A review on the softening of the fermented vegetables and the fruits (침채류와 과실의 연화현상에 관한 고찰)

  • The softening of the femented vegetables and the fruits was resulted from the degradation of pectin substances, cellulose, hemicellulose by polygalacturonase(PG), pectinesterase(PE), Cx-cellulase, $\beta$-galctosidase. The conversion of insoluble pectin to soluble pectin in cell wall-middle lamella was a major factor in the changes of firmness. Ca2+ was substantially increased firmness. However, Ca2+ could be removed from cell wall by chelating agents such as oxalic acid and citric acid. And Ca2+ was replaced with Na+ by ion exchange reaction. Ca2+ deficient tissue was vulnerable to attack by PG. Preheating treatment and Ca2+ addition is most effective in inhibiting the vegetable food softening and in increasing middle lamella-cell wall regidity, which PE activation by preheating treatment and Ca2+ addition could created more anionic carboxyl groups for cationic materials binding such as Ca2+ and chitosan and for polypectategel formation. Excessive demethylation by PE was associated with loosening of middle lamella cell wall components and softening.

Effects of High Dietary Calcium and Fat Levels on the Performance, Intestinal pH, Body Composition and Size and Weight of Organs in Growing Chickens

  • The effect of fat supplementation of high calcium (Ca) diets on the performance, intestinal pH, body composition and size and weight of organs in growing chickens were investigated in two experiments. Growing chickens tolerated a high dietary level of Ca (22.5 vs 12.1 g/kg) in the presence of 6.3 g/kg of available phosphorus without any significant effect on performance. Intestinal pH was significantly increased by the addition of excess Ca and fat which probably created the right pH for the formation of insoluble Ca soaps. Excess dietary Ca increased carcass linoleic acid concentration at the expense of palmitic and stearic acid contents, whilst the addition of sunflower oil (80 g/kg diet) to the diet increased carcass linoleic acid concentration at the expense of palmitic acid content of the carcass. Intestinal and visceral organ size and weight were not influenced by excess Ca or fat. However, there was a non significant increase in the intestinal dry weight per unit of length caused by excess dietary Ca. It was concluded that excess dietary Ca of 22.5 g/kg did not significantly influence the performance of meat chickens. However, excess Ca increased intestinal pH and altered carcass fatty acid composition. Fat supplementation did not alter intestinal pH with high Ca diets. Excess dietary fat altered carcass fatty acid composition and reduced protein content. Intestinal and visceral organ size and weights were not influenced by excess dietary levels of Ca of fat.

  • Effects of the fluorination in the $K_2$TiF\ulcorner solution and in-situ KF+ KOH electrolyte on the electrochemical charge-discharge properties of CaNi\ulcorner and the Mg-CaNi\ulcorner electrodes were investigated. In-situ fluorination in the KF+ KOH electrolyte compared with pre-fluorination in the$ K_2$TiF\ulcorner solution could improve the electrochemical cycling durability of CaNi\ulcorner and MG-CaN\ulcorner electrodes. The fluorinated layer on the alloy surface by pre-fluorination to improve the activity and anti-corrosion of the electrodes was dissolved in the pure KOH electrolyte during the cycling. The fluorinated layer was formed continuously on the surface of the electrode by thee2N KF addition in the 6N KOH electrolyte. The excess F\ulcorner ion addition in KOH electrolyte could improve the electrochemical cycling durability of CaNi\ulcorner and Mg-CaNi\ulcorner electrode. But, in case of MG-CaNi\ulcorner electrode, the discharge capacity of the electrode was reduced and the poor cycling property was shown with increasing of the MG process times.

  • Removal of $NO_x$ on $CaO/TiO_2$ photocatalyst manufactured by the addition of $Ca(OH)_2$ was measured in relation with the amount of $Ca(OH)_2$ and calcination temperature. In case of pure $TiO_2$, the $NO_x$ removal decreased greatly with the increase of calcination temperature from $500^{\circ}C\;to\;700^{\circ}C$, whereas in the photocatalyst added with $Ca(OH)_2$, the removed amount of $NO_x$ was high and constant regardless of calcination temperature. Considering $NO_x$ removal patterns depending on the amount of $Ca(OH)_2$ added(50, 30, 10wt%), high removal rate showed at the photocatalysts containing less than 30wt% of $Ca(OH)_2$, and it was about 30% higher than that of pure $TiO_2$. From the XRD patterns, it is seen that the addition of $Ca(OH)_2$ contributes to maintaining the anatase structure that is favourable to photocatalysis. It also indicates that the possibility of the formation of calcium titanate($CaTiO_3$) by reacting with $TiO_2$ above $700^{\circ}C$. Apart from the favourable crystalline structure, the addition of $Ca(OH)_2$ helped increase the alkalinity of photocatalyst surface, thus promoting the photooxidation reaction of $NO_x$.

