The effect of gender status on the growth performance, carcass and meat quality traits of young crossbred Holstein-Friesian×Limousin cattle

  • Objective: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. Methods: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. Results: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). Conclusion: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.

Effect of Multiple Showering and Vitamin Supplementation on Sexual Behaviour, Quality and Freezability of Buffalo Bull Semen

  • In a summer study during May to July, involving 12 young Murrah buffalo bulls at forty months of average age, the effects of multiple shower vs single shower body cooling and vitamin A, D and E supplementation on the sexual behaviour, semen quality and freezability were investigated. The animals were divided into two groups (6 animals in each group) and housed in a half-walled shed with proper spacing, the feeding management being identical. The bulls in the control group were given a single shower at 1000 h, whereas the experimental bulls were given four showers at 10,12,14 and 16 h. In addition, the experimental bulls were given vitamin A, D and E injections at fifteen day intervals. The sexual behaviour of bulls was observed in terms of reaction time, sexual aggressiveness and ejaculatory thrust. Semen quality of all the bulls was assessed in terms of volume, mass activity, live-dead sperm and sperm concentration, sperm motility and morphology, and acrosomal abnormality. The sexual behaviour did not vary significantly between the groups, whereas semen quality differed significantly for volume, per cent live sperms, total sperms per ejaculate and total live sperm per ejaculate between groups. It can be concluded that sexual behaviour was not influenced by the thermal comfort treatment coupled with periodic vitamin A, D and E injections. But the treatments improved most of the seminal traits in the experimental group of bulls. However, benefit of treatment was not reflected in the freezability traits of the semen.

  • 이 논문에서는 한우 보증씨수소 선발과 보급에 대한 경제적 파급효과를 분석함으로써 한우 보증씨수소 선발 및 보급에 관한 연구 개발의 중요성을 인식하고 진정한 가치를 판단의 기초자료를 제공하고자 하였다. 분석결과 1등급이상을 기준으로 하였을 경우 전 산업에 미치는 경제적 파급효과는 총 4,984.9억원이고, 2등급기준으로 하였을 경우 전산업에 미치는 경제적 파급효과는 총 5,212.2억원인 것으로 나타났다. 한우보증씨수소의 선발과 보급은 한우산업의 발전에 있어서 아주 중요한 역할을 하고 있으며, 한우산업의 지속적인 발전을 가져오기 위하여서는 한우보증씨수소의 선발과 보급에 대한 지속적인 연구 개발을 필요로 하고 있다.

  • 2004년부터 2006년까지 상 하반기에 후대검정에 공시한 후보씨수소와 동일 시점에 판매한 보증씨수소의 표현형 및 유전 능력을 비교하였다. 12개월령 체중, 도체중 및 등심단면적의 표현형 능력의 경우 대부분 후보씨수소가 유의하게 우수하였으며, 등지방두께 표현형 능력의 경우 후보씨수소가 유의하게 두꺼웠다. 12개월령 체중, 도체중, 등심단면적, 등지방두께 및 근내지방도의 유전능력과 선발지수를 비교한 결과 후보씨수소와 보증씨수소 사이에 대부분 유의한 차이가 없었다. 후보씨수소와 1등급 보증씨수소의 유전능력을 비교한 결과 등심단면적을 제외하고는 유의한 차이가 없었다.

Chemical and Fatty Acid Composition of Longissimus Muscle of Crossbred Bulls Finished in Feedlot

  • This work was carried out to study the chemical and fatty acid composition of Longissimus muscle (LM) of crossbred young bulls finished in a feedlot. After weaning (at 8 months old), the bulls were kept in a feedlot for 180 days. The bulls were kept in individual pens and fed (twice daily) with corn silage, soybean hulls, cracked corn, limestone, urea and mineral salt. The bulls were slaughtered with a final weight of 464 kg. Forty bulls were used: 10 Caracu (CAR), 10 Canchim (CAN), 10 Caracu vs. Charolais (CCH) and 10 Canchim vs. Aberdeen Angus (CAA). The percentages of moisture, ash, crude protein, total lipids, as well as the fatty acid composition, were measured in the LM. The moisture percentage was lower (p<0.05) for bulls from CAA genetic group (71.2%) in comparison to bulls from CAR (74.2%), CAN (74.9%) and CCH (74.7%) genetic groups. On the other hand, there was no difference (p>0.05) among bulls from CAR, CAN and CCH genetic groups. Ash percentage was lower (p<0.05) for CAR bulls (0.96%) in comparison with the other genetic groups. There was no difference (p>0.05) among CAN, CCH and CAA genetic groups. Similarly, there was no difference (p>0.05) in crude protein among the different genetic groups. Total lipids percentage was higher (p<0.05) for CAA bulls (5.35%) and lower (p<0.05) for CAN (1.85%) and CCH (1.41%) genetic groups. Genetic group has little effect on the fatty acid composition of Longissimus muscle of bulls. However, CLA (C 18:2 c-9 t-11) percentage was higher (p<0.05) for CAR (0.33%) and CCH (0.37%) in comparison to CAN (0.27%) and CAA (0.29%) genetic groups. Saturated, monounsaturated and polyunsaturated fatty acids, n-6 and n-3 percentages did not differ (p>0.05) among genetic groups. PUFA/SFA ratio ranged from 0.10 to 0.15, with no difference (p>0.05) among genetic groups. Similarly, n-6/n-3 ratio ranged from 12.6 to 16.3, without difference (p>0.05) among genetic groups.

