Carcass Grade and Characteristics by Carcass Weight and Backfat Thickness of Pigs (돼지의 도체중과 등지방 두께에 따른 도체 등급 및 도체 특성)

  • This study was carried out to investigate the carcass grade and characteristics of pigs by carcass weight and backfat thickness. Data used in this experiment were collected and analyzed from a total of 656 pigs composed of 128 gilts and 528 barrows at commercial public slaughter house. The carcass grade of gilts was superior to that of barrow. The carcass weight by gender tended to be heavier in castrated pig than in gilt. Backfat was significantly (p<0.05) thicker in castrated pig than in gilt. Differences between castrated pig and gilt on meat colour, marbling standard, water holding capacity, and marketing age were not significantly found. However, the level of carcass grade was higher ratio in gilt group than in castration. The appearance of percentage of PSE (pale, soft, exudative) of gilt group was superior to that of castrated group. There were significant differences among carcass weight in the marbling score (p<0.05) and water holding capacity (p<0.05). There was significant difference among backfnt thickness in carcass weight (p<0.05), marbling score (p<0.05) and water holding capacity (p<0.05).

Effects of Method and Time of Castration on Growth and Carcass Characteristics of Omani Sheep

  • Thirty two Omani sheep with eight animals each of; intact males (INT), males castrated with rubber rings immediately after birth (RR), males castrated with a burdizzo at 8 weeks of age (BC) and intact females (IF) were fed ad libitum a concentrate diet (CP 16%) plus chopped Rhodesgrass hay (8% CP) from weaning until slaughter at 28 kg. INT lambs grew faster from 9 to 20 weeks of age (p < 0.05) thus they were significantly heavier at 20 weeks of age than BC and IF, but not RR lambs. INT consumed more total feed than other sex groups over the period from 9 to 20 weeks of age. There were no significant differences between lambs of all experimental groups in feed per gain ratio. INT lambs had lower (p < 0.01) dressing percentage (DP) than RR, BC and IF. As a percentage in the empty body weight (EBW), INT had higher proportions of head, feet, empty gut (p < 0.001), liver (p < 0.05) and genitals (p < 0.05) but lower proportions of lungs and trachea (p < 0.05) than BC and IF lambs. INT males had a significantly higher (p < 0.05) proportion of bone than RR and IF lambs but lower (p < 0.05) proportion of fat than RR and IF. As a percentage in EBW, IF had the highest protortion (p < 0.001) of total body fat (TBF) followed by BC and RR whereas INT males had the lowest proportion. There was a general trend of IF having the highest proportion of individual and total non-carcass fat (TNCF) and total carcass fat (TCF) followed by BC and RR lambs whereas INT lambs had the lowest protortions of individual carcass and non-carcass fat depots. There were only few sex or castration effects on carcass tissue distribution. IF had higher proportions of intermuscular fat in the chuck, plate, leg and flank than INT and BC. The current study demonstrated that castration of intensively-raised male Omani native sheep especially at weaning using a burdizzo retarded growth rate and reduced carcass quality by increasing fat content.

AN INVESTIGATION OF IMMUNIZATION AGAINST SOMATOSTATIN BY MEASURING GROWTH AND CARCASS PARAMETERS IN GILTS

  • To investigate the effects of immunization against somatostatin (SRIF) on growth rate, feed efficiency and carcass quality; forth-eight Yorkshire gilts ($age=37.5{\pm}4.3d,\;wt=8.2{\pm}1.6kg$) were randomly assigned to one of the following three treatments (1) control, (2) bovine serum albumin (BSA) and (3) SRIF. Cyclic SRIF was conjugated to BSA as the antigen containing 1 mg of SRIF diluted in 3 ml of saline. The conjugate was injected subsutaneously together with bacterial cell protein (BP) adjuvant on both sides of the neck of each gilt as the initial injection with three subsequent booster injections. Throughout the experiment all pigs were fed ad libitum a corn-soy diet containing 20% protein. Body weight and feed intake were measured on a weekly basis. All pigs in the experiment were slaughtered when they approached 101 kg body weight on the weekly weigh day. After slaughter, carcass parameters were analyzed to assess carcass quality. Results revealed that there were no differences among SRIF, BSA and control treatments for average daily gain, feed efficiency and feed intake during the first 5 wk of the experiment and from 6 wk to slaughter. The results for carcass analysis indicated that active immunization against SRIF had no effect on fat content, lean yield, water content and Canadian carcass index These data, collectively, suggest that the protocol employed in the present investigation for active immunization against SRIF is not an effective method for the enhancement of pig growth and improvement of feed efficiency and carcass quality.

