Effect of Academic Examination Stress on Taste Perception and Nutrient Intake in University Students (대학생의 시험 스트레스가 미각과 영양소 섭취에 미치는 영향)

  • The purpose of this study was to estimate effect of academic examination stress on taste perception and nutrient intakes in university students. Physical status, blood pressure, stress score using stress test of 2 types, recognition threshold and preference for taste, nutrient intakes using diet record method were measured before and after examination in 20 subjects. Mean age, height, weight, and BMI of the subjects were 23.39$\pm$1.20 years, 164.56$\pm$7.99 cm, 60.66$\pm$13.23 kg, 22.28$\pm$4.56 kg/$m^2$, respectively. Stress scores before examination of the subjects were significantly higher than those after examination. There were no significant differences in blood pressure, pulse rate, recognition threshold and just right concentration for sweetness and saltness, and food and nutrient intakes between pre- and post-examination. There were significantly positive correlation between stress score and diastolic blood pressure. And threshold concentration for saltness was positively correlated with threshold concentration for sweetness and animal protein intake. These results show no effect of examination stress on taste perception and nutrient intakes in university students. This may be due to low level of stress. Therefore, it is needed to study about effect of more higher level of stress on taste perception and nutrient intakes.

Comparison of the Dietary Factors between Normal and Osteopenia Groups by Bone Mineral Density in Korean Female College Students (골밀도 분류에 의한 정상군과 골감소증군 여대생의 식사관련 요인 비교)

  • The purpose of this study was to obtain baseline data on nutritional management of women's bone health. We examined the bone mineral density (BMD) by ultrasound bone densitometer, anthropometric measurement and dietary intake to assess the nutrient intakes. The subjects were 102 Korean female college students (normal=59, bone disease group [osteopenia+osteoporosis]=43) and the mean age was 21.4 yr. Mean T-score (BMD) were -0.42 and -1.52 in normal and bone disease groups, respectively. Anthropometric measurement showed that 59% of the subjects were normal weight and bone disease group had lower value than normal group in majority of anthropometric index. The average energy intake was 1539.7 kcal, which was 73% of Korean EER. The subjects had lower vitamin C, folic acid, Ca and K intake than Korean RI independent of BMD. Bone disease group (1:2.05) showed significantly lower Ca:P ratio than normal group (1:1.86). Normal group had more intake frequency of milk and milk product than bone disease group. In relation to anthropometric index with T-score, significant correlations have been found in weight, PM, BFM, MM, TBW, SLM, FFM WHR, BMI and SMM. In relation to dietary factors with T-score, significant correlations have been found relating to intake frequency of milk and milk product. Our results indicate that for nutrients, ratio and balance may be more influential than intake for bone health in young women.

Waxy Rice Variety-dependent Variations in Physicochemical Characteristics of Sogokju, a Korean Traditional Rice Wine (찰벼 품종에 따른 소곡주의 이화학적 특성)

  • This study was carried out to compare the physicochemical characteristics and sensory quality of Sogokju (Korean traditional rice wine) prepared with waxy rice varieties. Among tested waxy rice varieties, highest protein contents (8.11%) was observed in cv. Sangjuchal, and highest whiteness and L-value were observed in cv. Hwaseonchal, while no significant differences in gelatinization temperature could be observed among tested varieties, and cv. Boseokchal and Sinseonchal exhibited higher breakdown viscosity compared to the others. The alcohol contents of Sogokju with waxy rice varieties ranges from 13.0 to 13.4%, and the brix degree and turbidity were within the range of 20.5 to 24.6 $^{\circ}Bx$, and 0.0344 to 0.0530, respectively. The highest L-value (6.90), b-value (l.45), pH (4.79), total acidity (0.8384%), and glucose content (10.843 g/100 ml) could be observed in Sogokju made with cv. Sangjuchal. The organic acids such as succinic acid, malic acid, citric acid and oxalic acid could be detected in Sogokju. Although no variety-dependant differences in appearance, aroma, and taste could be found in sensory evaluation, Sogokju made with cvs. Sinseonchal, Haepyeongchal, and Hwaseonchal showed higher overall quality than Sogokju made with cv. Dongjinchal, which is most widely used for Sogokju used for Sogokju production nowadays.

