Physico-chemical Properties of Glucitol Fatty Acid Polyesters -Potential Fat Substitutes- (유지 대체물질로서 Glucitol Fatty Acid Polyesters의 이화학적 특성)

  • Physico-chemical properties of glucitol fatty acid polyesters (GPE)-one of the potential fat substitutes-were analyzed and compared with conventional edible oil. The refractive Index, apparent viscosity and melting point of S-GPE (soybean oil GPE) were 1.472, 103 cps. at $37^{circ}C\;and\;-53^{\circ}C$, respectively. S-GPE were liquid at room teperature and the Yellowness of S-GPE was slightly stronger than that of soybean oil. The acid value and smoke point of S-GPE were 0.06 and $200^{\circ}C$. To supplement the weak thermal stability of S-PEG, SP-GPE (soybean-palm blended oil GPE) was prepared with soybeanpalm blended oil (70% of soybean oil and 30% of palm oil). The appearance and color of SP-GPE was not much different from S-GPE but the smoke point of that was increased to $210^{\circ}C$. It means that thermal stability of GPE can be enhanced by increasing saturation of the fatty acid composing GPE. Because most of physico-chemical properties of S-GPE or SP-GPE were similar to conventional edible oil, they are expected to be considered as a potential fat substitute with further study for confirming the safety.

Thixotropic Properties of Gelatinized Rice Starch Solutions (쌀 전분 호화액의 틱소트로픽 성질)

  • Rheological properties of gelatinized rice starch solutions were investigated with Brookfield rotational viscometer. The 8% starch solution showed thixotropic behavior with yield stress. The alkali gelatinized starch was more thixotropic than the thermal gelatinized one. The time dependent characteristics of starch solutions followed Tiu's model. The value of rate constant $(a_1)$ in Tiu's model increased linearly with shear rate, and was exponentially dependent on concentration and temperature. Temperature dependency of rate constant and apparent viscosity followed Arrhenius type equation and the activation energy were about 14.3 and 6.8 Kcal/g mole, respectively. The $a_1-value$ was found to be useful to evaluate changes in structaral decay on the shearing time of gelatinized rice starch solutions.

Effects of Emulsion Mapping in Different Parts of Pork and Beef (우육 및 돈육 부위에 따라 고기 유화물의 유화맵에 미치는 영향)

  • This study was conducted in order to evaluate emulsion mapping between emulsion stability and moisture content, cooking yield, hardness, protein solubility, apparent viscosity, and overall acceptability of pork or beef emulsion batters. The pork and beef emulsion batters were added to different parts of the meat. The formulations indicating low emulsion stability and high cooking yield were T1 (pork shoulder), T2 (pork ham), and T5 (beef tenderloin) treatments. Low stability, low hardness and protein solubility were also T1 (pork shoulder), T2 (pork ham), and T5 (beef tenderloin) treatments. The Pearson's correlation coefficients show that emulsion stability is negatively correlated with cooking yield (p<0.05), with a value of -0.90, and positively correlated with hardness (p<0.05), and protein solubility (p<0.01) with values of 0.65 and 0.59, respectively. This approach has been found to be particularly useful for highlighting differences among the emulsified properties in emulsion meat products. Therefore, the results obtained with emulsion mapping are useful in the making of new emulsified meat products of the desired quality.

Effect of Homogenization Pressure and Supplementation with Sucrose Fatty Acid Ester on the Physical Properties of Dairy Cream-based Emulsions

  • In this study, the droplet size distribution, rheological properties, and stability of dairy cream-based emulsions homogenized with different sucrose fatty acid ester (SFAE, a non-ionic small-molecule emulsifier) concentrations (0.08%, 0.16%, and 0.24% w/w) at different homogenization pressures (10 MPa and 20 MPa) were examined. Homogenization at a high pressure resulted in a smaller droplet size and narrower droplet size distribution. The D[4,3] (volume-weighted mean) and D[3,2] (surface-weighted mean) values of the emulsions decreased with an increase in the SFAE concentration. The flow properties of the emulsions homogenized with SFAE showed shear-thinning (n=0.21-0.46) behavior. The apparent viscosity (${\eta}_{a,10}$) and consistency index (K) of the homogenized emulsions were lower than those of the control sample that is non-homogenized and without SFAE, and decreased with an increase in SFAE concentration. The storage modulus (G') and loss modulus (G") of all emulsions homogenized with SFAE were also lower than those of the control sample. The stability of all emulsions with SFAE did not show any significant change for 30 d at $5^{\circ}C$. However, the emulsions stored at $40^{\circ}C$ were unstable over the storage period. Therefore, the addition of SFAE enhanced the stability of dairy cream emulsions during storage at refrigeration temperature ($5^{\circ}C$).

