Current situation and future trends for beef production in the United States of America - A review

  • USA beef production is characterized by a diversity of climates, environmental conditions, animal phenotypes, management systems, and a multiplicity of nutritional inputs. The USA beef herd consists of more than 80 breeds of cattle and crosses thereof, and the industry is divided into distinct, but ofttimes overlapping sectors, including seedstock production, cow-calf production, stocker/backgrounding, and feedlot. Exception for male dairy calves, production is predominantly pastoral-based, with young stock spending relatively brief portions of their life in feedlots. The beef industry is very technology driven, utilizing reproductive management strategies, genetic improvement technologies, exogenous growth promoting compounds, vaccines, antibiotics, and feed processing strategies, focusing on improvements in efficiency and cost of production. Young steers and heifers are grain-based diets fed for an average of 5 months, mostly in feedlots of 1,000 head capacity or more, and typically are slaughtered at 15 to 28 months of age to produce tender, well-marbled beef. Per capita beef consumption is nearly 26 kg annually, over half of which is consumed in the form of ground products. Beef exports, which are increasingly important, consist primarily of high value cuts and variety meats, depending on destination. In recent years, adverse climatic conditions (i.e., draught), a shrinking agricultural workforce, emergence of food-borne pathogens, concerns over development of antimicrobial resistance, animal welfare/well-being, environmental impact, consumer perceptions of healthfulness of beef, consumer perceptions of food animal production practices, and alternative uses of traditional feed grains have become increasingly important with respect to their impact on both beef production and demand for beef products. Similarly, changing consumer demographics and globalization of beef markets have dictated changes in the types of products demanded by consumers of USA beef, both domestically and abroad. The industry is highly adaptive, however, and responds quickly to evolving economic signals.

Effect of Sodium Bicarbonate Injection in Pre-rigor Porcine M. Longissimus lumborum on Pork Quality

  • Effects of sodium bicarbonate (SBC) injection on meat quality and functionality of porcine M. longissimus lumborum were investigated. Fifteen pigs ($100{\pm}5kg$) were randomly selected at a commercial slaughter plant. After slaughtering the loins were dissected from the carcass before chilling at approximately 30 minutes post mortem. The loins were divided into four cuts for sample treatment, and SBC of 0.25 M, 0.40 M and 0.75 M was injected (2% w/w) using a syringe. As SBC injection level was increased, muscle pH increased significantly (p<0.05). SBC injection decreased lightness ($L^*$) values on the surface of muscle. Moreover, with injection of SBC, drip loss %, cooking loss % and shear force were significantly (p<0.05) decreased, whereas WHC and $Na^+$ content were significantly (p<0.05) increased. From panel testing of uncooked pork loin, no significant differences (p>0.05) were found in aroma, off-flavor and drip between injection of SBC at different levels and the control, although color and acceptability were significantly lower (p<0.05) in control pork loin compare with injection of SBC at 0.75 M. In cooked pork loin from the panel test, aroma, flavour, off-flavour and juiciness were found to be similar (p>0.05) on all treatments, but tenderness and acceptability were significantly higher (p<0.05) with injection of SBC at 0.75 M than for control loin. Myofibrillar protein solubility of muscles treated with SBC was significantly (p<0.05) higher than that of the control, although no significant differences (p>0.05) were found in sarcoplasmic protein solubility between the treatments. These results indicated that SBC injection into pre-rigor porcine M. longissimus lumborum could improve ultimate pork quality characteristics such as meat color, water-holding capacity, and could inhibit muscle protein denaturation due to an increase in muscle pH.

Increasing the Pig Market Weight: World Trends, Expected Consequences and Practical Considerations

