The bioactive compounds and antioxidant activity of aronia leaves at different stages of maturity were identified and evaluated. Young and old leaves were approximately 2 months of age and 4 months of age, respectively. The young leaves contained more polyphenols and flavonoids than the old leaves. Three phenolic compounds (i.e., chlorogenic acid, p-coumaric acid, and rutin) were detected by HPLC. Antioxidant activity was measured using 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical, and superoxide anion radical scavenging assays. The reducing power of aronia leaf extracts increased in a concentration-dependent manner ($0{\sim}100{\mu}g/mL$). The antioxidant activity of the 80% ethanol extract was greater than that of distilled water extract. The high phenolic compound content indicated that these compounds contribute to antioxidant activity. The overall results indicate that aronia leaves contain bioactive compounds, and that younger aronia leaves may be more favorable for extracting antioxidative ingredients because they contain more polyphenols.
In addition to the nutritional values, milk has a wide range of bioactive compounds which have been found to be increasingly important for physiological and biochemical functions on human metabolism and health. Bioactive components in milk comprise specific proteins, peptides, lipids and carbohydrates. Especially, milk proteins are known to exert a wide range of nutritional, functional, and biological activities. And milk proteins are considered the most important source of bioactive peptides, including antihypertensive, antithrombotic, antimicrobial, antioxidative, immunomodulatory, and opioid peptides. Many ingredients containing specific bioactive peptides derived from milk protein hydrolysates have been launched on the market and are currently under development. In future studies more emphasis should be given to the health-promoting effect in the well-defined human clinical studies for the successful development of function foods based on the milk-derived bioactive components.
Mushrooms and their extracts including purified ingredients, are currently used as foods, functional foods (and/or nutraceuticals), and medicines. These products have numerous bioactive compounds such as polysaccharides (mainly ${\beta}$-glucans), glycoproteins, nucleotide analogs, terpenoids, and polyphenols, which have exhibited antioxidant, antimicrobial, anticancer, antiviral, anti-obesity, and immunomodulatory activities. In this review, we discuss the current information on the biactivities of 10 popular mushrooms in Korea. We also summarize the information on mushrooms and the active compounds derived from them, as well as mushroom-based products such as foods, functional foods, and medicines. We believe this review could provide useful information for scientists and consumers who seek to develop new products and promote healthy food habits and lifestyle.

The aim of this research was to compare the bioactive compound content and quality traits of breast meat from male and female Korean native ducks (KND) and commercial ducks (CD, Cherry Valley). Meat from three 6-wk old birds of each sex from KND and CD were evaluated for carcass and breast weights, pH, color, cooking loss, shear force, and bioactive compound (creatine, carnosine, anserine, betaine, and L-carnitine) content. KND showed significantly higher carcass weights than CD whereas no such difference (p>0.05) was found between male and female ducks. The breed and sex had no significant effects on the breast weight, pH value, and shear force. However, KND had significantly lower cooking loss values than did CD. Creatine, anserine, and L-carnitine contents were significantly higher in KND than in CD and were predominant in female ducks compared to males. The results of this study provide rare information regarding the amounts and the determinants of several bioactive compounds in duck meat, which can be useful for selection and breeding programs, and for popularizing indigenous duck meat.
A photo-labile compound which is bioinactive but, upon irradiation with light, yields bioactive species is called as "caged compound". Photolysis of caged compounds generating bioactive species, has become a general method to produce a desired amounts of bioactive species in the specific time interval at the desired place or area of the target biological systems. For this purpose, we designed and synthesized caged hydroxyl radical., "Photo-Fenton Reagent" NP-IIl. NP-IIl has a strong absorption maximum at 377 nm and yields hydroxyl radicals upon UV light irradiation. The antioxidant activity of the ${\alpha}$ -lipoic acid and other naturally occurring compounds has been examined by using NP-IIl as a molecular probe. For example, upon photoirradiation of NP-lII with BSA or apolipoprotein of human low density (LDL), the significant oxidative modifications were observed in both cases. The oxidation was completely suppressed in the presence of ${\alpha}$-lipoic acid, which clearly demonstrates the strong hydroxyl radical scavenging activity of ${\alpha}$-lipoic acid. Nano-delivery systems, such as nanoparticles, nanoemulsions, and nanoliposomes, are carriers that have been used to enhance the chemical as well as physical stability and bioavailability of bioactive compound. Food-grade nano-delivery system can be produced with edible biopolymers including proteins and carbohydrates. In addition to the low-toxicity, biocompatibility, and biodegradability of these biopolymers, their functional characteristics, such as their ability to bind hydrophobic bioactive compounds and form a gel, make them potential and ideal candidates for the fortification of bioactive compounds in functional dairy foods. This review focuses on different types of nano-delivery systems and edible biopolymers as delivery materials. In addition, the applications of food-grade nano-delivery systems to dairy foods are also described.

