Characteristics of the Health Factors in 45~60 Year Old Korean Women related to Menopausal Stages - Based on 2008~2009 Korean National Health and Nutrition Examination Survey - (2008~2009년 국민건강영양조사를 활용한 45~60세 한국여성의 폐경 여부에 따른 건강인자 특성)

  • We analyzed data from the combined 2008~2009 Korean National Health and Nutrition Examination Survey (KNHANES) to compare the health factors related to menopausal stages in 45~60 year old Korean women. In this study, we classified the subjects into a premenopausal group (n = 439) and a postmenopausal group (n = 683). In the postmenopausal group, age was higher (p < 0.001), monthly income (p < 0.01) and education levels (p < 0.001) were significantly lower than in the premenopausal group. Body fat % and waist circumferences were also higher in the postmenopausal group than in the premenopausal group. The serum glucose (p < 0.05), total cholesterol (p < 0.001), LDL-cholesterol (p < 0.001), triglyceride (p < 0.001), GOT (p < 0.001), GPT (p < 0.001) in the postmenopausal group were higher than in the premenopausal group. The postmenopausal group showed a significantly lower quality of life compared to the premenopausal group (p < 0.01). With regard to dietary quality, nutrient adequacy ratio (NAR) of vitamin A, vitamin $B_1$, vitamin $B_2$ and niacin in the postmenopausal group were significantly lower than in the premenopausal group. The levels of glucose, total cholesterol, LDL-cholesterol, and triglyceride showed a significantly positive correlation with age, waist circumferences, body fat % and BMI. The 45~60 year old Korean women in this study showed high levels of obesity and serum lipids. Also, intakes of the vitamins and minerals of the women did not meet the level of Dietary reference intakes for Koreans. Therefore, nutritional risk may be high in the women, especially in postmenopausal women. In order to prevent the health risk, women's health care including the quality of the meal should be considered.

  • The experiment was carried out on eight healthy male subjects of 19-22 years old and they were maintained The experiment was carried out on eight healthy male subjects of 19-22 years old and they were maintained under the rice diet, the general mixed diet and the high animal protein diet for 7 days of each experimental period, respectively. The composition of each diet was indicated in Table 3. The allowance' of each nutrient per head per day in each diet were as follows. a) In the rice diet; protein:139.5 g (animal source:64.6 g, vegetable source:74.9 g), fat:25.3 g (animal source:11.3 g, vegetable source:14.0 g), carbohydrate: 644.0 g, calcium:982.3 mg, phosphorus: 2369.2mg, thiamine:2.1 mg, riboflavin: 1.6 mg, and 3211 Cal. b) In the general mixed diet; protein: 97.4g (animal source: 10.5 g, vegetable source: 86.9 g), fat:40.3 g (animal source:7.1 g, vegetable source:33.2 g), carbohydrate:620.7 g, calcium:887.1m g, phosphorus:2200.8m g, thiamine: 1.8m g, riboflavin:1.9m g, and 3158 Cal. c) In the high animal protein diet; protein: 135.6 g (animal source:68.8 g, vegetable source:66.8 g), fat:32.5g (animal source:17.9 g, vegetable source:14.6 g), carbohydrate:930.9 g, calcium: 626.0 mg, phosphorus: 1998.9 mg, thiamine: 1.5 mg, riboflavin: 1.5 mg, and 3194 Cal. The absorption rates of protein, fat, carbohydrate, calcium, phospherus, thiamine and riboflavin in each diet were observed. The results obtained were summarized as follows: 1. The absorption rates of protein and fat in the rice diet were 88.t % and 71.3.%. 2. The absorption rates of protein and fat in the general mixed diet were 83.4% and 86.4%. 3. The absorption rates of protein and fat in the high animal protein diet were 86.8% and 82.4%. 4. The nitrogen balances in the rice, the general mixed and the high animal protein diet groups were +5.7g, +2.3g and +4.0g respectively. 5. The absorption rates of carbohydrate in each diet were all above 95 % and so seemed to be almost completely absorbed except the cellulose in the diets. 6. The calory utilization rates in each diet were all above 93 %. 7. The minimum absorption rates of protein, fat and calory were 83.8%, 63.3%, and 89.7% in the rice diet, 80.0%, 80.9% and 85.9%, in the general mixed diet and 83.6%, 75.7% and. 89.3 % in the high animal protein diet respectively. Therefore, it is assumed that these data might be significant in practical use. 8. The protein absorption rates of the rice diet (88.1 %) was better than that of the general mixed diet (83.4 %). 9. The fat absorption rates of the general mixed diet and the high animal protein diet (86.4% and 82.4%) were signficantly better than that of the rice diet (71.3%). 10. The calcium absorption rates of each diet, rice diet, the general mixed diet and the high animal protein diet were 41.6%, 36.0%, and 27.7%, respectively. 11. The phosphorus absorption rates of each diet were 51.4%, 56.0% and 52.3%, respectively.12. The phosphorus absorption rate seemed better than that of calcium. 13. The thiamine absorption rates of each diet seemed 27.0 %, 42.9 % and 29.5 %, respectively. 14. The riboflavin absorption rates of each diet seemed above 30.6%, 27.1%, and 39.3% respectively. 15. The excretion amounts of thiamine or riboflavin were much more than the amounts ingested of the both vitamins. Therefore, the certain amount of both vitamins seemed to synthesize in the intestine.

