The need for refining dietary nutrient levels and limited information regarding Holstein steer and phosphorus supplementation led to the objective of examining the response of removing supplemental dietary phosphorus from a corn-based finishing diet offered to yearling Holstein steers. Two groups of yearling Holstein steers were utilized to study responses of increasing dietary phosphorus level during the finishing period. In Exp. 1, 96 Holstein steers (419 kg) were blocked into four weight groups. Dietary treatments included no additional phosphorus (NDC) or the inclusion of dicalcium phosphate (DCP) to achieve 0.30% phosphorus (P) in the complete diet. Daily gain, DMI and carcass traits were not different (p>0.05). Overall gain efficiency was slightly lower for NDC (p<0.05). Exp. 2 consisted of 78 Holstein steers (491 kg) blocked into two weight groups. Steers were harvested on d 84 and 112 d on test with carcass data collected following a 48-h chill. No differences (p>0.05) were detected for DMI, ADG, or gain efficiency. No differences (p>0.05) were detected in carcass characteristics in this experiment. Percent bone ash, calcium, P, and bending moment also did not differ among treatments (p>0.05). Removing supplemental phosphorus in the feedlot diet did not produce adverse effects on steer performance, carcass, or rib bone characteristics for yearling Holstein steers.
This study was carried out to investigate the association of POU1F1 (POU domain, class 1, transcription factor 1, Pit1, renamed as POU1F1) gene with backfat thickness (mm), carcass weight (kg), pH, and color values ($L^*$, $a^*$, $b^*$) in crossbred pigs (Landrace ${\times}$ Yorkshire ${\times}$ Duroc). Frequency of the AA genotype indel was at the highest level (66.67%). Frequency of A allele (0.81) was higher than that of b allele (0.19). This population followed Hardy-Weinberg equilibrium. Carcass weights and $a^*$ values of the three genotypes were all significantly different (p < 0.05), respectively. However, backfat thickness, $L^*$, $b^*$, visual color, and pH of the three genotypes were not significantly different (p > 0.05). Visual color was negatively correlated with $L^*$ (r = -0.521) and $b^*$ (r = -0.390) values, $L^*$ value was correlated with $b^*$ (r = 0.419) value, and $a^*$ value was positively correlated with $b^*$ (r = 0.612) value. These results indicate that the POU1F1 gene affected carcass weight and meat redness.

This study was conducted to evaluate the effect of ferulic acid (FA) and clinoptilolite (CTL) supplementation on the growth performance, carcass characteristics, and meat quality of hair-breed lambs. Twenty-eight Kathadin male lambs (33.72 ± 3.4 kg) were randomly allocated to one of the four diets (n=7) under a 2 × 2 factorial arrangement to evaluate the effect of FA (0 or 300 ppm) and CTL (0% or 1%) during the last 40 days of the finishing phase. No interaction between additives was shown for growth performance, carcass characteristics and meat quality, with exception of the fatty acid profile (p < 0.05). FA reduced feed intake and carcass conformation (p < 0.05). Wholesale cuts were not affected by FA or CTL (p > 0.05). The L*, a*, and C* color parameters and some intramuscular fatty acids of the longissimus thoracis muscle were positively modified by CTL supplementation (p < 0.05). While there was no FA × CTL interaction, each additive could be used individually in animal nutrition to improve the feedlot performance and meat quality of the lambs.

This study aimed to determine the carcass and meat quality of broiler chickens based on the slaughter age (28, 30, 32, and 34 days). The carcass characteristics included live and carcass weights, carcass rate, dressing rate, and retail cut weight. The meat quality properties were determined through proximate composition, pH, color, water holding capacity (WHC), cooking yield, and shear-force. The broiler chicken live, carcass, breast, thigh, and wing weights significantly increased with the slaughter age (p < 0.05); the tenderloin weight also exhibited a similarly increasing trend. However, the carcass rate of the day 28 sample was significantly lower than the other samples (p < 0.05). The protein and ash contents of the breast exhibited an increasing trend with increasing slaughter age. The protein content of the thigh of the day 28 sample was significantly lower than that of the other samples (p < 0.05), while the ash contents of the day 28 and 30 samples were significantly lower. The redness of the breast showed an increasing trend, and the pH and lightness of the thigh exhibited a decreasing trend with slaughter age. The WHC and cooking yields of the day 30 and 32 breast and thigh samples were significantly higher than those of the day 28 and 34 samples (p < 0.05). The breast and thigh shear-force of the day 30-34 samples were significantly higher than those of the day 28 sample (p < 0.05). The present study showed that even with a twoday difference in slaughter age, the broiler chicken meat quality showed a significant difference in several characteristics.
