This study investigates the effect of perch type and height on the growth performance, footpad dermatitis (FPD), blood parameters, behavioral characteristics, and meat quality of broilers. A total of 912 one-day-old male Ross 308 broilers (48.23±0.264 g) were subjected to a three x two factorial design of three types of perch (wood, steel, plastic) and two levels of perch height (10→30 cm change, 10 cm fixed) over a five-week experiment. Growth performance, perch availability, litter quality, FPD incidence, serum biochemical parameters, and meat quality of the broilers were evaluated. There were no significant differences in the body weight, feed conversion ratio, and biochemical parameters (except for aspartate aminotransferase), pH, color, and water holding capacity. The incidence of FPD was significantly higher in the plastic perch group than in the wood and steel perch groups (P<0.05) at five weeks of age. Perch use was high in the order of wood, steel, and plastic groups in the daytime and nighttime at one, three, and five weeks of age (P<0.05). Perch use was higher in the 10 cm fixed group than the 10→30 cm group (P<0.05). The shear force of the breast significantly increased in the order of wood, steel, and plastic groups (P<0.05). In conclusion, the group with a fixed perch height of 10 cm had high perch usage. Additionally, the use of wooden perches was higher than that of other materials, and it lowered the incidence of FPD in broilers.

Three experiments were conducted to study the property of xylanase and the effects of xylanase in wheat-based diets on growth performance of broilers, respectively. Experiment 1 was performed in vitro to evaluate the effect of different pH and temperature on xylanase activity, and to evaluate the enzymic stability under different conditions. The results indicated that the optimum temperature and pH for xylanase activity were $50^{\circ}C$ and 4.5, respectively. The activity of enzyme solution was reduced rapidly after the treatment of water bath above $60^{\circ}C$ for 10 min. The enzyme was relatively stable at pH 3.5 to 8.0 and deteriorated when incubated at pH below 3.5. In Experiment 2, a total of 378 d-old male Arbor Acres broilers were randomly distributed to 7 different treatments with 6 replicates (9 birds) in each treatment. The treatments were as follows: (1) corn based diet (CS), (2) wheat based diet (WS), (3) WS+ 0.05% xylanase, (4) WS+0.15% xylanase, (5) WS+0.25% xylanase, (6) WS+0.35% xylanase, (7) WS+0.45% xylanase. The results showed that the body weight and feed/gain ratio of the broilers fed wheat-based diets have been significantly improved (p<0.05) compared to that fed corn-based diet in the first 3 wk. With regard to the wheat-based diets, the xylanase supplementation had a tendency to improve the growth performance in first 3 wk. After 3 wk, no significant difference (p>0.05) was found among all these different treatments. The supplementation of xylanase and the type of diets did not affect the feed intake but increased the concentration of triglyceride in serum. In Experiment 3, a total of 360 d-old male Arbor Acres broilers were assigned to 30 groups with 12 birds in each group randomly. These groups were then randomly distributed to 5 different treatments with 6 replicates within each treatment. The broilers of each treatment were fed one of the diets as follows: (1) Corn based diet, (2) White wheat based diet (WW) (3) White wheat based diet+0.25% xylanase, (4) Red wheat based diet, (5) Red wheat based diet+0.25% xylanase. The results showed that the body weight and feed/gain ratio had been significantly improved (p<0.05) by xylanase supplementation in the first 2 or 3 wk. The effect of xylanase in red wheat diet is a little higher than that used in white wheat diet. From the results of the present experiments, it can be concluded that the supplementation of Aspergillar xylanase can improve the performance of the broilers fed the wheat-based diet.

The study was carried out to investigate the changes of hematological parameters induced by waterborne exposure of chromium (Cr) in the mullet, Mugil cephalus. The mullet was exposed to sub-chronic concentrations of chromium (0, 25, 50, 100, $200{\mu}g/L$ Cr) for 4 weeks. The major hematological findings were significant decreases in the red blood cell (RBC) count and hematocrit value in mullet exposed to ${\geq}50{\mu}g/L$ Cr. Although serum calcium concentration was significantly reduced at ${\geq}50{\mu}g/L$ Cr, magnesium concentration was found to be significantly increased at ${\geq}100{\mu}g/L$ Cr. The serum glucose and total protein concentrations were significantly increased at $200{\mu}g/L$ Cr. However, serum triglyceride concentration did not show any noticeable changes in the range of $25{\sim}200{\mu}g/L$ Cr of chromium compared to control group during the experimental period. A significant increment of GOT (glutamic oxalate transminase) and GPT (glutamic pyruvate transminase) activities was noticed at ${\geq}100{\mu}g/L$ Cr. These results indicate that hematological and serum biochemical changes in the mullet by waterborne exposure to chromium are affected at more than $50{\mu}g/L$ Cr.

