전처리 나물류 및 구근류에서 병원성 미생물의 성장예측모델 개발 및 검증 (Development and Validation of Predictive Model for Foodborne Pathogens in Preprocessed Namuls and Wild Root Vegetables)

  • 본 연구에서 사용한 전처리 나물류 중 고사리 경우 $13^{\circ}C$에서 B. cereus 영양세포 및 포자가, $8^{\circ}C$에서 S. aureus는 성장하지 않았다. 전처리 나물류 및 구근류에서 B. cereus 영양세포 및 포자의 성장특성을 비교한 결과, 도라지와 취나물에서 LT, SGR 및 MPD는 B. cereus 영양세포와 포자사이에 유의적인 차이를 보이지 않았다. 반면 우엉은 $13^{\circ}C$에 저장한 경우 B. cereus 영양세포와 포자의 유도기는 유의적인 차이를 보였으며 고사리의 경우, 17, 24, $35^{\circ}C$ 온도에서 B. cereus 포자의 유도기는 영양세포의 유도기 값보다 2배 연장된 것으로 유의적인 차이를 나타내었다(P<0.05). $24^{\circ}C$$35^{\circ}C$의 상온에서는 모든 나물류 및 구근류에서 B. cereus 포자 유도기는 영양세포의 유도기보다 연장되었고, SGR 값은 포자가 빠른 것으로 나타났다. 한편, $13^{\circ}C$$17^{\circ}C$에서는 B. cereus 영양세포와 포자의 유도기가 고온에 비하여 연장되어 B. cereus 영양세포와 포자의 성장을 억제하기 위해서는 $13^{\circ}C$ 이하의 온도 관리가 중요하다. 또한 B. cereus와 S. aureus 영양세포의 성장특성 비교 결과, $13^{\circ}C$ 이하에서는 B. cereus 성장이 관찰되지 않았으나 S. aureus는 $8^{\circ}C$에서도 성장하였다. 전반적으로 $13^{\circ}C$에서 모든 나물류 및 구근류는 B. cereus의 유도기가 S. aureus 의 유도기보다 3배 이상 연장되었다. 전처리 나물류 및 구근류에서 개발된 설사형 B. cereus 영양세포 및 포자 성장예측모델을 구토형 B. cereus 영양세포 및 포자의 실험값으로 검증한 결과, 도라지와 고사리의 LT 모델과 고사리의 SGR 모델을 제외한 모든 모델에서 Bf 값이 허용범위(0.07~1.15)에 속하여 설사형 B. cereus 영양세포, 포자 성장모델이 구토형 B. cereus 영양세포, 포자의 성장을 예측하는데 적합한 것으로 나타났다. 또한 전처리 나물류 및 구근류에서 $8{\sim}35^{\circ}C$ 사이에 개발된 S. aureus의 성장예측 모델을 실험에 사용하지 않은 온도(18, $30^{\circ}C$)로 적합성을 검증한 결과, 도라지의 SGR 모델을 제외한 모든 모델에서 Bf와 Af 값이 가장 이상적인 1에 가까운 값으로 나타나 실험값과 예측값 사이의 일치성을 보였다. 본 연구 결과 개발된 전처리 나물류 및 구근류의 성장예측 모델은 병원성 미생물의 증식을 억제하는 기준과 규격 설정 시 활용 가능할 것이며, 전처리 나물류의 HACCP 공정의 CCP(critical control point) 및 CL(critical limit)을 설정하는데 유용한 자료로 활용될 수 있을 것으로 사료된다.

