  • The demineralizing effect of chelating agents(Maleic acid solution, EDTA salts solutions; disodium-, trisodium- and tetrasodium-EDTA) on hydroxyapatite(HA) for the root canal dentin treatment was investigated. Dissolution of Ca from HA was increased with increasing immersion time in chelating solutions. Among the EDTA salts solutions, tetrasodium-EDTA was least effective in dissolving Ca out from HA, and trisodium-EDTA was the most effective. Trisodium-EDTA solutionmight be more effective in removing the smear layer compared to tetrasodium-EDTA solution.

  • This study was to investigate the influence of pH on the antioxidant activity of melanoidins formed from glucose (Glc) and fructose (Fru) with lysine enantiomers in the Maillard reaction. Melanoidins formed from D-isomers were found to be effective antioxidants in different in vitro assays with regard to the ferrous ion chelating activity, 1, l-diphenyl-2-picryl-hydrazil (DPPH) radical scavenging activities, ferric reducing/antioxidant power (FRAP), and 2,2'-azinobis(3-ethylbenothiazoline-6-sulfonic acid) diammonium salt (ABTS) radical scavenging activity. In particular, the chelating activity of these melanoidins at a pH of 7.0 was greater than those with pH of 4.0 and 10.0. The chelating activity and DPPH radical scavenging activity of the melanoidins formed from the Glc systems were higher than those of the melanoidins formed from the Fru systems. However, the FRAP and ABTS radical scavenging activity of these melanoidins were not different according to pH level, with exceptions being the Fru systems.

  • Chelating triphosphines were applied to freeze the fluxionality and to minimize the number of isomers found in the monophosphine analogues and this technique was proved to be useful. RuH(NO)$P_3$($P_3$; Cyttp, ttp and etp) complexes were characterized to have similar trigonal bipyramidal structures with linear NO groups. Cyttp prefers to have a meridional geometry while etp prefers a facial one and ttp complexes are mixture of these two isomers. The crystal structure of RuH(NO)(Cyttp) has been determined to have a distorted trigonal bipyramidal structure with a linear NO in the equatorial plane. The crystals are orthorhombic, space group $P_{nma}$, with unit cell dimensions a = 16.356(2), b = 20.474(2), c = 10.915(l) ${\AA}$, V = 3655 ${\AA}^3$, Z = 4, R = 0.035 and $R_w$ = 0.034 for the 2900 intensities with $F_o^2 >3{\sigma}(F_o^2)$ and the 208 variables.

  • The reaction of ammonium ferric sulfate with sodium borohydride in laponite sol yields nanoiron colloidal solution. This solution in air forms transparent yellow brown solution. The resulting solution reacts with bidentate chelating ligands. The reaction products are characterized by UV-Vis absorption spectroscopy and X-ray diffraction. All compounds show metal to ligand charge transfer band in the region of 400~650 nm in UV-Vis absorption spectra. This indicates the formation of iron-ligand complex by air oxidation of nanoiron. Also, XRD patterns exhibit that the iron-ligand complex is intercalated in the interlayer of laponite.

  • To develop a natural antioxidant from three Chrysanthemum species, flower and shoot extracts of Chrysanthemum frutescens, Chrysanthemum morifolium and Chrysanthemum zawadskii ssp. naktongense were obtained and their phenolic compound contents, scavenging effects on DPPH and ABTS radicals, ferrous ion chelating effects and inhibition activity on lipid peroxidation of linoleic acid were studied. Shoots of C. morifolium showed the highest levels in all above mentioned analyses. Especially, shoot extract of C. morifolium had high scavenging activities on ABTS radicals, similar to ascorbic acid or BHT. Ferrous ion chelating effect was the lowest in a C. morifolium shoot extract, but the highest in a C. morifolium flower extract. Inhibition activity on lipid peroxidation of linoleic acid was the highest with C. frutescens and C. morifolium shoots, but activity was lower than BHT. From present study, a shoot extract of C. morifolium is demonstrated as a valuable source for the development of a natural antioxidant. However, due to its low levels of ferrous ion chelating effects and inhibition activity on lipid peroxidation, a combination of other antioxidants with C. morifolium extract is recommended for the development of a new antioxidant.