The effects of dietary fiber isolated from Synurus deltoides on constipation induced by loperamide (4 mg/kg/day) were investigated. Food intake and body weight both decreased in the 5% S. deltoides dietary fiber and loperamide-treated group (SD5) and 10% S. deltoides dietary fiber and loperamide-treated group (SD10), whereas fecal water contents increased by 2.4 and 3.4-fold in the SD5 and SD10 groups, respectively. The concentrations of total-cholesterol, HDL-cholesterol and triglyceride in the sera of the SD5 and SD10 groups were lower than those in the control (C) group. However, the biochemical parameters, GOT (glutamic oxaloacetic transaminase), GPT (glutamic pyruvic transaminase), and glucose levels, were not affected by the level of S. deltoides. In addition, the concentrations of total-cholesterol and triglyceride in the livers of the SD5 and SD10 groups were also significantly lower than those in the control group. These results suggest that dietary fiber isolated from S. deltoides might ameliorate constipation symptoms, and lower lipid concentrations in the blood and liver.

Chung-Sang (CS) is an experimental herbal remedy that is formulated to treat respiratory diseases implicated by inflammation. The herbs comprised of CS are frequently prescribed for treating various inflammatory symptoms: Menthae haplocalycis Herba, Magnoliae Flosis, Xanthii Fructus, Herba Asari, and Caryphylli Flos. Here, we prepared the extract of CS with boiling water (wCS) or with 50 % ethanol (eCS) and examined whether the two different extracts of CS exhibit a toxicity to cultured cells and mice. RAW 264.7 cells were treated with wCS or eCS, and the cytotoxicity of these extracts to RAW 264.7 cells was determined by an MTT assay. Although the production of intracellular reactive oxygen species that are detrimental to the cells was not increased by the extracts, the cytotoxicity to the cells was evident from 10 mg/ml of wCS and 100 mg/ml of eCS, suggesting that eCS is less cytotoxic. When mice (n = 10/group) received a single intratracheal wCS or eCS daily for 14 days, wCS yielded 40 % mortality, whereas eCS showed none. Both wCS and eCS did not significantly affect the weight of the body and of vital organs, except the lung. Biochemical analyses of mice blood indicated no damage to liver or kidney. However, unlike eCS, wCS significantly increased the level of IgE in serum. Collectively, our results show that eCS was less toxic than wCS, suggesting that CS prepared with 50 % ethanol is preferential over the conventional way of preparing CS.

