Gum류를 첨가한 우육 Patty의 품질 특성 (Quality Characteristics of Beef Patty Containing Gums)

  • In order to investigate the possibility of lwo fat meat products, beef patties were prepared with gums such as carrageenan, methyl cellulose, and xanthangum. The quality characteristics of beef patties were examined. Moisture contents of raw and cooked patties of control were lower than those of patties containing gums, and fat content was higher than those of containing gums. There was no significant difference in the protein contents of patties. In case of L-value(lightness) of raw patty, the control was higher than those patties containing gums. a-(redness) and b-value(yellowness) among patties were not significantly different. Cooking yield, fat retention, and water holding capacity of beef patties containing gums were higher than control beef patty, but salt soluble protein and gel strength were not significantly different. Significant difference did not exist among beef patties in hardness, but the chewiness and gumminess of patties containing gums were higher than control. In case of sensory evaluation, there was no significant difference among patties in aroma and palatability. Texture of control was higher than patties containing gums, and juiciness of control was higher than patties containing carrageenan.

갓의 김치가 김치의 품질과 관능적 특성에 미치는 영향 (Effect of Mustard Leaf on Quality and Sensory Characteristics of Kimchi)

  • The addition of mustard leaf to kimchi making for extanding the optimum edible period was studied. The quality and sensory characteristics of mustard leaf added kimchi were evaluated . The activity, lactic and acetic acid contents of mustard leaf added kimchi showed lower than that of control kimchi but reducing sugar and vitamin C contents was higher. The duration of optimum edible periods of mustard leaf added kimchi lasted one more weak. While the optimum pH of kimchi for eating lasted, the sensory pannel score for sour taste of mustard leaf added kimchi was lower than that of control but the scoreas for savory taste, carbonated taste and hardness were higher . Especially , the sour taste score between two groups were significantly different (p<0.05). Overall quality score for the mustard leaf added kimchi was higher. There was no differences in texture determined by Penetrometer between mustard leaf added kimchi and control kimchi until the fermentation reached the optimal condition for eating . After that period , the degree of degradation of texture was much delayed in mustard leaf added kimchi.

Local vs. Foreign Television Drama: Niche Analysis of a South Korean Audience's Use of Korean, American and Japanese Dramas

  • The present study explored the reception and consumption processes of a Korean audience's viewing of local and international television dramas. Findings indicated that the influential factors on the level of viewing in regards to Korean, American, and Japanese TV dramas among Korean viewers differed. In particular, a significant difference was found in terms of perceived drama characteristics. Applying niche theory, the present study also examined the audience's motivation for watching these television dramas. Results demonstrated that Korean TV dramas possessed the broadest niche breadth and were the most competitive. In a comparison of the perceived characteristics of TV dramas, American drama earned competitive superiority for most characteristics. The implications from the results were discussed in terms of cultural discount and proximity.

Simulated Distribution Characteristics of Surface Temperature on Irradiating of a Laser

  • In this paper, we concern about the distribution characteristics of surface temperature by the increment of time, diffusivity and heat flux on irradiating of a laser. The penetration depth corresponding to the induced constant heat flux or irradiated laser, is simulated by a computer algorithm. The distribution of temperature versus penetration depth for the variation of time and diffusivity is characterized at the constant heat flux and on irradiating of a laser. The temperature of constant heat flux at the fixed diffusivity or time, is decreased by the pattern of exponential function as the time t or diffusivity a is increased (a=10, 100, 1000). The temperature of constant heat flux is not changed but exponentially fixed with the increasing diffusivity and the fixed time. On the other hand, the temperature of laser at the fixed diffusivity or time is decreased linearly. Our results show that the characteristics of the simulated surface temperature in a semi-infinite solid are similar to the graphs on theoretical consideration.

유치원, 초등, 중등학교 과학 교재의 '물질의 성질' 관련 학습 내용 전개에 대한 특징 분석 (An Analysis of the Characteristics of Learning Contents Structure related to 'Properties of Matter' of K-12 Science Textbooks)

  • 이 연구에서는 유치원 제 5차 교육과정과 초등학교부터 고등학교까지의 제 6차 과학교육과정에 근거한 교재들을 분석하고, 제시된 학습 내용의 전개 유형을 파악하고자 하였다. 구체척으로는 유치원부터 고등학교까지의 과학 교재에 제시된 '물질의 성질'에 관련된 학습 내용을 분석하였으며, 그 결과 학습 내용 전개 유형을 크게 5가지로 구분하였다. 즉, 개념의 확장 유형, 개념 수준의 심화 유형, 동일한 개념 수준 제시 유형, 다른 과학 개념과 뒤엉킨 유형, 학년간 혹은 학년 내 연계의 단절 유형으로 구분하였다. 이 중에서'개념의 확장 유형'과 '개념 수준의 심화 유형'은 학습 내용 전개가 바람직한 것이라고 판단할 수 있지만, 나머지 유형들은 부적절하다고 할 수 있다. 유치원부터 초등, 중등 과학 교재에서 공통적으로 다루는 '물질의 성질'에 관련된 7개의 개념을 중심으로 학습 내용 전개 유형을 분석한 결과, 바람직한 유형보다는 부적절한 유형이 더 많이 나타났다. 특히 '동일한 개념 수준 제시 유형'은 유치원과 초등학교 전반에 걸쳐서 광범위하게 나타났다. 그리고 바람직한 유형 중에서는 '개념의 심화 유형'보다는 '개념의 확장 유형'이 더 많은 것으로 분석되었다. 또한 '물질의 성질'에 관련하여 유치원부터 제시되는 많은 학습 개념이 중학교 1학년 이상에서 거의 다루지 않는 것으로 나타났다. 특히 이러한 특성을 가지는 개념들은 '개념의 심화 유형'으로 내용이 전개되지 않는 공통점이 있었다. 이러한 문제점들을 해결하기 위하여 과학 교재의 내용 구성에 대한 재고찰이 필요하다고 본다.