  • This experiment was carried out to study the carcass characteristics, chemical composition and fatty acid profile of the Longissimus muscle (LM) of bulls (10) and steers (17) finished in a pasture system. Animals (1/2 Zebu vs. 1/2 Aberdeen Angus) were fed in a pasture system (Hermatria altissima) and with a supplement of soybean meal, cracked corn, urea, limestone and mineral salts, twice a day. Both animal groups were slaughtered at 27 months of age, with an average 508.88 kg of live weight. Final weight, hot carcass weight and texture were similar (p>0.05) between bulls and steers. Carcass dressing, fat thickness, color and marbling were higher (p<0.02) in steers. Conversely, the Longissimus area was greater (p<0.05) in bulls. Moisture levels were higher (p<0.01) in bulls. Ash, crude protein, total lipids and total cholesterol levels were higher (p<0.10) in steers. C14:0, C16:0, C16:1 n-7 and C18:1 n-9 fatty acids percentages were higher (p<0.06) in steers. C16-1 n-10, i 17:0, C19:0, C18:2 n-6, C18:3 n-3, C20:2 n-3 C20:4 n-6, C20:5 n-3, C22:1 n-7, C22:4 n-6 and C22:5 n-3 fatty acids percentages were higher (p<0.05) in bulls. The percentage of the other fatty acids was similar (p>0.05) in bulls and steers. The levels of monounsaturated fatty acids were higher (p<0.02) in steers while polyunsaturated fatty acids, n-3, n-6, PUFA/SFA and n6:n3 ratios, were higher (p<0.05) in bulls. The CLA contents (mg/g lipids) were similar (p>0.10) in bulls and steers.

Replacing Concentrate with Wheat Straw Treated with Urea Molasses and Ensiled with Manure: Effects on Ruminal Characteristics, In situ Digestion Kinetics and Nitrogen Metabolism of Nili-Ravi Buffalo Bulls

  • To evaluate the effects of replacing concentrate with urea molasses treated fermented wheat straw (FWS) ensiled with cattle manure (CM) on ruminal characteristics, in situ digestion kinetics and nitrogen (N) metabolism was studied in Nili Ravi cannulated buffalo bulls in a $4{\times}4$ Latin Square Design. Wheat straw treated with urea (4%) and molasses (6%) was ensiled with cattle manure (CM) (70:30) and fermented for 40 days. Four iso-nitrogenous and iso-caloric diets were formulated. In the FWS0, FWS10, FWS20 and FWS30 diets 0, 10, 20 and 30% of the concentrate was replaced with FWS, respectively. Daily intake by bulls was restricted to 1.5% dry matter (DM) of body weight. Ruminal ammonia nitrogen concentration was greater (p<0.05) in bulls fed FWS diet than for those fed FWS0 diet at 3, 6, 9 and 12 h post-parandial. Bulls fed FWS 20 and FWS 30 diets had higher ruminal pH at 3 and 6 h post-parandial than bulls fed FWS10 and FWS0. Ruminal total volatile fatty acid (VFA) concentrations 3 h post-parandial were greater (p<0.05) in bulls fed FWS0 than those fed FWS diets. However ruminal VFA tended to increase at 6, 9 and 12 h post-parandial as the level of FWS increased. In situ ruminal DM and neutral detergent fiber (NDF) degradation, rates of disappearance and extent of digestion were higher (p<0.05) for bulls fed FWS30 diet than those fed FWS0. Ruminal DM and NDF lag time tended to decrease (p<0.05) as FWS concentration in the diet increased. Feed intake, nitrogen intake, N-balance and blood urea-N did not differ (p>0.05) in buffalo bulls fed different diets. Wheat straw treated with urea and molasses and ensiled with CM enhanced the nutritive value of wheat straw and improved nutrient utilization in buffalo bulls when up to 30% of the concentrate was replaced with FWS; no adverse effects on ruminal characteristics and nutrients digestibilities were detected.

