The effect of age, genotype and sex on carcass traits, meat quality and sensory attributes of geese

  • Objective: The aim of this study was to compare carcass traits, meat quality and sensory attributes in two different genotypes of geese according to age and sex. Methods: The experiment was carried out on 160 birds of two genotypes of geese: the Czech Goose (CG) breed and a Eskildsen Schwer (ES) hybrid. One-d-old goslings were divided into four groups according to genotype and sex. Two dates for slaughtering (at 8 and 16 wk of age of goslings) were undertaken. Results: The slaughter weight, cold carcass weight and dressing percentage were affected by all the studied factors, and significant interactions between age, genotype and sex were detected in the slaughter weight (p<0.001) and cold carcass weight (p = 0.004). The pH was not affected by any of studied factors, whereas in terms of meat colour parameters there were observed significant effects of age on $L^*$ and $b^*$ value and a significant effect of sex on $a^*$ value. The meat fat content was higher (p = 0.002) in ES. Higher score for overall acceptance of goose meat was recorded for ES at both ages compared to CG. Conclusion: ES had higher dressing percentage and better sensory attributes, whereas CG exceled in the favourable nutritional value of the meat.

The effect of gender status on the growth performance, carcass and meat quality traits of young crossbred Holstein-Friesian×Limousin cattle

  • Objective: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. Methods: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. Results: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). Conclusion: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.

오리 도체중량이 오리고기의 이화학적 특성 및 관능특성에 미치는 영향 (Effect of Carcass Weight on Physicochemical and Sensory Traits of Duck Meat)

  • 본 연구는 오리의 도체중량에 따른 오리고기의 이화학적 특성을 구명하고자 수행하였다. 오리 도체중에 따라 200 g 단위로 2,200 g 미만부터 2,800 g 이상까지 총 5개의 중량구간을 설정하여 가슴육과 다리육을 분석하였다. 일반성분 중 지방은 가슴육에서 중량이 증가할수록 증가하는 것으로 나타났다(P<0.05). pH와 보수력은 중량에 따른 경향이 나타나지 않았다. 가열감량은 가슴육에서 2,200 g 미만 구간에서 가장 높았으며, 중량이 증가할수록 감소하는 경향이 나타났다(P<0.05). 육색은 중량에 따른 경향이 나타나지 않았다. 전단력은 2,800 g 이상 중량구간에서 가장 높게 나타났으며, 중량이 증가할수록 증가하는 경향을 나타내었다(P<0.05). 지방산 조성은 가슴육과 다리육 모두 중량이 증가할수록 oleic acid(C18:1, n9) 함량이 증가하는 경향을 나타내었다(P<0.05). 불포화지방산 함량은 가슴육에서 유의적인 차이가 없었으나, 다리육에서 중량이 증가할수록 증가하는 경향을 나타내었다(P<0.05). 관능평가 결과, 가슴육의 2,800 g 이상 중량구간에서 풍미, 연도와 종합 기호도가 가장 높게 나타났으나, 유의적인 차이는 나타나지 않았다. 이상의 결과를 종합해 보면 오리의 도체중량이 오리고기의 이화학적 특성에 영향을 주었으나, 관능특성에는 유의미한 영향이 없는 것으로 나타났다.

Comparison of Carcass and Sensory Traits and Free Amino Acid Contents among Quality Grades in Loin and Rump of Korean Cattle Steer

  • This study was performed to compare carcass traits, sensory characteristics, physiochemical composition, and contents of nucleotides, collagen, and free amino acids among quality grades (QG) and to understand the association between QG and above parameters in loin and rump of Korean cattle steer. Loin and rump samples were obtained from 48 Korean cattle steers with each of four QG (QG 1++, 1+, 1, and 2; average 32 months of age). Carcass weight and marbling score (MS) were highest in QG 1++, whereas texture score measured by a meat grader was highest in QG 2. A correlation analysis revealed that MS (r = 0.98; p<0.01) and fat content (r = 0.73; p<0.01) had strong positive correlations with QG and that texture had a strong negative correlation (r = -0.78) with QG. Fat content in loin was highest but protein and moisture contents were lowest in QG 1++. Our results confirmed that a major determinant of QG is the MS; thus, intramuscular fat content. The International Commission on Illumination $L^*$, $a^*$, and $b^*$ values in loin were highest in QG 1++. Numeric values of shear force in loin were lowest in QG 1++, whereas those of tenderness, juiciness, and overall acceptability tended to be highest in QG 1++ without statistical significance. QG was strongly correlated with juiciness (r = 0.81; p<0.01) and overall acceptability (r = 0.87; p<0.001). All sensory characteristics were higher (p<0.05) in loin than those in rump. Adenosine-5'-monophosphate (AMP) and inosine-5'-monophosphate (IMP) contents in both loin and rump did not differ among QGs. No nucleotide (AMP, IMP, inosine, hypoxanthine) was correlated with any of the sensory traits. Total, soluble, and insoluble collagen contents in loin were higher in QG 1++ than those in QG 1. All three collagens had lower content in loin than that in rump. All three collagens were positively correlated with tenderness, juiciness, and overall acceptability. Glutamic acid content did not significantly differ among the four QGs in either loin or rump. In conclusion, it is confirmed that QG is associated with sensory traits but nucleotide contents in beef may not be a major factor determining meat palatability in the present study.

