Nutritional Assessment and Mineral Content of Wild and Cultured Catfish Silurus asotus (자연산 및 양식산 메기의 미네랄 함량 및 영양평가)

  • This study was performed to evaluate mineral contents of catfish Silurus asotus. As a result of mineral content, the mean content of the macro mineral was (in descending order): K (310.36-412.66 mg/100 g), P (186.42-223.02 mg/100 g), Na (35.32-57.87 mg/100 g), Mg (22.88-31.87 mg/100 g), Ca (9.05-13.07 mg/100 g). In comparison, the mean content of the micro mineral was (in descending order): Fe (0.26-0.95 mg/100 g), Zn (0.26-1.02 mg/100 g), Cu (ND-0.08 mg/100 g), Mn (0.01-0.03 mg/100 g). A proportion of mineral intakes with the dietary reference intakes for Koreans (KDRIs) set by the Korean Nutrition Society. Nutrient uptake proportion of mineral intakes was (in descending order): P (62.16%), K (20.71%), Mg (16.82%), Fe (13.02%), Zn (11.38%) Cu (10.94%), Na (6.59%), Ca (3.09%), Mn (0.96%). The mineral content was compared with the major protein food sources according to the Korea Health Statistics (2013) such as polished rice, pork, chicken, beef, eggs and milk. The calcium content contains; lower level of milk and eggs, chicken whereas higher levels of rice, pork and beef. Catfish has less iron content than major protein food source. Phosphorus and potassium contain higher level of major protein food sources.

  • Moraceae comprise a large family of sixty genera and neary 1,400 specieses, including important groups such as Artocarpus, Morus, and Ficus. In particular, Morus(mulberry) is a small genus of tree and shrubs found in temperate and subtropical regions of the Northern hemishere and has been widely cultivated in China and Korea, In addition, the root bark of mulberry tree have been used as an antiphlogic, diuretic, and expectorant in white medicine, and the crude drug is known as "Sangbaikpi" in Korea. Recently, some papers have been published reporting the hypotensive effect, antiviral effect, antifungal effect, inhibitory effect of cAMP-phosphodiesterase, and anticancer effect of this extract. Little is known about that Cortex mori could have been an antiallergic effect. The purpose of this study was the development of an antiallergic agent with an antiallergic effect from Cortex mori. For this, several in vivo and in vitro experimental models were used. Results are 1) Cortex mori inhibited the compound 48/80-induced degranu-lation, histamine release and calcium uptake of rat peritoneal mast cells, 2) compound 48/80-induced anaphylactic shock and cutaneous reaction were significantly inhibited by pretreatment of Cortex mori, and 3) Cortex mori inhibited the ovalbumin-induced late astmatic reaction. From the above results it is suggested that Cortex mori has some substances with an antiallergic activity. Our final purpose of this study is to develope the new drug with an antiallergic activity from Cortex mori

  • Croping pattern, fertilizer application, Soil chemical characteristics, plant nutritional condition and growth status were investigated in three major vinyl house farms near Yesan. Croping pattern changed from tomato to pumpkin due to tomato diseases such as wilting and blossom-end rot. Wilting seemed to be closely related with high EC, nitrogen and root cyst nematodes. Calcium deficiency seemed to be due to high potassium, EC in soil and high uptake of iron. Chinese cabbages in summer showed poor growth (80% inhibition) due to high EC(1.8mmho/cm) and easily got wenny root disease that might due to high phosphorus (1055ppm) in soil. Summer radish showed poor growth (50% inhibition) due to high EC(1.6mmho/cm), K and Mg resulting in base imbalance. Farmers used 5 kinds of compound fertilizer as basal application and one without P for top dressing. Urea and KCL were used for top dressing. Heavy application of livestock manure and chemical fertilizer for every crop made eutrophic even in subsoil.

Growth and Mineral Contents of Spinach (Spinacia oleracea L.) and Radish (Raphanus sativus L.) as Related with a Low Dose Gamma Irradiation

  • This study was to evaluate the effects of gamma irradiation on the germination, nutrient concentrations and growth of spinach and radish. Both the spinach and radish seeds exhibited relatively higher germination rates in response to the low doses of gamma irradiation compared to the non -irradiated control. Leaf DW of the radish did not respond to gamma irradiation but that of the spinach increased significantly in response to a gamma radiation of 4 Gy (P< 0.05). Leaf growth parameters of the spinach including the leaf area and SLA (leaf area/leaf dry weight) also demonstrated increased responses to gamma irradiation. R/S (root dry weight/shoot dry weight), root DW and root length of the spinach exhibited a positive response to gamma irradiation while those of the radish did not. In contrast, SRL (root length/root dry weight) significantly decreased with gamma irradiation at 8 Gy for the spinach, but not for the radish. The tissue nitrogen concentrations of the spinach showed an increased response to gamma irradiation while that of the radish did not. Furthermore, higher concentrations of phosphorus, potassium, calcium and magnesium were found in the irradiated spinach, but not in the irradiated radish. It seems that the non-specific physiological and/or biochemical activities of spinach might be accelerated by gamma irradiation, possibly accounting for the stimulation of nutrient uptake from the root media and early biomass accumulation in the current study.

