A Study on the Characteristics of Microemulsion Containing Isoflavone (이소플라본을 함유한 마이크로에멀젼의 물성 연구)

  • Microemulsion is stable to aggregation, sedimentation, fusion and has $3nm{\sim}200nm$ of particle size which is transparent and semitransparent. The isoflavone as a derivatives of Flavone is colorless crystalline compounds. It has similar basic structure to steroid materials which is hormone that acts to skin physiological phenomenon. On this study, we tried to search and demonstrate system content rate of dermal translocation system for cosmetics using O/W type microemulsion containing isoflavone. We manufactured O/W microemulsions by phase inversion emulsification method. It's was found that POE(20) monostearate with HLB value 14 caused microemulsion to be formed, which had $4nm{\sim}18nm$ of average diameter and $3nm{\sim}33nm$ of particle size distribution. Apparent viscosities of the microemulsions have increased in proportion to add surfactant dose.

The Effects of Enzyme Complex on Performance, Intestinal Health and Nutrient Digestibility of Weaned Pigs

  • Two experiments were conducted to evaluate the effect of supplementing a corn-soybean meal-based diet with an enzyme complex containing amylase, protease and xylanase on the performance, intestinal health, apparent ileal digestibility of amino acids and nutrient digestibility of weaned pigs. In Exp. 1, 108 piglets weaned at 28 d of age were fed one of three diets containing 0 (control), 100, or 150 ppm enzyme complex for 4 wks, based on a two-phase feeding program namely 1 to 7 d (phase 1) and 8 to 28 d (phase 2). At the end of the experiment, six pigs from the control group and the group supplemented with 150 ppm enzyme complex were chosen to collect digesta samples from intestine to measure viscosity and pH in the stomach, ileum, and cecum, as well as volatile fatty acid concentrations and composition of the microflora in the cecum and colon. There were linear increases (p<0.01) in weight gain, gain: feed ratio and digestibility of gross energy with the increasing dose rate of enzyme supplementation during the whole experiment. Supplementation with enzyme complex increased the digesta viscosity in the stomach (p<0.05) and significantly increased (p<0.01) the concentrations of acetic, propionic and butyric acid in the cecum and colon. Enzyme supplementation also significantly increased the population of Lactobacilli (p<0.01) in the cecum and decreased the population of E. coli (p<0.05) in the colon. In Exp. 2, six crossbred barrows (initial body weight: $18.26{\pm}1.21$ kg), fitted with a simple T-cannula at the distal ileum, were assigned to three dietary treatments according to a replicated $3{\times}3$ Latin Square design. The experimental diets were the same as the diets used in phase 2 in Exp. 1. Apparent ileal digestibility of isoleucine (p<0.01), valine (p<0.05) and aspartic acid (p<0.05) linearly increased with the increasing dose rate of enzyme supplementation. In conclusion, supplementation of the diet with an enzyme complex containing amylase, protease and xylanase improved piglet performance. This is likely a result of improvement in nutrient digestibility, volatile fatty acid concentrations and bacteria ratio in the large intestine.

Quality Changes of Retorted Samgyetang during Storage depending on the Different Filling and Packaging Temperatures of Meat Broth (육수 충진 포장온도 차이에 따른 레토르트 삼계탕의 저장 중 품질변화)

  • This study was conducted to investigate the effects of filling and packaging temperatures on the quality changes of retorted Samgyetang during storage. The samples were manufactured after filling the broth maintained either at $50^{\circ}C$ (T1) or $85^{\circ}C$ (T2) into pouch and followed by sterilizing them at $120^{\circ}C$ for 65 min under the F value of approximately 8.0. The samples were stored at $25^{\circ}C$ up until 6 months and various physic-chemical parameters including pH, oxygen ratio in the headspace of package, residual dissolved oxygen concentration in the broth, acid value, volatile basic nitrogen value (VBN), apparent viscosity, spreadability of porridge, and sensory attributes were analyzed periodically at month 0, 1, 3, and 6, respectively. During storage time, the dissolved oxygen concentration and acid values of T2 samples tended to increase slower than T1 (p<0.05). Between T1, and T2 samples, significant differences were observed for pH and dissolved oxygen concentration over the storage period while acid values and VBN values were significantly different from 3 months (p>0.05). Contrarily, no apparent differences were observed between two samples in the apparent viscosity, spreadability of porridge, and sensory attributes over the storage period (p>0.05).