한우 혈청에서 호르몬 및 대사물질 농도들의 연령에 따른 변화에 관한 연구 (Change of Concentration of Hormones and Metabolic Materials in Serum by Age in Hanwoo)

  • 본 시험은 한우에서 연령에 따라 혈청성분들의 변화를 알아보기 위하여 한우 866두(거세 638, 비거세 228)에 대하여 혈청 농도를 분석하여 채혈시 일령을 독립 변량으로 하고 혈청 성분들을 종속변수로 하는 다항 회귀방정식으로 추정한 결과는 다음과 같다. 거세우나 비거세우 모두 같은 차수의 회귀방정식이 접합한 혈청 성분은 IGF- I (3차식) calium(1차식) 및 IP(1차식)이었고 거세우에서는 1차식이 적합하고 비거세우에서는 3차식이 적합한 혈청 성분은 testosterone와 creatinine었다. 반면에 HDLC는 거세우에서는 3차식이 적합하나 비거세우에서는 1차식이 적합한 것으로 나타났다. 그리고 거세우에서는 2차식이 적합한데 비거세우에서는 3차식이 적합한 혈청성분은 triglyceride 농도와 globulin농도 그리고 A/G비율 등이었고, 거세우에서는 3차식이 적합하고 비거세우에서는 2차식이 적합한 혈청성분은 BUN이었으며, 거세우에서는 2차식이 적합한데 비거세우에서는 1차식이 적합한 혈청성분은 TP와 albumin이었다. 한편 cortisol은 거세우나 비거세우에서 모두 3차식까지의 회귀방정식으로는 연령에 따른 변화를 설명하기가 적합하지 않았으며 glucose는 비거세우에서는 3차식 변화를 보이고 있으나 거세우에서는 3차식까지의 회귀방정식만으로는 연령에 따른 변화를 설명하기가 어려웠다. 가장 적합한 것으로 판단되는 혈청성분들의 회귀모형 중에서 비교적 R-SQUARE 값이 높은 것(R-SQUARE value>0.1)들은 거세우에서 ICF-I, albumin, creatinine, IP, HDLC 등이었으며, 비거세우에서 testosterone, IGF-I, TP, albumin, glucose, creatinine, IP, HDLC 등으로 나타났다. 따라서 IGF-I, albumin, creatinine, IP, HDLC 등은 거세우나 비거세우 모두에서 연령에 따라 비교적 큰 변화를 보이는 혈청 성분이라고 생각된다.

Animal Performance and Carcass Characteristics of Bulls (1/2 Purunã vs 1/2 Canchim) Slaughtered at 16 and 22 Months Old, and Three Different Weights

  • Current study aimed to evaluate the performance of bulls (1/2 Purun$\tilde{a}$ vs 1/2 Canchim) slaughtered at two ages and three different weights. One hundred and thirteen bulls were divided into two slaughter ages (16 and 22 months) and three different slaughter weights (light, 422 kg; medium, 470 kg; and heavy, 550 kg). The body weight was higher for bulls slaughtered at 16 months. Daily gain, carcass weight and dressing were higher for bulls slaughtered at 16 months. Feed intake was higher for bulls slaughtered at 22 months although feed efficiency was better for bulls slaughtered at 16 months. Carcass characteristics were better for bulls slaughtered at 16 months. The percentages of muscle, fat and bone and meat characteristics were similar between two slaughter ages. Feed intake and animal performance was lower for lighter animals. Feed conversion and carcass dressing were similar in the three slaughter weights. Muscle percentage was higher for heavier animals but fat and bone percentages were lower. Slaughter weight had no effect on meat characteristics.

Effect of Proportion of Recorded Cows Inseminated by Young A. I. Bulls on Genetic Improvement in Japanese Holstein Population

  • The effects of the proprotion of cows inseminated by young A. I. bulls on genetic improvement in the Japanese Holstein population were examined using a simulation technique. The proportion of recorded cows inseminated by young A. I. bulls was assumed to be from 10% to 100% of the total number of recorded cows. The expected total genetic improvement was estimated for all cows and recorded and non recorded cows. The effects of the above were remarkable in the schemes that proven sires were used to produce recorded and non recorded cows for a limited time. Also the increase in the rates for -the expected total genetic improvement was larger when the proportion of recorded cows that were inseminated by young A. I. bulls was about 10% to 40%. When the expected total genetic improvement was estimated for the entire population, we found that the highest values were in a range of about 40 to 60% recorded cows that were inseminated by young A. I. bulls. On the other hand, the expected total genetic improvement that was only estimated in recorded cows dramatically decreased for more than 40% of the recorded cows. The results of this study showed that the optimal proportion of recorded cows inseminated with young A. I. bulls should be about 30% in the Japanese Holstein population.