Effects of Beak Trimming, Stocking Density and Sex on Carcass Yield, Carcass Components, Plasma Glucose and Triglyceride Levels in Large White Turkeys

  • This study was conducted to determine the effects of beak trimming, stocking density (D) and sex (S) on live weight (LW), carcass yield and its component, and plasma glucose (PG) and triglyceride levels in Large White turkeys. To accomplish this aims, totally 288 d old large white turkey chicks (144 in each sex) were used. Beaks of 77 male and female poults were trimmed when 8 d old with an electrical beak trimmer. The birds were fed by commercial turkey rasion. Experiment was designed as 2 × 2 × 2 factorial arrangement with 3 replications in each group. Beak trimming and stocking density did not affect live weight, carcass composition and its components. The higher LW and carcass weight observed in trimmed groups. As expected, male birds are heavier than female, and carcass percentage (CP) would be adverse. However, in this study, CP of male was higher in trimmed, in 0.25 m2/bird. (D) × sex (S) interaction had an effect on both CP and thigh weights (p<0.05). Significantly D × S was observed in LW, CP and PG. The weight of carcass and its some components were higher in male. S × D interaction had an effect on plasma glucose level (p<0.05). Triglyceride level was affected (p<0.05) by sex. Significant relationships were found between percentage of thighs (r=0.447, p<0.01) and percentage of breast (r=0.400, p<0.01). According to this study, it can be said that trimming is useful with density of 0.25 m2/bird in turkey fattening.

Correlations among Stress Parameters, Meat and Carcass Quality Parameters in Pigs

  • Relationships among different stress parameters (lairage time and blood level of lactate and cortisol), meat quality parameters (initial and ultimate pH value, temperature, drip loss, sensory and instrumental colour, marbling) and carcass quality parameters (degree of rigor mortis and skin damages, hot carcass weight, carcass fat thickness, meatiness) were determined in pigs (n = 100) using Pearson correlations. After longer lairage, blood lactate (p<0.05) and degree of injuries (p<0.001) increased, meat became darker (p<0.001), while drip loss decreased (p<0.05). Higher lactate was associated with lower initial pH value (p<0.01), higher temperature (p<0.001) and skin blemishes score (p<0.05) and more developed rigor mortis (p<0.05), suggesting that lactate could be a predictor of both meat quality and the level of preslaughter stress. Cortisol affected carcass quality, so higher levels of cortisol were associated with increased hot carcass weight, carcass fat thickness on the back and at the sacrum and marbling, but also with decreased meatiness. The most important meat quality parameters (pH and temperature after 60 minutes) deteriorated when blood lactate concentration was above 12 mmol/L.

Carcass Characteristics and Qualitative Attributes of Pork from Immunocastrated Animals

  • An investigation was carried out to assess the carcass characteristics and meat quality aspects of immunocastrated male pigs of medium genetic potential for lean meat deposition in carcass (53 to 55%). When the crossbred Large White x Landrace pigs (n = 45) were 70 days old, they were distributed in a totally randomized design in three treatments (castrated males, females and immunocastrated males) with three replicates of five animals. The pigs were slaughtered when they were 140 days old. Carcass temperature and pH were recorded twice, at 45 min and 24 h after slaughter. The carcasses were evaluated for hot and cold carcass yield, commercial cuts yield, length and depth, back fat thickness, loin eye area and lean meat percentage. The Longissimus dorsi muscle was extracted for analysis of color ($L^*$, $a^*$, $b^*$), exudate loss, cooking loss and centesimal and sensorial analysis of the meat. There were no significant differences for the evaluated parameters between castrated males, immunocastrated males and females, except for backfat thickness between the 7th and 8th thoracic vertebra and the point P2 (lower for immunocastrated males) and carcass temperature at 45 min post slaughter (higher in immunocastrated males), however, this did not interfer with the rate of pH decrease post mortem and the meat quality. The results from this research did not indicate a benefit of immunocastration on carcass characteristics of pigs of medium genetic potential for lean meat deposition in carcass, when compared to surgical castration.

Early Prediction of Carcass Yield Grade by Ultrasound in Hanwoo (초음파를 이용한 한우 육량등급의 조기예측)

  • This study was carried out to make early prediction of carcass yield grade. Sixty six Hanwoo steers were measured for back fat thickness, longissimus muscle area and body weight at 18, 21 and 24 months of age by ultrasound. Carcass evaluation was done after ultrasound measurement at 24 month of age. Ultrasonic yield grade at 18, 21 and 24 month of age were predicted by regression and decision tree methods. Classifying by carcass yield grade, ultrasonic back fat thickness at 18, 21 and 24 months of age was significantly different in each carcass yield grade (p<0.05). The prediction accuracy of carcass yield grade by regression method was 78.8% at 18 months, 86.4% at 21 months and 90.9% at 24 months of age. By using the decision tree method for carcass yield grade, 78.8%, 89.4% and 89.4% of prediction accuracy were obtained at 18, 21 and 24 months of age, respectively.

