Effects of carcass weight increase on meat quality and sensory properties of pork loin

  • The objective of this study was to investigate the influence of increasing carcass weight (CW) on meat quality traits including meat color, water-holding capacity (WHC), tenderness, backfat thickness and intramuscular fat (IMF) content of pork loin. A total of 96 pork carcasses (48 LYD [Landrace × Yorkshire × Duroc] barrows and gilts) were selected at a commercial slaughterhouse. Each gender had commercial CW (≤ 90 kg), heavy CW (91-100 kg) and very heavy CW (> 100 kg) (16 carcasses from each CW group). Loin cuts (Longissimus lumborum) were excised to investigate meat color (CIE L*a*b*), drip loss, cooking loss, released water, Warner-Bratzler shear force (WBSF), and IMF content. Backfat thickness and IMF content of pork loin samples were significantly (p < 0.05) increased with increasing CW, although there was no significant difference in ultimate pH (pHu). CIE a* increased significantly (p < 0.05) with increasing CW, while there were no significant differences in CIE L* or CIE b* among CW groups. Although all WHC measures showed no significant differences among CW groups, WBSF increased significantly (p < 0.01) with increasing CW. Sensory flavor score was significantly increased while panel score for tenderness was decreased significantly (p < 0.001) with increasing CW. Consequently, CW had a positive correlation with flavor but negative correlation with tenderness. These results indicate that the increased IMF content improves flavor, juiciness and palatability, although tenderness deteriorates with increasing CW.

  • This study is to set the objective criteria on maxillary incisors shade selection by using the colorimetric Shade-Eye NCC as measuring in CIE $L^*$, $a^*$, $b^*$ values, and look into the meaning by analyzing its values. We explain the purpose of this study and gotten their agreement from patients visiting the dentist, 111 people's (men 50, women 61) three teeth, the maxillary central incisor, maxillary lateral incisor, maxillary canines, total of 333 teeth colorimetry. As a result of comparing the differences in colors between cervical margin and incisal edge, ${\Delta}E^*$ of canine is shown as low as $5.81({\pm}2.98)$, followed by lateral incisor of maxilla as $6.51({\pm}3.23)$ and central incisor of maxilla $7.51({\pm}3.04)$. Females show higher luminosity(L*) than males do in all teeth- central incisor, lateral incisor and canine; in yello chroma(b*) males' central incisor is slightly higher than that of females (p<0.05). Age significantly influences the luminosity and red (a*) and yellow chroma (b*) of central incisor(L*); the luminosity(L*), and yellow chroma(b*) of lateral incisor and canine (p<0.05). Smoking doesn't significantly influence the color of natural teeth. Drinking reduces the luminosity of central incisor as well as red chroma of lateral incisor(p<0.05). A chronic illness is likely to reduce the luminosity of central incisor and lateral incisor(p<0.05).

  • In order to color analyze of in Farnsworth Test Panel D-15 using a Protan, Deutan and Tritan test, we introduced the CIE system so that measured the reflectance light spectrum intensity in the 380~780 nm wavelength regions. The color difference of Panel D-15 was depended on the intensity of reflectance ratio in the 400~450 nm, 500~600 nm and more than 650 nm wavelength regions. From the reflectance spectra, we obtained the tristimulus X, Y, Z values, the $L^*a^*b^*$ and $L^*ab$ values of the 3-Dimension CIELAB system in a complement plane and light-darkness axis, the $U^*V^*$ values and the x, y values of chromaticity coordinates.

Perceived color shift of ceramics according to the change of illuminating light with spectroradiometer