  • The present report has been aimed at reviewing important factors which need to be closely analyzed or considered when increasing the market weight of finishing pigs. The pig market weight has increased worldwide during the past few decades, which is attributable primarily to an increased lean gain potential of finishing pigs. To increase the market weight, however, the acceptability of larger pigs by the packer as well as pork consumers should be met first. By increasing the market weight, total number of breeding stock, as well as the facility for them, necessary for producing a given weight of pork can be reduced, whereas more building space for finishing pigs and an additional nutrition program for the later finishing period are needed. Additionally, a more thorough disease prevention program especially against ileitis and mycoplasma pneumonia may also be needed, because outbreaks of these are known to increase with increasing body weight over 110 kg. Some larger finishing pigs may deposit excessive fat that may be reduced or prevented by using hormonal and/or nutritional agents. Backfat thickness increases linearly with increasing body weight between 110 and 130 kg, whereas intramuscular fat content does not change significantly. With increasing live weight within this range, the ratios of belly and loin to carcass weight also are known to increase. Some physicochemical characteristics related to fresh and cooked meat quality including color, firmness, juiciness, etc. are known to be unaffected or slightly changed following an increase of slaughter weight. In conclusion, ratios of primal cuts and pork quality characteristics are not significantly affected by increasing the market weight. Moreover, increasing the market weight of lean-type pigs approximately up to 130 kg is normally profitable to producers, as long as packers and consumers accept larger pigs.

Supplementary Feeding of Economas E® Improves Storage Life of Hanwoo Beef

  • Vitamin E has been applied as a dietary supplement or post mortem to meat cuts to preserve meat quality and extend shelf life. This study was conducted to determine the effects of supplementation of the diet of Hanwoo steers with Economas $E^{(R)}$, a less expensive alternative to vitamin E, on meat quality preservation. To accomplish this, 36 Hanwoo steers were randomly allotted into three treatment groups ; no additive (control), Economas $E^{(R)}$(T1) and vitamin E (T2). Vitamin E and Economas $E^{(R)}$ were included in the diets at 500 mg/head and 200 mg/head, respectively, for 5 months. Evaluation of carcass performance parameters immediately after slaughter revealed no treatment effects (P>0.05). Samples collected from the loin area and stored at $4^{\circ}C$ for up to 9 days showed that T1 and T2 preserved pigment and lipid stability as indicated by significantly (P<0.05) higher CIE $L^*$ and lower CIE $a^*$ and CIE $b^*$ values and a less rapid increase in thiobarbituric acid reactive substance (TBARS) relative to the control. However, treatments had no effect (P>0.05) on cholesterol and fatty acid content in meat. Based on these findings, Economas $E^{(R)}$ provided at 200 mg/head is as effective as vitamin E applied at 500 mg/head at preserving Hanwoo meat quality over a 9 day storage period at $4^{\circ}C$.

  • Major quality features of the beef carcass in most countries including Korea are size, marbling state of the lean tissue, color of the fat and lean tissue, and thickness of back fat of the 13th rib. To evaluate the beef quality, extracting loin parts from the sectional image of the 13th beef rib is crucial and is the first step. However, because of the inhomogeneous distribution and fuzzy pattern of the fat and lean tissues on the beef cut, it is difficult to extract automatically the proper contour of the lean tissue. In this paper, a prototype mobile beef quality measurement system, which can be implemented practically at the beef processing site was developed. The developed system was composed of the hand held image acquisition unit and mobile processing unit mounted with touch-pad screen. Algorithms to extract the boundary of the lean tissue and a proper tool to evaluate the marbling status have been developed using color image processing. The boundary extraction algorithm showed successful results for the beef cuts with simple and moderate patterns of the lean tissue and fat. However, it had some difficulty in eliminating complex pattern of the extraneous tissues adhered to the lean tissue in the boundary extraction. The developed algorithms were implemented to the prototype mobile processing unit.

Evaluation of Meat Color and Physiochemical Characteristics in Forequarter Muscles of Holstein Steers