전처리 근채류의 저장과정중의 품질평가 (Changes in Quality Characteristics of Wild Root Vegetables during Storage)

  • 현재 전처리 농산물 중 소비비율이 높은 세척 근채류(연근, 우엉, 도라지)의 침지액의 효과 및 저장온도에 따른 품질 변화를 연구하였다. 본 연구의 대상인 근채류의 품질변화는 근채류의 종류와 온도, 저장기간에 따라 pH, 색도, 경도 등의 변화에 차이를 보였으며, 특히 $24^{\circ}C$에는 전처리 근채류의 품질변화가 빨라 $10^{\circ}C$에 저장한 근채류보다 품질유지기간이 평균 3~4일 정도 단축되었다. 침지액에 따른 미생물학적 품질변화 결과를 분석해본 결과, ASC 처리에 의하여 근채류의 초기 총균수 및 대장균군수가 가장 유의적으로 감소하여 미생물 억제 효과가 뚜렷이 나타났다. 연근 도라지에 AA, CA, ASC 처리한 처리군은 초기 PPO 활성을 유의적으로 낮추는데 효과적이었지만, 우엉의 경우 ASC 처리에 의한 갈변 억제 효과가 나타나지 않았다. AA 처리한 도라지의 경우 TW 처리군에 비하여 오히려 경도가 빠르게 감소하여 품목에 따른 침지 방법에 차이를 두어야 함을 확인할 수 있었다. 따라서 세척 근채류는 품목에 따라 저장온도와 침지방법이 품질에 영향을 미치므로 적절한 저장온도 및 세척액 사용과 포장방법을 유지한다면 품질의 안전성을 확보하여 품질유지기한을 연장할 수 있을 것이라고 사료된다.

국내 유통 농산물 중 잔류농약 모니터링 (Monitoring of Pesticide Residues in Domestic Agricultural Products)

  • 식품 중 잔류농약의 안전성을 평가하고자 국내 22개 지역에서 수거한 농산물에 대해 농약 잔류 실태를 조사하였다. 조사대상식품은 쌀, 옥수수, 완두, 밤, 밀감, 레몬, 파인애플, 상추, 근대, 고구마줄기, 양파, 우엉, 호박, 피망, 양송이버섯의 15종이었으며 48종의 농약에 대해 GC/MS/MS 분석하였다. 총 1,064건 중 34건 시료에서 농약이 검출되어 3.20%의 검출률을 나타내었다. 쌀, 밀감, 레몬, 파인애플, 상추, 피망에서 7종의 잔류농약이 검출되었으나 검출량은 전부 잔류농약허용기준 미만이었다. 검출률 10% 이상 품목은 밀감(12.50%), 쌀(10.64%), 레몬(10.6%)이었으며, 10회 이상 다빈도 검출 농약은 chlorpyrifos(16회), fenobucarb(10회)이었다. 또한 검출된 7종의 농약에 대해 노출량 평가 결과 1인 1일 허용섭취량 대비 1일 추정섭취량이 아주 미미하여 위해도는 거의 없는 것으로 확인되었다.

부산.경남지역의 향토 별미김치 종류와 특징 (Kinds and Characteristics of Traditional Special Kimchi in Pusan and Kyungnam Province)

  • This study was conducted to summarize the known kinds and characteristics of traditional special kimchies in Pusan and Kyungnam province. The taste of kimchi varies from region to region within Korea. In the southern part of the country, where the weather is much warmer, more salt is added along with salted anchovy(Myulchi Jeot), and the kimchi is less juicy and richer in flavor. More than 180 different varieties of kimchi are reported in Korea, but there are 30~40 different kinds of kimchi in Pusan and Kyungnam province depending on the main ingredients are known. Puchu kimchi(leek kimchi), Uung kimchi(burdock kimchi), Kongnip kimchi(soybean leaf kimchi) are the typical traditional special kimchi in Pusna and Kyungnam province. Todays, dietary cultures has been gradually changed, and diminished the local characteristics. Also, these tendency appears in the taste of the traditional special kimchi. However, it still remains the distinciton in the taste, ingredients and the methods of preparation of kimchies of Pusan and Kyungnam province. In this paper, the dispersed informations on the kinds, characteristics, and the preparation method of the special kimchies known in literatures and inherited persons in Pusan and Kyungnam province were tried to put together.

