Retarding Retrogradation of Korean Rice Cakes(Karedduk) with a Mixture of Trehalose and Modified Starch Analyzed by Avrami Kinetics (Avrami Kinetics에 적용한 트레할로스와 변성 전분 혼합 사용 떡의 노화 억제 분석)

  • Retarding retrogradation of Korean rice cakes(Karedduk) with a mixture of trehalose and Sun-Tender added, after 0, 24, and 48 hr of storage at $5^{\circ}C$, was analyzed by Avrami kinetics. A central composite design was used for arrangement of treatment. The two independent variables selected for retarding retrogradation analysis were amounts of trehalose(x) and Sun-Tender(y). Trehalose was added at 0, 3, 6, 9, and 12% levels, and Sun-Tender added at 0, 0.3, 0.6, 0.9, and 1.2% levels, to dry rice flour. The Avrami exponent(n) for the mixtures of 9% trehalose and 0.3% Sun-Tender, and 9% trehalose and 0.9% Sun-Tender were lower than in the control. The time constant(1/k) for the mixture of trehalose and Sun-Tender was higher than in the control. The effect of retarding retrogradation of Korean rice cakes with added mixtures of trehalose and Sun-Tender showed an increasing trend as the amount of trehalose increased. These results suggest that adding a mixture of 9% trehalose and 0.3% Sun-Tender, or 9% trehalose and 0.9% Sun-Tender to Korean rice cakes(Karedduk) is effective for retarding retrogradation.

  • The isothermal crystallization behavior of blends of poly(ethylene terephthalate) and liquid crystalline polymers(LCP) was studied. The Avrami analyses were applied to obtain the information on the crystal growth geometry and factors controlling the rate of crystallization. The crystallization kinetics for the blends followed the classical Avrami equation up to a high degree of crystallization regardless of crystallization temperature, The values of Avrami exponent, n, for PET in the blends were estimated to be around 2, which indicate that the polymer crystals grow into one-dimensional linear or fiber-like crystallization mode. The crystallization rate, as expected, decreases with increasing the crystallization temperature.

  • A metallurgical model for bainite transformation kinetics in the coarse-grained heat affected zone(CGHAZ) on the basis of an Avrami-type equation was studied. Isothermal transformation tests were carried out to obtain the empirical equations for incubation time and Avrami kinetic constants for C-Mn-Mo-Ni steel. The effect of prior austenite grain size(PAGS) on the reaction rate of bainite was also investigated. Compared with experimental transformation behavior of bainite, the predicted behavior was in good agreement. It was also found that a smaller grain size retard the bainite reaction rate, contrary to the classical grain size effect and this is considered to be caused by constraint of grain size to bainite growth.

  • Applicability of crystallization kinetics on thermal analysis was investigated for PbO-TiO2-B2O3-BaO glass systems together with theoretical background of kinetics and electron microscopic observations on nu-cleation and crystallization. Kissinger equation can be used on DTA under the assumption that the nucleus density is fixed during DTA runs. Crystallization mechanism affected on the activation energy Ek obtained from powder samples which is used for domination of surface crystallization. Avrami parameter n that was obtained from Ozawa equation represented closely the crystallization mechanisms observed by an electron microscope. The modified Kissinger equation takes into account crystallization mechanism thereby pro-ducing the true activation energy of crystallization.

  • The kinetics of isothermal crystallization in blends of poly(ethylene oxide) (PEO) and poly(styrene-co-acrylic acid) (SAA) has been examined as a function of the blend ratio, the copolymer composition, and the crystallization temperature, based on the Avrami eauation. The Avrami exponents were mostly chose to 2, independent of the crystallization temperature. The crystallization rate of PEO in PEO/SAA blends decreased with the increase of SAA content. And also, the higher the acrylic acid content in the SAA copolymer, 7he slower the crystallization rate of PEO in the blends.