  • The beef forequarter muscle comprises approximately 52% of carcass weight. The objective of this study was to evaluate the physiochemical characteristics and meat color from forequarter muscle of Holstein steers. Fifteen forequarter muscles were trimmed of external connective tissue and fat. An experimental group of eight Holstein steers was assessed using meat color, water-holding capacity, drip loss, and Warner-Bratzler shear force value at the same quality grade. The M. omotransversarius (0.45 kg) had the highest (p<0.05) lightness (L*) value, whereas the M. teres major (0.4 kg) and M. triceps brachii (caput laterale) (0.52 kg) had the lowest (p<0.05) values. The M. semispanitus capitus (1.48 kg), which is a neck muscle, had the highest values for both redness (a*) and yellowness (b*), whereas the lowest (p<0.05) values were for the M. teres major. The M. omotransversarius, M. latissimus dorsi (1.68 kg), and M. rhomboideus (1.2 kg) were ranked high (p<0.05) in water-holding capacity. The drip loss value was the highest for the M. longissimus dorsi thoracis (p<0.05; 1.86 kg), while the M. infraspinatus (2.28 kg), M. supraspinatus (1.38 kg), M. brachiocephalicus (1.01 kg), and M. pectoralis superficialis (1.18 kg) had the lowest (p<0.05). The Warner-Bratzler shear force value indicated that the M. pectoralis profundus (3.39 kg), M. omotransversarius, and M. brachiocephalicus were the toughest (p<0.05), whereas the M. subscapularis (0.86 kg), M. longissimus dorsi thoracis, M. teres major, and M. infraspinatus were the most tender cuts (p<0.05). Here, muscle type explained most of the variability in the forequarter physiochemical characteristics. Thus, our findings suggest that these muscle profile data will allow for more informed decisions when selecting individual muscles to produce value-added products from Holstein steers.

비육후기 사료의 에너지 수준이 '고체중' 출하돈의 성장효율 및 도체특성에 미치는 영향 (Effects of the Energy Level of the Finisher Diet on Growth Efficiency and Carcass Traits of 'High'-Market Weight Pigs)

  • 본 연구의 목적은 저에너지 비육돈사료가 ‘고체중’ 출하돈의 사료효율, 성장효율 및 도체특성에 미치는 영향을 구명하여 고체중 출하돈용 사료의 적정 에너지 수준을 유추하고자 함이었다. 생체중 약 90kg의(Yorkshire × Land- race) × Duroc 교잡종 암퇘지와 거세돼지 총 160두를 16돈방에 임의로 배치하여 저에너지사료(3,200kcal DE/kg) 혹은 대조사료(3,400kcal)를 무제한으로 급여하고 성별로 각각 135 & 125kg에 도살하여 도체를 분석하였다[2(성) × 2(사료) ‘factorial’ 실험설계]. 일당증체량, 일당사료섭취량 및 사료효율은 두 성 혹은 사료 구간 차이가 없었다. 등지방두께는 암퇘지에서는 저에너지사료 구(22.4mm)가 대조사료 구(24.3mm)보다 낮았으나(P<0.05), 거세돼지(24.4±0.4mm)에서는 두 사료 구간 차이가 없었다. 암퇘지는 ‘과체중’ 문제로 인하여 90% 이상 C & D 도체등급 판정을 받은 반면 거세돼지는 A + B 등급과 C + D 등급을 각각 79% 및 21% 받았다. 총부분육 중량 대비 개별 부분육 비율은 두 성 혹은 사료 구간 차이가 없었다. 배최장근의 색깔(명도 및 적색도), pH, 육즙삼출율 및 화학적 조성을 포함한 이화학적 특성은 총괄적으로 정상도체의 범주에 속하였고 두 성 혹은 사료 구간 차이가 없었다. 이상을 종합하면 본 실험에 쓰인 저에너지사료와 대조사료는 모두 고체중 비육후기 돼지 사료로 적합할 것으로 판단된다. 만일 주어진 축군에서 사료를 통하여 지방침적을 억제할 필요가 있을 경우는 사료의 에너지 수준을 3,200kcal DE/kg 수준 이하로 낮춰야 할 것이다.

동애등에의 급이가 육계의 생산성에 미치는 영향 (The Effect on Growth Performance of Chicken Meat in Broiler Chicks by Dietary Supplementation of Black Soldier Fly Larvae, Hermetia illucens (Diptera : Stratmyidae))