한국 상용식품중 칼슘과 수산함량에 관한연구 (A Study on Oxalic Acid and Calcium Content in Korean Foods)

  • Vegetables are liberally taken to enhance the mineral, vitamin, and rouphage value of the diet. And calcium is an essential mineral at all ages, although the daily requirement varies with physiological status of the individual. On the other hand, oxalic acid is an unwanted constituent of several clinical disorders. It is therefore necessary to take into account the calcium as well as the oxalic acid content of the various calcium, foods. Oxalic acid, calcium, calcium/oxalic acid ratio and available calcium have been determined in 31 kinds of the Korean common vegetables. The results are summarized as follows; 1. The highest content of oxalic acid has been recorded in Amaranth. spinach and beet. It is respectively 1,100mg%, 619mg%, 550mg% in fresh sample. It is comparatively high in Leek, leavels of perilla, Mugwort, Chyi-leaves, green red pepper, Burdock. 2. Many vegetables have been calculated as below 2.0 in the calcium/oxalic acid ratio. 3. Avaiable calciumis much in Malaolitoria, Lettuce, Green onion whole, Green garlic, Wild onion, Cabbage and Radish root. 4. A food calendar is suggested as a guide to the proper selection of food items for normal individuals and for those suffering from urolithiasis, cardiovascular disease or calcium deficiency status.

한국의 전통적 기능성 식품의 이용에 대한 역사적 고찰 (The Historical Study of Korean Traditional Funtional Food)

  • Natural substances, exploited in our daily life, have been applied to drugs to treat diseases and developed to functional foods by appropriate preparations, and these foods give beneficial effects on physical activities. In this paper, the utilization of traditional functional foods was studied with refer ring to old ancient writings published in the front-end of Chosun dynasty. The utilized vegetables were march mallow, turnip, radish, Chinese cabbage, lettuce, spinach, cucumber winter buds, flesh of a cabbage, eggplant, taro, burdock, Parsley, watershield plant, crown daisy, bamboo shoots, garlic, scallion, onion, acorn, bark of a tree, white goosefoot leaf, leaf of bean, pine mushroom, bracken. yam, mugwort, tea, ginseng, peppermint, fruit of the Maximowiczia chinensis, smartweed and pepper. The utilized fruits were chestnut, Chinese date, pine nuts, walnut, gingko nut, citrus. crab apple, pear, peach, grape, pomegranate, plum, Chinese quince, fig and watermelon. The utilized cereal were rice, barley, bean, buckweat and Job's-tears. The utilized sweetenings and seasonings were honey, wheat-gluten, sugar, oil, salt, soy sauce and vinegar. Our ancestors had a balanced diet using the various foods, and especially had a fundamental concept of "Foods have the efficacy of a remedy".edy".uot;.

영유아 및 아동의 보충식 개발을 위한 식물자원탐색 (Plants Resources Investigation to Develop Supplement Food for Infant)

  • In this study, we selected supplementary vegetable resources to develpe nutritious supplementary model of korean formula for infants and children, purchased and analyzed it to use with a model. We also referred to an old book about Korean vegetable resources and searched a form of vegetable resources. There are a lot of vegetable resources of various kinds which lied scattered in mountains and fields of our country. As for these, a beyond compare menstruation activity component is becoming clear with a lot of things. It is thought that depth search and study of these vegetable resources and practical application to a infant and child supplemen is desirable. Therefore, we choosed vegetable resources ; a Capsella brusapastoris, a Codonopsis lanceolata, Dandelion, a wild plant, a Tractylis ovata(dried), a Tractylis ovata(native), a Pine plant, a burdock, a JanDae, a Plantain, a HollpDae, which gathered in our country, and we analyzied priximate aomposition of sample (moisture, ash, total carbohydrate, crude fat, crude protein, dietary fiber) and micronutrient contents of sample (calcium, Iron, flavonoids, vitamin A, vitamin C, vitamin E).