  • The isothermal crystallization behaviors of blends of poly(ethylene naphthalate) (PEN) and a thermotropic liquid crystalline polymer (TLCP) were investigated by differential scanning calorimetry (DSC) as functions of crystallization temperature and blend composition. Avrami analyses were applied to obtain information on the crystal growth geometry and the factors controlling the rate of crystallization. The crystallization kinetics of the PEN/TLCP blends followed the Avrami equation up to a high degree of crystallization, regardless of crystallization temperature. The calculated Avrami exponents for PEN/TLCP revealed three-dimensional growth of the crystalline region in each blend. The crystallization rate of each blend increased as the crystallization temperature decreased, and decreased as the TLCP content increased. The crystallization of PEN in the blend was affected by the addition of TLCP, which acts as a nucleating agent.

Ordering Kinetics of Triblock Copolymer/Low Molecular Weight Homopolymer Mixtures (삼중블록공중합체와 저분자량 단일중합체 혼합물의 미세상분리 동력학)

  • 본연구에서는poystyrene-block-poly (ethlene-co-butylene)-block-polystyrene(SEBS) 삼중블록 공중합체와 저분자량 단일중합체인 Hercotac 1149 (H1149)의 70/30 (w/w) 혼합물 의 미세상분리와 그동력학을 유변물성 측정법과 SAXS 실험을 통하여 연구해 보았다. 먼저 혼합물의 미세상분리 온도를 유변물성 측정법과 SAXS 실험을 통해 각각구한 다음 샘플을 미세상분리 온도보다 높은 온도에서 그이하의 온도로 급냉시킨 후 유변물성과 산란강도의 사간에 따른 변화로부터 미세상분리 동력학에 대한 정보를 구하였다. 이렇게 얻어진 데이터 를 Avrami 형태의 핵생성 성장(NG) 메커니즘으로 해석해 보았는데 최대산란강도 Imax 뿐만 아니라 저장 점탄성계수 G'과 손실 점탄성계수 G"의 시간에 따른 변화를 잘 예측할수 있 었다. 한편 서로다른 두 time-resolved 실험으로부터 Avrami 플롯을 그려서 구해진 Avrami 변수들은 같은 급냉 깊이에서는 서로 잘 일치함을 확인하였다. 반감기는 급냉 깊이가 증가 함에 따라 점차 감소하는 경향을 보였는데 이는 급냉 깊이가 클수록 미세상분리가 더 빨리 진행되고 있음을 보여주는 것이다. 또한 Avrami 지수는 급냉 깊이가 증가함에 따라 3에서 4로 급격히 변했는데 이로부터 급냉 깊이가 작을 때에는 70/30 (w/w) SEBS/H1149 혼합물 의 미세상분리가 불균일 핵생성 성장 메커니즘에 따라 진행되고 급냉 깊이가 더 커지면 미 세상분리가 스피노달 상분리 메커니즘으로 변하고 있음을 예측할수 있었다.

Studies on the Retrogradation Properties of Rice Starch (쌀 전분의 노화 특성에 관한 연구)

  • The effect of varietal differences of rice starches by amylose content and gel consistency on the retrogradation behavior was studied. The gel consistency test, which is designed to detect differences in the texture of cooked rice of varieties that have a similar amylose content, had been turned out to be useful in this study. Both Suwon 232 and San Li Cun had higher amylose content, but were greatly different in gel consistency values. The results showed that setback viscosity of rice flour measured in a Brabender amylograph was significantly affected by amylose content as well as gel consistency. Increase in the rigidity modulus (E) of rice starch gels during storage determined by using Texture analyzer indicated that amylose content was an important factor in terms of hardness development The study of Avrami kinetics of retrogradation showed that time constant of rice starch gels was influenced by amylose content, but not by gel consistency.

The Crystallization Kinetics of CaO-MgO-Al2O3-SiO2 Glass System Using Thermal Analysis (열분석을 이용한 CaO-MgO-Al$_2$O$_3$-SiO$_2$의 결정화 기구의 연구)

  • Some of non-isothermal analysis methods are applied to CaO-MgO-Al2O3-SiO2 glass system to find the kinetics parameters of crystallisation, activation energy, Avrami component and frequency factor. The results using the non-isothermal analysis were compared to that of microstructure experiment. Analysis of the result has enabled to some methods to be to recommend as being the most appropriate equation to use in a glass system. It was shown that in the thermal analysis using the non-isothermal method of Kissinger, Augis-Bennett, Bansal, and Marotta, the calculation of activation energy is not much different, while Avrami component and frequency factor are different from applied each methods.