  • 본 시험은 동애동에의 공급이 육계의 생산성에 미치는 영향을 알아보기 위해 수행되었다. 시험 가축으로는 육계 초생추 병아리를 이용하였으며, 3처리 4반복 반복 당 30수씩 총 360수를 공시하였다. 시험설계는 대조구(C), 동애등에 분말 3%(T1), 6%(T2) 첨가구로 배치하였다. 시험사료는 옥수수와 대두박을 기초로 에너지와 영양소 수준은 NRC(1994) 요구량을 충족시켜 주었으며 육계 전기(3,100 kcal/kg ME, CP 22.0%) 및 육계 후기(3,100 kcal/kg ME, CP 20.0%) 사료로 나누어 공급하였다. 생산성 조사 결과 생존율은 각 처리구간 유의적인 차이가 없었으며, 시험이 종료되는 5주령 체중 및 증체량에서는 대조구가 가장 무거웠으나 통계적으로 유의적인 차이는 없었다. 사료섭취량은 체중이 가장 무거웠던 대조구에서 사료섭취량이 많았으며 사료요구율도 체중이 무거웠던 대조구가 낮은 사료요구율을 보였다. 부분육 수율은 동애 등에를 급여한 처리구가 대조구에 비해 도체율을 비롯한 부분육 수율이 높은 경향을 보였으며, 가슴수율에서는 동애 등에를 6% 급여한 처리구가 대조구에 비해 유의적으로 높은 수율을 보였다(P<0.05). 동애등에의 첨가에 따른 계육내 지방산 조성에 대한 결과는 대조구와 비교 시 처리구에서 지방산 가운데 축산물에 다량 함유되어 있는 것으로 보고된 바 있는 불포화지방산 중 하나인 올레산(Oleic acid, 18 : 1n-9)과 포화지방산 중 팔미트산(Palmitic acid, 18 : 0)의 함량이 증가하는 경향을 나타내었다.

돼지의 성이 등심의 육질, 전자혀 측정치 및 관능적 맛 특성에 미치는 영향 (Influences of Gender on Meat Quality, Electronic Tongue Measurements and Sensory Characteristics of Pork Loin)

  • 본 연구의 목적은 비육돈의 성이 육질과 맛 특성에 미치는 영향을 구명하는 것으로, 이를 위해 총 90두 삼원교잡 LYD 비육돈(180일령 암퇘지 45두와 거세돈 45두; 각 처리구당 1+, 1, 2등급 15마리씩 배치)의 육질, 기계적 맛 및 관능적 맛을 성별에 따라 조사하였다. 등심근의 pH, 근내지방 함량, 육색 및 전단가는 성별 간 차이가 없었지만(p>0.05), 암퇘지와 거세돈의 육즙감량(1.66% vs 1.21%), 유리수분량(12.19% vs 10.68%) 및 가열감량(23.67% vs 21.04%)에서는 유의적인 차이가 확인되었다(p<0.05). 전자혀 측정치는 거세돈의 신맛의 강도가 암퇘지보다 유의적으로 낮은 반면, 감칠맛과 감칠맛후미의 강도는 높았다(p<0.05). 관능검사에서는 풍미, 다즙성 및 연도에서 거세돈이 높은 점수를 받은 결과, 기호성에서도 거세돈(5.51점)이 암퇘지(4.86점)보다 유의적으로 높은 점수를 얻었다(p<0.05). 이러한 결과로부터, 암퇘지보다 높은 거세돈의 보수력이 감칠맛 강도를 증가시켜 관능적 맛도 좋게 한 것으로 사료되었다.

Evaluation of the correlation between the muscle fat ratio of pork belly and pork shoulder butt using computed tomography scan

  • This study was conducted to find out the correlation between meat quality and muscle fat ratio in pork part meat (pork belly and shoulder butt) using CT (computed tomography) imaging technique. After 24 hours from slaughter, pork loin and belly were individually prepared from the left semiconductors of 26 pigs for CT measurement. The image obtained from CT scans was checked through the picture archiving and communications system (PACS). The volume of muscle and fat in the pork belly and shoulder butt of cross-sectional images taken by CT was estimated using Vitrea workstation version 7. This assemblage was further processed through Vitrea post-processing software to automatically calculate the volumes (Fig. 1). The volumes were measured in milliliters (mL). In addition to volume calculation, a three-dimensional reconstruction of the organ under consideration was generated. Pearson's correlation coefficient was analyzed to evaluate the relationship by region (pork belly, pork shoulder butt), and statistical processing was performed using GraphPad Prism 8. The muscle-fat ratios of pork belly taken by CT was 1 : 0.86, while that of pork shoulder butt was 1 : 0.37. As a result of CT analysis of the correlation coefficient between pork belly and shoulder butt compared to the muscle-fat ratio, the correlation coefficient was 0.5679 (R2 = 0.3295, p < 0.01). CT imaging provided very good estimates of muscle contents in cuts and in the whole carcass.