Plant Uptake of Heavy Metals in Andong Serpentine Soil

  • Serpentines soil have high values of magnesium and low values of calcium, and are usually deficient in N and P, but rich in iron, Ni, silicates. We investigated serpentine soil properties and measured the content of nutrient elements and heavy metals in shoots and root of plant species which were in common at serpentine and non-serpentine areas in Andong, Korea. The soils showed higher pH value above 6.9. The contents of Ni, Cr, Fe and Mg of serpentine soils exhibited 77, 27, 5.5 and 12.5 times more than in non-serpentine soils, respectively. The content of Na was almost same but K was two times higher in non-serpentine soil, compared with serpentine soil. The contents of nutrient element such as K, Ca, Na and P in serpentine plants did not show conspicuous differences with non-serpentine plants. On the other hand, the concentrations of Ni, Cr, Fe, Mg and Mg/Ca were very high in plant on serpentine area. The all plant species collected at the serpentine site were bodenvag plants, which are not restricted to a specific type of substrate. By the plant species and parts of plant tissues, the absorption levels and patterns showed high variation and were species-specific. Carex lanceolata, Lysimachia clethroides and Cynanchum paniculatum contained much chromium and Eupatorium chinense and C. paniculatum exhibited high contents of Ni. In leaf tissue, C. lanceolata, Rubus parvifolius, Festuca ovina, Quercus serrata, and L. clethroides took comparatively large amount of Cr in serpentine area. E. chinense contained large amount of Ni, Cr and Fe in a leaf tissue. The stem of Galium verum, Juniperus rigida included high amount of Cr, Ni and Fe. And C. paniculatum absorbed large amount of Ni and Cr in the stem.

Bioaccumulation of Chromium Ions by Immobilized Cells of a Filamentous Cyanobacterium, Anabaena variabilis

  • Anabaena variabilis ATCC 29413 grew in chromium (Cr) containing Chu-10 (basal) and nitrate-supplemented media, and the growth of the organism in $100{\mu}M$ chromium was found to be 50% of that in control medium. The growth in nitrate $({NO_3}^-)$ supplemented cultures was better as compared to cultures grown in basal medium. Free cells from basal and nitrate-supplemented media removed 5.2 and 7.4 nmol of chromium $mg^{-1}$protein in 8 h, respectively, from the medium containing $30{\mu}M$ chromium. The efficiency of chromium removal increased 7-fold in imidazole buffer (0.2 M, pH 7.0). A cell density equivalent to $100{\mu}g$ protein $ml^{-1}$ was found to be optimum for maximum Cr removal. Entrapment of cells in calcium-alginate beads did not affect the rate of Cr uptake by the cells. The efficiency of the laboratory-scale continuous flow bioreactor $(12.5{\times}2cm)$ loaded with alginate-immobilized cells (10 mg protein) and fed with $30{\mu}M$ chromium solution was compared at different flow rates. The efficiency of the bioreactor varied with flow rates. In terms of percent removal of Cr from influent, a flow rate of 0.1 ml $min^{-1}$ was found to be optimum for 6 h (54% Cr removal efficiency). Maximum amount of Cr (883 nmol) was removed by the cells in 3 h at a flow rate of 0.5 ml $min^{-1}$. The potential use of A. variabilis in removing Cr from industrial effluents is discussed.

Effect of Superoxide Dismutase on the Release of [$^3H$]-5-Hydroxytrytamine after Hypoxia from Rat Hippocampal Slices (흰쥐 해마 절편에서 저산소증에 의한 [$^3H$-5-Hydroxytrytamine의 유리 변동에 미치는 superoxide dismutase/catalase의 영향)