  • The present experiments were carried out to develop new antioxidants from EtOH extract of flower resources of Compositae plant concerning total polyphenol and flavonoid content, scavenging activities on DPPH and ABTS radicals, ferrous ion chelating effects, and inhibition activity on lipid peroxidation of linoleic acid. EtOH extracts from Matricaria recutica, Cosmos bipinnatus, Synurus deltoides, and Aster pilosus showed higher level of total polyphenol content, and the flavonoid content was the highest in C. bipinnatus. However, scavenging activity on DPPH radicals was the highest in EtOH extract of Hieracium pilosella-1.1 times higher than BHT control. The activity on ABTS radical scavenging was the highest in EtOH extracts of M. recutica and S. deltoides-2.0 and 1.2 times higher than ascorbic acid, and 2.2 and 1.3 times higher than BHT, respectively. Ferrous ion chelating effects was also the highest in M. recutica, but the level was much lower than EDTA. Inhibition activity on lipid peroxidation of linoleic acid, measured at every 4 days for 32 days, was superior and longer lasting with M. recutica and Achillea alpina, compared to that of BHT. In conclusion, antioxidant activity was different depending on species, so selection of proper plant species for the development of potential antioxidant is very important.

  • The attempts to develop natural antioxidants have been made with aerial part of 16 Compositae species by analyzing their phenolic compound contents, scavenging activities on 1,l-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radicals, ferrous ion chelating effects and inhibition effects on peroxidation of linoleic acids. Total polyphenol and flavonoid contents were highest in Matricaria recutica. Scavenging activity on DPPH and ABTS radicals were highest with extracts of Echinacea angustifolia and Serratula coronata var. insularis f. insularis, respectively. Aerial palt extracts of all species showed lower DPPH scavenging activity than ascorbic acid and 2,6-Di-tert-butyl-4-methylphenol (BHT). But Serratula coronata var. insularis f. insularis demonstrated higher ABTS scavenging activity than ascorbic acid and BHT. In Hieracium pilosella, Echinacea angustifolia, Matricaria reculica extracts showed higher ABTS scavenging activity than BHT. Ferrous ion chelating effects was highest with Matricaria recutica extract, but the effects were much lower than ethylenediaminetetraacetic acid (EDTA). The inhibition activity in lipid peroxidation of linoleic acids was highest in Eupatorium japonicum with 90.06% inhibition 4 days after reaction and 40.52% after 24 days. This demonstrated higher inhibition activity and longer lasting than BHT. Aerial part of Matricaria recutica for extraction source, rather than flower, has higher potential for antiox.idant material. In conclusion, development of natural antioxidants in Compositae is possible by studying antioxidant activity of each species.

  • Chelated titanium alkoxides are hydrolysed showly and stable enough to prepare multicomponent gels of titania without its precipitation due to the fast hydrolysis of Ti alkoxide. The alkoxy groups of chelated titanium alkoxide are hydrolysed as fast as that of titanium alkoxide but the chelating groups are stable even in aqueous solution. The chelating groups showed different rates of hydrolysis in aqueous ammonia solution and water added one. Those rates were monitored with UV-VIS spectrophotometer by using their unique absorption bands before and after hydrolysis.

  • Cryotin F could be used for hydrolyzing shrimp byproducts into bioactive ingredients, which could be used as value-added products. The objective of this study was to investigate the optimum condition for antioxidative activities of the enzymatic hydrolysate produced with Cryotin F using response surface methodology with central composite rotatable design. Shrimp byproducts (shells and heads) were hydrolyzed with Cryotin F. The experimental ranges of the independent variables for 20 experimental runs were 28.2-61.8${^{\circ}C}$ reaction temperature, pH 6-10 and 0.5-5.5% enzyme concentration. The degree of hydrolysis for the reaction products was measured. Their antioxidative activities were measured using 1,1-diphenyl-2-picryl-hydrazyl (DPPH) scavenging activity and Fe-chelating activity. The experimental method with central composite rotatable design was well designed to investigate the optimum condition for biofunctional ingredients with antioxidative activities using Cryotin F because of their high R2 values of 0.97 and 0.95 for DPPH-scavenging activity and Fe-chelating activity, respectively. Change in enzyme concentration did not significantly affect their antioxidative activities (p<0.05). Both DPPH scavenging activity and chelating activity against Fe for the enzyme hydrolysates were more affected by the pH of enzyme hydrolysis than by their action temperature. DPPH-scavenging activity was higher at acidic pH than alkali pH, while chelating activity against Few was inversely affected. Hydrolysate of shrimp byproducts showed high antioxidative activities depending on the treatment condition, so the optimum treatment of enzymatic hydrolysate with Cryotin F and other proteases can be applied to shrimp byproducts (shells) and other protein sources for biofunctional ingredients.