Objective: This study investigated carcass characteristics and meat quality of purebred Pakchong 5, crossbred pigs sired by Pakchong 5, and crossbred pigs sired by Duroc. Methods: Forty-eight pigs (average body weight of 22.25 kg) were composed of three groups as purebred Pakchong 5 (PP), Large $White{\times}Landrace$ pigs sired by Pakchong 5 (LWLRP), and Large $White{\times}Landrace$ pigs sired by Duroc (LWLRD). Each group consisted of eight gilts and eight barrows. At 109-day-raising period, pigs were slaughtered, and carcass characteristics were evaluated. Longissimus thoracis (LT) muscles from left side of carcasses were evaluated for meat quality and chemical composition. Data were analyzed using general linear model procedure, where group, sex, and their interaction were included in the model. Results: The PP had greater carcass, total lean, and ham percentages than crossbred pigs (p<0.05). LWLRP had thicker backfat and more carcass fat percentage than LWLRD (p<0.05). There were no differences (p>0.05) on cutting percentages from tender loin, loin, boston butt, and picnic shoulder among groups. The PP and LWLRP had larger loin eye area (LEA) than LWLRD (p<0.05). Gilts had more loin percentage and lower $L^*$ value than barrows (p<0.05). No meat color parameters ($L^*$, $a^*$, and $b^*$) were affected by groups (p>0.05). PP and LWLRP had larger muscle fiber diameters than LWLRD (p<0.05). However, water holding capacity, Warner-Bratzler shear force values, and chemical composition of LT were not affected by group or sex (p>0.05). Conclusion: Pakchong 5 purebred has good carcass and lean percentages. Compared to Duroc crossbred pigs, Pakchong 5 crossbreds have similar carcass and lean percentages, larger LEA, and slightly more carcass fat, with comparable meat quality and chemical composition. Pakchong 5 boars are more affordable for very small- to medium-scale pig producers.
Heat stress is major welfare problem in the poultry industry. Huge economic losses occur every year because of mortality and decreased production due to high environmental temperatures. This experiment was conducted to determine the effects of level of inclusion of ascorbic acid supplementation to the diet on performance, carcass composition and bone characteristics of male turkeys during high summer temperature. A total of 120 day-old turkey chicks were wing banded at hatch and randomly distributed into 3 treatment groups. Three diets were formulated to provide a similar nutrient profile with the exception of using three graded levels of ascorbic acid, namely 0, 150 and 300 mg/kg of the diet. The experimental diets were used from 0 to 18 weeks of age. Body weights, feed intake and feed conversion ratio, slaughter weight, carcass yield, portions, composition and thigh and breast pigmentation of the turkeys were not affected by ascorbic acid (p>0.05). Also, shank and tibia bone characteristics were not affected by ascorbic acid (p>0.05).
The objective of the present study was to compare feed and water intakes, growth performance and carcasscharacteristics of indigenous lamb fed diets containing various levels of halophyte Sporobolus grass hay. Forty male and female lambs were randomly and equally allotted with 5 lambs of each sex per treatment to four dietary treatment groups, which were initially formulated to have 100, 70, 30 or 0.0% Sporobolus grass hay, as a source of forage replacement for conventional Rhodes grass commonly used in the region. The lambs receiving 0.0% Sporobolus grass hay (100% Rhodes grass hay) served as the control. Feed and water were offered ad libitum. Male lambs were slaughtered at the end of the feeding trials. The average daily feed intake was significantly (p<0.05) higher for the animals fed different levels of Sporobolus grass hay than for the control animals. Feed conversion ratio (FCR), i.e., kg feed/kg BW, was similar in all treatment groups. Although lambs fed the diet with 70% Sporobolus grass hay had heavier carcass weights, the differences were not significant. In conclusion, growth performance or carcass characteristics of fattening indigenous lambs were not influenced by the inclusion of different levels of Sporobolus grass hay in the diet. Because of this, Sporobolus grass hay represents an alternative forage resource for sustaining small ruminant production in the saline coastal and subcoastal areas of the world.
