Effects of chlorine dioxide gas fumigation on the storage quality of astringent persimmon (Diospyros kaki T.) Cheongdobansi

  • Because of their short harvest season, large quantities of persimmons must often be processed within a limited time. Therefore, new methods to extend their storage life are required. This study examined the effects of chlorine dioxide (ClO2) gas fumigation for various treatment periods on the storage quality of astringent persimmons Cheongdobansi under low-temperature conditions. The conditions consisted of continuous treatment with ClO2, treatment for 2 weeks with ClO2, and no treatment, all of which are stored at low temperatures. Control samples (storage 0 days) without any treatment were prepared and all experiments were conducted for 10 weeks at two-week intervals. The ClO2 gas treatment maintained the moisture content, color value, hardness, soluble tannin content, and sensory characteristics. However, ClO2 gas treatment did not affect the soluble solids, pH, and total sugar content. In particular, continuous treatment with ClO2 maintained the storage quality after 6-8 weeks of storage, particularly the hardness and weakness (sensory evaluation). The results suggest the potential of continuous treatment with ClO2 as a highly effective method for maintaining the freshness of Cheongdobansi.

  • Alcohol fermentation conditions were investigated using 'Cheondobansi' astringent persimmon (Diospyros kaki T.) for the study of persimmon wine and distilled liquor, The optimal yeast strain for 'Cheongdobansi' astringent persimmon alcohol fermentation was Saccharomyces kluyveri DJ97, which showed 10.8% of alcohol concentration, 96.25% of alcohol yield, and 935 ppm of methanol. The initial conditions of $22^{\circ}Brix$ and 120%(v/w) water addition resulted in the highest alcohol concentration of 10.7%. The alcohol concentration was higher in pectinase non-treated samples than in pectinase-teated samples. Lower concentrations of acetaldehyde and n-propanol were measured for the pectinase-treated sample than for the non-treatment samples. However, the methanol concentration of the pectinase-teated sample was higher than that of the pectinase non-treatment sample.

Quality Analysis and Grading of Sliced-Dried 'Cheongdobansi' Persimmons Marketed in Korea (시판 청도반시 감말랭이 제품의 품질분석 및 등급화)

  • Quality analysis and grading of sliced-dried 'cheongdobansi' persimmons marketed in Korea were investigated by analyzing the correlation coefficients between the quality properties and overall preference of the samples. There were appreciable differences in weight, length, width, thickness, soluble solid, and Hunter' color values of sliced-dried persimmons manufactured by seven different companies. The content of soluble solid was ranged from 43.44 to $47.92^{\circ}Brix$. Hunter values were 41.17-54.09, 5.62-12.36, and 10.51-20.59 for L(lightness), a(redness), and b(yellowness), respectively. In sensory test, no astringency, sourness, and musty were found in all the test samples. Sensory color, hardness and sweetness were different for each manufacturing company, while the overall acceptability was not significantly different among the samples. Qualities of samples graded according to sensory color and hardness revealed differences. The results showed that quality properties of sliced-dried 'cheongdobansi' persimmons were not uniform, however sensory color and hardness could be used as an index for quality grading.

Comparison of Fruit Quality of Various Astringent Persimmon Cultivars during Storage in Atmosphere Controlled with High $CO_2$Concentration (떫은감의 품종별 고농도 이산화탄소의 저장효과)

  • Four cultivar of astringent persimmon(Diospyros kaki L. Cheongdobansi, Sagkoksi, Gojongsi, and Hachiya) were evaluated for quality during 160 days storage in condition of air, 12%CO$_2$+3%CO$_2$, and 16%CO$_2$+ 3%CO$_2$at 0∼2$^{\circ}C$. In the fruits of Cheongdobansi, Sagkoksi, and Gojongsi cultivar, the soluble solids content did not change significantly during storage among treatment, but in the fruits of Hachiya cultivar it decreased during storage in the codition of high CO$_2$concentration. Fruits of Cheongdobansi and Sagkoksi, which were stored in higher CO$_2$concentration, had firmer hardness, less weight loss and decay, showed greater rentention of initial peel color, maintained best qulity than air-stored fruit, but had high tannin contents. And it was necessory to remove astringency for edible fruits.

