초등학생 자녀의 식습관 및 영양교육에 대한 학부모의 인식 조사 (The Perception of Parents on the Eating Habits and Nutritional Education of Their Elementary School Children)

  • The purpose of this study was to survey the concern for nutrition and the degree of nutritional knowledge of elementary school children's parents and their perception on the eating habits of their children. This study also investigated the effects of the concern for nutrition and the nutritional knowledge on the eating habits of their children. The questionnaire was answered by 383 mothers and fathers in the Kyonggi area. The general nutritional attitude and the perception of their children's eating habits were represented by frequencies and analyzed tv chi-square test, and Fisher's exact test. The difference of nutritional knowledge was represented tv mean and S.D. and was analyzed by one-way ANOVA test. Statistical significance was tested at the 0.05 level. The main results of the study are summarized as follows. 1) Parents had a comparatively deep concern for nutrition and a high level of knowledge. With increasing concern for nutrition, nutritional knowledge tended to be better and the higher proportion of participation in the nutritional education program increased. 2) The majority$(58.5\%)$ of the subjects thought that the eating habit of their children was not appropriate. The subjects had relatively high recognition about their children's eating habits and pointed out the unbalanced diet, snacks, and skipping a meal among their children's eating habits. Nevertheless, there were no significantly differences among the concern for nutrition of the parents and perception on their children's eating habits. As the parents' nutritional attitude, concern for nutrition, and nutritional knowledge can affect the children's eating habits, tire suggest that schools open nutritional education programs for parents in order to acquire proper food and nutrition information, and that schools and homes should be more closely connected.

Double burden of malnutrition in ethnic minority school-aged children living in mountainous areas of Vietnam and its association with nutritional behavior

  • BACKGROUND/OBJECTIVES: Although children of ethnic minority groups are experiencing a transition from a predominance of undernutrition to overnutrition, there is little evidence of a dual-malnutrition burden. Therefore, this study examined the double burden of malnutrition among school-aged ethnic minority children living in mountainous areas and its association with their diets. SUBJECTS/METHODS: A cross-sectional study was conducted from September 2019 to March 2020 in 3 mountainous areas of Northern Vietnam among 1,556 ethnic minority school-aged children. The prevalence of under-nutrition (stunting and thinness) and over-nutrition (overweight and obesity) were measured using the WHO 2006 child growth standards (height-for-age and BMI-for-age Z-score). Nutritional practices were evaluated by the frequency of food consumption based on a 4-level scale. RESULTS: The percentage of children with stunting and thinness were 14.0% and 5.4%, respectively, while the figure for overweight/obesity was 9.4%. The factors positively associated with stunting were living in a family with more than 2 children or being Muong/other ethnicities compared to the Tay ethnicity. Children who consumed fish/shrimps/crabs or milk weekly/daily were less likely to be undernourished compared to those who never consumed these foods. By contrast, children who never consumed foods rich in vitamin A precursors and vitamin A and fruit or consumed daily snacks/junk food were more likely to be overweight/obese. CONCLUSIONS: Undernutrition remains a common issue among school-aged children and adolescents of ethnic minority groups, while over-nutrition exists simultaneously. Public health nutrition programs promoting adequate diets and positive lifestyle changes related to nutrition are essential to tackle the double burden of malnutrition among ethnic minority children.

오전특식이 초등학생의 식습관 및 학교생활에 미치는 영향 (Effects of Occasional Mid-Morning Snacks on Dietary Behaviors and School Life in Elementary School Students)

  • The objective of this study was to investigate the effect of occasional mid-morning snacks (MMS) on dietary behaviors and school life among elementary students. The students, mothers, and teachers from two elementary schools in Seoul were selected. The schools have been provided a steamed sweet-potato or potato, or a piece of rice-cake or cake with a pack of milk as MMS 3-4 times a month for more than 3 years. Most students were satisfied with the MMS. Mothers and teachers reported that their children or students were happier, more active, and more energetic in school with MMS. Furthermore, the students answered that they could drink milk better on the day when the school provided MMS. Many students felt that it was relevant to serve a simple menu at lunch time if they were served MMS. Also, students became more interested in school meals or foods with MMS. In addition, mothers who had jobs wanted more frequent MMS. The degree of satisfaction about MMS of the teachers was higher than that of students or mothers. Many teachers thought that their students drank milk better with MMS and further, that it made students to drink more milk on other days. In conclusion, MMS had positive effects on the dietary behavior and school life of elementary students. Therefore, it can be a good option for eliminating skipping breakfast because it provides more nutrition, makes students drink more milk, and allows students to enjoy school activities more.

