Critical Review on Biochemical Characteristics of Kimchi(Korean Fermented Vegetable Products) (김치의 생화학적 특성)

  • Kimchi is a fermented Korean vegetable product prepared using mafor raw materials (oriental cabbage and radish) and other ingredients through a series of processes of grading, brining, blending, and fermentation. Kimchi fermentation is initiated by various microorganisms originally present in the raw materials, but the fermentation is gradually dominated by lactic acid bacteria. Thus, the complex biochemical activities obviously occur during, before and after kimchi fermentation and their biochemical characteristics greatly differ, depending on the raw materials and processes used. This review covers in detail the numerous biochemical characteristics of sugars, organic acids, amino acids, vitamins(B complex, carotene and ascorbic acid), pectic substances, flavor components and others during preparation and preservation of kimchi.

The biochemical and molecular characteristics of Streptococcus equi subsp. zooepidemicus isolated from the genital tract of Thoroughbred mares in Korea

  • Streptococcus equi subsp. zooepidemicus (S. zooepidemicus) is a pathogen of a variety of infections in horse. We studied biochemical and molecular characteristics of S. zooepidemicus isolated from the genital tract of Thoroughbred mares in Korea. Seventy-nine isolates were identified as S. zooepidemicus by biochemical and PCR method from 374 horses. The biochemical characteristics of S. zooepidemicus isolates were positive reaction of lactose and sorbitol. However, S. zooepidemicus isoltes were negative reaction of inulin, mannitol, raffinose, trehalose, aesculin hydrolysis, growth in 6.5% NaCl and variable reaction of maltose. Epidemiological investigations of S. zooepidemicus isolates were performed by fragment analysis of SzP (S. zooepidemicus protective protein) gene, CNE (collagen binding protein) gene and ISR (16s rRNA intergenic spacer region) gene using ABI Prism $3,130{\times}1$ Genetic Analyzer System. All isolates were shown single amplification size of 906 bp in CNE gene, but SzP and ISR gene were shown variable patterns of fragment size. The characteristics of S. zooepidemicus investigated in this study will be very useful for the prevention of infection and the studies of epidemiologic characteristics of S. zooepidemicus, causing the severe economic losses due to reproductive failures.

Pattern of antimicrobial resistance and biochemical characteristics of Salmonella Typhimurium isolated from diseased pigs in Gyeongbuk province (경북지방 환돈에서 분리한 Salmonella Typhimurium의 생화학적 성상 및 약제내성 패턴)

  • Salmonella Typhimurium is a virulent pathogen for human and animal. We studied serotypes, biochemical characteristics, and antimicrobial resistance of S. Typhimurium isolated from diseased pigs in Gyeongbuk province over 1998 to 2008. One hundred sixteen isolates were identified as S. Typhimurium by biochemical characteristics and serotypes from 90 farms. The biochemical characteristics of S. Typhimurium isolates was production of $H_2S$, indole-negative, fermentation of mannitol, dulcitol, sorbitol, inositol, rhamnose, and maltose, and ornithine decarboxylase. At antimicrobial susceptibility test, the majority of isolates were highly susceptible to amoxicillin/clavulanic acid, cefepime, ciprofloxacin, while were highly resistant streptomycin, cephalothin, enrofloxacin, nalidixic acid, apramycin, chloramphenicol, tetracycline. The isolates were divided into 65 resistant patterns and 47 of the isolates were shown as a DT104 ASSSuT resistant phenotype.

  • Salmonella enterica serovar Gallinarum is the causative agent of fowl typhoid (FT) and Salmonella enterica serovar Pullorum is pullorum disease (PD), a severe systemic disease of chick and it has the same antigenic fomula, the close relation but distinct pathogen. The traditional bacteriologic and serologic methods routinely used but tedious, time consuming. some of biochemical differences are helpful in differentiating the two organisms, however variation in the characteristics of some strains can be observed. During 2006 to 2008, there was isolated 30 strains. The biochemical characteristics of S. Gallinarum was nonmotile, fermentation of dulcitol, maltose but positive arginine (6.6%), lysine (83.3%) and arabinose (20.0%). The antimicrobial susceptibility test showed 100% sensitive to amikacin, ampicillin, amoxicillin/clavulanic acid and florfenicol, but resistant to penicillin (100%) and erythromycin (60.0%). This PCR method can be applied in the diagnosis between S. Gallinarum and S. Pullorum.

