THE EFFECTS OF DIETARY PROTEIN LEVELS ON THE CARCASS COMPOSITION OF STARTER AND GROWER BROILERS

  • Carcass analysis of most economical parts of broilers were studied after they were fed with different protein levels of 16, 18, 20 and 23% for the starter period and 16, 18 and 20% for the grower period. The energy value of the feed was constant at 3,200 kcal ME/kg. The results for the starter and grower broilers showed similar pattern of responses. There were significant increased in weight gain, feed intake, protein intake, while there were significant decrease in the feed conversion ratio (FCR), abdominal fat and carcass fat when dietary protein increased. For the economical parts of the carcass, most of the fats were found in the thigh meat, while the lowest was found in the breast meat. The protein levels did not influence the meat production of the breast, drumstick and thigh portion. Increasing the protein intake, increased the broiler performance in relation to increased protein content of the breast, drumstick and thigh meat. The different fat contents of the meat might be due to differences in the rate of lipogenesis and fat deposition of the meat.

Nutritive and Economic Values of Corn Distiller's Dried Grains with Solubles in Broiler Diets

  • A feeding trial was conducted to investigate the effects of the addition of corn distiller's dried grains with solubles (DDGS) to broiler diets on growth performance and meat characteristics. A total of 3,200 d-old, unsexed Cobb-500 broiler chicks were randomly allotted to 16 pens (replicates), with 200 chicks per pen. There were four diet treatments (0, 5, 10, and 15% DDGS), and four replicates per treatment. From 8 to 21 d of age, the birds were fed broiler starter diets containing similar energy (TMEn 3,100 kcal/kg) and protein (21.6%) contents. From 22 to 35 d of age, they were fed grower diets containing similar nutrients (3,150 kcal/kg, 19.5% crude protein). No significant difference was found in growth performances among the four treatments. As the DDGS level increased, the concentration of unsaturated fatty acids in meat increased (p<0.05). The color scores of breast and thigh muscles were not significantly influenced by DDGS, however, the yellowness of shank increased significantly by the addition of DDGS. The hardness of breast and thigh meats was not affected by the addition of DDGS. It was shown that the use of DDGS in broiler diets up to 15% could decrease the feed cost by replacing part of corn and soybean meal, without any negative effect on growth performance and meat qualities.

Growth performance, carcass characteristics and meat sensory evaluation of broiler chickens fed diets with fermented cassava leaves

  • Objective: The objective of the study was to determine the effects of feeding fermented cassava leaf meal (FCLM) on growth performance, carcass characteristics and meat sensory evaluation of broiler chickens. Methods: A total of 160 Cobb-500 chickens were used during the phases of growing (21 days of age; initial weight 0.39±0.025 kg/bird) and finishing (35 days of age; initial weight 1.023±0.164 kg/bird). The whole experiment lasted for four weeks. The FCLM was included in starter and finishing diets at 0, 50, 100, and 150 g/kg inclusion levels. Total feed intake (TFI), weight gain (WG), feed conversion ratio, and nutrient digestibility were recorded. Sensory evaluation of breast meat was used to determine the eating quality of the meat prepared using roasting and boiling methods. Results: The TFI and WG decreased (p<0.05) with increasing inclusion levels of FCLM in the diets of growing chickens. Crude protein digestibility for chickens fed 0 and 50 g/kg FCLM was higher (p<0.05) than for chickens subjected to a diet with 150 g/kg FCLM. During the finishing phase, TFI increased linearly (p<0.05) with increasing inclusion level of FCLM in chicken diets, while WG decreased (p<0.05) with inclusion level of FCLM. Treatment diets had no effect (p>0.05) on the eating qualities of breast meat. However, juiciness was significant (p<0.05) for the cooking method and treatment interaction. At 50 g/kg inclusion level, boiled meat had a higher (p<0.05) juiciness score than roasted meat. Tenderness, on the other hand, was significant (p<0.05) for the interaction of gender and treatment. Females considered the boiled meat to be more tender than the males at 150 g/kg inclusion level. Using principal component analysis, a positive correlation was observed between teeth adhesion and fibrousness, flavour and juiciness, and springiness and tenderness. Conclusion: From the study, it can be concluded that FCLM can be used as an ingredient in the diets of broiler chickens. Inclusion level of 50 g/kg can be used in chicken diets during the growing phase, whereas in the finishing phase, inclusion level of 150 g/kg FCLM can be used. The FCLM did not affect the eating quality of breast meat.

