Development of Calcium Enriched Healthy Snack using Dried Shrimp (건조새우를 이용한 칼슘강화 건강다과 개발)

  • In this study, we developed a healthy snack using dried shrimp powder which is rich in calcium to help prevent bone disease. Different types of yanggaeng were prepared with varying ratios of dried shrimp powder; 1%, 3%, 5%, and 7%. Moisture content, color value, texture properties, and mineral concentration were measured. The L, a, and b chromaticity values showed significant differences in the 5% addition group (p<0.001). The texture properties, hardness, and adhesion decreased significantly as the amount of shrimp powder increased (p<0.001), while chewiness and elasticity significantly increased as the amount increased (p<0.001). Calcium and potassium increased significantly as the amount of shrimp powder increased (p<0.001).

A Study on the Calcium Bioavailability of Eggshell Powder in the Growing Rats (난각 칼슘의 생체 이용성에 관한 연구)

  • This study has investigated the bioavailability of calcium in eggshell powder (ESP) for the purpose of reutilizing eggshells as the calcium source. The experiment was designed 2 ${\times}$ 2 factorial method with two sources, CaCO$_3$ and ESP, and two levels, 0.2% and 0.4% calcium. Weanling SD rats were assigned randomly to one of 4 groups and provided by one of the isocaloric, 20% casein based 4 different experimental diets for 4weeks. Deionized water was given and environment was kept from any contamination of minerals. The body weight, diet intake, feed efficiency ratio (FER), bone growth, Ca contents of bones, and apparent absorption were measured. FER (0.38 - 0.40) and kidney weight were not different among groups and the weight and length, Ca content, strength of two bones Tibia and Femur were not affected by Ca sources except Femur Ca content. Ca content of Femur was greater in ESP groups than that of CaCO$_3$ groups. The body weight gain, bone growth, the Ca contents and strength of bones were significantly greater in 0.4% calcium groups suggesting 0.2% calcium is not sufficient for the optimum growth in the growing rats. These results indicate that ESP be a proper Ca source comparable or superior to CaCO$_3$. However the apparent absorption rate of final 3 days of feeding did not support the observed results showing lower rate in ESP than CaCO$_3$ groups. Further study be needed in the absorption aspect.

  • Soybean-urease induced carbonate precipitation (EICP), as an alternative to microbially induced carbonate precipitation (MICP), was employed for soil improvement. Meanwhile, soluble calcium produced from industrial waste carbide slag powder (CSP) via the acid dissolution method was used for the EICP process. The ratio of CSP to the acetic acid solution was optimized to obtain a desirable calcium concentration with an appropriate pH. The calcium solution was then used for the sand columns test, and the engineering properties of the EICP-treated sand, including unconfined compressive strength, permeability, and calcium carbonate content, were evaluated. Results showed that the properties of the biocemented sand using the CSP derived calcium solution were comparable to those using the reagent grade CaCl2. Scanning electron microscopy (SEM) and X-ray diffraction (XRD) analyses revealed that spherical vaterite crystals were mainly formed when the CSP-derived calcium solution was used. In contrast, spherical calcite crystals were primarily formed as the reagent grade CaCl2 was used. This study highlighted that it was effective and sustainable to use soluble calcium produced from CSP for the EICP process.

  • Ultrafine calcim carbonate powders with the size of 0.05~0.1 ${\mu}{\textrm}{m}$ and the calcite phase were prepared by the nozzle spouting method which was conducted by spouting calcium hydroxide slurry in reactor filled with CO2 gas. Well dispersed ultra-fine particles were synthesized in condition of high Ca(OH)2 concentration of the slurry ( 0.5wt%) synthesized calcium carbonate powder was shown the large particle size with agglo-meration.

  • These are many kinds of self-hardening methods for sand mold using sodium silicate. When sodium silicate solution is mixed with calcium-orthosilicate powder hardening reaction occurs, which is based for self-hardening method at high temperature. The high temperature strength and resicual strength of mold are related to the mole ratio of sodium silicate and the contents of calcium-orthosilicate powder. The results obtained in this study were as follows: 1) The high temperature strength of mold was maximum at about $600^{\circ}C$, and at higher temperature showed lower value on the contrary. 2) The high temperature strength of mold was increased by increasing the amount of sodium silicate having lower mole ratio and high concentration. 3) The residual strength of mold was reduced by increasing the mole ratio of sodium silicate and increasing the concentration of calcium-orthosilicate.

  • Calcium phosphate powders were successfully synthesized by using re-cycled eggshell and phosphoric acid. The crystallization behavior and powder morphologies of the synthesized powders were dependent on the starting condition of the eggshell, the mixing ratio and method of the eggshell and phosphoric acid, and calcination temperature. In general, $\beta$-tricalcium phosphate was stably synthesized at about $900^{\circ}C$ for 1h at each proper mixing ratio. And, the synthesized powders showed the similar microstructures to the morphology of original eggshell with uniform particle sizes. In this study, the calcium phosphate powders were synthesized with eggshell in various processing method. And their unique microstructures obtained from the eggshell were also. observed. The crystalline developments and microstructures of the synthesized powders were examined by X-ray diffractometer and scanning electron microscopy.