Development and Characterization of EMS-induced Mutants with Enhanced Salt Tolerance in Silage Maize (EMS 유도 내염성 증진 사료용 옥수수 돌연변이체 선발 및 특성 분석)

  • Maize (Zea mays L.) is one of the most valuable agricultural crops and is grown under a wide spectrum of environmental conditions. However, maize is moderately sensitive to salt stress, and soil salinity is a serious threat to its production worldwide. In this study, we used ethyl methane sulfonate (EMS) to generate salt-tolerant silage maize mutants. We screened salt-tolerant lines from 203 M3 mutant populations by evaluating the morphological phenotype after salt stress treatment and selected the 140ES91 line. The 140ES91 mutant showed improved plant growth as well as higher proline content and leaf photosynthetic capacity compared with those of wild-type plants under salt stress conditions. Using whole-genome re-sequencing analysis, 1,103 single nucleotide polymorphisms and 71 insertions or deletions were identified as common variants between KS140 and 140ES91 in comparison with the reference genome B73. Furthermore, the expression patterns of three genes, which are involved in salt stress responses, were increased in the 140ES91 mutant under salt stress. Taken together, the mutant line identified in our study could be used as an improved breeding material for transferring salt tolerance traits in maize varieties.

Influence of Gamma-Irradiation on the Growth of Aspergillus spp. on Feeds for Ensuring Feed Safety (사료의 안전성 확보를 위한 Aspergillus속 곰팡이의 생육에 대한 감마선 조사 효과)

  • Aspergillus spp. is widely spread in the world on feeds and foods. They have been known to produce aflatoxins, which are mutagenic and carcinogenic to humans. The objective of this study was to determine the optimum gamma-irradiation dose for controling the growth of Aspergillus spp. to ensure safety of feeds. Four species fungal spore ($10^7$ spore/mL) exposed to 0, 1, 3, 5, 7 and 10 kGy of gamma radiation were inhibited in their growth and $AFB_1$ productivity by ${\geq}5\;kGy$. Meantime, the growth of fungal inoculated on feeds was inhibited at ${\geq}3\;kGy$. However, $AFB_1$ presented in aqueous solution was not be inactivated completely by ${\leq}10\;kGy$ irradiation. These results indicate that Aspergillus spp. on feeds could be controlled by 5 kGy gamma-irradiation but detoxification of $AFB_1$ demands a higher dose of gamma-irradiation (${\geq}10\;kGy$).

Effect of Harvest Stage on Forage Yield and Quality of Silage Corn at Late Planting (만기파종에서 수확시 숙기가 사일리지용 옥수수의 사초수량과 품질에 미치는 영향)

  • The corn (Zea mays L) planting date in a double-cropping system is delayed until mid-May due to delayed rye harvest on May. This experiment was conducted to determine the optimum harvesting time for high yield and the best quality of silage corn at late planting date after harvesting winter rye. Corns were planted on 21 May and harvested at eight different maturity stage at Seoul National University Experimental Livestock Farm, Suwon in 1997. Maturities were B (blister; 16 days after silking), M (milk; 20 days), LM (late milk; 24 days), SD (soft dough; 28 days), ED (early dent; 33 days), FD (full dent; 38 days), LD (late dent; 44 days) and PM (physiological maturity; 53 days) stages. The percentage of whole plant dry matter (DM) showed optimum range for silage making (29.0 to 38.5%) when corn plant was harvested at between ED and LD stages. Maximum whole plant DM (14,831 kg/ha) and total digestible nutrients (TDN) yields (10,675 kg/ha) reached at full dent stage. The percentage of whole plant acid detergent fiber (ADF) was decreased from 35.4 to 22.1%, and that of neutral detergent fiber (NDF) was also decreased from 63.8 to 46.0% as harvest stage progressed. These changes in chemical compositions were associated with changes in plant part composition. A progressive increase in total ear, and the decrease in stover portion in the plant were observed with advance in harvest stage. Calculated on net energy for lactation (NEL) and TDN values based on ADF percentage of stover plant decreased by ED stage and then increased by PM stage. But NEL and TDN values of ear and whole plant increased as harvest stage progressed. While in vitro dry matter digestibility of stover was decreased from 61.1 to 49.7%, whole plant was increased from 58.3 to 65.7% as maturity advanced (P$<$0.05). The results of this study indicate that corn can be harvested for silage at full (1/2 milkline) and late dent (2/3 milkline) stages for maximum yield and optimum quality at late planting. And days after silking at late planting was 38 and 44 days.

