  • Four feeds, three concentrates (rice bran, soybean meal and flaked corn) and one forage (corn silage) were incubated in four ruminally fistulated Holstein steers over three one week periods in a 3${\times}$4 incomplete latin square design where steers served as blocks and feeds as treatment. The objectives of the study were to investigate in situ DM, N and P degradability characteristics of feeds in order to assess availability of these nutrients by ruminants. In each period, all feeds were incubated in quadruplets (corn silage in triplicates) in the rumen of each steer in a reverse order for 3, 6, 9, 12, 18, 24 and 48 h. The DM 'a' fraction was higher and lower (p<0.001) in corn silage and rice bran respectively. Although corn silage contained the lowest (p<0.01) DM 'b' fraction, flaked corn contained the highest. Rate of DM degradation of flaked corn and corn silage were half (p<0.05) of the rate of DM degradation of either rice bran or soybean meal. Potential or effective DM degradability (p<0.05 to 0.001) at various passage rates were the lowest for rice bran and the highest for soybean meal. Corn silage N 'a' and 'b' was the highest and lowest, respectively (p<0.01). N 'c' of corn silage and rice bran was higher (p<0.001) than other feeds. Potential N degradability was the lowest in flaked corn (p<0.05). P 'a' was high (p<0.01) for corn silage and rice bran. P 'b' fraction was very high (p<0.001) in soybean meal but was absent in corn silage. Availability of DM (p<0.01 or 0.001), N (p<0.001) and P (p<0.05) differed between feeds at various passage rates except P availability at k=0.02 per h (p>0.05). The results demonstrate that the availability of DM, N and P by ruminants depends on feed as well as categories of animal.

  • The purpose of this study is to research the whitening effects of fermentation extract made from the Rice bran and Dendropanax(FRD) Fermentation conditions were as follows; 1) Dendropanaxand and Rice bran were blended in a ratio of 1 to 1, 2) a weight of sugar was 10% of the total weight, 3) an amount of enzyme was 0.1%, and 4) a temperature was 20℃. It has been fermented for 90 days. In order to observe the whitening effects of FRD, the author measured the cell viability and the inhibition rate of the melanin biosynthesis, the activity of tyrosinase and SOD (superoxide dismutase) in malignant melanoma, B16F10 cells. As a result, FRD significantly inhibited the cell viability of B16F10 in more than 500 ㎍/㎖. FRD significantly suppressed the generation of melanin, and that induced by α-melanocyte stimulating hormone (α-MSH) in more than 1,000 ㎍/㎖. FRD significantly decreased the activity of tyrosinase and that induced by α-melanocyte stimulating hormone (α-MSH) in more than 500 ㎍/㎖. FRD did not changed the activity of SOD in dose dependent manner. Therefore, the author considered that the fermentation extract made from a Rice bran and Dendropanax will be able to produce high value-added products, if used as a commercial. • In order to determine the feeding value of t:1e waste wood of Lentinus eddodes, the waste wood was milled and treated with $Ca(OH)_2$ and cellulase, then raw waste wood and the treated waste wood were fed to broiler chicken and Korean native goates. The results obtained were as follows; 1. The chemical composition of the waste wood was c. protein 2.26%. c. fat 2.57%. c. fiber 44.60 and c. ash 5.58%. No differences were detected between the raw waste wood and $Ca(OH)_2$ or cellulase treated waste wood in chemical composition. 2. In amino acid composition. no cystine and methionine was showed, but trace amount of Vitamin A, $B_1$, and $B_2$, and cholin chloride were detected. 3. Trichoderma viride SANK. No. 16374 was used to decompose the cellulose. 4. In broiler performance, when waste wood meal was subsituted for 5% wheat bran, no adverse effect was showed on weight gain, feed in take and feed efficiency. But $Ca(OH)_2$ and cellulase treated waste wood meal could be subsituted for 8% wheat bran. 5. In Korean native goat performance, feeding waste wood meal subsituted by 50% various bran (25% defatted rice bran and 25% barley bran) had no adverse effect on growth and feed efficiency. 6. Considering the above results, though the waste wood meal could be replaced to part of various bran, there was a bottle-neck to process the waste wood. The waste wood of Lentinus edodes was little feeding value on bed of ruminant.