  • Many factors are known to be responsible for cerebral ischemic injury, such as excitatory neurotransmitters, increased intraneuronal calcium, or disturbance of cellular energy metabolism. Recently, oxygen free radicals, formed during ischemia/reperfusion, have been proposed as one of the main causes of ischemia/reperfusion injury. Therefore, to investigate the role of oxygen free radical during ischemia/reperfusion, in the present study the effect of endogenous oxygen free radical scavenger, superoxide dismutase / catalase(SOD / catalase) on the release of [$^3$H]-5-hydroxytryptamine([$^3$H]-5-HT) during hypoxia/reoxygenation in rat hippocampal slices was measured. The hippocampus was obtained from the rat brain and sliced 400 gm thickness with manual chopper. After 30 min's preincubation in the normal buffer, the slices were incubated for 20 min in a buffer containing [$^3$H]-5-HT(0.1 $\mu$M, 74 $\mu$Ci) for uptake, and washed. To measure the release of [$^3$H]-5-HT into the buffer, the incubation medium was drained off and refilled every ten minutes through a sequence of 14 tubes. Induction of hypoxia for 20 min (gassing it with 95% N$_2$/5% CO$_2$) was done in the 6th and 7th tube, and oxygen free radical scavenger, SOD / catalase was added 10 minutes prior to induction of hypoxia. The radioactivity in each buffer and the tissue were counted using liquid scintillation counter and the results were expressed as a percentage of the total activity. When slices were exposed to hypoxia for 20 min, [$^3$H]-5-HT release was markedly decreased and a rebound release of [$^3$H]-5-HT was observed on the post-hypoxic reoxygenation period. SOD / catalase did not changed the release of [$^3$H]-5-HT in control group, but inhibited the decrease of [$^3$H]-5-HT release in hypoxic period and rebound increase of [$^3$H]-5-HT in reoxygenation period. This result suggest that superoxide anion may play a role in the hypoxic-, and reoxygenation-induced change of [$^3$H]-5-HT release in rat hippocampal slices.

  • This study was established on which the selenium (Se), known as one of the functional elements in the human body, treatment was the most effective for the Se uptake in the soil and tree. Se treatments included foliar application, soil fertigation, and trunk injection. Se fertigation and control had similar soil $P_2O_5$, K, and Mg concentrations, and calcium and Se concentrations in the soil were greater on the control and Se fertigation, respectively. Leaf characteristics were not different among the treated trees. No differences were observed for the leaf K and Ca concentrations among the treated trees, and foliar Mg was greater on the Se treated trees than the control. Se foliar application and trunk injection had greater Se concentrations in the leaves and fruits than the Se fertigation and control.

Effects of Organic Acids on Availability of Phosphate and Growth of Corn in Phosphate and Salts Accumulated Soil

  • Accumulated Phosphate can be released by ligand exchange reaction of organic acids. The objective of this study was to evaluate effects of the organic acids on the availability of phosphate and the growth of crop in phosphate and salts accumulated soil. Soil samples were collected from farmer's plastic film house. Available phosphate and electrical conductivity of soil were $3,005mg\;kg^{-1}$ and $16.63mg\;kg^{-1}$ which were 6 and 8 times higher than the optimum range of soil for crop growth, respectively. Corns were cultivated in pots for 2 months. Treatments were no treatment (control), phosphate fertilizer (P), citric acid (CA) 1, 5, 10 mM, and oxalic acid (OA) 1, 5, 10 mM. Water soluble phosphorus, available phosphate, corn growth and uptake were determined after cultivation. Results showed that organic acids increased water soluble phosphorus and available phosphate. For the level of 10 mM, the order of effectiveness of organic acids for water soluble P was citric acid (44%) > oxalic acid (32%). Height and dry weight of corns were increased significantly by the treatment of citric acid 1 and 5 mM. Also, corn absorbed more phosphorus, nitrogen, potassium, calcium and magnesium in the treatment of citric acid 1 mM than these of other treatments. Even though phosphate availability of soil was enhanced by addition of citric acid 10 mM, the growth of corns decreased because high concentration of citric acid caused salt damage by increasement of electrical conductivity. Thus, the citric acid of 1 mM has the potential to improve the availability of phosphate and the healthy growth of corns.

Functional Properties of Yogurt Containing Specific Peptides derived from Whey Proteins

  • The purpose of this study was to investigate the acid tolerance, bile acid tolerance, and fermentation activity of lactic acid bacteria isolated from Kimchi in the presence of hydrolysates of whey protein concentrate. Kimchi isolates DK109, DK119, DK121, DK128, DK211, DK212, and DK215, which were identified as Lactobacillus sp., and L. casei DK128 showed the highest acid and bile acid tolerance. To produce whey hydrolysates, enzymes were added to a 10% (w/v) whey protein concentrate (WPC) solution at 1:50 (w/v, protein). The viabilities of the DK strains were determined in the presence of low pH and bile salts. Then, yogurt was produced via fermentation with L. casei DK128, an isolate from Kimchi, in the presence of the following additives: CPP, WPC, and WPC hydrolysates (WPCH) generated by alcalase (A) or neutrase (N). The produced yogurts were subjected to various analyses, including viable cell counts (CFU/mL), pH, titratable activity, and sensory testing. After 8 h of fermentation, the pH and titratable activity values of all test samples were 4.2 and 0.9, respectively. The viable counts of LAB were $3.49{\times}10^8$, $5.72{\times}10^8$, $7.01{\times}10^8$, and $6.97{\times}10^8$, for the Control, CPP, A, and N samples, respectively. These results suggest that whey proteins have potential as dietary supplements in functional foods and that WPCH could be used in yogurt as a low-cost alternative to CPP.