Analysis of Oxalic Acid of Various Vegetables Consumed in Korea

  • Many vegetables contain oxalate at various levels depending on their type and family. Oxalate is known to reduce mineral bioavailability from foods. The following study was conducted to determine soluble and total oxalate contents in 32 plant samples commonly consumed in Korea using high-performance liquid chromatography (HPLC). Chard, amaranth, and spinach contained total oxalate of >1,000 mg/100 g. Approximately 45% of the oxalate in amaranth is insoluble, whereas 74.46 and 92.45% of the oxalates in chard and spinach, respectively, was soluble oxalates, which may be removed by blanching. Eggplant, carrot, leak, ginger root, spinach, burdock, and sweet pepper contained more than 90% soluble oxalate in total oxalate content. However, all oxalates detected in lettuce and celery were insoluble. Oxalate was not detected in shepherd's purse, bellflower root, garlic, radish root, broccoli, cabbage, onion, lotus root, adlay, cucumber, kale, and pumpkin. These observations provide useful information needed for selection of vegetables.

Anti-inflammatory effect of Arctium minus on LPS-stimulated RAW 264.7 cells

  • Arctium minus (AM), commonly known as lesser burdock, is a dried fruit (seed) of Aructium lappa L. that belong to Asteraceae. It has been used traditionally as herbal medicine because of its anti-inflammatory effects, and it has been applied to treat various diseases like allergies, skin aging, hyperlipidemia and urinary stone. In this study, we investigated the inhibitory effects of AM on the production of pro-inflammatory cytokines in lipopolysaccharide (LPS)-stimulated RAW 264.7 cells. Pre-treatment of the RAW 264.7 cells with AM considerably inhibited and reduced production of Nitric Oxide (NO) and pro-inflammatory cytokines, such as interleukin (IL)-6 and tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$), and also shows suppression of nuclear factor-kappa B (NF-${\kappa}B$) translocation. In addition, AM treatment considerably reduced phosphorylation of mitogen-activated protein kinase (MAPK) in LPS-stimulated RAW 264.7 cells. Our results indicate that the AM has potential to inhibit inflammation through suppressing production of inflammatory mediators via both the NF-${\kappa}B$ and MAPK signaling pathway. We therefore suggest that AM might be effective therapeutics for the treatment of various inflammatory diseases.

Food consumption frequency of Korean adults based on whether or not having chewing difficulty using 2013-2016 KNHANES by sex-stratified comparative analysis

  • BACKGROUND/OBJECTIVES: This study examined the associations between food consumption frequency of Korean adults and self-perceived chewing difficulty, using the food frequency questionnaire (FFQ, 112 items) from 2013-2016 of the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Subjects were divided into not difficult in chewing (NDC) and difficult in chewing (DC) groups, with 24.17% being classified into DC. Males and females consumed 35 and 37 items less frequently than the other sex, respectively. Due to the remarkable gender difference in food consumption, gender-stratified one-sided survey regression analysis was performed after adjusted for the effect of age, household income, and self-rated health status. RESULTS: Thirty-four items of FFQ were significantly less consumed by the DC group. Females exclusively consumed less beverages and alcohol while males showed the same for fruits and milk·dairy products. Consumption frequency of 8 items such as steamed potatoes·grilled potatoes, stir fried beef, other kimchi·fresh vegetable kimchi, orange, sour pork·pork cutlet, tteokbokki and green tea were significant only in males. In contrast, 17 items including cooked rice with other grains and legumes, boiled egg·steamed egg, Korean cabbage kimchi, banana, and tofu stew·soft tofu stew were significant only for females. Finally, items that showed significance for both were 9 items including loaf bread, ready-to-eat cereal, steamed sweet potatoes·grilled sweet potatoes, stir-fried lotus roots·stir-fried burdock, green laver salad·brown seaweed salads, apples, tomato·cherry tomatoes, squid (raw, dried shredded, boiled, stir-fried), and curd type yogurt. CONCLUSIONS: Findings in this study suggest chewing difficulty may be an important nutritional issue that has to be dealt with for healthful food consumption, with distinct interest of gender.