The results of meat quality traits and sensory characteristics according to the concentration of androstenone in uncastrated pigs

  • Pork quality is determined by several attributes, among which odor and taste are the utmost significant. Therefore, this study was aimed to assess the effects of boar odor hormone concentration on the quality traits and sensory acceptability of pork. A total twenty-six (26) non-castrated 3-way crossbred (Landrace × Yorkshire × Duroc) pigs were selected with an average body weight (ABW) 115.6 kg before to slaughter. The three treatment groups (low, medium and high) were divided according to the androstenone concentration. In experiment 1, for meat quality traits carcass was selected based on androstenone concentration: low (LC, 0.64-0.69 ㎍/g, n = 9), medium (MC, 0.70-0.99 ㎍/g, n = 7) and high (HC, 1.00-1.69 ㎍/g, n = 10). In experiment 2, for sensory evaluation carcasses were also selected based on the abovementioned conditions. Results revealed that androstenone concentration not effect on proximate components, meat quality traits and fatty acids except palmitoleic acid. Sensory evaluation data showed that boar taint and meat boar taint were significantly increased in a concentration-dependent manner from low to high, whereas, gravy and meat flavor preference were significantly increased in LC group than HC group. In addition, correlation analysis showed that boar taint and meat boar taint were positively, and gravy and meat flavor preference were negatively correlated with boar taint hormones. In essence, our findings indicate that androstenone concentration had no effect on meat qualities, but a high concentration of androstenone had a negative effect on the sensory characteristics in uncastrated pigs.

Differences in toughness and aging potential of longissimus lumborum muscles between Hanwoo cow, bull and steer

  • Thirty Hanwoo cattle including bulls, cows, and steers (n = 10 each) were slaughtered and investigated for carcass traits (weight, meat color, fat color, yield index, maturity, marbling score, back-fat thickness, and firmness) and meat quality. The meat quality such as: pH, color, cooking loss, fatty acid, thiobarbituric acid reactive substance, warner-bratzler shear force, tensile tests, and texture profiles were analyzed on longissimus lumborum (LL) muscles of the carcasses at different aging times (3 d and 21 d). The results showed that steers and cows had higher back-fat thickness and marbling score, and a lower firmness (p < 0.001) than bulls. Bulls exhibited a lower meat quality indicating by higher cooking loss, thiobarbituric acid reactive substance content, warner-bratzler shear force and tensile test values (p < 0.01). Regarding the sensory property, the bull meat also had higher hardness, and lower tenderness, juiciness and flavor scores than the cow or steer meat (p < 0.01). Additionally, the bull meat had a higher polyunsaturated fatty acid and a lower monounsaturated fatty acid contents (p < 0.01). With increased aging time, the meat tenderness was improved in all the genders. Taken together, the present study demonstrated that the gender and aging time affected the carcass traits, fatty acid and sensory quality of beef. Postmortem aging could improve the meat tenderness of all genders especially bulls.

Effect of supplementary feeding on the production traits, carcass and meat quality of Jamuna basin lambs

  • This study aimed to identify the optimum level of supplementary feeds on the carcass traits and meat quality of Jamuna basin lambs. Forty selected lambs were divided into four treatments such as T0 (no concentrate supplementation), T1 (1% concentrate feed), T2 (1.5% concentrate feed) and T3 (2% concentrate feed) having ten lambs per treatment. The data were analyzed through Completely Randomized Design (CRD) with SAS software. Hot carcass, dressing percentage, head, leg, neck, loin, heart, and spleen weight were showed significantly (p < 0.05) higher values with increasing concentrate feed. The crude protein (CP), ether extract (EE) and ash values were significantly increased (p < 0.001) except T2 treatment. The ultimate pH was significantly increased except T2 and cooked pH was significantly decreased (p < 0.001) except T3 treatment. Drip loss and cooking loss (CL) % had significantly reduced (p < 0.001) except T3 treatment. The water holding capacity (WHC) % was significantly increased (p < 0.001) except T3 treatment. The score of color, juiciness and tenderness were significantly different (p < 0.001). Flavor and overall acceptability score were significantly increased (p < 0.05) in different treatments. The color values L* and b* had significantly changed (p < 0.001) and a* value was found significantly higher (p < 0.05) in all treatments. Hence, 12 months of aged lambs with 1.5% concentrate feed showed better performances on carcass, nutritional, physicochemical, sensory and instrumental color values to increase the carcass and the meat quality of lambs.