  • Stow nets have widely been used in the western sea of Korea from the olden age. The original structure of a stow net is a large square-sectional bag net made of 4 netting panels, and the front fringes of top and bottom panels are connected to the top and bottom beams respectively. Wire ropes, which is originated from the holding anchor are gradually forked and biforked, and finally 4 pieces of wire rope (biforked pendants) are jointed to each beam. Much convenience caused by long and heavy beams were problemed, then some studies have been carried out to improve the net since 1930's. The most effective improvement were achieved in 1980 by Mr. Han and his colleagues. The key point of improvement was that the beams were removed and the belt shaped shearing device made by canvas was attached to the side panels, the head rope and ground rope to the front fringe of top and bottom panel, and biforked pendants are joined to the shearing device. Even though this is the epoch-making improvement of a stow net, the further study should be required to find out more effective method. The authors carried out a model experiment on the stow net to determine the vertical and horizontal opening of a net mouth, and also examine the front, top and side-view configuration of the net. The model net was constructed depending on the Similarity Law of Fishing Gear in 1/10 and 1/20 scale and set against to the current at shallow and speedy flowing channel. The vertical and horizontal openings were determined by using scaled bamboo poles, and the configuration was observed by using specially prepared observation platform and underwater observation glass, and also photographed by using specially prepared underwater photographic equipment. The results obtained can be summarized as follows: 1. The opening height and width of the shearing device varied in accordance with the relative length of the biforked pendants. Considering the height and width of shearing device in 6 cases of the arrangement system of biforked pendants, the best result was obtained in the case that the 2nd, 3rd and 4th pendents from the bottom-most was 5%, 9% and 4% longer than that. 2. On the top-view configuration the excessive deformation of head rope and ground rope were observed. In the actual net, 54m long head rope and ground rope were attached to the front fringe of top and bottom panels so that the head rope may be lifted to make the net mouth open highly. But actually the head rope and the ground rope are streamed backward without any lift, and also the netting followed the ropes were deformed until the 2/5 in the whole length of the net. This deformation may be guessed to disturb the entrance of fish school into the net and also caused the net to get caught by obstacles in the sea bed and to be broken largely. 3. Hydrodynamic resistance R of the actual net may be deduced as R(kg)=29.2$\times$103 v1.65. It is also expressed as R(kg)=5.9$\times$d/l$\times$ab v1.65. depending on the formula deduced by Koyama to estimate the resistance of trawl nets, where d/l denote the ratio between diameter of netting twine and length of mesh leg in every part of side panel, a and b, the stretched circumference of the mouth and the stretched length of the net, respectively.

Comparison of Growth Characteristics, Forage Productivity and Quality between Italian Ryegrass and Synthetics Derived from Interspecific and Intergeneric Hybrids and Ecotypes (이탈리안 라이그라스와 종.속간 잡종 및 생태형 유래 합성종간의 생육특성, 수량성 및 사료가치 비교)

  • Forage breeding laboratory of National Livestock Research Institute, R.D.A. has made interspecific hybrids of Lolium multiflorum $\times$ L. pratensis and intergeneric hybrids of Lolium $\times$ Festuca since 1984, and has collected ecotypes of Italian ryegrass since 1991. Growth characteristics of these hybrids and ecotypes were researched, and then these clone lines were named. Among these clone lines, the several clones that have polen fertility, high cold-tolerance, and similar heading time were used for making synthetics, Naehan 6, 7, 8, 9, with polycrossing method in 1997. Field experiments were carried out to compare the mophological and agronomical characteristics and forage productivity and quality of the synthetics with those of Italian ryegrass varieties, Barmultra and Hwasan 101. in Suwon and Yonchun from 1999 to 2000. Heading time of the synthetics were 22th to 24th May that belong to late-mature types to be similar to that of Barmultra and Hwasan 101 in Suwon. The synthetics were 101 to 106 c3n in plant length, medium or thick in thickness of stem, dark peen in leaf color, broad and long in flag leaf, strong in lodging resistance, and excellent in regrowth. Winter survivals of the synthetics were no different from that of Barmultra or Hwasan 101 in Suwon, but better than that of Barmultra or Hwasan 101 in Yonchun where was -10 to -12$^{\circ}C$ of minimum average air temperature in January or February. Dry matter(DM) yields of the synthetics were similar to DM 8,238kg per ha of Barmultra in Suwon, but in Yonchun, were more 7 to 13% than DM 7,291kg per ha of Barmultra. Forage qualities, IVDMD, ADF, NDF and TDN of the synthetics were lower than those of Hwasan 101, but higher than those of Barmultra.