Microwave Dielectric Properties of Ca(Li1/4Nb3/4)O3-CaTiO3 Ceramics added with Zinc-borosilicate Glass Frit (Zinc-borosilicate Glass Frit 첨가에 따른 Ca(Li1/4Nb3/4)O3-CaTiO3 세라믹스의 마이크로파 유전 특성)

  • $xCa(Li_{1/4}Nb_{3/4})O_{3}-(1-x)CaTiO_{3}$ ceramics were sintered under the presence of zinc-borosilicate(ZBS) glass and resultant microwave dielectric properties were investigated with a view to applying the composition to low-temperature co-fired ceramic(LTCC) technology. The addition of $5{\sim}15wt%$ ZBS glass ensured successful sintering below $900\;^{\circ}C$. In general, increased addition of ZBS glass increased sinterability but it decreased the quality factor($Q{\times}f_{0}$) significantly due to the formation of an excessive liquid and second phases. As for the addition of $CaTiO_3$, the dielectric constant(${\epsilon}_r$) and temperature coefficient of resonant frequency(${\tau}_f$) increased, while the quality factor($Q{\times}f_{0}$) did not show an apparent change. The sintered $0.9Ca(Li_{1/4}Nb_{3/4})O_{3}-0.1CaTiO_{3}$ specimen at $900\;^{\circ}C$ with 10 wt% ZBS glass demonstrated 39.6 in dielectric constant(${\epsilon}_r$), 4,400 in quality factor$(Q{\times}f_{0}),\;and\;-11ppm/^{\circ}C$ in temperature coefficient of resonant frequency(${\tau}_f$).

Effects of Dietary Isoflavone and Casein Phosphopeptide on Hatching Egg Production and Eggshell Quality in Aged Egg-Type Breeder Hens (산란종계 사료 내 이소플라본 및 Casein Phosphopeptide의 첨가가 종란 생산성 및 후기 난각질에 미치는 영향)

  • This experiment was conducted to investigate the effects of dietary Ca levels and some feed additives such as isoflavone and casein phosphopeptide (CPP) on eggshell quality and hatching egg production in aged egg-type breeder hens. A total of three hundred and sixty, 56-week-old Hy-Line Brown breeder hens were divided into six groups and fed experimental diets of two levels of Ca (3.3% or 3.6%) either with addition of 0.2% isoflavone, 0.5% CPP or devoid of all for 5 weeks. There were no significant differences in laying performances and settable egg production among the groups. Significant increases (P<0.05) in eggshell strength were observed with increasing dietary Ca and addition of isoflavone, but not with addition of CPP. Fertility and hatchability were not influenced by dietary Ca and addition of isoflavone or CPP. The treatment had few significant effects on tibial proximal compositions and breaking strength. The concentrations of Ca, P, estrogen and calcitonin in serum were not affected by the dietary treatments. These results indicated that relatively high level of dietary Ca in combination with isoflavone had a beneficial effect on improving eggshell quality in aged egg-type breeder hens. But hatching egg production was not affected by dietary isoflavone or CPP.

Textural Properties of Soygel with Added Alginate and Pectin (Alginate와 pectin 첨가에 의한 콩묵의 텍스쳐 특성)

  • Effect on alginate, pectin and Ca salts on textural properties of whole soybean gel(soygel) was investigated. The soygel was prepared by addition of sodium alginate, pectin and Ca salts into whole soy flour(300 mesh, WSF) suspension followed by through mixing. Addition of sodium alginate or pectin into WSF suspension significantly increased the hardness, adhesiveness and cohesiveness of the gel. The most uniform gel was obtained by $12{\sim}15%$ addition of sodium alginate or pectin, while their mixture rather decreased the textural properties. Sensory evaluation by ranking test for the gels showed that 12% sodium alginate and 0.125g $CaSO_4/g$ WSF produced the most desirable gel in terms of elasticity, uniformity, smoothness and total acceptability, followed by 12% sodium alginate and 0.12g Ca $gluconate-CaSO_4$(50 : 50). From the results, the optimal preparative conditions for soygel were suspension of WSF in 10 times of water(v/w), addition of 12% sodium alginate(w/w of WSF) and 12.5% $CaSO_4$ or Ca $gluconate-CaSO_4$(50 : 50) into WSF suspension followed by gel formation at $4^{\circ}C$.