Evaluation of black soldier fly larvae oil as a dietary fat source in broiler chicken diets

  • The present study was conducted to evaluate the effects of black soldier fly larvae oil (BSFLO) from the black soldier fly larvae (BSFL) as a partial or total replacement of soybean oil (SBO) on growth performance, fatty acid (FA) profile, and meat quality of broiler chickens from 1 to 5 wk of age. A total of 210 male broiler chickens (Ross 308) at one-day of age were randomly allotted to 3 dietary treatments (10 replicates and 7 birds/group): a basal control diet (CON), the basal diet in which the SBO was replaced by 50% (50 BSFLO) or 100% (100 BSFLO) of BSFLO. The growth performance, physical measurements and chemical traits of leg meat, and sensory analysis of breast meat were not influenced by diets. However, the relative weight (g/kg) of gizzard of CON was significantly higher (14.85, 12.52, and 13.02 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) than that of other treatments. As expected, the FA profile of breast meat was affected by BSFLO inclusion. The proportion (%) of saturated fatty acid (SFA) was increased (27.16, 27.58, and 28.72 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) by BSFLO inclusion and the percentage (%) of MUFA was also increased (43.36, 44.58, and 48.55 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). On the contrary, the proportion (%) of PUFA was decreased (29.49, 27.84, and 22.74 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). In conclusion, the present study suggests that the replacement of BSFLO did not show an adverse effect on growth performance and it could be an ingredient as a dietary fat source for a broiler diet.

지렁이 분말의 급여가 계육의 안전성 및 육계의 생산성에 미치는 영향 (Effects of Feeding Earthworm Meal on the Meat Safety and Performance of Broiler Chicks)

  • 본 연구는 지렁이 분말의 첨가가 계육의 안전성 및 육계의 생산성에 미치는 영향을 조사하기 위해서 실시되었다. 총 60수의 1일령 육계에 지렁이 분말 0%(대조구), 0.2% 및 0.4%를 첨가한 사료를 공시하여 7주간 사양시험을 실시하였다. 지렁이분말 $0.4\sim0.6%$ 첨가는 대조구에 비해서 사료섭취량 증가 및 사료 효율을 개선시키는 경향이 인정되었으며, 그 효과는 건조 지렁이분말 0.4% 첨가구가 0.6% 첨가구보다 높게 나타나는 경향이 인정되었다. 건조 지렁이분말의 첨가로 인한 사료효율의 개선은 사육전기보다. 사육 후기인 4-7주 사이에서 뚜렷하게 나타났다. 지렁이분말(EWM) 중의 As, Cd, Cr, Hg 및 Pb는 각각 4.41, 1.23, 1.18, 0.00 및 3.39ppm검출되었지만, 계육 중에는 검출되지 않았다. 결론적으로 육계에 0.4% 지렁이분말(EWM)의 첨가는 육계의 생산성 개선 및 계육의 안전성에는 문제가 없을 가능성이 인정된다.

닭고기의 감마지방산 강화에 관한 달맞이꽃종자유의 급여효과 (Effect of Dietary Evening Primrose Oil on γ-Fatty Acid Enrichment of Broiler Meat)

