  • The goal of this study was to investigate the chemical and microbiological characteristics of kimchi products distributed in Japan (5 brands, J-products) and Korea (2 brands, K-products). When their average analyses were compared, J-products showed higher values in pH, total sugar and acetic acid contents, while K-products showed higher values in number of lactic acid bacteria, sugar alcohol and lactic acid contents including textural hardness or chewiness. In addition, the analysis showed great variation in composition levels regarding pH, total sugar and acetic acid contents of J-products, and this fact revealed that different manufacturing processes are being attempted in Japan. Interestingly, some J-products had high concentrations of acetic acid with little mannitol, as this result implies that some manufacturers in Japan produce kimchi by adding acetic acid or lactic acid to control the rate of lactic acid fermentation. The result of this study elucidates the Japanese consumer's taste preference as well as the manufacturing processes in Japanese companies.

  • Objectives: This study was conducted to evaluate the prevalence rate of multiple chemical sensitivity/idiopathic environmental intolerance(MCS/IEI) among workers in the Gumi industrial complex around the region of accidental release of hydrogen fluoride in 2012. Materials: We evaluated MCS/IEI using the Korean version of the Quick Environmental Exposure and Sensitivity Inventory(QEESI). A total of 535 workers at six manufacturing companies in the Gumi industrial complex were investigated using self-administered questionnaires from February to March 2015. After exclusion of incompletely answered questionnaires, 271 were analyzed. Results: The prevalence rate and proved positive rate of MCS/IEI were 5.9%(16 out of 271) and 3.7%(10 out of 271), respectively. The scores of chemical intolerance, other intolerance, symptom severity and life impact were significantly higher(p<0.05) in females than those of males. In terms of masking index scores, males showed significantly higher(p=0.003) than female. The self-reported MCS/IEI prevalence rate, 7.7%, of workers exposed to hydrogen fluoride in 2012 was higher than no-exposure group(5.6%), but not statistically significant(p=0.815). Conclusions: Although the prevalence rate of MCS/IEI symptoms of workers exposed to hydrogen fluoride gas in 2012 was not significantly higher than no-exposure group, it is necessary to conduct follow-up study on the exposure group of hydrogen fluoride.

  • This research will examine the probabilities of future global resource crisis and what significance and effect will come upon our economy through the rise of the cost of resources. From now on, the lack of the supply of global resources will dull the world economic growth. Not only that, but the direction of each country's economic development will be decided by the appropriate measure to the resource crisis. If we are to sustain this inefficient industrial structure, as a country with high dependancy on foreign resources, Korea might face macroeconomic shock and the loss of industrial competitiveness. Therefore, we must increase the efficiency of the resource usage in the manufacturing industry such as the chemical and steel industry, and now is a period when we must add high value to our products. Henceforth, the structural constraints of supply will be the root cause of resource crisis. Thus, we must lead the subject of the economic agencies, such as companies and consumers, so that they will be able to adapt to a new paradigm called the fundamental lack of resources, rather than temporal crisis management. The Korean economy must adjust the environment for industry transformation to be achieved.

  • This study evaluated a preventive information communication system for the storage, handing, and transportation of hazardous materials according to the hazardous materials safety management law of Korea. At present, the chemical management system has very little information on accident responses due to a problem in the initial response. Therefore, this study was designed to improve the hazardous materials safety management law as an advanced method for simultaneous accident prevention and response, such as GHS system. This can also cause confusion in industry, such as manufacturing and import-export companies, because safety management laws and the GHS system are very different from the hazard classification systems. This study suggests a harmonization plan between the hazardous materials safety management law and the GHS classification system through an analysis of the hazardous materials classification system of major advanced countries.

  • The global demand for carbon neutrality in response to climate change is in a situation where it is necessary to prepare countermeasures for carbon trade barriers for some countries, including Korea, which is classified as an export-led economic structure and greenhouse gas exporter. Therefore, digital transformation, which is one of the predictable ways for the carbon-neutral transition model to be applied, should be introduced early. By applying digital technology to industrial gas manufacturing facilities used in one of the major industries, high-tech manufacturing industry, and hydrogen gas facilities, which are emerging as eco-friendly energy, abnormal detection, and diagnosis services are provided with cloud-based predictive diagnosis monitoring technology including operating knowledge. Here are the trends. Small and medium-sized companies that are in the blind spot of carbon-neutral implementation by confirming the direction of abnormal diagnosis predictive monitoring through optimization, augmented reality technology, IoT and AI knowledge inference, etc., rather than simply monitoring real-time facility status It can be seen that it is possible to disseminate technologies such as consensus knowledge in the engineering domain and predictive diagnostic monitoring that match the economic feasibility and efficiency of the technology. It is hoped that it will be used as a way to seek countermeasures against carbon emission trade barriers based on the highest level of ICT technology.

  • Five commercial Korean fermented soybean pastes were purchased to investigate biogenic amines (BAs) levels, microbiological and chemical qualities in commercial Korean fermented soybean paste. Bacillus spp. were observed about $10^7{\sim}10^9$ CFU/g levels, and lactic acid bacteria were $10^2{\sim}10^3$ CFU/g or not detected in products. The pH values have ranged from 5.05 to 5.75, and amino nitrogen (AN) contents were $252.0{\sim}557.2$ mg% in showing different degrees of aging. Detected Biogenic amines were putrescine (PUT), cadaverine (CAD), tryptamine (TRP), spermidine (SPD), spermine (SPM), histamne (HIS), tyramine (TYR), and agmatine (AGM) in different levels by companies. There are some limitation found to explain the direct relationships between biogenic amines contents and microbiological or chemical qualities in commercial fermented soybean paste because of different manufacturing steps.