  • A simple and low cost autogenous-type extruder with a capacity of about 400kg/hr for rice bran-oil stabilization was developed. Specific energy consumption of the extruder was 0.060-0.070 KWH/kg of rice bran during extrusion. Rice bran was easily extruded to form flakes or pellets with an increase of bulk density. And also the desired extrusion temperature of $95^{\circ}C{\;}to{\;}150^{\circ}C$ could be easily obtained without any water addition when the rice bran was properly parametered with feed rate. The moisture content of bran was reduced and peroxidase was significantly inactivated after extrusion. The rice bran stabilized by the extrusion process was excellent in storage stability without considerable increase in free fatty acids.

  • To investigate the presence of brassinosteroids in rice bran and pㅐlished rice, they were extracted with MeOH. The extracts were purified through sequential procedure of solvent fractionation, silica gel adsorption chromatography, Sephadex LH-20 column chromatography and charcoal adsorption chromatography. The activity of brassinosteroids was monitored by the rice inclination test and its presence was confirmed in each purification step. The purified active components were further separated by TLC and HPLC. Brassinosteroids in active fractions of rice bran were identified as castasterone and teasterone by HPLC. We acknowledge that our work is probably the first report of brassinosteroids in mature seeds of rice The more amount of brassinosteroids was confirmed in rice bran than polished rice. The contents of castasterone and teasterone which were identified in rice bran were 0.15 ng/g and 0.37 ng/g, respectively.

  • Microwave treatment was studied to investigate the antioxidant ability of rice hull and rice bran. The color changes were related to the intensity of microwave and to the treated time on rice bran. However, the electron donating abilities of rice hull and rice bran extract were not much affected by microwave intensity. Rice hull extract treated with a 100 W microwave showed 80% inhibition of lipid peroxidation when fish oil was treated with $H_2O$$_2$. Also inhibition activity against lipid peroxidation in rice hull is more stable than that of rice bran when treated with microwave. Overall, rice hull extract showed better antioxidant activity than rice bran. It seems that rice hull contains higher antioxidant components as well as the browning reaction products having anti-oxidant activity during microwave treatment.

  • These experiments were performed to investigate the culture condition, characteristic of crude enzyme and the heat resistance of the acid protease by Aspergillus awamori U-3. The results obtained were as follows: 1. The optimum culture temperature and time on wheat bran medium and defatted rice bran medium were 3$0^{\circ}C$ and 72 hrs, respectively. The optimum amount of added water was 100~120 % on wheat bran medium and 100~130 % on de-fatted rice bran medium. 2. Of the these various ingredients, addition of KN $O_3$, glutamic acid and glucose on wheat bran medium and addition Of KN $O_3$, (N $H_4$)$_2$S $O_4$, glucose, lactose, K $H_2$P $O_4$ and MgC $l_2$ on defatted rice bran medium were very effective. On wheat bran medium, concentration of addition of glucose, KN $O_3$ and glutamic acid were 3.0~4.0%, 0.2~0.4 % and 1.0%, respectively. 3. The optimum pH for the enzyme action was 2.4 %, the optimum temperature about 45$^{\circ}C$ and the stable pH range 2.0~5.0, The enzyme was stable below 5$0^{\circ}C$ and was inactivated rapidly above 5$0^{\circ}C$. 4. The addition of CaC $l_2$ and CaS $O_4$ as the heat resistance agents showed the slight resistance. 5. When the enzyme solution added with the heat resistance agents (CaC1$_{2}$ and CaS $O_2$) was heated for 10-30 minutes at 6$0^{\circ}C$, their remaining activities were decreased largely above 20 minutes and The heat resistance effects of CaC $l_2$ and CaS $O_4$ were not observed almost at 8$0^{\circ}C$.