Survey on utilization and demand for national food composition database (식품영양성분 데이터베이스 활용도 및 요구도 조사)

  • Purpose: This study was performed to evaluate the utilization of a current national Food Composition Database (FCDB) and to investigate demand for nutrients that should be added or supplemented in order to expand the national FCDB. Methods: Surveys were constructed based on the utilization of FCDB, use of a food and nutrition analysis program, utilization and importance of nutritional ingredients, and nutritional ingredients desired to be supplemented in the national FCDB. Self-administered surveys were obtained from 349 food and nutrition specialists, including dietitians, nutrition teachers, food industry workers, professors, and researcher. Results: Exactly 73.6% of respondents used the FCDB, and 90.5% experienced using various food and nutrition analysis programs. Professors and researchers frequently utilized protein, carbohydrate, and lipid nutrients in the FCDB. Among vitamins, vitamin C, vitamin A, and vitamin D were frequently used. Among minerals, sodium and calcium were highly used. Among the subjects, 17.4% of subjects have used phytochemical DB. Carotenoids, anthocyanins, and isoflavones among phytochemicals were frequently used, in that order. Respondents desired an additional data on sugars, vitamin D, folic acid, selenium, iodine, dietary fiber, vitamin $B_{12}$, and carotenoids in the FCDB. Conclusion: The survey results indicate that the current FCDB is actively used for various purposes, although it is necessary to construct a national nutrition database with additional nutrients.

Study on the Change of Nutrients Contents according to the Use of various Multi-Functional Grinder (믹서의 종류에 따른 영양소 함량 변화에 대한 연구)

  • In this study, changes of nutrients such as vitamins, minerals, and antioxidants were determined by using a multi-functional grinder. Contents of vitamin C and vitamin $B_1$ were measured by HPLC, and antioxidant activity was estimated toward free radical scavenging effect in using DPPH. Contents of minerals(Zn, Mn, Fe, Mg, K, and Ca) were computed by ICP-Mass. Results identified that the contents of vitamin C was $44.06{\pm}10.86mg/kg$ in mandarine, $132.1{\pm}22.80mg/kg$ in orange, and $12.79{\pm}2.01mg/kg$ in pineapple by using the hand blender for 3 minutes, and the loss rate of vitamin C contents were 12%, 7%, and 12% in comparison with the control group. In addition, the contents of vitamin C were $41.89{\pm}5.55mg/kg$ in mandarine, $131.51{\pm}12.67mg/kg$ in orange and $16.76{\pm}1.47mg/kg$ in pineapple when using of the grinder for 3 minutes, and the loss rate of vitamin C contents were 16%, 8%, and 17%. The results of vitamin $B_1$ showed a tendency to decrease in the same manner as the content of vitamin C even if there was no significant difference. Furthermore, the result of antioxidant activity revealed that free radical scavenging effect of sample was 60% decreased when using a hand blender and 10% decreased when using a grinder. Thus decrease rate of antioxidant activity when using the hand blender was higher than grinder. Lastly, current study could find any significant differences among the 16 food samples for cooking when employing the multi-functional grinder(p<0.05).

