The Research Regarding a Prevention Effect of Osteoprosis used an Arrowroot Fermentation from Ovaryectomized SD Rat (난소적출 흰쥐를 이용한 칡 발효액이 골다공증 예방 효과에 미치는 영향 연구)

  • In our study, osteoporosis was induced by ovariectomized in female Sprague-Daweley rats, and the prevention and treatment efficacy of the climacteric disease the postmenopausal Type I pattern was examined by using the experimental substance soybeans and arrowroot. After ovariectomy; the amount of estrogen was found to be reduced by 21.37$\%$ and it showed the tendency to be increased by 4.49$\%$ in T1 (extraction of soybeans group) and 7.62$\%$ in T2 (extraction of ferment soybeans group). The change of bone density, 14 weeks after ovariectomy in the femur, was decreased by 9.33$\%$ in N.C. group, and 5.46$\%$ in T3 (extraction of ferment arrowroot group). As pathological findings, the trabeculae of femur were detected to be abundant as normal and the frequency of the appearance of osteoclasts was very minimal. In the T3, the frequency of the appearance of the trabeculae of femur was increased to the level that could be distinguished. In regard to the accumulation of lipid in the bone marrow, the accumulation of lipid in the bone marrow was low as normal. However, in T3, the decrease to the level that could be distinguished was detected. In addition, in regard to the pathological findings of the uterus, normal uterine tissue findings were detected. In the T3, the minimal atrophy findings were detected. In conclusion, when the T3 was orally administered continuously for 14 weeks, it was thought that a certain proportion of the hormonal balance was maintained that functioned as a substance interfering the accumulation of fat, and it was considered to be of help in the treatment of not only osteoporosis Type I, but also for the prevention and treatment of various endocrinal diseases.

Isoflavones and biotransformed dihydrodaidzein in hairy roots of Korean wild arrowroot

  • Pueraria lobata is a perennial legume plant that produces a variety of isoflavones, such as puerarin, daidzin and daidzein. These are metabolized to equol via dihydrodaidzein and tetrahydrodaidzein by the bacterial fermentation of natural isoflavone sources in the human intestines. In this study, we described the growth and accumulation of isoflavone in the hairy root of the Korean wild arrowroot according to the culture period, as well as dihydrodaidzein biosynthesis in hairy root extracts fermented with Pediococcus pentosaceus. Daily proliferation was best in DY1 cultured for 1 week. DY1 showed significant differences in daily production of puerarin and daidzin+daidzein, as compared to DJ7; furthermore, both were best in DY1 cultured for 1 week. The hairy root extract was fermented successfully with P. pentosaceus with confirmed production of dihydrodaidzein, an equol precursor formed by biotransformation. The results indicated that the growth of hairy roots and isoflavone accumulation in the hairy roots is best 1 week after culture. These results are expected to contribute to the mass production of hairy root and isoflavones as equol precursors from the Korean wild arrowroot and provide a basis for equol production by biotransformation in vitro.

  • The applicability of arrowroots as materials for paper manufacture was investigated by evaluating the characteristics of arrowroots pulping and pulps, and the surface characteristics of paper made of arrowroots. The results is as follows. The yield of grounded pulp, alkaline pulp, grounded bleach pulp, and alkaline bleach pulp are 98.0%, 37.7%, 84.8%, and 32.5%, respectively. The extraction components in arrowroot's fibers was shown high in 1%-NaOH extraction. The amount of holocellulose and lignin were largely decreased, but a slight decrease was shown in the bleaching processes. Many shivers were shown in the grounded fibers. The amount of shivers was decreased and the single fibers were increased during the process of bleaching. The alkaline pulp and the alkaline bleach pulp showed high in the beating time and freeness than the grounded pulp and grounded bleach pulp. The conditions of sheet surface according to beating time is effected largely by the conditions of original pulp.

  • The purpose of this research is to investigate the anatomical and chemical properties of arrowroots for the use of paper fibers. The cells consisting of arrowroots showed certain affinities with those in the fibers and vessels of hardwood. Its parenchyma cells showed different shapes with those of hardwood. It was observed that starch was filled in the multi-shape cells. The average width and length of arrowroot fibers were $15.2{\mu}m$ ($11.1-20.3{\mu}m$) and 1.9 mm (1.49 mm-2.31 mm), respectively. In the chemical characteristics of arrowroots, the contents of cold- and hot-water, alcohol-benzene, and alkali extractives were 12-17%, 15.6%, and 38.8%, respectively. Its chemical composition was 61.3% holocellulose, 15.5% lignin and 2.0% ash.

Investigation of the Preparation and Cooking Methods of Eungi in the Eighteenth, Nineteenth, and Twentieth Centuries (1700~1900년대 문헌에 나타난 응이류의 종류 및 조리과정 연구)

  • The purpose of this study was to investigate the preparation and cooking processes used to prepare Eungi in cookbooks published from the 1700s to the 1900s. 'Eungi' is a thin gruel made of starch powder. Fourteen historical cookbooks were included and investigated for the preparation of ingredients and processing methods. Fourteen types of eungi were identified. Arrowroot eui and kuseonwangdogo eui were found in 『Kyuhapchongseo』 written in the early 1800s, and many types of eungi (i.e. job's tears eungi, arrowroot eungi, sorghum eungi, lotus root eungi) were mentioned in 『Kunhakhoedeung』, but unfortunately, ingredients and cooking methods were not included. 'Eungi' was made by boiling starch powder prepared using the 'subi method', that is, dried after grinding main ingredients such as job's tears using a millstone followed by soaking and settling. Eungi boiled with water or omija water were seasoned with the sugar or honey, and salt. These eungis were used for stomach complaints and hangovers and to promote longevity.