The Influence of Food Hydrocolloids on Changes in the Physical Properties of Ice Cream

  • This study was carried out to investigate the effect of hydrocolloids on the changes in physical properties of a model ice cream. The model ice cream contained water, sugar, skin milk powder, com oil, and 4 different hydrocolloid stabilizers (gelatin, pectin, hydroxyethylstarch, locust bean gum), was manufactured in a batch type freezer. The following physical characteristics of ice cream were examined: flow behavior, overrun, air cell size, ice crystal size, and melt resistance. With regard to flow behavior, all of aged mixes had a lower apparent viscosity relative to the mix before aging, and ice cream mix containing locust bean gum had the highest viscosity. Air cell size was observed to range from 20 to $38\;{\mu}m$, and ice cream with locust bean gum showed the largest size. There was an inverse correlation between overrun and air cell size. The ice crystal sizes of all samples ranged from 25 to $35\;{\mu}m$. Ice cream with added pectin contained the smallest ice crystal size, which was significantly difference from other stabilizers (p<0.05), and resulted in superior melt resistance with increased melting time compared to other samples.

Effect of Analytical Parameters of Gel Permeation Chromatography on Molecular Weight Measurements of Urea-Formaldehyde Resins

  • As the molecular weight (MW) of urea-formaldehyde (UF) resins had a great impact on their properties, this work was conducted to study effect of analytical parameters of gel permeation chromatography (GPC) on the MW measurement of UF resins. GPC parameters such as flow rate, column, detector temperature, and sample injection temperature were selected to compare number-average molecular weight (Mn), weight-average molecular weight (Mw), molecular weight distribution (MWD) and polydispersity index (PDI) of two UF resins with different viscosities. As expected, UF resin with higher viscosity resulted in greater Mn and Mw than those of low viscosity UF resin. When the flow rate increased, both Mn and Mw of UF resins decreased and MWD became narrower. By contrast, both Mn and Mw increased and MWD became wide when the column, detector, and sample injection temperature increased. The column, detector, and sample injection temperature of $50^{\circ}C$ at a flow rate of $0.5m{\ell}/min$ resulted in the highest MW and broadest MWD for the GPC analysis. These results suggest that the apparent molecular size or a hydrodynamic radius of UF resin molecules dissolved in the mobile phase affect to Mn, Mw and MWD.

Rheological Properties of Exopolysaccharide p-KG03 Produced by Marine Microalgae Gyrodinium impudicum strain KG03

  • The rheological properties of exopolysaccharide, p-KG03, produced by marine microalgae Gyrodinium impudicum strain KG03 had been studied. The intrinsic viscosity of this p-KG03 was calculated to 65.22 and 50.75 $d{\ell}/g$ using Huggins and Kramer equations (xanthan gum 24.41 and 24.03). Aqueous dispersions at p-KG03 concentrations ranging from 0.1 to 1.0 % (w/w) showed marked shear-thinning properties as Power-Law behavior. In aqueous dispersions of p-KG03 1.0 %, consistency index (K) and flow behavior index (n) were 2,172 and 0.52. The apparent viscosity and the influence of shear rate on different conditions as p-KG03 concentrations, pH, NaCl, $CaCl_2$ and temperature in aqueous solutions were measured. And p-KG03 had mixed with aqueous solutions of xanthan gum and gellan gum, and invested the change of mixed aqueous solution behavior.

