The days to flowering, maturity, and growth were in the ranges of 31~80, 22~72, and 57~110 days with means of 45, 47, and 92 days, respectively. The highest frequency (f = 192) was for lodging score with 11~50%, while simultaneous maturity (f = 182) was below 50%. Other quantitative traits related to yield including the number of seeds per pod (CV = 10.9%), number of pods per plant (CV = 41.2%), and one-hundred seeds weight (CV = 36.6%) also showed significant variations. Correlation analysis showed positive correlations between the days to maturity and one-hundred seeds weight (r = 0.41) and the days to growth and simultaneous maturity (r = 0.39). In contrast, one-hundred seeds weight was negatively correlated to the number of pods per plant (r = -0.41) and the days to flowering (r = -0.29). Similarly, the days to growth and the number of pods per plant had a negative association with each other (r = -0.29). The principal component analysis revealed the number of days to maturity as the most influential variable along the first principal component (23.7%). In general, this study revealed wide variations in quantitative traits among the studied mung bean germplasm, which could provide several options for cultivar development.
Photostimulated luminescence (PSL) analysis was applied to determine whether some agricultural commodities of Korean and Chinese origins have been irradiated or not. Cereals (brown rice and buckwheat) and legumes (soybean, peanut, fed bean and mung bean) were exposed to gamma irradiation at 0.5 ∼4 kGy The Korean garlic was irradiated at 0.05 ∼0.5 kGy. Cereals and mung bean were tool applicable to the PSL measurement, showing the intermediate values between the lower (700 photon counts, negative) and the upper threshold values (5,000, positive), however PSL values determined for soybean, peanut, red bean and garlic were suitable for being discriminated between nonirradiated and irradiated samples. There was no significant difference in PSL properties accgrding to the sample origins.
Penicillium sp. PS-113 showed no toxicity against loach(Misgurnus mizolepis) and monnow(Oryzias latipes), a kind of biological indicator, for 96 hours at the concentrations of $1.0\;{\times}\;10^8$ conidia/ml inoculum. Additionally, it showed no toxicity against several plants such as Chinese cabbage(Brassica campestris subsp. napus var. pekinensis), mung bean(Phaseolus radiatus), etc. during their germination at the same concentration of inoculum.

To compare chemical properties of irradiated legumes (soybean, peanut, red bean, mung bean) produced in Korea and China, radiation-induced hydrocarbons from the samples were investigated. The legumes were gamma-irradiated at 0.5, 1, 2 and 4 kGy, from which lipid was extracted with hexane. Hydrocarbons were separated by florisil column chromatography and then analyzed with GC-MS method. The chromatograms of irradiated samples showed several radiation-induced hydrocarbons, which were affected by the fatty acid compositions of legumes. Hydrocarbons, such as 1, 7, 10-hexadecatriene (16:3),6,9-heptadecadiene (17 : 2), 1, 7-hexadecadiene (16 : 2) and 8-heptadecene (17 : 1), were predominantly detected in soybean, peanut and red bean irradiated at 0.5 kGy or above, whereas 17 : 1 was not found in mung bean. The detected amount of hydrocarbons increased with irradiation doses. There is no apparent difference in qualitative and quantitative profiles of the corresponding hydrocarbons depending on the origin of legumes.

The buffer activities of 72 species of natural pH adjusters in Chinese herb medicine materials of food materials by 100% acetic acid$({\mu}{\ell})$ titration until pH 4.0 in the $100m{\ell}$ of 1 % solution of the pH adjuster were evaluated for their abilities to retard acidification of Kimchi. There were 14 species above 100 of buffer activity such as Glycerehizae Radix(150), Siler divaricatum Benthan et Hooker etc. among selected Chinese herb medicine materials. In selected Chinese herb medicine materials, the buffer activities of Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Puerariae Radix, Chrysanthenum sinense+Puerariae Radix, Alismatis Rhizoma+Angelicae gigantis and Dioscoreae Rhizoma+Puerariae Radix were above 150 by same amount blending each other. This study was conducted to investigate the awareness and preference regarding Korean Samgyetang by the Chinese. An online survey was conducted to determine the awareness regarding Korean Samgyetang among the local Chinese, and a consumer preference test was performed to design the recipe of Samgyetang for Chinese students in Korea during April 2016. The results of the online survey showed that 88.2 % and 88.4 % of local Chinese men and women, respectively, were aware of Korean Samgyetang. Samgyetang recognition by the local residents of China was the highest in the Hubei region that includes Beijing. Traditional Samgyetang received the highest preference and Samgyetang with mung bean received the lowest preference in the preference test based on the Samgyetang type. In consumer preference tests among Chinese students, Samgyetang with broth of chicken feet (Sample-1) and Samgyetang with medicinal herbs (Sample-3) showed high acceptability than Samgyetang in water (Sample-2) in terms of the overall sensory properties. According to the results of the electronic tongue, Sample-1 showed a high value in terms of the strength of the saltiness and Sample-3 showed a high value in terms of the strength of bitterness and sweetness. Sample-2 showed a high value in terms of the strength of umami and sourness.
