Quality Characteristics of Dried Noodles Made with Boehmeria nivea Powder (모시잎 분말을 첨가한 국수의 품질 특성)

  • The principal objective of this study was to evaluate the quality characteristics of dried noodles when different concentrations of Boehmeria nivea powder were added to wheat flour. Cooking quality, mechanical textural properties, and viscosity were measured, and sensory evaluation was conducted with the prepared noodles. The gelatinization points of the composite Boehmeria nivea powder-wheat flours increased. The viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity values of the samples decreased, as the Boehmeria nivea powder content increased as measured via amylography. The L and b values decreased and a value increased with increasing amounts of Boehmeria nivea powder. Further, the color values, weight and volume of the cooked noodles increased, along with the turbidity of the soup with increasing amounts of Boehmeria nivea powder. Regarding textural characteristics, Boehmeria nivea powder additive increased hardness and reduced adhesiveness, cohesiveness, and springiness. Overall, noodles prepared with 15% Boehmeria nivea powder were preferred compared to other noodles, according to the results of our sensory evaluation.

The Quality Characteristics of Cookies with Added Boehmeria nivea (모시잎 첨가량에 따른 쿠키의 품질 특성)

  • In this study, Boehmeria nivea were extracted with water and ethanol, and antioxidative activity was investigated along with the quality of cookies prepared with added Boehmeria nivea, as a functional food. Among the water and ethanol extracts, high electron donating abilities were found. we selected various quantities of Boehmeria nivea(0%, 3%, 6%, 9%, 12%, 15%) to add to the cookies as an independent variable and performed sensory tests, as well as, measured chromaticity, and property of matter measurements. The rates of brightness, redness, and yellowness(p<0.001) changed significantly with increasing quantities Boehmeria nivea. The rates for spread ratio, hardness, brittleness, and chewiness(p<0.001) also changed siginificantly with increasing amounts Boehmeria nivea. Finally, texture(p<0.05), appearness, sweetness(p<0.01), bitterness, and overall quality(p<0.001) were examined in sensory tests and showed significant differences. Based on the above results, the cookies that contained 3~9% of Boehmeria nivea presented the best quality.

  • This study investigates the quality characteristics of soybean dasik made by mixing roasted beans with ramie leaf(Boehmeria nivea) extract powder. The results are as follows. For soybean dasik not including(0%) ramie leaf(Boehmeria nivea) extract powder, its moisture contents has appeared the lowest to $8.39{\pm}0.98%$, while soybean dasik with 10% ramie leaf extract powder the highest moisture contents to $14.71{\pm}0.02%$. As the content of ramie leaf(Boehmeria nivea) extract powder increased, the L-value, the a-value and b-value of soybean dasik with ramie leaf(Boehmeria nivea) extract powder significantly decreased(p<0.05). Among the texture measurement items of soybean dasik with ramie leaf(Boehmeria nivea) extract powder, the hardness, the gumminess, and the chewiness significantly increased as more amount of ramie leaf(Boehmeria nivea) extract powder added, whereas the adhesiveness and the cohesiveness significantly decreased(p<0.05%). The sensory evaluation, color and taste, softness and overall acceptability of soybean dasik with ramie leaf(Boehmeria nivea) extract powder showed that the one with 8% ramie leaf(Boehmeria nivea) extract powder were the most highly preferred, and there was no significant difference in the flavor. In conclusion, the soybean dasik added with 8% ramie leaf(Boehmeria nivea) extract powder is considered the most desirable in all of color, taste, flavor, and overall acceptability.

Anti-Oxidant and Anti-Inflammatory Complex Health Functional Analysis of Chinese Resource Plant Boehmeria, Carlemannia and Clausena (중국 자원식물 보메리아, 칼라마니아, 클로세나의 항노화 항염 복합 건강관리 기능성 연구)

  • Ageing has been known to be deeply related to oxidative activities. Furthermore, inflammation is a response initiated by conditions such as infection and injury. It has been known that complex connections occur between oxidative stress and the inflammatory response, however underlying mechanism needs to be investigated. Chinese resource plants have been widely used as functional food and medicine for a long time, however it is not studied well how many of these resource plants work. We first decided testing anti-oxidant and anti-inflammatory activities with 95% ethanol extracts of the chinese resource plants, Boehmeria pilosinscula (Blume) Hassk., Carlemannia tetragona Hook f. and Clausena emarginata C.C.Huang. To measure anti-oxidant activity, we performed DPPH assay in Raw264.7 cells with 95% ethanol extracts. Clausena extracts showed significantly higher anti-oxidant activity than those of Boehmeria and Carlemannia. We then performed Nitric Oxide assay to measure the inflammation suppression levels with 95% ethanol extracts of these plants. Clausena extracts showed significantly higher suppression of nitric oxide production than those of Boehmeria and Carlemannia. This indicates that inflammation levels are significantly reduced by Clausena. After measuring anti-oxidant and anti-inflammatory activities, we then performed MTT assay to measure the cell survival rate of Raw264.7 cells treated with these extracts. Boehmeria showed much more cell survival rate than Carlemannia and Clausena. Taken together, this result suggests that Clausena extracts have more anti-oxidant and antiinflammatory activities than Boehmeria and Carlemannia, while Boehmeria extracts have more cell survival rate than Carlemannia and Clausena.