Quality Properties and Isoflavone Contents of Chungkukjang Containing Isoflavone Extracted from Arrowroot (Pueraria lobata Ohwi) (칡 이소플라본을 첨가한 청국장의 품질 특성 및 이소플라본 함량)

  • This study was conducted to determine the characteristics of chungkukjang with added isoflavone extracted from arrowroot and to determine its utility as a functional food substance. Crude isoflavone was prepared from arrowroot by the ethanol extraction method and frozen dried (AI). Samples of chungkukjang each had different amounts of isoflavone extracts added to them: 0 (control), 1.76 (AC1-chungkukjang), 3.52 (AC2-chungkukjang), and 7.11 (AC3-chungkukjang) g/kg. The pH, color, slime material content, calcium, and isoflavone of each sample were measured to investigate the quality and changes in isoflavone content. As AI increased, the pH of chungkukjang decreased to 7.46~7.53 compared to the pH of control (7.63). The slime material content range increased to 4.46~6.16%. However, there was no significant difference in the general components of chungkukjang between each of the groups (Con, AC1, AC2, AC3). In colors of chungkukjang, values for $L^*$, $a^*$, and $b^*$ decreased as AI increased. Meanwhile, the calcium content of AC1, AC2 and AC3 tended to increase by 11.18~12.82% compared to the control. This may be due to the influence of Ca in the arrowroot extract powder. There was a remarkable increase in total isoflavone content, by 30.81~130.66%, with an order of AC3>AC2>AC1. In all of the groups, the content of genistein and daidzein, aglycone form, increased dramatically, by 65.00~128.34%, and 89.38~142.91%, respectively, compared to the control. In AC3, in particular the genistin and daidzin content increased by 103.47% and 188.13%. These results showed that AI can be used as a source of isoflavone supplementation in chungkukjang.

Characteristics and Dyeing Properties of Arrowroot Leaves Colors (칡잎 색소의 특성과 염색성에 관한 연구)

  • Optical behaviors and dyeing properties of color solution extracted from arrowroot leaves were investigated. The wavelength of maximum absorption of the color solution appeared at 268 and 320 nm, respectively. The amount of colors extracted was increased with extracting temperature and time. Spectra of color solution are shifted to longer wavelength at higher pH values, and shifted to shorter wavelength by irradiation for 2 hrs. Remaining ratio of colors by irradiation decreased with increasing alkalinity of color solution. Degree of exhaustion on the silk fabrics was related to the concentration and pH of dyebath. Surface color of dyed fabrics, lightfastness and wash-fastness were variously according to mordant used. Hot water resistance and drycleaning fastness of dyed silk fabrics by treatment of mordants were all within commercially acceptable limits.

  • Physicochemical properties of arrowroot starch were investigated. The starch had blue value of 0.397, alkali number of 10.1 and amylose content of 22.0%. The starch was practically insoluble in water up to $55^{\circ}C$. X-ray diffraction was C pattern, but was close to A pattern. The alkali number, X-ray pattern and viscogram of the starch and retrogadation rate of the starch gels indicated that the properties of the arrow root starch were close to those of cereal starches.

The Study on Dyeing Fastness of Colouring Matter extracted in Arrowroot Leaf on the Mordants (매염제 처리에 따른 칡 잎 색소의 염색견뢰도에 관한 연구)

  • The purpose of this study was to investigate the dyeability and color fastness of cotton and silk fabrics dyed with extract of Arrowroot leaf princeps. The experimental items were divided into the mordant treatment, component of fabric and kind of mordants. The experimental study was done by laundering, abrasion(dry/wet), perspiration(acid/alkali), light fastness, color difference by C.C.M system and K/S test. The summerized finding reulted from experiment and investigation are suggested as follows : In the C.C.M and K/S test on mordanting method and kind of fabric, that of silk and cotton was the most effective in the pre mordant treatment. In the C.C.M and K/S analysis on 5 mordants, that of silk and cotton was significantly improved when mordants was treatmented. Especially, that of Fe mordanting treatment was higher than Al, Cu, Cr and none. In color fastness on mordants, laundering, perspiration and abrasion fastness showed 4-5 grade but light fastness showed 1-3 grade.

Quality Characteristics of Sesame Mook(Gomadoufu) with Different Cultivation Locations for Sesame (참깨의 재배지역에 따른 참깨 묵(고마도후)의 품질 특성)

  • The present study replaced Atarigoma with Korea &Chinese sesame values a nd analyzed basic data on various mook to develop Korea's food culture. Contents of oleic acid and linolenic acid in sesame seed were 42.31% and 48.18%, respectively, with a total moisture content of 89.5%. As storage temperature increased, moisture content increased. Cohesiveness and springiness decreased gradually at $4^{\circ}C$ and increased at $20^{\circ}C$, whereas gumminess and chewiness increased at $4^{\circ}C$ and gradually decreased at $20^{\circ}C$. Overall acceptability scores of Japanese and Korean arrowroot starch sesame mook were 7.20 and 7.10, respectively. Korea and Japanese Sesame can be substituted for sweet potato starch, potato starch, and arrowroot starch.