  • PURPOSE. Perceived color of ceramics changes by the spectral power distribution of ambient light. This study aimed to quantify the amount of shifts in color and color coordinates of clinically simulated seven all-ceramics due to the switch of three ambient light sources using a human vision simulating spectroradiometer. MATERIALS AND METHODS. CIE color coordinates, such as $L^*$, $a^*$ and $b^*$, of ceramic specimens were measured under three light sources, which simulate the CIE standard illuminant D65 (daylight), A (incandescent lamp), and F9 (fluorescent lamp). Shifts in color and color coordinate by the switch of lights were determined. Influence of the switched light (D65 to A, or D65 to F9), shade of veneer ceramics (A2 or A3), and brand of ceramics on the shifts was analyzed by a three-way ANOVA. RESULTS. Shifts in color and color coordinates were influenced by three factors (P<.05). Color shifts by the switch to A were in the range of 5.9 to 7.7 ${\Delta}E{^*}_{ab}$ units, and those by the switch to F9 were 7.7 to 10.2; all of which were unacceptable (${\Delta}E{^*}_{ab}$ > 5.5). When switched to A, CIE $a^*$ increased (${\Delta}a^*$: 5.6 to 7.6), however, CIE $b^*$ increased (${\Delta}b^*$: 4.9 to 7.8) when switched to F9. CONCLUSION. Clinically simulated ceramics demonstrated clinically unacceptable color shifts according to the switches in ambient lights based on spectroradiometric readings. Therefore, shade matching and compatibility evaluation should be performed considering ambient lighting conditions and should be done under most relevant lighting condition.

Studies on Quality Characteristics of Pork Classified by Hunter L Value (Hunter L 값에 따른 돈육의 육질 특성 연구)

  • Meat quality of the domestic pork carcasses(n=330) classified in 3 groups according to the Hunter L values postmortem($\leq$50, 50.1∼55.0 and $\geq$55.1) was investigated. The carcass temperature(3, 5, 10 and 15hr postmortem) and temperature falling rate of postmortem increased as the Hunter L value increased. The pH postmortem(pH$\_$ohr/, pH$\_$24hr/) decreased as the Hunter L value decreased. In physical traits, the water holding capacity(WHC) increased and the purge loss decreased as the Hunter L value increased. However, shear force, cooking loss and fat hardness were not significantly different among different. Hunter L value groups(p<0.05). The meat color indices(CIE L*, a*, b*, chroma, hue and ΔE) increased as Hunter L value increased. The sensory characteristics had no significant difference among different Hunter L value groups(p<0.05). In conclusion, the results suggested that Hunter L values were related with pork quality such as temperature, pH, physical traits and color.

Comparative Study of Tongue Color in Common Cold Patients and Controls (감기 환자와 건강대조군 간의 설 특성 비교연구)

  • Tongue diagnosis is convenient and non-invasive method to examine the body's functional condition, and it has been frequently used in traditional Korean Medicine (KM). The aim of this study was to investigate the difference of the tongue color assessed by computerized tongue image analysis system (CTIS) between the common cold (CC) patients and healthy subjects. A total of 85 participants, including 45 CC patients without organic diseases and 40 healthy subjects, were asked to complete the CC symptom questionnaire. A tongue image was acquired by using CTIS. Color differences in Commission Internationale de l'Eclairage (CIE) L*, a* and b* between the CC patient group and the control group were analyzes by using paired t-test analysis. The variable CIE b* of the tongue body was significantly lower in CC than that in controls (P=0.019). The variable CIE L* of the tongue coating was significantly higher in CC than that in controls (P=0.032). In CC, the color of the tongue body seems to be changed to intense red color. The color of the tongue coating seems to be changed to thick fur. The present study demonstrated that the CTIS can be used as a diagnostic and monitoring tool for the objective and standardized evaluation of common cold in clinics.

Characteristics of Technical Meat Quality Parameters & Carcass Traits between the PSE and Normal Pork Classified by Conductance Threshold (전기전도도 기준에 의한 PSE육과 정상육의 육질 및 도체 특성에 관한 연구)

  • The two hundreds and twenty two pork carcasses from commercial breed were tested to compare technical quality characteristics and relationships with meat quality parameters between PSE and normal pork classified buy 24hr postmortem conductivity($C_u$). In characteristics of PSE and normal pork by $C_u$ value, highly significant differences were found in NPPC color scale and CIE L*(p<0.001), moderately significant differences in $C_3$ and cooking loss(p<0.01), and significant differences were in $C_6$, CIE b*, WHC and juiciness(p<0.05). In correlation coefficients between $C_u$ and other meat quality determining factors, $C_u$ was poorly related with $pH_1$($R^2$=0.28, p<0.001), CIE a*($R^2$=0.14, p<0.05), b*($R^2$=0.28, p<0.01) and cooking loss($R^2$=0.26, p<0.01). Also, relatively low correlation coefficients were observed in $pH_u$($R^2$=0.32, p<0.001), WHC($R^2$=0.39, p<0.001) and juiciness($R^2$=0.41, p<0.001). Moderately high coefficients were found in NPPC color scale($R^2$=0.59, p<0.001) and CIE L*($R^2$=0.58, p<0.001).