Purpose: The purpose of this study was to investigate the health status, nutritional status, and nutrient intakes of Korean female elderly who are members of a local church in Seoul, Korea. Methods: The subjects were 59 female who are aged >65 yr. We investigated the nutritional status of the subjects using anthropometric and biochemical measurements. Interview was conducted to obtain the information regarding the health status. We also obtained dietary intake of these subjects to figure out the nutrient intakes. Results: The mean age of the subject was 74.0 yr old. Based on the WHO standard (obesity, body mass index, BMI ${\qeq}25$), we categorized the subjects to the obese and the non obese groups. The number of subjects in the obese group was 34 (57.6%). The mean Diastolic BP (p=.002), BMI (p<.001), waist circumference (p<.001), hip circumference (p<.001), blood level of transferrin (p=.038), and nutrient intakes of calcium (p=.026), potassium (p=.046), folate (p=.038) and vitamin E (p=.031) were higher in the obese group than in the non obese group. The subjects with hypertension was 67.5%. The presence of hypertension was correlated with BMI (p<.05). The number of subjects with hypercholesterolemia was 17 (28.8%). The level of cholesterol was correlated with BMI (p<.05) and wasit/hip ratio (p<.05). Conclusion: The female elderly in our study had higher prevalence of obesity which is a risk factor for hypertension and hypercholesterolemia. The nutrient intake of high sodium, high cholesterol, and low dietary fiber of these subjects suggests that there is an urgent need to develop an well planned nutritional education program for female elderly.
It is important to evaluate nutritional status of elderly patients receiving dialysis, since wasting and malnutrition are their common problems. This study aims at assessing their nutritional status by the type and duration of dialysis. The nutritional status such as somatic fat and protein storage was evaluated with anthropometric measure including weight/height ratio, triceps skinfold thickness and midarm muscle circumference. It was also measured with albumin, transferrin, C3 and IGF-1 and calorie and protein intakes. The general clinical condition of patients was evaluated with the severity of uremia and metabolic acidosis. which were measured through the levels of serum urea, creatinine and bicarbonateion. The data were analyzed by using t-test, ANOVA, Wilcoxon-rank sums test, Scheffe test, Kruskal-Wallis test and Pearson correlation coefficients. The results are following : 1. There was no significant difference in the calorie and protein intakes by the type and duration of dialysis received. 2. As for the anthropometric measures, no significant difference was found by the type of dialysis in body mass index triceps skinfold thickness and midarm muscle circumference. Yet these anthropometric measures differed significantly by the duration of dialysis in those elderly patients receiving hemodialysis(HD group), but this finding was not found in those receiving continuous ambulatory peritoneal dialysis(CAPD). 3. Regarding the indicators of uremia and metabolic acidosis, blood urea nitrogen(BUN) and creatinine were lower in the CAPD group than in the HD group, whereas bicarbonate ion was higher in the CAPD group than in the HD group, with no statistical significance. In the HD group, creatinine increased significantly with the increase of the duration of dialysis. 4. Serum trasferrin and C3 were significantly higher in the CAPD group than in the HD group. However. each of biochemical indices did not show statistical significance by the duration of dialysis in both HD and CAPD groups. 5. Anthropometric measures were significantly associated with dietary intake. Significant correlations were observed between biocarbonate ion, BUN and creatinine. In addition, the correlations between serum protein and albumin and between transferrin and C3 were statistically significant. Yet, IGF-1 revealed no significant correlation with other nutritional indices. The above findings indicate that there were no difference in nutritional status measured with protein and calorie intakes between the type and duration of dialysis, but CAPD seems to benefit correcting uremia and metabolic acidosis than HD. Studies of dietary management for dialysis patients need to be pursued in order to improved the quality of aged patients receiving dialysis.
Objective: Two experiments were conducted to investigate the effects of dietary sucralose on diet preference and growth performance of weaned piglets, and a third experiment was a 28-d safety study to examine if high-dose sucralose could affect the health state of weaned piglets. Methods: In experiment one, 48 piglets had free access to a corn-soybean based diet and the same diet supplemented with 150 mg/kg sucralose for 15 d. In experiment two, 180 piglets were blocked into 5 treatments with 6 replications. They were fed basal diets supplemented with 0, 75, 150, 225, and 300 mg/kg sucralose for 28 days. In experiment three, 108 piglets were randomly assigned to 3 treatments and fed diets supplemented with 0, 150 (suitable level), and 1,500 (ten-fold suitable level) mg/kg sucralose for 28 d. Results: The experiment 1 showed that piglets preferred (p<0.05) diets containing sucralose during experimental period. In experiment 2, piglets fed a diet supplemented with 150 mg/kg sucralose had a higher average daily gain (ADG) and average daily feed intake (ADFI) than pigs in the control group and other treatment groups during the experiment period. The concentrations of sucralose over 150 mg/kg may decrease feed intake. However, no difference in feed conversion ratio was observed. In experiment 3, piglets fed diet supplemented with 150 mg/kg sucralose had a higher ADG and ADFI than that of pigs in the control group and 1,500 mg/kg treatment groups during the experiment period. Clinical blood metabolites, organ index and histological morphology were not significantly different between sucralose treatments. Conclusion: Sucralose can promote feed intake and thereby improve growth performance of weaned piglets. Moreover, inclusion of 1,500 mg/kg sucralose was demonstrated to have no observed adverse effects. Supplementing 150 mg/kg sucralose for weaned piglets is recommended in this study.
Lectins are carbohydrate-binding and a cell-agglutinating proteins, and are concerted with a plants defence mechanism. In particular, chitin-binding lectins in locular fluid of cherry tomato fruit seemed to have a role in defending plants against fungi. The antifungal activity using lectin isolated from locular fluid of cherry tomato fruit was measured in the plant pathogen Cladosporium cucumerinum, Monosporascus cannonballus, Fusarium oxysporum, and Rhizoctonia solani. Amoung the four strains, a potent antifungal activity was detected in Cladosporium cucumerinum and Monosporascus cannonballus, not in Fusarium oxysporum, and Rhizoctonia solani. The molecular weight of this lectin isolated as double protein bands by SDS-PAGE was calculated to be 87 kDa and 47 kDa from the relative mobilities compared with those of reference molecular weight markers. The isolated lectin agglutinated human red blood cells (A, B, AB, O) treated with trypsin, and the most activity was found at B. The optimal temperature of isolated lectin was at $30^{\circ}C$. For the thermal stability, lectin was stable at $20-80^{\circ}C$. The optimal pH of this lectin was at 7.2, and showed complete loss below pH 9.0.
To investigate the defensive effect of green tea against the lead toxicity, Sprague-Dewley rats (150 gm) were divided into 5 groups; the control group (A), the group treated with lead for 4 weeks (Group B-1), the group treated with lead and green tea for 4 weeks (Group B-2), the group treated with lead for 8 weeks (Group C-1), and the group treated with lead and green tea for 8 weeks (Group C-2). The lead acetate (500 ppm) was injected two times for one week into the abdomen and green tea solution (3 g/100 ml distilled water) offered freely. The results of histological and biocheical study are as follows; 1. Blood Urea Nitrogen (BUN) were increased in all the tested groups. The Group B-1 was more increased than the Group B-2, and the Group C-1 more than the Group C-2. The values of Alkaline phosphatase (ALP) were also decreased in all the tested groups, as such the former phenomenon. 2 In the Group B-1, some microvilli, mitochondria and rER were modificated on epithelial cell of proximal renal tubules. The cristae of mitochondria were enlarged, microvilli and nucleus were observed normally on the Group B-2. The number of Microvilli, mitochodria and rER were decreased, many lysosomes and irregular nucleus observed in the Group C-1. In the Group C-2, microvilli were modificated slightly and other organelles were observed similary with the Group B-2.