Characteristics of expansive soils improved with cement and fly ash in Northern Thailand

  • This paper studies the swelling and strength characteristics of unimproved and improved expansive soils in terms of the swell potential, swelling pressure, rate of secondary swelling, unconfined compressive strength and California bearing ratio (CBR). The admixtures used in this study are locally available cement and fly ash. The soils used in this study were taken from the Mae Moh power plant, Lampang Province, in northern Thailand. A conventional consolidation test apparatus was used to determine the swelling of the soil specimen. The optimum admixture contents are determined to efficiently reduce the swelling of unimproved soil. The rate of secondary swelling for unimproved soil is within the range of highly plastic montmorillonite clay, whereas the specimens improved with optimum admixture contents can be classified as non-swelling kaolinite. A soil type affects the swelling pressure. Expansive soil improvement with fly ash alone can reduce swelling percentage but cannot enhance the unconfined compressive strength and CBR. The strength and swelling characteristics can be predicted well by the swelling percentage in this study.

1948년에 출간된 조복성의 곤충 관련 저작에 관한 연구 - 『곤충이야기』와 『곤충기』를 중심으로 - (A Study on Jo Bok-seong's Insect-related Books Published in 1948: Focused on Story of Insects and About Insects)

  • 본 연구는 1948년에 발행된 생물학자 조복성의 저작인 "곤충이야기"와 "곤충기"를 대상으로 형태 및 체제, 내용분석을 통해 두 저작의 특징과 구성 및 내용에 대해 심도 있게 살펴보았다. 을유문화사의 병설단체인 아협에서 발행한 "곤충이야기"는 A5판의 국판(菊版), 을유문화사에서 발행한 "곤충기"는 A6판 문고판으로 출간되었다. 또한 "곤충이야기"는 앞표지-표제지-머리말-차례-본문-판권기-광고-뒤표지로, "곤충기"는 앞표지-표제지-목차-서언-본문-판권기-을유문고 발간사(發刊辭)-광고-뒤표지의 체제로 구성되었다. 두 저작의 내용을 통해 주요 독자층은 "곤충이야기"의 경우 어린이 및 소학생, "곤충기"는 대학생 및 청년으로 밝혀졌다. 또한 "곤충이야기"에서는 65종 곤충을 조복성이 설정한 11개의 류(類), "곤충기"는 약 56종의 곤충에 대해 9개의 류(類)의 분류체계에 따라 설명했다. 두 저작에 수록된 곤충의 수와 분류체계의 명칭은 서로 달랐으나 "곤충이야기"의 분류체계 대부분이 "곤충기"의 것에 수용됨을 확인했다.

석회-시멘트 혼합토의 압축강도 및 내구 특성 (The Compressive Strength and Durability Characteristics of Lime-Cement-Soil Mixtures)

  • In this study, the compressive strength characteristics of lime-cement-soil mixtures, composed of lime, soil, and a small amount of cement, were investigated by performing the unconfined compression tests, the freezing and thawing tests, the wetting and drying tests and the permeability tests. The specimens were made by mixing soils with cement and lime. The cement contents were 0, 6, 8 and 10 %, and the lime contents were 2, 4, 5, 10, 15 and 20 % in weight. Each specimen was cured at constant temperature in a humidity room for 3, 7 and 28 days. The compressive strength characteristics of the lime-cement-soil mixtures were then investigated using the unconfined compression tests, freezing and thawing tests and the wetting and drying tests. Based on the test results, a discussion was made on the applicability of the lime-cement-soil mixtures as a construction material.

  • 웹 기반의 디지털콘텐트 전송은 웹 객체를 단위로 이루어진다. 따라서 웹 기반 콘텐트 전송의 성능을 향상시키기 위해서는 웹 객체의 참조특성에 대한 분석이 필요하다. 본 연구에서는 웹 객체의 참조특성을 분석하였다. 또한 이 분석결과를 통해 웹 객체의 전송 효율을 높일 수 있는 방안을 제시하였다.

  • 비례 지분 스케줄러는 각 태스크에 상대적인 CPU 시간을 할당하고 태스크의 지분에 따라 실행할 태스크를 결정한다. 본 논문에서는 대표적인 비례 지분 스케줄러인 리눅스 Completely Fair Scheduler(CFS)에서 애플리케이션의 특징과 태스크 우선순위의 상관관계를 실험한다. 그리고 애플리케이션의 특징에 따라 태스크 우선순위 정밀도를 제어하는 기법을 제안한다. 제안 기법을 리눅스에서 구현하여 유의미한 실험 결과를 확인하였다.