  • 본 연구는 닭고기의 감마지방산 축적에 관한 서로 다른 수준의 달맞이꽃 종자유 급여효과를 조사하였다. 로스(Ross)종 1일령 broiler 수컷 600수를 6처리구${\times}$4반복으로 완전임의 배치하였다. 브로일러는 포화지방산 급원으로서 우지를 함유하는 대조구, 감마지방산 급원으로서 달맞이꽃 종자유(EPO, evening primrose oil) 0.5%, EPO 혼합유(EPO 70:대두유 30) 0.7%, EPO 1.5%, EPO 3.0% 및 EPO 4.0% 첨가사료를 브로일러 후기 2주 동안 섭취하였다. 체중은 0.5% EPO 첨가구를 제외하고는 대조구와 처리구간 통계적유의차가 있었다(p<0.05). 도체중에 대한 다리살과 가슴살의 무게비율은 다리살에서 0.5% EPO 첨가구 및 가슴살에서 0.5% EPO 첨가구와 4.0% EPO 첨가구를 제외하고는 대조구와 처리구간 유의성이 인정되었다(p<0.05). EPO 첨가사료를 섭취한 닭고기 피부와 가슴살 지질의 포화지방산 조성은 대조구에 비해서 유의적으로 낮아졌으나 불포화지방산 조성은 대조구와 비교할 때 EPO 첨가구가 높았다(p<0.05). 특히, 닭고기 부위별 지질의 감마지방산(GLA, gamma-linolenicacid, 18:3n-6) 조성은 대조구와 비교할 때 EPO 첨가구에서 높았다(p<0.05). 이 결과는 육계사료 내 달맞이꽃 종자유를 첨가.급여함으로써 감마지방산이 강화된 새로운 기능성 닭고기를 생산할 수 있음을 시사해 준다.

  • 육계사료에 xanthophylls의 첨가가 닭고기의 지질산화에 미치는 영향을 구명하기 위하여 실시하였다. 사료에 lutein과 apocarotenoic acid ethyl ester(Apo-ester)를 각각 10 ppm과 20 ppm 첨가하여 브로일러를 6주간 사육하였다. 도계후 가슴육과 다리육으로 분리하여 3$^{\circ}C$에서 9일, -18$^{\circ}C$에서의 4개월간 실험을 수행하였다. 냉장저장중 모든 계육의 pH는 증가하였고 xanthophylls 급여육이 대조구보다 높았다. 저장중 TBARS와 POV는 가슴육보다 다리육에서 더 높았다(p<0.05). Xanthophylls 급여육은 대조구에 비해 지질산화가 억제되었고(p<0.05) 가슴육보다는 다리육에서, 냉장기간보다는 냉동기간중에 억제효과가 더 높았다. 첨가농도별 효과를 보면 10ppm보다는 20 ppm 급여육에서 지질산화가 더 억제되었다. Lutein과 apo-ester 급여구간 유의차는 없었으나(p>0.05), lutein 20 ppm 급여육이 가장 높은 항산화 효과를 나타내었다. 따라서, 육계사료에 xanthophylls의 두 종류인 lutein과 apo-ester를 첨가하면 닭고기의 지질산화를 지연시킬 수 있다는 것을 알 수 있었다.

시중 유통 토종닭의 품종별 품질 및 관능 특성 비교 (Comparison of Meat Quality and Sensory Characteristics of Different Native Chickens in Korean Market)

  • 본 실험에서는 시중에서 주로 유통되고 있는 2종의 토종닭인 HH종과 WD종 닭고기를 비교하기 위해 일반 육계(BR)와 더불어 육질 및 관능 특성을 분석하였다. 토종닭 내에서 HH종의 가슴육만 일반 육계보다 다소 낮은 지방함량을 보였다. 육색에서는 가슴육과 다리육 두 부위 모두에서 HH종의 명도($L^*$)와 적색도($a^*$)가 WD종보다 유의적으로 높게 나타났다(p<0.05). 항산화력 측정을 위한 DPPH 라디칼 소거능과 pH가 WD종이 HH종보다 유의적으로 높았다(p< 0.05). 가슴육에서 C18:1은 일반 육계가 다른 두 품종의 토종닭보다 유의적으로 높았다(p<0.05). 대표적인 n-3 지방산인 C18:3의 경우, WD종이 HH종보다 유의적으로 높았으며(p<0.05), C20:4와 C22:6의 경우, 토종닭이 일반 육계에 비해 약 2.5배이상 높은 조성을 보였다(p<0.05). 관능평가 맛 부분에서는 가슴육에서 WD종이 일반 육계나 다른 HH 토종닭보다 유의적으로 우수한 수치를 보였다(p<0.05). 특히 WD종의 연도가 다른 품종에 비해 매우 우수한 것으로 나타났으며(p<0.05), 전체적인 기호도에서도 WD종이 유의적으로 높은 점수를 보였다(p<0.05). 국내에서 대표적으로 시판되는 토종닭 2품종의 품질 및 관능 특성은 요인별로 유의적 차이를 보이기도 했으며(p<0.05), 이를 바탕으로 소비자 기호에 적합한 새로운 품종의 토종닭 개발을 위한 기초 자료 활용이 가능할 것이다. 그러나 육질 특성은 품종 이외에도 급여한 사료 및 사양 방식에 따라 다른 것이므로, 보다 많은 시료 수를 바탕으로 한 추가적인 연구가 요구된다.