Unraveling the Contributing Factors of Sarcopenia in Young Korean Male Adults: A Study of Occurrence, Somatometric, Biochemical, and Behavioral Characteristics

  • PURPOSE: The present study evaluated the occurrence, somatometric, biochemical, and behavioral characteristics of young Korean sarcopenic males aged between 30 to 39 years. METHODS: The study involved a total of 1,546 participants. These individuals were divided into two distinct groups based on their skeletal muscle mass index. Of these, 49 participants were categorized into the sarcopenia group, while the remaining 1,497 individuals were placed in the normal group. The researchers analyzed the occurrence of sarcopenia, somatometric, biochemical, and behavioral characteristics such as height, weight, body mass index (BMI), waist circumference (WC), skeletal muscle mass index, fasting glucose (FG), triglyceride and total cholesterol (TC) levels, systolic (SBP) and diastolic blood pressure (DBP), and the drinking and smoking status. A complex sampling data analysis was performed. RESULTS: The weighted occurrence of sarcopenia was found to be 3.24%, (95% confidence interval (CI) of 2.39% to 4.36%). The somatometric contributing factors were height, BMI, and WC (p < .05). Triglyceride and TC levels exhibited statistically significant differences in the biochemical variables (p < .05). The behavioral characteristics, including the drinking and smoking status, had no statistical significance (p > .05). CONCLUSION: This study identified specific occurrences of sarcopenia and contributing factors in young Korean men.

Biochemical properties and cultural characteristics of Escherichia coli isolated from chickens (닭에서 분리한 Escherichia coli의 생물화학적 및 배양 특성)

  • The present study was conducted to investigate the biochemical and cultural characteristics of Escherichia coli isolates from clinically affected chickens during the period from May 1988 to June 1989. A total of 82 E coli cultures were isolated from lesions of 75 chickens with colisepticemia. Biochemical properties of E coli isolates tested were in accordance with the general classification standard; all the isolates showed positive reaction in Catalase, Indol, and Methyl-Red tests, but negative reaction in Oxidase, Urease, $V{\ddot{o}ges$-Proskauer, Citrate utility, $H_2S$, Phenylalanine diaminase, and malonate tests. And the carbohydrate fermentation rates of them were shown to be variable. of the 82 isolates, 48(58.5%) cultures produced colicin to inhibit the indicator strain of E coli.

  • A study on characteristics for removal of arsenic ion using phosphorylated pine needles was performed. The surface condition of phosphorylated pine needles was confirmed by FT-IR, SEM(Scanning Electron Microscopy) and EDX(Energy Dispersive X-ray). The removal rate of arsenic ion was the highest as about 98% at pH 7. Most absorption for arsenic ion was also completed within 30min and decreased with time and pH of arsenic solution from 6.5 to 2.4.

  • The following is experimental result of Biochemical characteristics of Acetobacter sp. Acetobacter sp. were gram negative, short rod, non-spore-forming and motile. It reacted positively catalase, methyl red, oxidation fementation, voges-proskauer and nitrate reduction tests and hydrogen sulfide test negative and ONPG negative. Acetobacter sp. showed normal growth curve in Carr broth and there was no significant difference between isolates and type strains such as Acetobacter aceti(KCTC 1010), Acetobacter diazotrophicus(KCTC 2859). Acetobacter liquefaciens(KCTC 2804) and Acetobacter pasteurianus(KCTC 1008).

Biochemical Characteristics of Three Migratory Populations of Chum Salmon, Oncorhynchus keta, Spawning in Korea (산란을 위해 회유한 한국 연어(Oncorhynchus keta) 지역개체군의 생화학적 특성)

  • Nine biochemical characteristics of female Oncorhynchus keta subpopulations that migrate to three streams (Namdaechun, Myeongpachun, Oshipchun) in Gangwon, Korea, were evaluated during November 2006: aspartate aminotransferase, alanine aminotransferase, creatine kinase, triglyceride, cholesterol, glucose, hemoglobin, and urea in the blood and RNA/DNA in muscle. The three subpopulations were identical morphologically, but differed in their biochemical characteristics. The RNA/DNA ratio could be useful for distinguishing the subpopulations. RNA/DNA ratios of the Namdaechun and the Myeongpachun and Oshipchun subpopulations were $3.52{\pm}0.7$ and $2.9{\pm}0.7$ and $2.4{\pm}0.8$, respectively. The difference was statistically significant (P<0.05). By contrast, the blood parameters were somewhat ambiguous.