Environmental Characteristics and Species Composition of Boehmeria platanifolia Habitat in South Korea (남한 개모시풀의 자생지 환경특성과 혼생식물종 분포)

  • This study was conducted to evaluate geographical distribution patterns of natural habitats, soil properties, and plant species grown with native Boehmeria platanifolia in South Korea. The relative density and coverage of Boehmeria platanifolia were 7.0% and 25.6% respectively. Most Boehmeria platanifolia were growing below 200 m of altitude, and they were rarely found at the higher altitude. Over 80% of Boehmeria platanifolia's habitats were found at below $20^{\circ}$ and their habitats were concentrated at the west and the north face slope rather than the south face slope. Nearly 90% of Boehmeria platanifolia were grown at little and middle light condition's area, and 69.1% of them were natively growing in humid soil in their natural habitats. Soil texture of their habitats were mostly clay loam and the soil pH was 6.2. The contents of soil organic matter was $24\;g\;kg^{?1}$ and $P_2O_5$ was $31\;mg\;kg^{?1}$. Plant species grown with native Boehmeria platanifolia were 60 family, 125 genus and 171 species. Clematis apiifolia showed the highest relative density and coverage among plant species grown with native Boehmeria platanifolia.

Geographical Distribution and Habitat Characteristics of Boehmeria in South Korea (남한 모시풀속 식물의 지리적 분포와 자생지 특성)

  • This study was carried out to investigate the distribution and habitat characteristics of Boehmeria for utilization and conservation plan of natural agro-plant resources in South Korea. The native habitat of B. longispica Steud., B. platanifolia Fr. et Sav., B. spicata Thunb., and B. tricuspis var. unicuspis Mak. were distributed nearly all areas in South Korea. B. nivea Gaudich. was distributed south of Chungnam but B. pannosa Nak. et Sat. and B. sieboldiana Bl. were partially distributed toward the southern part in South Korea. The average number of plant species growing with Boehmeria in natural habitat was found 124.9 species and Artemisia princeps var. orientalis Hara showed the highest importance value among neighbor species. B. platanifolia Fr. et Sav. and B. spicata Thunb. were the most commonly neighbor species growing with Boehmeria in rate of 49%. Average yearly precipitation and temperature of habitat for Boehmeria were 1100 mm to 1390 mm and $11.3^{\circ}C\;to\;13.7^{\circ}C$ respectively. Soil characteristics of habitat for Boehmeria. were that pH was 5.3 to 7.2 and B. nivea Gaudich. was higher content of organic matter than the other Boehmeria. Content of K and Na were similar among Boehmeria. $P_2O_5$, Ca and Mg were shown a little difference among seven species.

Quality Characteristics of Tofu Prepared with Boehmeria nivea Powder (모시잎 분말을 첨가한 두부의 품질 특성)

  • This study investigated the quality characteristics of tofu prepared with Boehmeria nivea powder. Moisture, crude ash, carbohydrate, crude protein and crude lipid contents were 7.71%, 20.09%, 39.01%, 31.25% and 0.93%, respectively. The yield of tofu added with BNP increased with addition of BNP, However, there was a significant decrease in pH as well as a significant increase in total acidity. In addition, L, a and b values of tofu decreased with increasing content of BNP. In terms of textural properties, hardness, chewiness and brittleness increased, whereas springiness and cohesiveness decreased, with increasing addition of BNP. In the sensory evaluation, overall preference for tofu added with 0.6% BNP was the highest. According to the results, addition of BNP positively affects the overall sensory evaluation of tofu, and 0.6% is the optimal level.

Phytochemical Identification from Boehmeria nivea Leaves and Analysis of (-)-Loliolide by HPLC

  • Phytochemicals were isolated from leaves of the fiber crop, ramie (Boehmeria nivea, Bn), using open column chromatography and medium pressure liquid chromatography. Their structures were identified as ${\beta}$-sitosterol, (-)-loliolide, rutin, and pyrimidinedione by MS, $^1H$-, and $^{13}C$-NMR spectroscopic analysis. Among them, (-)-loliolide was isolated for the first time from B. nivea. A content analysis of (-)-loliolide in B. nivea collected from different regions and harvest times was conducted by HPLC. The highest content of (-)-loliolide was found in Bn-23 harvested in September. These results will be helpful to use the plant which harvest in September as a high content phytochemical additive in food, health supplements, and medicinal products.

Comparative morphological analysis reveals a new record of Boehmeria nakashimae (Urticaceae) in Korea

  • A newly recorded species, Boehmeria nakashimae Yahara, is confirmed for the first time to be distributed on forest edges on Jejudo Island, Korea. This species is known to be endemic to northern Kyushu, Japan. It is characterized by ovate to broadly ovate, elliptic-ovate, or sub-orbicular middle leaf shapes, serrulate-dentate and uniform margins, 17-29 teeth on one side, a short caudate or narrowly acute apex, dense glomerules at fruiting, and densely strigillose on the stems, both surfaces of the leaves, the perianth of staminate flowers, and achenes. Therefore, it is given the new name 'Je-ju-top-mo-si-pul' in Korean based on its serrulate-dentate leaf margin and geographical distribution. A description, photographs, illustrations, and keys of related taxa in Korea are provided.

  • pH dependent K/S values, Hue, Value, and Chroma change of the hot-water and alkali extract of Boehmeria tricuspis have investigated as a part of the studies on natural dye resources. Maximum optical absorption of the dyed cotton, Korean paper, and silk with the extract were observed at 400 nm. According to the result of pH dependent K/S values change, it tended to increase as pH decreased except for the silk and there was no change near pH 7. For Hue, the materials dyed with hot-water and alkali extract indicated YR and R color, respectively. The change in Value of the dyed materials tended to increase, whereas Chroma of them decreased as the pH moved to alkali conditions although there were no significant changes near pH 7. As a result, it is considered that the optimum pH would be 7 when the mentioned materials are dyed with Boehmeria tricuspis extract.