Comparison of Quality Traits of Meat from Korean Native Chickens and Broilers Used in Two Different Traditional Korean Cuisines

  • With the aim of investigating the differences in the quality traits between Korean native chicken (Hanhyup, KNC) and broilers commonly used in two different traditional Korean cuisines, the chemical composition and sensory properties of breast and thigh meat from the two chicken strains were assessed. KNC for baeksuk (chicken meat braised in soup with various Oriental medicinal plants; KNL), KNC for samgyetang (similar to baeksuk but young chickens and ginseng are used; KNS), broiler for baeksuk (BL), and broiler for samgyetang (BS) were used as treatments in this study. KNL and KNS contained higher protein but lower fat content than BL and BS. The $L^*$ values of breast and thigh meat, but not the $a^*$ values, were significantly different between KNS and BS, whereas significant differences in both values were observed between KNL and BL. Compared to the other three types of chickens, KNS contained the highest total and insoluble collagen content, and KNL and BL showed higher inosine-5'-monophosphate content in their meat. Overall, KNL and KNS contributed darker, less tender meat with higher protein and less fat content together with more n-3 fatty acids, as opposed to their counterparts used for the same cuisines. Based on the results of the sensory analysis, even though there are some differences in physiochemical traits, different chicken sources do not differ in overall sensory quality. This information can help consumers to understand better the meat available for their preferred traditional cuisines.

브로일러에 대한 감마리놀렌산의 급원으로써 달맞이꽃종자유와 삼씨유;닭 껍질, 다리살 및 가슴살 지질의 지방산 조성에 미치는 영향 (Evening primrose oil and hemp seed oil as an ${\gamma}-linolenic$ acid source for broiler;Influence of fatty acid composition of chicken skin, thigh and breast muscle)

  • The objective of this study was to determine the effect of dietary oils on the levels of the ${\gamma}-linolenic$ acid in chicken meat lipids. Three hundred ten five, 1-d old, male, Ross strain, broiler chicks were fed for 35 d to compare diets containing evening primrose oil(EPO) and hemp seed oil(HO) to a control diet. Fatty acid composition of lipid from chicken skin, thigh and breast muscle were determined at the end of the trial. The level of ${\gamma}-linolenic$ acid of lipids from chicken meat fed diets containing EPO or HO was significantly higher than that of the control group(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken skin was highest in the group, which had been fed the EPO 0.85%, followed in order by EPO 0.7%, 0.5%, EPO mixed oil, HO and HO mixed oil. There was a significant difference in the level of ${\gamma}-linolenic$ acid of chicken skin between the control and treatment groups(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken thigh muscle was also similar to skin, and significantly higher than that of the control group(p<0.05). The level of ${\gamma}-linolenic$ acid of lipids from chicken breast muscle was highest in the group, which had been fed the EPO 0.5%, followed in order by EPO 0.7%, 0.85%, HO 0.5% and HO mixed oil. There was a significant difference in the level of ${\gamma}-linolenic$ acid of chicken breast muscle between the control and treatment groups(p<0.05).
