Dry aging of beef; Review

  • The present review has mainly focused on the specific parameters including aging (aging days, temperature, relative humidity, and air flow), eating quality (flavor, tenderness and juiciness), microbiological quality and economic (shrinkage, retail yields and cost) involved beef dry aging process. Dry aging is the process where beef carcasses or primal cuts are hanged and aged for 28 to 55 d under controlling environment conditions in a refrigerated room with $0^{\circ}$ to $4^{\circ}C$ and with relative humidity of 75 to 80 %. However there are various opinions on dry aging procedures and purveyors of such products are passionate about their programs. Recently, there has been an increased interest in dry aging process by a wider array of purveyors and retailers in the many countries. Dry aging process is very costly because of high aging shrinkage (6 to 15 %), trims loss (3 to 24 %), risk of contamination and the requirement of highest grades meat with. The packaging in highly moisture-permeable bag may positively impact on safety, quality and shelf stability of dry aged beef. The key effect of dry aging is the concentration of the flavor that can only be described as "dry-aged beef". But the contribution of flavor compounds of proteolysis and lipolysis to the cooked dry aged beef flavor is not fully known. Also there are limited scientific studies of aging parameters on the quality and palatability of dry aged beef.

노인의 건강증진행위가 성공적 노후에 미치는 영향: 성공적 노화인식과 생활만족도 매개효과 중심 (The Influence of Elderly People's Health Promoting Behaviors on their Successful Aging: Focused on the Mediating Effect of Successful Aging Perception and Life Satisfaction)

  • 본 연구의 목적은 노인의 건강증진행위가 성공적 노후에 미치는 영향을 살펴보고, 건강증진행위가 성공적 노후로 가는 경로에 성공적 노화 인식과 생활만족도가 어떠한 매개역할을 하는지를 구체화하고 성공적 노화 인식과 생활만족도가 성공적 노후에 유의미한 영향에 관해 알아보고자 하는 것이었다. 경기도 노인복지관을 이용하는 노인을 대상으로 설문조사를 실시하였으며, 최종 250부를 분석에 사용하였다. 자료분석은 SPSS Win 25를 활용하여 빈도분석, 기술통계, t-test와 일원배치 분산분석, 상관분석을 실시하였다. 매개효과분석을 통해 건강증진행위와 성공적 노후 간에 설정한 인과 관계를 검증하고 나아가 성공적 노화 인식과 생활만족도가 이러한 인과관계에 매개효과가 있는지를 검증하였다. 연구 결과 노인들의 건강증진행위는 성공적 노화인식, 생활만족도, 성공적 노후에 영향을 주었고, 노인들의 성공적 노화 인식은 건강증진행위와 성공적 노후 간에 매개 역할을 하였으나 생활만족도는 건강증진행위와 성공적 노후 간에 매개 역할을 하지 못했다. 함의는 건강증진 지원 전문가, 모델 및 프로그램 개발, 홍보 및 교육기회 제공이 필요하다. 노인의 다양한 유·무형적 요인을 고려한 지원이 필요하고, 경제 및 현재 건강 수준에 맞게 정책이 마련되어야 한다.

임금피크제의 효과적 운용방안 (A Study on Effective Operation of Wage Peak System in Korean Enterprises)

  • 한국은 급속도로 고령화시대로 접어들고 있다. 증가하는 고령 근로자들은 연공급 임금체계를 가져가고 있는 한국기업들에게 부담을 주고 있다. 임금피크제는 한국기업들이 임금부담에서 오는 조기퇴직 압박을 완화시키기 위한 대안으로 도입해오고 있다. 현재 한국 기업들이 채택하고 있는 임금피크제는 주로 고용보장형이다. 그러나 앞으로는 고령화 시대에 대비해 고용연장형을 적극적으로 도입해야 할 것이다. 임금피크제를 성공적으로 운영하기위해서는 개인별 임금피크제를 도입하고, 고령근로자를 위한 적절한 업무를 개발해야할 것이다. 그리고 직종별 선별적용, 성과평가를 통한 차등화된 보상, 임금감소에 따른 실질적인 근로시간 단축이 필요할 것이다.