  • The flow properties of binder latices for paper coating were investigated, together with dynamic viscoelastic properties of latex films and electron micrographs of latices, under various conditions. The amphoteric latex, binder pigment latex and anionic latex were used in this work. The amphoteric latex has both anionic and cationic functional group on its surface. The binder-pigment with a core-shell structure has dual functions : plastic pigment and binder. The low shear viscosity of binder latices and clay slurry were measured with Brookfield vis cometer. At low-shear rates. the viscosity decreased with increasing particle size of latex. On the amphoteric latex surface, the carboxyl groups are assumed to be fully dissociated over the region of pH 9~12, but the density of negative groups seems to be increased because of the gradual decrease in the degree of dissociation of amino groups. Since the apparent particle size of latex increases with surface charge, the electroviscous effect can be observed. On the anionic latex surface, the charge density is assumed to be nearly constant above pH 8. However, below pH 8 the coagulation of particles could be observed probably because of the decrease in the charge density.

Effects of Hot Water Treatment and Dialysis on Measuring the Average Molecular Weight of Alginates (열수처리와 투석이 alginates의 평균분자량의 측정에 미치는 영향)

  • In preparing sodium alginates from sea tangle (Laminaria japonica) powder using the Mexican process, alkaline extraction, conversion to alginic acid and reversion to sodium alginates were used to increase purity. The effect of hot water treatment and dialysis on measuring the average molecular weight of sodium alginates were investigated. Intrinsic viscosity and average molecular weight of sodium alginates after dialysis were higher than those before dialysis. Average molecular weight of sodium alginates treated with hot water was higher than that without. Hot treatment has little effect on the ash content of sodium alginates. Ash content of sodium alginates before dialysis were $27-30\%$ those after dialysis were $10\%.$ After dialysis, Na content was highest $(89-91\%),$ K was $11-12\%,$ Ca was $1.9\%,$ and Mg was $0.05\%.$ Ash content of alginates had little effect on average molecular weight. SAV (slope of apparent viscosity) of alginates solution after dialysis showed higher values than before. SAV of the alginates with hot water treatment were higher than without treatment.

Effect of NaCl Addition on Rheological Behaviors of Commercial Gum-Based Food Thickener Used for Dysphagia Diets

  • Rheological properties of thickened fluids used for consumption by people with dysphagia (swallowing difficulty) are very sensitive to several factors, such as thickener type, temperature, pH, sugar, protein, and NaCl. In this study, steady and dynamic rheological properties of thickened water samples mixed with five commercial xanthan gum-based food thickeners (A~E) were studied in the presence of NaCl at different concentrations (0.3%, 0.6%, 0.9%, and 1.2%). The magnitudes of apparent viscosity (${\eta}_{a,50}$), consistency index (K), yield stress (${\sigma}_{oc}$), and dynamic moduli (G' and G") showed significant differences in rheological behaviors between thickened samples with various NaCl concentrations. Dynamic moduli values of all thickened samples, except for samples with thickener C, were much higher than those of the control (0% NaCl). All rheological parameter values (K, G', and G") in a thickener A were much higher than those in other thickeners. These results suggest that rheological properties of thickened samples containing NaCl are strongly affected by xanthan gum-NaCl interaction and depended on the type of thickener.

Physicochemical Properties of Modified Rice Powder for Rice-Based Infant Foods - Thermal-enzymatic Treatment on Rice Powder (반고형 이유식의 개발을 위한 변형 쌀가루 제조 및 이화학적 특성 I - 열-효소 처리한 쌀가루)

  • The establishment of optimal producing condition for rice-based infant foods using modified rice powder was attempted. The modification of rice powder was prepared by microwave heating as well as partial enzymatic hydrolysis. Not only thermal treatment but also enzymatic hydrolysis on rice powder increased D.E. value from 1.25 to 3.81. The water binding capacity, swelling power, solubility, digestibility by ${\alpha}-amylase$, light transparency, and paste clarity of the modified rice powder compared to unmodified rice powder were increased from 107% to 249%, from 7.80 to 42.52, from 0.04% to 0.89ft, from 9.19% to 23.01, from 33% to 42%, and from 2.2% to 3.9%, respectively. On the other hand, gelatinization temperature, apparent viscosity, and degree of retrogradation of modified rice powder showed negative correlation with D.E. value. The 「results suggested that the thermal and enzymatic treatment on rice powder improved the physicochemical properties of rice based infant food by enhancing carbohydrate absorptionability and lowering the viscosity and opacity.