  • The purpose of this study was to investigate the dietary habits, health status, and nutrients status of male college students in Seoul according to vegetarian habits. The heights of lacto-ovo vegetarian and non-vegetarian students were not significantly different. However, body weight was significantly higher in the non-vegetarians. The lacto-ovo-vegetarians were vegetarians for religious reasons, and indicated 86.0% satisfaction with their meals. However, the lacto-ovo vegetarian and non-vegetarians showed concerns about low nutrient intakes. Lacto-ovo vegetarians displayed a higher proportion of meal regularity and daily breakfast as compared to non-vegetarians. In addition, their favorite food when eating out was Korean food. Lacto-ovo vegetarians showed higher intakes of milk or other dairy products (yogurt, etc.), vegetables, and fruit, as well as more regular eating habits. In contrast, the non-vegetarians showed higher intakes of high-protein foods (eggs, beans, tofu, etc.) and fatty foods. Lacto-ovo vegetarians showed lower intakes of total energy, as well as vitamins $B_2$, $B_6$, and niacin. Non-vegetarians showed in sufficient dietary fiber intake. In conclusion, lacto-ovo-vegetarians need a meal plan to consider the intake of other nutrients, while non-vegetarians should try to prevent the occurrence of health problems due to excessive intake of nutrients.

Study Development of Salad Dressing with Added Sea Tangle($Laminaria$ $japonica$) (다시마를 이용한 샐러드 드레싱 제조의 품질 특성)

  • This study was conducted to develop a novel salad dressing composite recipe of natural seasoning containing the dried sea tangle($Laminaria$ $japonica$) that has a high preference. Sea tangle($Laminaria$ $japonica$) is included in the vitamins and minerals, magnesium, calcium, iodine, iron content, such as high, and contained in Sea tangle alginate is not a small conference known as dietary fiber. To manufacture salad dressing with sea tangle, dressing with 0%, 3%, 6%, 9%, and 12% added sea tangle were prepared and tested for quality. The pH tended to increase with the increased sea tangle in addition but in contrast, acidity showed. The 'L' color decreased with added sea tangle, whereas the 'a' and 'b' values increased. Brix measurements increase with added sea tangle. The strength texture results, 0% was the highest, lowest 9%. Bitterness and chewiness texture results, 9% was the highest, lowest 0%. According to the sensory test results, in the topic overall quality 3% was by 3.76 point the highest. But, during total nine clause, in clause six, by 6% was the highest.

A Survey on Anthropometric and Nutritional Status of children in Three Different Kinds of Kindergartens in Cheonan (천안 지역의 3 종류의 유아원 유아들의 신체 발육과 영양 실태)

