To extend the shelf-life of salted Chinese cabbages, electrolyzed water (EW) was used to wash raw Chinese cabbages before the salting process (to control microbial growth), and different storage temperatures evaluated (0, 4, and $10^{\circ}C$). A tap water washing group (TW) was used for comparison. The initial total bacterial population was 5.36 log CFU/g in the TW treatment and 3.50 log CFU/g in the EW treatment. The EW treatment decreased bacterial numbers by approximately 2 log CFU/g compared to the TW treatment and kept this initial population number for 32 days at $0^{\circ}C$. The salinity had no difference during storage. In general, several factors (pH, reducing sugars, hardness, and transmittance) decreased over time, and decreased slowly with EW treatment and $0^{\circ}C$ storage. Overall, the salted Chinese cabbages with EW treatment showed lower bacterial populations compared to TW treatment, and when stored at $0^{\circ}C$, delayed decreases in quality.

The average temperatures for year and winter season have been risen by $0.7{\circ}C$ and $1.4{\circ}C$, respectively, during the last 30 years. Recently abnormal climate phenomena occurred frequently results in severe loss of vegetable crops grown in Korea. Specially, Chinese cabbages grown in the southern area of Korea are often significantly affected by sudden cold waves during winter season before harvest. This experiment was conducted to find out a potential role of covering materials on the protection of frost damage of 'Bularm' chinese cabbage in the winter season. The lowest temperature was $-15.8^{\circ}C$ in non-covering, $-8.1^{\circ}C$ in the PE film covering and $-4.6^{\circ}C$ in the non-woven fabric covering with PE film, respectively. The cumulative times below $4.0^{\circ}C$ were 145.5 hours for the non-covering treatment, 94 hours in the PE film covering and 14.5 hours in the non-woven fabric covering with PE film, respectively. The symptoms of frost damage were severe at non-covering chinese cabbages compared to polyethylene film (PE) non-woven fabric with PE covering ones. Microscopic studies showed the normal anatomical structure of palisade and spongy tissue of cabbage leaves covered with non-woven fabric with PE film. Leaf cells, however, were slightly damaged in cabbages covered with PE film alone, and both palisade and spongy cells were were completely collapsed in uncovered cabbages. The result of this study suggests that chinese cabbages is required to be covered with non-woven fabric with PE film to minimize the frost damage by sudden cold wave below $-7^{\circ}C$.

Summer cabbages in an alpine area are very sensitive to the fluctuations in supply and demand. Yield variability due to weather conditions dictates the market fluctuations of cabbage price. This study reports an empirical relationship based on weather conditions to estimate the growth and harvestable biomass of cabbages, factors that are critical for supply of summer cabbages. Based on experimental results testing sowing date effects over the two years from 1997 to 1998, a logistic equation was parameterized to predict leaf area expansion of summer cabbages. This logistic model for leaf area expansion was then combined with an empirical allometric relationship to predict total biomass. The final equation for estimating fresh weight accumulation of Chinese cabbage is given by: $$Fresh\;weight=3500/(1+{\exp}(5.175-1.153{\times}(6/(1+{\exp}(6.367-0.0064{\times}PHU)))))$$ Where PHU is potential heat units ($^{\circ}C$). The model performance was tested using weather data from 2003 to 2006 to predict fresh harvestable biomass. Overall the model performance was satisfactory with the correlation efficient ranging between 0.89 and 0.94 for each year.

Major characteristics of brines produced from the salting process were compared among winter, spring, and summer (highland) Chinese cabbages. The soluble-solids contents of final brine were decreased to 87~90% of initial brine during salting process, and showed 16.3, 15.8, and 14.4$^{\circ}$Brix for winter, spring, and highland Chinese cabbages, respectively. The pHs showed similar changes during salting process from pH 8.40~8.63 for initial to pH 6.03~6.24 for final. The high salting(12.4~14%) of final brine needs dilution or reuse treatemnt before discard. The COD of final brine were increased to 39.6 ppm, 52.1 ppm, 37.7 ppm, respectively. During salting total microbial counts of final brine were increased ten times from those of the initial brines for all samples.
Purpose: The aim of this study was to develop long-term storage technology for Chinese cabbage in order to extend the period of availability of freshly harvested products. The scope of the paper deals with the use of a cooler with a remote monitoring and control interface in conjunction with use of packaging film. Methods: A cooler with a real time monitoring system was designed as a low-temperature storage facility to control temperature and relative humidity (RH). The effects of storage in high-density polyethylene (HDPE) plastic boxes, 3% chitosan dipping solution, polypropylene film (PEF) with perforations, and mesh packaging bags on physiological responses were investigated. The optimal storage temperature and humidity for 120 days were below $0.5^{\circ}C$ and 90%, respectively. Physiological and biochemical features of cabbage quality were also analyzed: weight loss, texture, and sugar salinity, chlorophyll, reducing sugar, and vitamin C contents. Results: The cooler with a remote monitoring and control interface could be operated by an HMI program. A $0.5^{\circ}C$ temperature and 90% humidity could be remotely controlled within the cooler for 120 days. Postharvest freshness of Chinese cabbages could be maintained up to 120 days depending on the packaging method and operation of the remote monitoring system. In particular, wrapping the cabbages in PEF with perforations resulted in a less than a 5% deterioration in quality. This study provides evidence for efficient performance of plastic films in minimizing post-harvest deterioration and maintaining overall quality of cabbages stored under precise low-temperature conditions with remote monitoring and a control interface. Conclusions: Packaging with a modified plastic film and storage in a precisely controlled cooler with a remote monitoring and control interface could slow down the physiological factors that cause adverse quality changes and thereby increase the shelf life of Chinese cabbage.