  • This study was done to assess the physical and chemical properties after anaerobic fermentation treatment which use rice bran or wheat bran in plastic film house soil. The results which investigates the change of soil physical property after treatment 150 days showed a dramatic difference. The physical properties of control soil were the bulk density $1.46Mg\;m^{-3}$, hardness $2.30Kg\;cm^{-3}$, hydraulic conductivity $4.8cm\;hr^{-1}$, water stable aggregate(>0.5mm) 6.7%. Of the soil which treatment the rice bran in comparison to control soil, bulk density and hardness was diminished 12% and 58%, respectively. hydraulic conductivity and water stable aggregate(>0.5mm) were increased 4.5 and 5.2 fold, respectively. And, in the soil which treatment the wheat bran, bulk density and hardness was diminished 14% and 67%, respectively. Hydraulic conductivity and water stable aggregate(>0.5mm) were increased 6.3 and 6.5 fold, respectively. $NO_3-N$ contents of the soil which treated the rice bran or wheat bran after treatment 20 days were diminished 98% in comparison to control soil. The decrease of $NO_3-N$ contents in the soil was investigated with the fact that it is caused by with increase of the soil-microbial biomass. EC of the soil which treated the rice bran were $1.48dS\;m^{-1}$ which was diminished 58% in comparison to control soil. That of soil which treated the wheat bran was increased $3.65dS\;m^{-1}$ in the early stage because of acetic and butyric acid. But it was reduced as under $2.0dS\;m^{-1}$ after treatment 30 days. As the conclusion the anaerobic fermentation treatment with rice or wheat bran was effective to the improvement of soil physical and salt accumulation of the plastic film house soil.

  • This study was perform to examine the feasibility of cooking processing using the rice added the 70% ethanol extract of pigmented rice bran layer. Four rice samples, including normal rice, glutinous rice, pigmented-normal rice, and pigmented-glutinous rice were compared the properties of physico-chemical, texture, and sensory evaluation. Pigmented rice varieties had a higher amylose content, but shorter length in glucose chains than non-pigmented rice varieties. The enthalpy for gelatinization was found to increase in pigmented rice, which need more energy for gelatinization of starch in cooking. The hydrolysis rate by glucoamylase in rice added pigmented bran extract was higher than pigmented rice. Rice with pigmented bran extract had higher glutamine content, but lower asparagine content and no difference in fatty acid composition, which affect palatability. Cooked rice added pigmented bran extract was less retrograded than pigmented rice during the storage period. Moreover, cooked rice added pigmented bran extract was more acceptable in sensory evaluation. Based on the results, the use of rice added pigmented bran extract instead of pigmented rice in grain processed food have advantageous effects in palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.

  • The purpose of this study was to investigate changes in nutritive quality of fermented wheat bran prepared by culturing with a microorganism, Aspergillus oryzae, in an attempt to improve the quality of protein in feedstuff. After incubation of wheat bran with Aspergillus oryzae, the contents of chemical composition, including amino acids, riboflavin and amino-nitrogen were increased, but the level of nitrogen free extract was reduced. The effects of supplementation of fermented wheat bran on the rat diets were evaluated by measuring growth rate, feed efficiency and biological values, such as NPU, PER and NPR. Sixty four male Sprague Dawley rats of 5-6 weeks of age were adopted for the feeding trial for 10 days period, and levels of dietary protein were set at 10%. The %contribution of protein from casein, wheat bran and fermented wheat bran for the other dietary treatments were, in the order, 50-50-0%, 50-30-20%, 50-20-30% and 50-0-50%, respectively. In the result of this study, no significant difference were observed in the amount of feed intake body weight gain and feed efficiency. On the whole, the values of NPU, PER and NPR of all the fermented wheat bran groups appeared to be higher than those of the group whose half of the protein was from wheat bran.