  • According to economical status, malnutrition and overnutrition coexist among preschool children in Korea. Malnutrition have been a serious problem for children in some of rural. Many children have deficiencies of some nutrients such as riboflavin A, and simultaneously they have overcaloric intakes with empty calorie foods. Preschool children have nutritional problems which can affect the growth and development. To investigate whether nutritional intakes can influence on the growth or not, nutritional intakes and anthropometric measurements were determined for infants aged 4~6 years old in three different kinds of preschools. Daily nutrient intakes were calculated by the combination of a direct measurement and 24 hour recall, and the diet consumption patterns were determined by diet quality index. Overall growth of infants in Cheonan area was under the normal growth in Korea. Preschool children in orphanage consumed almost all nutrients much less than the recommended daily allowances, on the other hands, children in private preschool had over-intakes of nutrients when it is compared with the daily requirements. However, the scores of the diet quality index were similar in three preschools since children in private preschool consumed more fat and junk food than those in orphanage. The weight and height of preschool children in orphanage was lower than those in private preschools. This was due to the lower consumption of the important nutrients in infants in orphanage. The consumption of all nutrients except fat did not show any correlation with height or weight. The quality index of fat, cholesterol, grains and protein intakes was higher in children in private preschool than in orphanage. In conclusions, 1)the private preschool children had worse nutrient intake patterns. Better consumption of vitamin $B_2$, calcium and grains were, bigger height and chest circumferences children obtained. 2)Since most of energy intake of preschool children came from junk foods, they needed to consume more supplementation of vitamins and minerals, which is necessary for normal growth. 3)It is desirable for the children to cut down junk foods and empty calorie foods.

Food Habits and Nutritional Status of the Long-Lived Elderly People in Ganghwa-gun Area (강화지역 장수노인의 식습관 및 영양소섭취량)

  • This survey was carried out to obtain the information concerning nutritional status, including factors of food habits and nutrient intake of the long-lived elderly men and women living in Ganghwa-gun. In order to assess the quality of dietary intake among the elderly, a survey was conducted during December 2003 of 103 subjects who were over 85 years of age. Dietary nutrient intake data were obtained through the 24 hr recall method. Chi-square test and t-test were the main data analysis method. Their dietary habits such as three meals a day and a regular meal time have shown that they have generally good eating habits. Average daily calorie intake ($\%$ RDA) was 1233.2 kcal ($68.8\%$) for male and 1215.8 kcal ($75.8\%$) for female which were lower than the Recommended Dietary Allowances (RDA) for Koreans. Energy intake of females got closer to RDA than that of male. Protein intake was 49.3 g for male and 46.9 g for female (which was $82.3\%$ RDA for male and $85.1\%$ RDA for female) for elderly person, the proportion of animal protein to total protein intake were $45.2\%$ for male and $39.0\%$ for female. Average CPF ratio of energy intake for both male and female were 68.7 : 16.1 : 15.2 and 69.6 : 15.4 : 15.0. SFA : MUFA : PUFA ratio of the subject was 0.78 : 1.03 : 1.00 for male and 0.64 : 0.92 : 1.00 for female. Calcium intakes for both males and females were 321.3 mg and 377.2 mg. Vitamin A was the nutrient found to be least sufficient. Mean daily intakes of most of the vitamins and minerals for both males and females were lower than RDA except vitamin C and Zn for female, especially $\%$ RDAs of vitamin A, Ca for male and vitamin A for females were less than $50\%$ of RDA. In conclusion, long-lived elderly in Ganghwa areas did not consume enough nutrients quantitatively as well as qualitatively, especially Ca, Fe, vitamin A, vitamin $B_2$ and vitamin E. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the long-lived elderly.

Nutrients and Dish Intake by Fasting Blood Glucose Level (혈당 수준에 따른 영양섭취 및 음식섭취 상태)