Comparison of Physicochemical Properties of Starch Phosphates Prepared by Dry Heating and Extrusion Process (건식법과 Extrusion 공정에 의해 제조한 인산전분의 이화학적 성질 비교)

  • Starch phosphates were prepared by dry heating, gelatinizing method and extrusion process using sodium tripolyphosphote (STPP) as a substitution reagent and their physicochemical properities were compared. In the preparation of starch phosphate by dry heating method(DSP), the effect of reaction temperature was the most significant to the DS(Degree of substitution). In the phosphorylation reaction with gelatinized starch(GSP), the substitution ratio was increased with increasing the reaction temperature, but the increase was insignificant above $85^{\circ}C$. By extrusion with the corn starch containing 2.0% STPP at various moisture contents of 20, 25 and 30%, the DS values of extrudate(WESP) were within the range of between 0.0066 and 0.0083. The starch phosphate(DSP) products showed lowering the gelatinization temperature, increasing the clarity of the starch paste. However, WESP showed higher gelatinization temperature than that of raw starch. The starch phosphate prepared by extrusion process showed lower apparent viscosity of paste than that of the DSP at same condition. All of starch phosphates showed reducing the tendency of the paste retrogradation.

  • Present work deals three families of $SiO_2$ gelling agents which have been used to produce gel fuel based on Kerosene. Jet A-1 is chosen as fuel where power-law rheological model is used to confirm whether or not the gelification is achieved depending on the %wt of gellant. It was confirmed that the produced jelly-like substance have shear-thinning effect, and that its apparent viscosity increases as $SiO_2$ concentration increases. Compared to other gellants, gel with Aerosil(R) R972 fits most to the power-law model, while gels with Silica 230 and Silica 530 deviate from the power-law model. The rheological characteristics behaved differently depending on the mixing method(vortex mixing and manual mixing) when gellant concentration is increased.

  • Curved duct channel flow characteristics for non-Newtonian gel fluid is investigated. A simulant gel propellant mixed by Water, Carbopol 941 and NaOH solution has been chosen to analyze the gel propellant flow behavior. Rheological data have been measured prior to the flow analysis where water-gel propellant and water-gel propellant with $Al_2O_3$ nano particles are both used. The critical Dean number examined by the numerical simulation in the U-shape duct flow reveals that although water-gel-nano propellants have higher apparent viscosity, the critical Dean number do show no notable difference for both the two gel propellant. It is found that the power-law index may be a dominant parameter in determining the critical Dean number and that the gel with particles addition may be more vulnerable to Dean instability.

  • The effect of additives on the orientation of magnetic Sr-ferrite powders has been studied during powder injection molding under applied magnetic field for fabricating multi-pole anisotropic sintered Sr-ferrite magnets. The orientation of the Sr-ferrite powders depends sensitively on the fluidity of powder-binder mixture, related to the binder additives and the injection molding temperature, and the magnetic field intensity. The orientation of Sr-ferrite powders is good for the compacts with stearic acid added in the binder system of paraffin wax/carnauba wax/HDPE, but it is poor for the compacts with silane coupling agent added. The orientation of Sr-ferrites higher than 80% is achieved at the following useful conditions; apparent viscosity lower than 2500 poise in 1000 sec$^{-1}$ shear rate and applied magnetic field higher than 4 kOe.

Effect of Gaeddongssuk (Artemisia annua L.) Powder on Quality and Shelf Stability of Emulsion Sausages during Refrigerated Storage

  • The objective of this study was to evaluate effects of Gaeddongssuk powder (GP) on quality characteristics and shelf stability of emulsion sausages during storage. Proximate composition properties showed no significant differences in all treatment (p>0.05). Control showed the highest cooking loss while the treatment with GP showed decreased cooking loss depending on increasing GP content (p<0.05). Apparent viscosity of batter was increased as the amount of GP increased, whereas hardness of emulsion sausages was decreased with increasing GP level. In sensory evaluation, emulsion sausage with 0.1% GP resulted in the highest score in overall acceptability. The pH values of all treatments decreased at the early storage stage, followed by gradual increase. The lightness and redness of treatments were decreased when the level of GP was increased. However, the yellowness of sausages with GP were higher than that of control (p<0.05). The addition of GP inhibited lipid oxidation of emulsion sausages during storage depending on its level. The aerobic bacteria population and VBN was unaffected by addition of GP during the storage (p>0.05). Therefore, Gaeddongssuk powder up to 0.1% has a potential as a natural antioxidant for meat products because it can inhibit lipid oxidation of sausages without decreasing their sensory properties.

Physicochemical Properties of Defatted High Amylose Corn Starch (탈지한 고아밀로오스 옥수수전분의 이화학적 특성)

  • For the use of starch gel like Mook(a Korean traditional gel food), the physicochemical properties and gelatinization patterns of defatted high amylose corn starch were investigated. The crude and total lipid contents of starch decreased by defatting from 0.07%, 0.92% to 0.03%, 0.19%, respectively. But iodine affinity increased from 51.6% to 71.3%. Water binding capacity of starches increased from 104.6% to 117.3% after defatting. Soluble carbohydrate and leached amylose of untreated and defatted starches were increased rapidly above $110^{\circ}C$. The apparent viscosity of starch dispersion using alkali solution increased above 0.3N NaOH solution but the transmittance increased above 0.4 N NaOH. The DSC thermograms of both starches showed broad and double endotherm with relatively low enthalpy, but the second peak of endotherm was larger in defatted starch than in untreated starch.
