Effects of Dietary Fiber Extracted from Citrus (Citrus unshiu S. Marcoy) Peel on Physicochemical Properties of a Chicken Emulsion in Model Systems

  • Citrus (Citrus unshiu S. Marcoy) industry by-products were used as a source of dietary fiber, and the effects of dietary fiber extracted from citrus peel on the proximate composition, pH, color, protein solubility, cooking loss, emulsion stability, and apparent viscosity of a chicken emulsion in model systems were examined. Chicken emulsions were prepared by adding citrus peel fiber at four different concentrations (1, 2, 3, and 4%). The apparent viscosity, redness, and yellowness of the chicken emulsion with citrus peel fiber were higher than those of the control (p<0.05). The lightness values of the chicken emulsions were lower in treatments containing citrus peel fiber (p<0.05). Furthermore, moisture content, cooking loss, and emulsion stability of the chicken emulsion with 1-2% citrus peel fiber were higher than those of other treatments (p<0.05). Fat content was lower in the treatments with added citrus peel fiber than that in the control (p<0.05). Chicken emulsions with added citrus peel fiber had improved quality characteristics, and the best results were obtained for the chicken emulsion with 2% added citrus peel fiber.

Physicochemical Properties of Freeze-dried Corn Starch Sponge Matrix (동결 건조된 옥수수 전분 스펀지 매트릭스의 이화학적 특성)

  • The focus of the current study was to investigate the physicochemical properties of a corn starch-sponge matrix prepared at a low concentration below gel forming by freeze-drying. The effect of variables(starch concentration, heating temperature, and heating hold time) on the physicochemical properties of the samples was analyzed by response-surface methodology. Regression models on the properties of samples such as hardness, springiness, and water solubility index(WSI) showed high correlation coefficients(r>0.95) and significant F values, but regression models for the other properties(swelling power, apparent viscosity, reducing sugar content, and digestibility) showed them to have relatively low significance. Sample hardness of sample showed the highest value at condition of $90^{\circ}C$ and 5%, whereas springiness was at a maximum at $130^{\circ}C$ and 5%. Also, at 1% of starch concentration, mechanical properties were greatly decreased as the relative humidity increased, compared with the 3% and 5%, especially in the hardness of samples. The WSI showed an increasing trend with heating temperature regardless of starch concentration. Overall, the physicochemical properties of freeze-dried corn starch-sponge matrix were influenced much more by starch concentration and heating temperature than by heating hold time. The results of this study show that the basic properties of freeze-dried corn starch-sponge matrix can be used for the specific food applications or as a functional material for its stability.

  • Pot life of two-component adhesives such as epoxy resin used in saturating FRP composite is defined as a certain time periods which can guarantee the bond performance and workability of epoxy resin. Therefore, adhesion procedure in strengthening RC members should be completed before chemical hardening is going on at job site. It has been known that there are two types of test method to evaluate the pot life of structural adhesive based on apparent viscosity or temperature change. This study is to verify the test methods how to assess pot life of structural adhesive for FRP composites by means of changing in apparent viscosity and means of exothermic reaction temperature proposed in existing test standards. Results of each test method were compared and analyzed, and reasonable test and evaluation method were suggested.

Formation and Properties of Gel from Maize Starches with Different Amylose Content (아밀로오스 함량이 다른 옥수수 전분의 겔 형성과 특성)

  • To study the effect of amylose on the mechanism of gel formation, swelling power, water solubility, the pattern of alkali gelatinization and gel properties were investigated. The swelling power of waxy maize starch(Amioca) was the highest and followed by those of PFP >Amaizo > Amylomaize Ⅶ. Amioca showed higher iodine affinity of soluble amylose than other maize starches. The apparent viscosity of alkali gelatinization measured by Brookfield viscometer for Amaizo was $70{\pm}10^3cp$ which was higher than Amylomaize VII. The apparent viscosity of PFP was increased to $70{\pm}10^3cp$ and then decreased. As maize starches were autoclaved at $121^{\circ}C$ with starch : water ratio (1:9) and autoclaving-cooling cycle were up to 4 times, gel properties were measured by rheometer. Amaizo showed the highest value for hardness, adhesiveness, springiness, cohesiveness, and hardness of gel after two times of autoclaving-cooling cycles was the highest. Gel properties was thus affected by the chain length of amylose rather than amylose content.

Changes in Physicochemical Properties of Industry-type Kochujang during Storage (공장산 고추장의 저장기간중 이화학적 특성의 변화)

  • Changes in physical and chemical characteristics of industry-type kochujang were investigated during 105 days of storage at $37^{\circ}C$. Reducing sugar content of kochujang decreased rapidly up to the 15th day of storage and then decreased slowly thereafter. Total free amino acid contents decreased by 22.3% after 60 days and by 35% after 90 days of storage. The activities of amylase and protease did not show any significant changes, however, the activity of neutral protease increased slightly. The moisture content and water activity of the kochujang decreased linealy during storage and the correlation coefficient between the moisture content and water activity showed 0.964. Apparent viscosity of kochujang increased with an increase in storage time. It was found that water activity was more responsible for the increase of apparent viscosity than water content.