유치원 아동의 영양섭취실태와 성장발육에 관한 연구 (A Study on Every possible Correlation between Daily Food Intakes and Growth Rate of Kindergarden Children)

  • This study was designed to find out passible correlations between the growth rate and daily food intakes of two hundreds E and Y kindergarden children in Seoul, Korea. The subjects adapted in this study were 5-year-old boys and girls and their physical growth index was calculated by means of body weight and height. Dietary survey was performed by recording all the foods taken at daily basis for six days. The results are summarized as follows: 1. Living circumstances of the subjects. a) In most cases, subjects had two to three brothers and sisters. b) About 39% of boys were brought up by cow's milk and 34%, by mined nourishment with mother's milk and cow's milk, while approximately 40% of the girls were brought up by mother's milk and 37%, by mixed one. Of the whole subjects, 70% were weaned at the age of $7{\sim}18$ months. c) Fruit juices were introduced to children at about 3 months old in 40% of the subjects. d) Approximately 60% of the children had their meals regularly and the rest of the subjects had irregularlity in their meal, mainly because of excess consumption of snacks. e) About $20{\sim}40%$ of total income of sampled families were spent for foods. f) The most favorate main dish was steamed rice, other favorate foods were beef and pickled cabages for boys, and ham and dried laver for girls. The least favorate foods for both sexes were oyster, shellfish and various vegetabes. Fruits, juice, milk, and ice cream are more popular snacks among children. 2. Nutrition survey a) Insufficient caloric intakes were shown in both sexes, comprising 90% of daily recommended dietary allowences for boys and only 75% for girls. Iron intake was strikengly low, reaching only 62% of R.D.A. for boys and 72% for girls. b) The total caloric intake was composed of CHO 62%, protein 18%, and fat 21% respectively. c) The consumption of animal protein comprises 55% of total protein intake. d) The cereal consumption was found to be the highest at the level of 43%. e) When the total caloric intake was divided into each meal and snack, snack took the highest part in any other meal. Each figure showed as follow; breakfast 21%, lunch 27%, supper 22% and Snack 30% for boys, and 23%, 22%, 25% and 30% for girls, respectively. 3. The result of statistical analysis. a) There was a significant relationship between the growth rate and the caloric intake of the subjects at the level of 0.050.01.

일부 도시지역 중학생과 고등학생의 피로도에 영향을 미치는 요인 (Factors affecting to the Physical Fatigues in Middl and High School Students)

  • The purpose of this study was to set up the basic model to monitor the health status of the middle and high school students in the adolescent period, as well as to provide the fundamental data which might serve as the new standards for their better health maintenance and promotion. The collected data comprised the characteristics of the subjects in the three different fields of life such as school, family and everyday, which could affect their physical fatigues, and they were analyzed to determine the factors of significant influence upon their physical fatigues and to reveal their relativity. A total of 5,954 students at 6 boys' and girls' middle and high schools in Taejon City completed self-administered questionnaires(to measure Health Practice Index and others) asking about each of three life domains during the period March through June, 2000. The key study results were as follows; 1. The middle school students showed more subjective symptoms of fatigue which may be a marker reflecting physical health status, than the high school students. The higher scores were associated, based on school life, with the groups who were boys, who were in lower school grades, who achieved better academic performances and had better relationship with friends. 2. As for family life, the higher scores were in the groups whose financial conditions were better, whose parents showed more interest to their children, whose sense of satisfaction with family life was higher, and whose health status was better. 3. As for life styles, the individuals showed the higher scores in the groups who had breakfasts daily, who didn't have inter-meal snacks, who took regular exercises, who didn't smoke and drink than, their counterparts. 4. The higher level of fatigue was associated with the groups whose health conditions were good, who are satisfied with school life, who were boys rather than girls, who are satisfied with family life, who didn't have inter-meal snacks, who were in good relationship with friends, who achieved greater academic performances, who took regular exercises, who didn't smoke, and whose parents showed more interest in their children.

경기도 용인군 농촌형 급식시범국민학교 아동의 영양실태 조사 (A Nutrition Survey of Children Attending a Model Elementary School of Rural Type School Lunch Programs)

  • A nutrition survey of 209 children, 6 to 13 years old, in the namgok elemetnary school at Namsamyun, Yongin-gun, Kyonggi province, was undertaken in July of 1987, to investigate dietary and nutritional status. Mean value of hight was 98% of the Korean standard established by the Korean Standards Research Institute. However, in these terms, 7.7% of the subjects were proven to be short, mean value of weight was 94.5 of the Korean standard. However, in these terms, 9.3% of the subjects were proven to be moderatly underweight ; whereas 10.4% of the subjects were proven to be over weight. By the WHO criterion, 18.4% of the subjects showed lower figures of hemoglobin than anemic level of 12gm%/이. Mean urinary urea nitogen/creatinine ratio was 9.1$\pm$5.0 Carbohyudrate provided 68% of total energy intake ; protein accunted for 13% ; fat provided 19%. Energy intake was divided among breakfast, lunch, dinner and snacks in a percentage ratio of 22 : 44 : 24 : 13. The survey clarified that the elementary school feeding largely supplemented the inadequate intake of these chidren at home.