Cancer is the second leading cause of death in the world. According to the 2018 reports, one in six people worldwide is reported to die as a result of cancer. The discovery of anticancer drugs has been utilized extensively, but there has been no report on excellent selective activity in cancer cells. The discovery of bioactive substances from marine sponges has been the limelight in the pharmaceutical field over the past decade owing to the production of many bioactive compounds from the sponges to protect themselves against the environment. On top of that, marine sponges also produced cytotoxic compounds such as terpenoids, alkaloids, steroids, and peptides which suggests that marine sponges have high potential in the development of anticancer drugs. Thus, this study aimed to obtain new cytotoxic compounds from S. siphonella in Egypt and Arenoscelra sp. and Gelliodes sp. in Vietnam, and further investigation of the extract from these marine sponges led to isolation of ten new compounds and 21 known compounds. Chapter 1 will discuss about the isolation and structure elucidation of eight new polyacetylene derivatives from S. siphonella and their cytotoxic activities. The isolation and structural elucidation of one new polybrominated iododiphenyl ether from Arenosoclea sp. as well as cytotoxic activities of the isolated compounds will be reported in chapter 2. Finally, isolation and structure elucidation of new compounds from the marine sponge Gelliodes sp. and their cytotoxic activities will be discussed in chapter 3.
Research interest on functional food and phytochemicals has mainly focused on their health effects, mechanism of action and structure-activity relationship for the development of nutraceuticals. Considering the intake of phytochemicals via the normal diet, further information is required on changes in food functionality or individual phytochemicals that occur during the cooking or processing of foods, in order to increase the intake of these bioactive compounds, because many of the unit-operating procedures involved in cooking or food processing may result in physicochemical changes of food constituents. This study reviews the changes of selected phytochemicals, i.e. flavonoids, organosulfur compounds and carotenoids, or food functionality by major cooking or processing procedures such as heating, fermentation, and pH changes. In general, heating has a negative effect on food functionality, although in some cases, mild heating increases bioactive phytochemical contents. Some phytochemicals, including anthocyanins and catechins, are stabilized in lower pH conditions. The structures of phytochemicals, including isoflavones and catechins, are changed by fermentation. The loss of bioactive compounds may be decreased by recently developed cooking or processing methods such as microwave cooking or use of high hydrostatic pressure. However, the effects of cooking and processing procedures on food functionality and phytochemicals are so diverse and dependent on test conditions that further research efforts are needed to form accurate conclusions on the effects of cooking and processing of foods.
Myxobacteria are soil bacteria that move by gliding and have a complicated life cycle. In the research over the 25 years the myxobacteria have been shown to be a rich source of potentially useful bioactive substances. So far about 80 different basic compounds and 450 structural variants have been characterized. It is remarkable that myxobacteria produce the substance has special mechanisms. 26 new electron transport inhibitors,5 inhibitors of nucleic acid polymerases, 10 substances that act on the cytoskeleton, and 1 inhibitor of fungal acetyl-CoA carboxylase have been found. Presently, large-scale technical process was not fully established. But one of the compounds from myxobacteria is able to pass the many thresholds, which are on the road to application.

Mushrooms are ubiquitous in nature and have high nutritional attributes. They have demonstrated diverse biological effects and therefore have been used in treatments of various diseases, including cancer, diabetes, bacterial and viral infections, and ulcer. In particular, polysaccharides, including ${\beta}$-glucan, are considered as the major constituents responsible for the biological activity of mushrooms. Although an overwhelming number of reports have been published on the importance of polysaccharides as immunomodulating agents, not all of the healing properties found in these mushrooms could be fully accounted for. Recently, many research groups have begun investigations on biologically active small-molecular weight compounds in wild mushrooms. In this mini-review, both structural diversity and biological activities of novel bioactive substances from Korean native mushrooms are described.