Effects of A-Site Sr and B-Site Substitution on the Dielectric Properties of BaTiO3 Ceramics (A-site Sr 및 B-site Ca 첨가 BaTiO$_3$ 세라믹스의 유전특성)

  • Dielectric properties of Ba1-$\chi$Sr$\chi$Ti1-yCayO3-y ceramics, where Sr and Ca were doped to Ba-site and Ti-site within the range of 0 x 0.24 and 0 y 0.05, respectively, were investigated. The substitution of Ca for Ti, which maintained the high resistivity of these formulations after sintering in a reducing atmosphere, was confirmed. Ca addition decreased the tetragonality c/a, increased the unit cell volume, and lowered Curie temperature, which were attributed to the occupancy of Ca2+ ions on Ti-sites. The lowering of Curie temperature by Ca addition was affected by the substitution of Sr for Ba-site; within 2 mol% of Ca, Curie temperature was lowered at a rate of 2$0^{\circ}C$ and 16$^{\circ}C$ per mol% of Ca at x=0 and x=0.08, respectively. Whereas the resistivity of the formulations without Ca was reduced to 107 {{{{ OMEGA }}cm, when sintered at low oxygen partial pressure of 10-9 MPa, the resistivity value higher than 1011 {{{{ OMEGA }}cm was maintained for the formulations containing Ca more than 0.5 mol%. Dielectric loss factor, tan$\delta$, was about 1% for most formulations.

Deoxidation of Solid Nd Metal by the Metal Calcium Vapour (금속 Ca증기에 의한 고체 Nd 금속의 탈산)

  • As a basic study for the removal of oxygen in solid Nd metal by metal Ca vapour, by using the thermodynamic data such as ${\Delta}G-T$ diagrams and Nd-O and Nd-Ca equilibrium diagrams, the amount of residual oxygen in solid Nd metal formed based on deoxidation reaction by Ca vapour, instead of by direct contact of solid Nd metal and Ca solution, was determined. Deoxidation experiments were carried out for solid Nd metal in a temperature range of $890{\sim}970^{\circ}C$ for 1h to 4h and content of addition Ca of 0.6~1.8 g (5~15 wt% of solid Nd metal). As a result, it was found that as deoxidation temperature increased, dissolved oxygen decreased. Especially, it was observed that a small amount of Nd-Ca alloy liquid was formed on the surface of the solid Nd metal sample deoxidized at $970^{\circ}C$ for approximately 1 hour. Also, it was found that if the content of addition Ca was 1.8 g (15 wt% of solid Nd metal) the amount of produced Nd-Ca alloy increased slightly. However, for the Nd sample with which the deoxidation reaction was performed at $930^{\circ}C$ for 4h with content of addition of Ca of 1.5 g (13 wt% of Nd metal), the residual oxygen was found to decreased to 12.00 ppm.

Effect of Sr Addition on Mechanical and Corrosion Properties of Mg-Zn-Ca Alloy for Biodegradable Implant Material (생체 분해성 임플란트용 Mg-Zn-Ca 합금의 기계적 및 부식특성에 미치는 Sr 첨가의 영향)

  • The effect of Sr addition on mechanical and bio-corrosion properties of as-cast Mg-3wt.%Zn-0.5wt.%Ca-xwt.%Sr (x = 0.3, 0.6, 0.9) alloys were examined for application as biodegradable implant material. The microstructure, mechanical properties and corrosion resistance of the as-cast Mg-Zn-Ca-Sr alloys were characterized by using optical microscopy, scanning electron microscopy, tensile testing and electrochemical measurement in Hank's solution. The as-cast alloys contained ${\alpha}$-Mg and eutectic $Ca_2Mg_6Zn_3$ phases, while the alloys contained ${\alpha}$-Mg, $Ca_2Mg_6Zn_3$ and Mg-Zn-Ca-Sr intermetallic compound when the Sr addition was more than 0.3 wt.%. The yield strength, ultimate tensile strength and elongation increased with the increasing of Sr content up to 0.6 wt.% but decreased in the 0.9 wt.% Sr-added alloy, whereas the corrosion resistance of 0.3 wt.% Sr-added alloy was superior to other alloys. It was thought that profuse Mg-Zn-Ca-Sr intermetallic compound deteriorated both the mechanical properties and corrosion resistance of the as-cast alloy.