Effects of dietary glycerol inclusion on growth performance, carcass and meat quality characteristics, glycogen content, and meat volatile compounds in Korean cattle steers

  • Objective: We have tested our hypothesis that inclusion of purified glycerol as a replacer of portions of dried distillers grain with solubles (DDGS) would affect growth performance, rumen fermentation and blood parameters, carcass and sensory traits, reducing sugar and glycogen contents, and volatile compound profiles in longissimus thoracis (LT) in Korean cattle steers. Methods: A total of 20 Korean cattle steers (27.0±0.2 months old; 647±10.5 kg body weight [BW]) were assigned to a conventional control group or a glycerol group (3.17% purified glycerol addition as a replacement for DDGS and molasses). The steers were individually allowed to receive the experimental concentrate at the daily amount of 1.5% of their individual BW and a total 1.0 of kg/d of rice straw twice daily. The feeding trial was conducted for a period of 20 weeks. Results: Glycerol supplementation (GS) increased (p = 0.001) concentrate intake. However, GS did not affect (p>0.05) average daily gain, feed efficiency, and ruminal volatile fatty acid concentrations. GS tended to increase (p≤0.10) serum glucose concentrations at the 16th and 20th weeks. GS decreased (p = 0.001) LT pH. GS did not affect (p>0.05) carcass traits and the chemical or physicochemical compositions, reducing sugar or glycogen contents, sensory traits, and most of volatile compounds in the LT. Conclusion: The inclusion of purified glycerol as a replacement for DDGS in the finishing diet did not affect growth performance, rumen fermentation parameters, and carcass quality in Korean cattle. The purified glycerol could be used as a substitute for other energy sources such as DDGS in beef cattle, depending on the price.

성별이 한우 등심의 육질등급요인, 이화학적 및 관능특성에 미치는 영향 (Effect of Sex on Quality Grade Factors, Physicochemical and Sensory Traits of Longissimus Dorsi in Hanwoo)

  • 성별 한우쇠고기의 품질 특성을 조사하기 위하여 육질등급이 5개로 개전된 후 첫 해인 2005년도에 전국에 출하된 42,113두의 육질등급 요인을 조사하였으며, 2005년부터 2008년도 상반기까지 국립축산과학원에서 도축된 257두의 쇠고기 품질을 분석하였다. 성별 한우의 육질등급요인(근내지방도, 육색, 지방색, 조직감, 성숙도)은 유의적인 차이가 있었으며 한우 거세우가 가장 우수하였다(p<0.05). 근내지방도, 성숙도 및 조직감은 거세우가 각각 5.02, 2.17 및 1.31로 가장 우수하였으며 이에 따라 육질등급 지수도 2.75($1^{++}$ 등급 =1, 3등급= 5)로 가장 높았다(p<0.05). 수분함량은 수소가 73.23%로 가장 높았으며, 조지방 함량은 거세우가 17.27% 가장 높았다(p<0.05). 거세우의 명도($L^*$), 전단력 및 보수력은 각각 39.01, 4.03 kg 및 57.08%로 가장 높았으나(p<0.05), 암소와 수소 간의 차이가 없었다. 전단력에 있어서 암소 및 수소가 각각 7.73 kg 및 8.35 kg으로 비교적 높게 나타난 것은 연도 증진에 관련된 연구가 필요한 것으로 판단된다. 관능검사 결과 연도, 다즙성, 향미 및 총 점수에서 거세우가 가장 좋았다(p<0.05). 이와 같은 연구는 시대적으로 변화하는 한우산업의 여건에 따라 단계 별로 수행할 필요가 있으며, 암소의 경우 경산우 비육이 대부분인 우리나라의 실정에 비추어 볼 때 산차별 또는 연령별 품질관련 연구가 더욱 필요하다고 생각된다.

Effects of Dietary Energy Level on Growth Efficiency and Carcass Quality Traits of Finishing Pigs

  • A total of 96 non-lean-type (Yorkshire $\times$ Landrace) $\times$ Duroc gilts and barrows weighing approximately 80 kg were randomly allocated to 24 pens under a 2 (sex) $\times$ 3 [diet; 3.4, 3.2, and 3.0 Mcal DE/kg {'high'-, 'medium'-, and 'low'-energy diets (HE, ME, and LE), respectively}] factorial arrangement of treatments. All animals were slaughtered approximately at 115 kg, after which carcass quality traits and grades and physicochemical and sensory characteristics of the loin related to meat quality were analyzed. The ADG and gain:feed were not affected by the sex or dietary treatment, whereas ADFI was greater in the ME vs HE group. Backfat thickness was greater in barrows vs gilts and also in ME and HE vs LE only in barrows. Enumerated carcass marbling and quality grade, which were highly correlated (r=0.56; P<0.01), were greater in barrows vs gilts. Physicochemical characteristics including the color, pH, drip loss and contents of moisture, protein, and fat of fresh loin, as well as sensory characteristics of fresh and cooked loin, were not affected by the sex or dietary treatment, except for shear force for cooked loin which was greater (P<0.05) in LE and ME vs HE. In conclusion, it is thought that ME is comparable to HE in terms of the effect on growth and carcass quality of finishing pigs, but that the relative effect of LE vs ME needs to be further studied.