Effect of Graded Dietary Levels of Neem (Azadirachta indica) Seed Kernel Cake on Carcass Characteristics of Broiler Rabbits

  • Rabbits (48) of Soviet chinchilla (24) and White giant (24) were fed from 6 weeks to 12 weeks of age intensively on either of four isonitrogenous - isocaloric diets containing 0 ($D_1$), 5($D_2$), 10($D_3$) and 20($D_4$) percent raw neem seed kernel cake (NSKC), respectively as per NRC (1977) requirements in a Randomized block design and slaughtered at the end to find out differences in their carcass traits due to NSKC feeding. Dietary treatment had no significant effect on weight of edibles and inedibles and their percentages and dressing percentage in terms of carcass, carcass with pluck and carcass with pluck and head. Similarly, the meat-bone ratio of various primal cuts and overall carcass, yield of edibles per unit of inedibles and eye muscle area were not influenced due to the dietary variations. Chemical composition of fresh meat, and organoleptic evaluation of cooked meat with and without salt did not vary significantly due to incorporation of NSKC in the diets. The rabbits fed 20% NSKC ($D_4$) though consumed more (p<0.05) DM and DE per kg meat production, the intake of crude protein and total digestible nutrients was similar with other dietary treatments. Feed cost per unit meat production was, however, lower on 5 and 10% NSKC containing diets by 7.75 and 12.56%, respectively, as compared to deoiled ground nut cake containing control diet. It appears that NSKC could be used as a wholesome vegetable protein supplement upto 10% in diet of rabbits without any adverse effect on commercial carcass traits.

Carcass Characteristics and Chemical Composition of the Longissimus Muscle of Nellore, Caracu and Holstein-friesian Bulls Finished in a Feedlot

  • This work was carried out to study the carcass characteristics, the chemical composition and the fatty acid profile in Longissimus muscle (LM) of bull breeds Nellore, NEL (11), Caracu, CAR (12) and Holstein-Friesian, HFR (12) finished in a feedlot. The bulls were fed twice a day with corn silage, cotton meal, cracked corn, urea, limestone and mineral salt. NEL and CAR bulls had similar (p>0.05) final weight and hot carcass weight. However, NEL and CAR bulls had higher (p<0.05) final weight and hot carcass weight than HFR bulls. Carcass hot dressing, carcass conformation, cushion thickness, Longissimus muscle area and texture were similar (p>0.05) among NEL, CAR and HFR bulls. NEL and HFR bulls had higher (p<0.05) carcass length in comparison to the CAR breed. Nellore breed had higher (p<0.05) leg length in comparison to CAR and HFR breeds. Leg length was similar (p>0.05) between CAR and HFR breeds. Thickness fat, color and marbling score were lower (p<0.05) in NEL breed in comparison to CAR and HFR breeds. LM of NEL bulls had higher (p<0.05) meat moisture content in comparison to CAR and HFR bulls. In contrast, lipid content was lower (p<0.10) in HFR bulls. LM ash and crude protein contents were similar (p>0.05) among breeds. Saturated fatty acids (SFA) were higher (p<0.10) in HFR animals. Monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), n-6, n-3 and PUFA/SFA ratio were similar (p>0.05) among the different breeds. N-6/n-3 ratio was higher (p<0.05) in CAR animals.

Effects of Vitamin A on Carcass Composition Concerning Younger Steer Fattening of Wagyu Cattle

  • Regarding the fattening of younger cattle that the Ministry of Agriculture Forestry and Fisheries (MAFF) recommends in Japan, this study looked at vitamin A control in feed and blood and its effect on performance of production and carcass composition of Wagyu steers. Five sets from 10 Wagyu artificial identical twins were divided to into 2 groups, a restricted group (Test) and a supplied group (Control). The body weight at the finishing time of the Test was significantly lower than that of the Control (p<0.05). The daily gain from 13 to 21 months old, as the animals in the Test were fed the concentrated feed without Vitamin A, was significantly different (p<0.05) between the Test and the Control. The total daily gains for the Test and the Control for the fattening period were 0.82 kg/day and 0.93 kg/day, respectively, which showed a significant difference (p<0.01). Regarding the rib thickness, the Test was thinner than the Control. The Beef Marbling Scores of the Test and Control were 3.60 and 2.80, respectively. The muscle weight of the Test was significantly smaller than that of the Control (p<0.01). However, regarding the ratio to the carcass, the Test was significantly higher than the Control (p<0.05). For the fat weight, the Test was smaller by about 15 kg than the Control (p<0.01). Furthermore, for the fat ratio to the carcass, the Test was significantly lower than the Control (p<0.05). The bone weights of the two groups were approximately the same. Regarding the ratio of bone to carcass, the Test was higher than the Control (p<0.01). For the younger fattening method, the low level vitamin A in the serum had the effect that the muscle ratio to the carcass weight was greater and the fat was less, but the carcass and muscle weight were less.