  • Calcium-hexaluminate phase $(CA_6)$ is known to be effective for the crack shielding due to the spinel block crystal structure. In this study, we focused to the control of $CA_6$ morphology for good damage tolerance behavior in alumina and zirconia/calcium-hexaluminate $(CA_6)$ composites. Calcium-hexaluminate $(CA_6)$ composites were prepared from zirconia, alumina and calcium carbornate powders. Calcium-hexaluminate $(CA_6)$ phase was obtained by the solid reaction through the formation of intermediate phase $(CA_2)$. $CA_6$ phase showed the column type abnormal grain grown behavior composed of small blocks. Due to the typical microstructure of $CA_6$, alumina and zirconia/calcium-hexaluminate composites provide a well controlled crack propagation behavior.

Preparation of Calcium Powder from Eggshell and Use of Organic Acids for Enhancement of Calcium Ionization (난각칼슘의 제조 조건 및 유기산이 칼슘의 이온화에 미치는 영향)

  • An efficient process for recovery of calcium from the eggshell was developed and some organic acids were used in an attempt to enhance the degree of calcium ionization. Eggshell membrane was readily separated from crushed eggshell based on the differences in specific gravities. The conditions which allowed most efficient membrane removal were found to be 30 rpm of speed, 30 min of residence time and 0.08 of volume fraction. It took 3 hours for the eggshell powder prepared at $1000^{\circ}C$ to reach L value of 90 with the Hausner ratio being 1.43. The calcium ion concentrations were 990, 3500, 3900 and 4200 ppm in pure water, acetic acid, citric acid and lactic acid$(0.05{\sim}3%)$ aqueous solution, respectively. The degrees of ionization of calcium-citrate-malate complex(CCM), calcium-citric acid complex(CC) and calcium malic acid complex(CM) increased by 4 to 5 times compared to eggshell calcium powder.

Preparation of Calcium Lactate from Ostrich Egg Shell (타조알 껍질로부터 젖산칼슘의 제조)

  • To effectively utilize ostrich egg shell as a calcium source, various conditions for preparation of calcium lactate from ashing powder (ashed for 15 min at 90$0^{\circ}C$) were evaluated. Optimal conditions involved treatment of ashing powder with 30 mL lactic acid solution at room temperature for 15 min with a CaO : lactic acid ratio (mol/mol) of 1:2. Calcium lactate contained 39.70% calcium comparable to that (40.98%) in ostrich egg shell. Solubility of calcium lactate, 97.7%, was considerably higher than those (0.58% and 3.43%, respectively) of ostrich egg shell and ashing powder, indicating that the former can be utilized more effectively as a calcium source than the two latter.

  • The purpose of this study was to search the calcium and iron rich foods in Korean people. The food sources presented in the current home economics textbooks of middle and high school were investigated. And 40 kinds of calcium and iron rich foods were selected by the quantity in 100g edible portion. one serving size and according to 1997 food supply data. Also 3 major food groups of calcium and iron supply in Korean were identified, and 10 rich foods for each food groups were selected. The results were summarized as follows. 1. The food sources of calcium 1) The food sources of calcium presented in the home economics textbooks of middle and high school are milk and dairy products. small fishes such as anchovy icefish and dried strip and green vegetables etc. 2) The calcium rich foods by 100g edible portion were in order of skim milk powder river snail sesame sea mustard. whole milk powder. snapping turtle loach sea tangle(dried) opossum shrimp and sea lettuce(dried). And the calcium rich foods by the calcium content in one serving were in order of river snail snapping turtle opossum shrimp loach spiny lobster skate skim milk powder small alaska pollack freshwater crab condensed milk whole milk powder skate ray and milk. 3) The 3 major calcium supply food groups in Korean were vegetables fish and shellfishes and milk and dairy products. 4) The calcium supply foods according to the quantity of food supply in 1997 was in order of sea mustard, milk anchovy chinese cabbage soybean skin milk powder laver shrimp welsh onion and maize. The vegetables were the important sources of calcium in Korean. 2. The food sources of iron 1) The food sources of iron which are commonly presented in the textbooks of middle and high school were meat liver egg(egg yolk) and green vegetables etc 2) The iron rich foods on the basis of the iron content in 100g edible portion were in order of surf clam marsh clam laver(dried)( sea lettuce(dried), crayfish pelilla seed little neck clam orient hard clam, venus clam, and freshwater carab. And the iron rich foods by the iron content in one serving were in order of surf clam marsh clam crayfish little neck clam orient hard clam freshwater crab venus clam hen cockle green confertii(fresh) pen shell and spiny lobster. 3) The 3 major iron supply food groups in Korean were cereals an cereal products fishes and shellfishes and vegetables. 4) The iron supply food according to the quantity of food supply in 1997 was in order of soybean sea mustard maize rice meat edible viscera laver wheat flour, pook, red pepper, egg and bovine meat.