This study was conducted to compare the carcass characteristics and meat quality characteristics of Duroc breed and crossbred pigs (Landrace ${\times}$ Yorkshire ${\times}$ Duroc, LYD). Duroc and crossbred pigs did not show differences in carcass characteristics. Crossbred pigs had higher moisture and protein content than Duroc breeds. However, Duroc breeds had a higher fat content than the crossbred pigs. In meat quality characteristics, crossbred pigs showed higher values of drip loss and cooking loss over Duroc breeds, while Duroc breeds showed higher ultimate pH value compared to that of crossbred pigs. However, there were no differences in water holding capacity and shear force value. In myoglobin content, crossbred pigs had higher content compared to that in the Duroc population. In subjective evaluation and sensory characteristics, Duroc breeds showed significantly higher scores in all categories except for tenderness over the crossbred pigs. However, in storage characteristics, Duroc breeds showed reduced tendency relative to crossbred pigs. Crossbred pigs had higher unsaturated fatty acid content than Duroc breeds did. In these results, Duroc breeds showed excellent meat quality characteristics with its higher intramuscular fat content and pH value, lower drip loss and cooking loss and higher juiciness and flavor, compared to the crossbred pigs.
The purpose of this experiment was to study the effect of varying levels of tryptophan on the performance and carcass character of broiler. Trial 1: Ninety-six, five-week-old male Hubbard chickens, average weight 1.97 kg, were used in the trial. All birds were allocated into 3 treatments of 32 birds each. Each bird was kept in an individual cage. The trial period was 3 weeks. Treatment 1: Tryptophan content 0.198%. Treatment 2: Tryptophan content 0.228%. Treatment 3: Tryptophan content 0.258%. Trial 2: Ninety-six, three-week-old male Hubbard chickens, average weight 1.23 kg, were randomly distributed into the following two treatments. Each treatment had 48 birds. Treatment 1: Tryptophan content 0.167%. Treatment 2: Tryptophan content 0.198%. Trial 3: Ninety-six, twoweek-old Hubbard chickens, average body weight 0.72 kg, were used in this experiment. There were three treatments as follows. Treatment 1. Tryptophan content 0.136%. Treatment 2. Tryptophan content 0.167%. Treatment 3. Tryptophan content 0.198%. The result of Trial 1 showed that the feed intake, performance, and carcass characteristics were not influenced by tryptophan content in the diet which between 0.198% and 0.258% (p>0.05). There was no significant difference (p>0.05) in feed intake in either treatment in Trial 2. However, weight gain, feed conversion efficiency, and most carcass characteristics in the 0.198% treatment were significantly better (p<0.05) than in the 0.167% treatment. There was a trend that feed intake increased with increasing level of tryptophan, but there was no significant difference in Trial 3. The weight gain and feed conversion efficiency were significantly reduced for the broiler in the 0.136% treatment. This series of experiment showed that broilers need about 0.198% of tryptophan.

The present study was conducted to evaluate the effects of high levels of nutrients on the growth performance, blood metabolites and carcass characteristics of Hanwoo cattle. Eighteen Hanwoo steers were fed two types of diets: 1) Nine animals were fed the conventional diet including typical levels of crude protein (CP) and total digestive nutrients (TDN), and 2) Nine animals were fed the treatment diet including high levels of CP and TDN. The average body weight (BW) and dry matter intake (DMI) were greater (P < 0.05) in the treatment group than in the conventional group at early and late fattening stages. Also, in the treatment group, the average daily gain (ADG) was greater (P < 0.05) at the late fattening stage. The serum total lipid and cholesterol levels were higher (P < 0.05) in the late fattening stage of treatment group. The carcass weight, total fat weight, longissimus muscle area and the grade of meat quality were also greater (P < 0.05) in the treatment group than the conventional diet group. This study demonstrates that high levels of CP and TDN exhibit a positive effect on the growth performance and carcass characteristics, indicating that high levels of CP and TDN can be used as a cost-effective feeding program for Hanwoo cattle by shortening the feeding period.