Effects of Addition of Pine Needle Extracts in Different Forms on the Antioxidant and Residual Nitrite Contents of Emulsified Sausages during Cold Storage (제조 방법이 다른 솔잎 추출물 첨가가 유화형 소시지의 냉장 저장 중 항산화 및 아질산염 잔존량에 미치는 영향)

  • The objective of this study was to determine the shelf-life effects and residual nitrite content of emulsified sausages added with pine needles during cold storage. The sausage consisted of four types: no pine needles added (control), pine needle juice added (T1), ethanol extract of pine needles added (T2), and boiling extract of pine needles added (T3). Each sausage type was tested in triplicate and assigned to one of four storage periods: 0, 10, 20, or 30 d. As storage time increased, the presence of pine needles resulted in decreased pH, meat color (CIE $L^*$, $a^*$ and $b^*$), residual nitrite value, and increased thiobarbituric acid reactive substances (TBARS) values and total plate counts (TPC). Values for pH, TBARS, residual nitrite, total plate counts and CIE $L^*$ and $a^*$ decreased significantly with added pine needles relative to the control (p<0.05). In particular, T2 was significantly (p<0.05) more effective for delaying lipid oxidation than the other treatment groups. In conclusion, the results demonstrate that adding an ethanol extract of pine needles (T2) to emulsified sausages tended to improve antioxidative and antimicrobial effects and reduce residual nitrite content during storage compared to the other treatment groups.

Physicochemical Changes in Pork Loins Affected by Different Cooking Methods (조리방법에 따른 돼지고기 등심의 이화학적 특성 변화)

  • To decrease human intake of animal fats, changes in the physicochemical characteristics of pork loins prepared by different cooking methods (boiling, steaming, baking, and frying) were investigated. The moisture content of the cooked meat decreased with all methods, and the crude lipid content decreased with all methods except frying. The cooking loss and the moisture drain rate of the cooked meats were greatest during frying, whereas the lipid drain rate was greatest with steaming. The pH value increased during all cooking processes tested. The acid value and refraction index of meat fat markedly increased by steaming and frying, respectively. The hardness, gumminess, chewiness, and cohesiveness of the meat increased notably during frying. The springiness decreased by both boiling and steaming, but rarely by baking or frying. The CIE $L^{\ast}$ (lightness) value markedly increased by both boiling and steaming, and the CIE $a^{\ast}$ (redness) value decreased notably during both boiling and steaming. The CIE $b^{\ast}$ (yellowness) value increased by both baking and frying, but usually did not increase with either boiling or steaming. The composition of fatty acids was not significantly affected by any cooking methods except frying.

Estimation of chlorophyll and pheophytin contents of rice (Oryza sativa L.) leaf in seedling bed using CIE chromaticity diagram

  • Leaf colors of rice can be used to identify stress level due to its adaptation to environmental change. For most leaves green-related colors are sourced from chlorophyll a and b. For most leaves green-related colors are consisted of chlorophyll a and b. Chlorophyll concentration is normally measured using a spectrophotometer in laboratory. In some remote observation fields, it is impossible to collect the leaves, preserve them, and bring them to laboratory to measure their chlorophyll content. The measurement of chlorophyll content is observed through its color. Using CIE chromaticity diagram leaf color information in RGB is transformed into wavelength (in nm). Pheophytin contents were also analyzed in 95% ethanol extracts. In the process of leaf development of rice young seedling, both pigments were compared. Leaf samples from different rice seedling bed is taken, their colors and RGB values are recorded using Photoshop Image Analysis. SPAD-502 values were also measured. The chlorophyll and Pheophytin contents were fully estimated by ${\rightthreetimes}_{avg}$ on CIE chromaticity diagram.