Change in the Polyphenol Content of Cheongdobansi Persimmon Fruit during Development ('청도반시' 과실의 성장 중 일반 및 폴리페놀 성분의 변화)

  • The proximate composition, and the levels of total phenols, phenolic acids, and DPPH radical scavenging activity in Cheongdobansi persimmon fruits assayed during development (from July to October), were investigated. All of moisture, crude protein and crude fiber contents decreased as picking time was delayed, however, crude fat content rose. Crude fiber content increased after September. Total phenol content tended to fall during development. The principal phenolic acids were chlorogenic acid, caffeic acid, p-coumaric acid and salicylic acid; the level of each phenolic acid tended to decrease during development. DPPH radical scavenging activity fell as picking time was delayed. Thus, harvest time influenced the levels of chemical components and the antioxidative properties of persimmon fruit. It follows that unripe fruit may be utilized as a raw material yielding many useful products.

Chemical Components and Antioxidant Activity of Persimmon (Diospyros Kaki Thunb) Leaves (감잎의 품종별 화학성분과 항산화활성)

  • As a foundational study for notifing excellence of persimmon leaves tea, the chemical component and antioxidant activity were investigated in persimmon leaves from Dungsi, Gabjubaekmok, Weulhasi and Cheongdobansi and green tea leaves. Total sugar contents in all persimmon leaves more higher than that of green tea leaves, and the highest free sugar contained in persimmon and green tea leaves was sucrose. Free sugars present in persimmon and green tea leaves were composed of sucrose, glucose, fructose, maltose and xylose. Sucrose and fructose took more than 70% of total sugar contents. 31∼32 kinds of amino acid were detected in persimmon leaves and 35 kinds in green tea leaves. And total amino acids contained in persimmon leaves were Dungsi, Gabjubaekmok, Weulhasi and Cheongdobansi, respectively 60.40 nmol/${\mu}$L, 53.21 nmol/${\mu}$L, 52.29 nmol/${\mu}$L and 47.58 nmol/${\mu}$L. Total amino acid contents in green tea leaves was the most abundant of all as 114.72 nmol/${\mu}$L. The contents of vitamin C in persimmon and green tea leaves were in the range of 0.015∼0.089% and 0.01%, respectively. Vitamin C was significant higher content in the persimmon leaves than in green tea leaves. Caffeine was not detected in all persimmon leaves, but the caffeine content of green tea leaves was 6.63 mg/l00 g. The content of catechin was showed in the orders of Cheongdobansi, Gabjubaekmok, Weulhasi, Dungsi and green tea leaves; 0.35%, 0.34%, 0.24%, 0.18% and 0.07%, respectively. The contents of gallic acid in Dungsi and Gabjubaekmok were 0.32% and 0.20%. That of green tea was 1.41%, it was the highest content in all samples. The content of calcium in Chengdobansi was most abundant in all samples as 3516.14 ppm, it was 4∼5 times as that of green tea leaves. Flavor component pattern among persimmon leaves was similar, but that of green tea leaves was different. The IC50(${\mu}$g) value of Dungsi, Weulhasi, Gabjubaekmok, Cheongdobansi and green tea were 64.5, 42.0, 47.0, 64.0 and 19.0 respectively.

Freezing Hardiness According to Dormancy Level and Low Temperature in Persimmon (Diospyros kaki) (감나무의 휴면정도 및 저온에 따른 내동성 비교)