보육교사의 영유아 구강보건행태에 대한 조사 (A survey on childcare teachers' practice about preschool children oral health promotion)

  • Objectives : This study was to collect data about oral health to develop preschool children' oral health program. Methods : This research was from July 20th to August 20th, 2008 with self-administrated questionnaires by post and e-mail. The response rate was 57.6%(144 of 250). Results : 1. Daycare center provided fruit(64.6%), bread(56.9%), milk(82.6%), yoghurt(47.9%). daycare center tend to provide cariogenic snacks and drinks such as bread, yoghurt. 2. 73.6% of teachers said they reward children with sweets for good behavior. 3. Activities related to oral health was done in daycare center were : children brush their teeth with fluoride toothpaste(79.9%), catering staff receive the education about nutrition(79.2%), children participate in the activities and training related to food(78.5%), using sugary food at a birthday party(77.3%), annual dental health check-up by a dentist(65.3%). 4. The percentages of guiding principles based on documentation in the topic of the oral health were : coping with a situation where a child injured his or her teeth(76.4%), annual dental health checkup by a dentist(72.2%), teachers supervise children's tooth brushing using a fluoride toothpaste(70.8%). 5. Documented guide or course for oral health includes the following; training for coping with tooth damage(76.4%), annual dental health check-up(72.2%), and coaching children to brush their teeth with toothpaste that contains fluoride(70.8%). Conclusions : It is believed that for better children's oral healthcare, childcare teacher should be given a range of in-depth oral health program. Furthermore, through detailed analysis on the documented guide of oral health, cooperation from the associated organization will be required to have the guide placed at the childcare center.

비만 아동을 위한 영양 - 운동 병행 체중조절 프로그램 운영에 관한 연구 (Implementation & Evaluation of Nutrition-Exercise Program on Weight Control for Obese Children)

  • This study was conducted to investigate the evaluation of nutrition and exercise education program on weight control for obese children. The subjects of this study were 28 obese children and their parents living in Geyongnam area. The weight control program consisted of exercises for children and nutrition education for both children and their parents. The BMI values of the children were significantly reduced from $27.96\;kg/m^2$ to $27.22\;kg/m^2$ after 11 weeks (p < 0.001) and to $27.65\;kg/m^2$ after one year. Dietary habits and exercise patterns were also changed positively. For the children, while the frequency of eating breakfast and appropriate chewing habits were increased, the percentages of eating in inappropriate position and the frequency of buying snacks were decreased (p < 0.001). In terms of exercise, the proportion of doing exercise more than 30 minutes, participating in physical activity classes actively, and walking rather than taking a car were significantly increased. Nutrition knowledge of both the student and parent respondents were significantly increased when measured immediately after the education and even a year after compared to their knowledge status measured before the program (p < 0.001). Both the students (82.1%) and parents (96.4%) were satisfied with the overall weight control program. Exercise therapy was chosen as the most beneficial content. Reparticipation intention was comparable between the students (28.6%) and their parents (67.9%). A year after survey results revealed that 71.4% of students controlled their weight by doing regular exercises (55.0%) and controlling overeating (45%). Parents often applied healthy cooking methods (89.3%) and low calorie menus (64.3%), which they learned from nutrition education. Most parents perceived that the weight control program was helpful for their children (89.3%) and themselves (92.9%) as well.

강원도 군지역 유아들의 구강관리 행태와 치아 우식증 (Dental Caries and Oral Health Behavior of Kindergarten Children in a County Area of Kangwondo)

  • In order to investigate dental caries and oral health status of Kindergarten children, a study was conducted from 1st December, 2000 to 21st January 2001. The subjects were consisted of 117 toddler and pre-school children who were enrolled in 4 kindergartens in a county of Kangwondo. A structured questionnaire was used for dental health behavior and dental examination was given by dentist for detecting dental caries The result were as follows: 1. As for the oral health behavior, 71.8% of subjects brushed their tooth twice a day, 18.8% of them once a day, 8.5% of them 3 times a day and 0.9% of them do not brushed. 68.6% of children brushed their teeth in the morning and evening, 20.7% of them before go to bed, 7.4%, and 2.5% of them after meal and before brak first. 71.7% of children used combined with scrubbing and vertical method, 28.3% of them used scrubbing method. 61.5% of their mother answered they observed oral status of children regularly. 2. Prevalence rate of dental caries (dft) was 68.4%. The prevalence rate of dft were significantly higher in the old age children, mother's lower educational level. nourishing with breast feeding, using bottle, irregular eating of snacks 3. 전북지역 어린이급식관리지원센터에서 제공하는 어린이집 간식메뉴의 유형, 식품 다양성 및 학부모 만족도 연구 (Study on the snack menu pattern, food diversity and satisfaction of parent provided by Center for Children's Foodservice Management in Jeonbuk area)