Effect of Microbial Inoculant to Pig Liquid Fertilizer on Germination Index of Chinese Cabbage (돈 분뇨 액비에 미생물 첨가가 배추의 발아지수에 미치는 영향)

  • This study was carried out to investigate the effect of Synechocystis sp. KACC 91007 when added to a pig slurry or pig liquid fertilizer (PLF) on germination index (GI) of Chinese cabbage. The preliminary experiment involved the screening of inoculant levels which were; 0.05, 0.1, 0.2, and $0.3\%$, respectively. The $0.05\%$ level of inoculant was selected based on low phytotoxicity and high GI.. The PLF underwent a 107 day aerobic and anoxic processing conditions. The T-N, T-P, $NH_4$, and $NO_3-N$ concentrations of the untreated pig slurry were; 2,873, 753, 1,441.6, and 16.48 ppm, respectively. Using aerobic processing treatment, the fertilizer value of the PLF was 3,672, 164, 183.87, and 21.97 ppm, respectively. In contrast, the fertilizer value of the PLF processed under anoxic condition was reduced to 1,261, 68, 161, and 16.87 ppm. The GI value of the untreated PLF under aerobic and anoxic processing condition was 83 and $40.4^{*}\%$, respectively. With the addition of the $0.05\%$ microbial inoculant, the GI improved by more than 40 and $50\%$ respectively, when the PLF was processed under anoxic and aerobic conditions. The above findings proved that the aerobic processing of PLF for 107 days was better than anoxic and yielded higher T-N which is a macro-nutrient fertilizer material. Consequently, the addition of $0.05\%$ microbial inoculant resulted to a higher GI of the Chinese cabbage specifically under aerobic processing condition.

Estimation of Influence of Milking System Type on Milking Center Effluent Amount and its Characteristics (착유시스템 유형별 세척수의 발생량과 특성)

  • The purpose of this study was to determine the effect of milking system type on milking center effluent production through the four seasons. Four different types of milking systems (Bucket, Pipeline, Tandem and Herringbone) were estimated, in duplicate, through the different seasons. The following conclusions can be drawn from this study. 1. The quantity of wastewater produced from Tandem and Herringbone milking systems were significantly larger than Bucket milking system (p<0.05). 2. The main wastewater production was from the washing of milking apparatus. Tandem and Herringbone milking systems produced 398.8 and $407.7{\ell}$/day of wastewater, respectively, for apparatus washing. These values were significantly higher than the other milking systems during the summer (p<0.05). 3. The average wastewater production from the various milking systems was $15.4{\ell}$/head/day. The quantity of wastewater production during summer ($16.4{\ell}$/head/day) season was higher than of the other seasons. 4. The highest level of $BOD_5$ ($906.4mg/\ell$) was produced from the washing of the parlor floor and the lowest level of $BOD_5$ ($212.4mg/\ell$) was produced from the washing of the udders of the cows. 5. The pH of dairy wastewater was in the range of $7.3{\sim}8.2$ and the average levels of $BOD_5$, COD, SS, T-N, and T-P were 731.2, 479.0, 751.6, 79.1, $14.7mg/\ell$, respectively. Following conclusions can be drawn from this experiment. The quantities of wastewater production from Bucket, Pipeline, Tandem and Herringbone milking system were 143.9, 487.9, 914.0, and $856.7{\ell}$, respectively. The average wastewater produced from the milking systems was $15.4{\ell}$/head per day. In order to effectively manage on the wastewater from milking systems, dairy farms need to consider the milking system type and farm size when determining the optimum wastewater treatment system.