The combined effects of a sanitizer mixture solution and antimicrobial ice on the quality of salted Chinese cabbages were examined. Salted Chinese cabbages were treated with a sanitizer mixture (comprised 50 ppm aqueous $ClO_2$ and 0.5% citric acid), packed in 2% brine and antimicrobial ice, and stored for 12 days at 4 and $10^{\circ}C$. Microbiological data on the salted Chinese cabbages after washing with the sanitizer mixture indicated that the populations of total aerobic bacteria, and yeast and molds decreased by 2.20 and 1.28 log CFU/g after treatment with the sanitizer mixture. In addition, coliforms population of salted Chinese cabbage after 12 days storage at $4^{\circ}C$ in the combined mixture of the sanitizer and antimicrobial ice was 3.22 log CFU/g, which was a significantly different from that of control (5.46 log CFU/g). The combined treatment of sanitizer mixture, antimicrobial ice, and low temperature at $4^{\circ}C$ suppressed reduction of pH and elevation of titratable acidity, resulting in delaying the growth of lactic acid bacteria. Differences in salinity, hardness, and Hunter's $L^*$, $a^*$, and $b^*$ values among treatments were negligible during storage at $4^{\circ}C$. Therefore, this study suggests that a combination of sanitizer mixture, antimicrobial ice treatment, and low temperature storage could improve the microbial safety and quality of salted Chinese cabbages during storage.

This study was conducted in order to develop a Chinese cabbage harvester attachable to tractors. For designing Chinese cabbage harvester in which laboratory and field tests were conducted with to determine feasible values design factors. To adopt the various sizer of C-cabbages, U-type soft rubber band was attached to the chain conveyor with an angle. Required torque of the conveyor axle was about 206-210kgf$.$cm. And the required peripheral speed of the disk cutter was 6.54m/s or more to have a clean session in root cutting. Three different harvest method were tested. The best harvesting method with minimum pulling force and damage was disk cutting flying just above the soil surface were the cut chinese cabbages are transferring to the holding conveyor attached soft rubber lug in prompt. Theoretical speed ratio of the tractor travel and feed of a chain conveyor was 1:1.2 with the attaching angle of 30 degree and 1:1.1 with the angle of 20 degree. Actual field experiment showed the speed ratio of 1:1.5 was the best because of the slip effect.
A recently developed Chinese cabbage cultivar, Shinhong Ssam, was cultured under different light conditions at a plant factory to evaluate effects of light on the production of functional compounds. The effects of the following combinations of red (R), blue (B), and white (W) LED light were compared to that of fluorescent light: R+B, R+W, and R+B+W. Under R+B light, the Chinese cabbage failed to grow well. In contrast, under R+W, R+B+W, and fluorescent light conditions, cabbages had similar growth rates. Cyanidin, the only anthocyanidin detected, accumulated in cabbages under LED conditions to levels more than 2-fold of that in cabbages grown under fluorescent light. Phenolic acid and flavonol levels varied subtly, whereas caffeic acid was found to be between 70- and 160-fold greater in LED-illuminated cabbages than in those exposed to fluorescent light. The amounts of free amino acids and sugars that affect the taste of vegetables were greater in the cabbages exposed to LED light than in those grown under fluorescent light conditions. In conclusion, R+W LED light produced Shinhong Ssam with greater nutritional value than those grown under R+B+W LED and fluorescent lights.
The effects of selenium (Se) and germanium (Ge) fertilization on the growth and quality of Chinese cabbages cultivated in spring and autumn and peppers cultivated in spring were investigated. $Se\;(Na_2SeO_4)\;and\;Ge\;(GeO_2)$ were supplied 5, 10, or 20 times in an aqueous solution of 0, 2, 4, or $8mg{\cdot}L^{-1}$ during the cultivation of Chinese cabbages and peppers. The fresh weight of Chinese cabbages increased by Ge fertilization with high concentration. But it was not affected by Se fertilization. The content of vitamin C increased by 10 times application with $4mg{\cdot}L^{-1}$ of Se or Ge. The concentration of Se in Chinese cabbage increased according to increasing concentration of Se fertilization. Se concentration was higher in the outer leaves than in the inner leaves. Se concentration in the mesophyll was higher than that in the midrib. Ge fertilization increased the uptake and concentration of Ge in autumn-cultivated Chinese cabbages. Se and Ge fertilization did not affect the fresh weight of peppers. The content of vitamin C in pepper increased by 20 times application of $2mg{\cdot}L^{-1}$ of Se. Vitamin C content in red peppers was twice as much as in green peppers.