  • Freezing hardiness of winter bud and branch according to dormancy level and low temperature, in persimmon (Diospyros kaki) cultivars, was investigated by electrolyte leaching rate, triphenyltetrazolium chloride (TTC) test, and sprouting. Electrolyte leaching rate was lowest in branch of 20th January and was highest in the 20th March. The electrolyte leaching rate of 'Fuyu' and 'Cheongdobansi' was high in the 20th January and was low in the 20th February, but 'Uenishiwase' and 'Nishimurawase' was opposed to that. 'Hachiva' was the middle level in the cultivars. Absence rate by TTC test was highest in the 20th January and was low in the others. The 20th March had a great decrease in $-10^{\circ}C$ treatment. The absence rate of 'Fuyu' and 'Uenishiwase' was low in the 20th January and March and was high in the 20th February. 'Nishimurawase' and 'Hachiya' had a high level irrespective of dormancy level. Sprouting was highest in the 20th February and was lowest in 20th March. Most cultivars were not sprout in $-20^{\circ}C$ treatment and 'Fuyu', 'Nishimurawase' and 'Cheongdobansi' was a little high level irrespective of dormancy level. 'Hachiya' was only high in the 20th January. Thus, freezing hardiness of persimmon was very weak low temperature after dormancy breaking and was not different between astringent and non-astringent persimmon.

Physical Characteristics of Deastringent Persimmons during Modified Atmosphere Storage as Affected by Packaging Materials (포장재에 따른 탈삽감의 MA 저장 중 물리적 특성)

  • To find the effect of packaging materials(LDPE $60{\mu}m$, Ceramic $30{\mu}m$ and $60{\mu}m$) to enhance the shelf-life of de-astringent persimmon, the fruits used were the astringent persimmons of "Cheongdobansi" and astringency was removed in $CO_2$. De-astringent persimmon were stored in MA for 140 days at $5^{\circ}C$. During storage, the concentration of oxygen was decreased to 5.2%, while the concentration of carbon dioxide was increased to 5.2% from 18 days. But the concentration of oxygen and carbon dioxide was maintained at a constant concentration until the end of storage. The rate of weight loss was gradually decreases for the storage time elapsed and has better in ceramic $60{\mu}m$ packaging than other packaging materials. Fruit hardness and color value were well maintained in ceramic $60{\mu}m$ packaging. Tannin content and soluble solid were not significant difference among the packaging conditions. Ethanol and acetaldehyde content were decreased during early period of storage and then increased. As a result of objective analysis, de-astringent persimmon storage in ceramic $60{\mu}m$ was more effective than other storage conditions.

Softening of Astringent Persimmon (Diospyros kaki Thunb.) as Affected by Harvest Time, Temperature, and Ethephon Treatment (수확기, 온도 및 Ethephon 처리에 따른 떫은감 (Diospyros kaki Thunb.)의 연화)

  • This study was conducted to evaluate the effect of harvest time, temperature and ethephon on the softening of astringent persimmon 'Cheongdobansi'. The persimmon was harvested on Sep. 21 (early season harvesting) and Oct. 11 (optimum season harvesting). Quality changes were evaluated at 10, 15 and $20^{\circ}C$ after ethephon treatment. Seventy percent of hardness decrease occurred during the first 2 days of treatment at 15 and $20^{\circ}C$, and hardness was slowly decreased after 6 days. The treatment of $10^{\circ}C$ was not effective on inducing fruit softening. Soluble tannin content was sharply decreased 6 days after ethephon treatment at 15 and $20^{\circ}C$ regardless the harvest time, whereas this was much slower in control. Hunter 'L' and 'b' values were increased until 2 days, and then decreased with the early harvested persimmon. The Hunter values were decreased until the 8th day of storage in fruit harvested at optimum season.

Effects of Ethylene Treatment on Postharvest Quality of Astringent persimmon 'Cheongdo-bansi' (떫은감 '청도반시' 과실의 수확 후 품질에 미치는 에틸렌의 영향)

  • This study was conducted to investigate the optimum storage temperature and the effect of ethylene on the postharvest quality of astringent persimmon (Diospyros kaki L) 'Cheongdobansi' fruits. We treated fruits with $10{\mu}L{\cdot}L^{-1}$ ethylene at 20, 15 and $10^{\circ}C$. Our results indicated that higher storage temperature rapidly reduced firmness and astringency. The soft persimmon fruits stored at $15^{\circ}C$ showed the best quality relative to the fruits stored at $20^{\circ}C$ and $10^{\circ}C$. Our findings also showed that ethylene generators, which are sold on the market, can effectively induce persimmons to soften in plastic film.