  • A curd yogurt was prepared from milk added with skim milk powder or egg white powder(EWP). The effects of EWP addition on growth and acid production by lactic acid bacteria in milk were studied. The effects of EWP addition on quality of curd yogurt in point of apparent viscosity, sensory property and volatile aroma compounds were also investigated. Addition of PAT markedly stimulated acid production by lactic acid bacteria and stimulating effect of EWP on acid production was proportional to the amount of addition. Apparent viscosity of curd yogurt added with EWP was generally higher than that of control. Curd yogurt fermented with L. acidophilus showed thixotropic characteristics. Sensory property of curd yogurt added with EWP was evaluated as better than reference sample and sample added with EWP at 2% level was evaluated as better than other samples. Acetone, ethanol, diacetyl, butanol and acetoin were detected by gas chromatographic analysis.

Flow Properties of Red Flower Cabbage Pigment Solutions (꽃양배추 색소 추출액의 유동특성)

  • Flow properties of red flower cabbage pigment solutions were determined over a wide range of temperatures ($20-50^{\circ}C$) and soluble solid concentrations (1-65%) using a cone and plate rotational viscometer. Flow properties of the pigment solutions were adequately described by the simple power law model. Within the tested ranges of concentration, temperature and shear rate, the flow behavior index (n) and the consistency index (K) of the solutions were in the ranges of 0.841-0.998 and $0.008-31.525\;Pa{\cdot}s^n$, respectively. The effect of temperature on the apparent viscosity of the solutions followed an Arrhenius type relationship. Activation energy of flow varied from 9.36 to 52.48 kJ/mol depending on the solid concentration and shear rate. The combined effect of temperature and concentration on the apparent viscosity at the shear rate of $100\;s^{-1}$ could be represented by a single equation as ${\ln}\;{\eta}_a\;=\;6.11\;-\;3103.94(1/T)\;-\;0.03C$.

Effects of konjac gel with vegetable powders as fat replacers in frankfurter-type sausage

  • Objective: The purpose of this study was to investigate whether addition of konjac gel with three different vegetable powders can increase quality of low-fat frankfurter-type sausage. Methods: Low-fat frankfurter-type sausages were manufactured with formulations containing konjac gel and three vegetable powders (aloe vera, cactus pear, or wheat sprout) as pork fat replacers. The formulations of frankfurters were as follows: NF (normal-fat; 20% pork fat), LF (low-fat; 10% pork fat), KG (low-fat; 10% pork fat+10% konjac gel), and konjac gel with three vegetable powders (KV), such as KV-AV (10% pork fat+10% konjac gel with aloe vera), KV-CP (10% pork fat+10% konjac gel with cactus pear), and KV-WS (10% pork fat+10% konjac gel with wheat sprout). Proximate analysis, pH value, color evaluation, cooking loss, water-holding capacity, emulsion stability, apparent viscosity, texture profile analysis, and sensory evaluation were determined. Results: The konjac gel containing groups showed lower fat content (p<0.05) and higher moisture content than NF group (p<0.05). The pH value of frankfurters was decreased in three KV groups (p<0.05). The three KV groups had increased dark color (p<0.05) compared with KG, and KV-CP had the highest redness (p<0.05). The water-holding capacity and emulsion stability were higher in the three KV groups than KG and LF (p<0.05). Cooking loss was generally decreased in the three KV groups, compared with KG (p<0.05). The apparent viscosity of KV groups was similar with NF group and overall texture properties were improved in KV-CP. In the sensory evaluation, the highest overall acceptability was found in KV-CP groups (p<0.05). Conclusion: The four fat replacers improved physicochemical properties of low-fat frankfurters. Particularly, konjac gel with cactus pear powder seems more acceptable as a pork fat replacer.

Effect of Extracting Conditions on the Viscosity and Binding Capacity of Metal Ion of Alginate from Sea Tangle, Laminaria spp. (다시마 alginate 점도 및 금속이온 결합능에 미치는 추출조건의 영향)

  • In order to investigate the physical properties of alginate extracted from sea tangle, Laminaria app., under various conditions, viscosity and binding capacity of metal ion (BCMI) of alginate were measured. The higher concentrations of sodium carbonate and the longer extracting time became, the lower apparent viscosity and BCMI were. BCMI in alginate reached maximum at the concentration of 0.06M metal ion. The BCMI of $Pb^{++}$ ion was the highest but $Cu^{++}$ ion was the lowest in the five metal ions. BCMI was increased in proportion as increase of viscosity in alginate.

A Study on the Characteristics of Vibration Due to the Forces of Drive Shaft (승용차량 구동축의 작용력에 따른 진동특성 연구)

  • This study aims to understand the applied forces and related vibrational characteristics of a tripod joint (TJ), which is mostly used in front-drive-type middle-sized sedans in South Korea. The plunging force (PF) and generated axial force (GAF) are the most influential quantities related to the vibrational characteristics of a driveshaft. To obtain meaningful data, specially designed tests were performed using MTS test sets. The results of direct measurements reveal that higher PF and GAF values appear to worsen the vibrational characteristics of the vehicle. On the other hand, the measured apparent mass is useful for calculating the applied forces for a short driveshaft that has no dynamic vibration absorber. Among diversely controlled samples, it shows that the viscosity and tight fit are very sensitive to shudder vibrations of the vehicle. Therefore, these are good design factors for quality controls in the production line of constant-velocity joints.