  • 본 연구는 전북지역 어린이급식관리지원센터에서 어린이집에 제공하는 2,432개의 간식메뉴의 유형과 학부모대상으로 간식의 품질특성에 대한 중요도와 수행도를 파악하고, 품질특성 간의 영향력을 조사하였다. 오전간식 메뉴의 79.1%는 1 품목, 오후간식의 59.1%는 2 품목, 메뉴의 스낵 음료 조합패턴은 오전간식은 F 66.1%, F+B 18.7%, 오후간식은 F+B 60%, F 40.1%이었다. 식품군별 제공비율 분석결과, 곡류는 오후간식의 87.2%, 채소류와 과일류의 오전간식 비율은 각각 21.7%, 42.4%, 고기 생선 달걀 콩류의 오전과 오후간식 비율은 15.9%, 15.7%, 우유 및 유제품류의 오전과 오후간식 비율은 34.1%, 36.6%이었다. 오전간식의 72.6%는 비조리, 오후간식은 85.6%가 조리메뉴이었다. 식품군패턴 분석결과, 오전간식은 F (31.6%), D(12.0%), F+D (10.1%), G (7.9%)의 순이며, 오후간식은 G(34.4%), G + D (27.4%), G + V (8.2%), G + M (6.3%)의 순이었다. 식품군 점수 (DDS)는 오전 1.46점, 오후 1.67점이었다. 식품군별 다빈도 메뉴품목 분석결과, 곡류는 오전 간식으로 죽류 51.8%, 오후간식은 밀가루 식품류 (34.5%), 빵류 (25.9%)이며, 고기 생선 달걀 콩류는 오전에 육류(28.7%), 콩류 (24.5%), 견과류 (23.6%)이며, 오후는 가공육류 (30.2%), 어패류 (24.3%)이었다. 채소류 중 숙채소는 오전 67.8%, 오후 86.0%이며, 과일류는 오전에 과일류(99.3%), 오후에는 주스류 (67.9%), 우유 및 유제품류는 주로 우유 (오전 71.6%; 오후 82.5%)이었다. 학부모들의 간식메뉴에 사전 인지수준은 5점 기준 4.09점, 자녀가 영아, 국 공립어린이집일 때 사전 인지수준이 높았다. 어린이집 간식에 대한 전반적인 만족도는 5점 기준 4.06점, 직업이 있는 경우, 영아 및 국 공립어린이집일 때 만족도가 높았다. 간식의 19개 품질특성의 전체 중요도 4.42점, 전체 수행도 4.25점 이었다. 중요도가 가장 높은 특성은 '식재료의 위생' (4.79)이며, '제공 시간' (4.04)이 가장 중요도가 낮았다. 수행도는 '식재료의 위생' (4.38)이 가장 높으며, '제공 양' (4.13)이 가장 낮았다. 간식에 대한 전반적인 만족도에 미치는 관련변수들의 상대적 영향력 분석결과, 1단계에서 설명해주는 변인은 '주 메뉴와의 균형' (${\beta}=0.219$, p < 0.05), 설명력은 33.1% (F = 11.662, p < 0.001)이었다. 2단계에서 위생특성 투입에 따른 총 설명력은 35.9%(F = 3.372, p < 0.05)이었다. '종사자의 위생'의 영향력이 가장 크며 (${\beta}=0.245$ p < 0.05), 그 다음은 '주 메뉴와의 균형' (${\beta}=0.208$, p < 0.05), '제공 양' (${\beta}=0.176$, p < 0.05)의 순이었다. 이상의 결과, 전북지역 어린이급식관리지원센터는 아동의 등원시간 및 활동정도를 고려하여 오전과 오후의 간식메뉴를 구성하고 있으며, 이에 대한 학부모들의 만족도는 높았으나 메뉴구성 가이드라인과 비교할 때 메뉴의 다양성에서 개선이 필요하겠다. 따라서 향후 지역의 거점센터를 중심으로 간식메뉴 구성을 위한 기준마련이 필요하겠다.