  • The nutrient intake and association between dish group intake and blood glucose and serum lipid level (TG, cholesterol, LDL and HDL) was analyzed among 3 groups: 452 subjects in normal blood glucose group (NG: fasting blood glucose < 100 mg/dL and 2 hours postprandial blood glucose < 140 mg/dL), 258 subjects in impaired fasting glucose group (IFG: fasting blood glucose 100~125 mg/dL and 2 hours postprandial blood glucose ${\geq}$ 140 mg/dL) and 101 subjects in diabetic group (DG: fasting blood glucose $\geq$ 126 mg/dL and 2 hours postprandial blood glucose ${\geq}$ 140 mg/dL). The data were obtained from the 2005 National Health and Nutrition Survey of Korea. The 811 subjects were adults aged 40~64 without dietary treatment. In nutrients intake, IFG was the highest and DG the lowest in both quantity and quality. DG, especially, had the lowest intake in carbohydrates, fiber, proteins, Ca, P, K, vitamins B1 and C, and consumed the highest amount of alcohol. In macronutrients distribution ratio, the DG diet showed a lower energy intake from carbohydrates but higher from fat than the NG diet, while IFG showed a higher energy intake from carbohydrates and lower intake from fat in supper out of 3 meals and snacks. IFG preferred salt-fermented foods and DG preferred soups, braised foods and kimchi compared to other groups. NG preferred multi-grain cooked rice and both IFG and DG preferred plain white cooked rice. Regarding the association between dish group intake and blood glucose, cooked rice, soups, salt-fermented foods and kimchi were significantly related to blood glucose. In blood lipids, steamed-foods, beverages and fruits were inversely related to the risk of developing type 2 diabetes, whereas cooked rice, stews, saltfer-mented foods, seasoned-fermented foods and seasoned vegetables were directly proportional to the risk of developing type 2 diabetes and related diseases. Therefore, it is beneficial to avoid rich, salty and fatty foods and heavy alcohol consumption for controlling blood glucose and blood lipids, while steamed foods, foods rich in fiber (like multigrain rice) as a staple, and fruits and teas are recommended for preventing or managing type 2 diabetes risks.

Effect of dietary supplementation with Spirulina on the expressions of AANAT, ADRB3, BTG2 and FASN genes in the subcutaneous adipose and Longissimus dorsi muscle tissues of purebred and crossbred Australian sheep

  • Background: The demand for healthy, lean and consistent meat products containing low saturated fatty acid content and high quality polyunsaturated fatty acids (PUFA), especially long-chain (${\geq}C_{20}$) omega-3 PUFA, has increased in recent times. Fat deposition is altered by both the genetic background and dietary supplements, and this study aimed to assess the effect of dietary Spirulina supplementation levels on the mRNA expression patterns of genes controlling lipid metabolism in the subcutaneous adipose tissue (SAT) and Longissimus dorsi (ld) muscle of Australian crossbred sheep. Methods: Twenty-four weaned lambs belonging to four breeds under the same management conditions were maintained on ryegrass pasture and fed three levels of Spirulina supplement (control, low and high). In terms of nutrient composition, Spirulina is a nutrient-rich supplement that contains all essential amino acids, vitamins and minerals. It also is a rich source of carotenoids and fatty acids, especially gamma-linolenic acid (GLA) that infer health benefits. After slaughter, subcutaneous adipose tissue (SAT) and ld samples were subjected to mRNA extraction and reverse transcription using quantitative polymerase chain reaction (RT-qPCR) to assess the mRNA expression levels of the Aralkylamine N-acetyltransferase (AANAT), Adrenergic beta-3 receptor (ADRB3), B-cell translocation gene 2 (BTG2) and Fatty acid synthase (FASN) genes, which are associated with lipid metabolism. Results: Both low and high Spirulina supplementation levels strongly up-regulated the transcription of all the selected genes in both SAT and ld tissues (mostly in the subcutaneous adipose), but sheep breed and sex did not influence the gene expression patterns in these tissues. Conclusions: The evidence indicates that high Spirulina supplementation level resulted in a decrease in intramuscular fat content in Australian purebred and crossbred sheep due to the enhanced production of melatonin in sheep muscle tissues and strong up-regulation of mRNA expression of BTG2 in SAT which negatively affected fat deposition. In contrast, low Spirulina supplementation level strongly up-regulated the ADRB3 and FASN genes responsible for fat production. These findings are consistent with the observed phenotypic data suggesting that low Spirulina supplementation level can increase lamb production, with higher long-chain PUFA content.