알루미늄 함량에 따른 추진제 노화 특성 (Propellant Aging Characteristics According to Aluminum Contents)

  • 본 논문은 알루미늄 함량 변화에 따른 추진제의 후경화에 대한 영향성, 화학적 노화도에 관하여 기술하였다. 동일 경화조건에서 알루미늄 함량이 18 wt%인 추진제가 2 wt%인 추진제 대비 후경화 기간이 길어지는 것으로 확인하였다. 반면 후경화가 포함된 화학적 노화도 분석에서는 알루미늄 함량이 18 wt%인 추진제가 2 wt%인 추진제 대비 화학적 노화가 천천히 진행되는 것을 확인하였다.

  • 최근 우리나라는 인구 저출산과 의료기술의 발달, 식생활의 향상 등으로 인구의 고령화가 빠르게 진행되고 있다. 인구의 고령화는 노인에 대한 복지정책 경제적 문제 일자리 창출 등 여러 가지 정책적인 문제들을 야기 시킨다. 소방행정에서는 노인들을 위하여 실버구급차의 운행 등 노인의 특성에 맞추어 서비스를 제공하고 있다. 근래에는 IT 기술의 접목으로 먼저 알아서 찾아가는 서비스를 제공하기도 한다. 소방행정에서 노인들에게 제공하는 서비스를 분석하고 이에 대한 개선 방안을 모색하고자 하는데 본 연구의 목적이 있다.

인공 열화 열처리된 2.25CrMo 강의 미세조직 변화에 대한 초음파 비파괴평가 (Ultrasonic Nondestructive Evaluation of Microstructural Degradation in Artificially Aging Heat Treated 2.25CrMo Steel)

  • Artificial aging was performed to simulate the microstructural degradation in 2.25CrMo steel arising from long time exposure at $540^{\circ}C$. It was found that the carbides became coarser and spheroidized as aging time increased. An attempt was made to evaluate the microstructural degradation in artificially aging heat treated 2.25CrMo steel by the ultrasonic attenuation and velocity measurements. Ultrasonic velocity was found essentially insensitive to the microstructural changes resulting from aging heat treatment. However, the ultrasonic attenuation was observed to increase with increasing aging time. Also, it was noticed that the change of ultrasonic attenuation with aging time was more sensitive at high frequency regions.

칼로리 제한에 노화과정의 조절 (Modulation of the Aging Process by Food Restriction)

  • Aging is the progressive accumulation of changes with time associated with responsible for the ever-increasing susceptibility to disease and death which accompanies advancing age. Lipid peroxides easily produced in the membrane system by the chain reaction of free radicals which occurred from various environmental factors. The amount of lipid peroxides produced in biological system increased with aging process, and lipid peroxidation damages involved in aging process and pathological disorders. Although lipid peroxides have such deleterious effects on the organisms, there are numerous substances and mechanisms which prevent the reaction of peroxide formation and protect the subject from its toxicity. This review provides an overview of how does lipid peroxidation of unsaturated lipids take place by free radical, and what is the intervention of lipid peroxides in pathogenesis of some human diseases, and also how does food restriction influences the aging process and various pathological disorders. The major focus of this paper is to review the evidence indicating that food restriction retards the aging process, and possible mechanisms of its actions. Therefore, it discussed the effects of age and food restriction on life-span, membrane yield, lipid peroxidation, fatty acid composition and peroxidizability, cholesterol and triglyceride levels, prostaglasndin and thromboxane synthesis, which may be concerned with blood flow, membrane fluidity, homeostasis and glomerular filtration rate in living body.

중년여성의 주관적 건강상태, 외상 후 성장, 사회적 지지가 성공적 노화에 미치는 영향 (The Influence of Subjective Health Status, Post-Traumatic Growth, and Social Support on Successful Aging in Middle-Aged Women)

  • Purpose: This study was done to investigate factors influencing successful aging in middle-aged women. Methods: A convenience sample of 103 middle-aged women was selected from the community. Data were collected using a structured questionnaire and analyzed using descriptive statistics, two-sample t-test, one-way ANOVA, Kruskal Wallis test, Pearson correlations, Spearman correlations and multiple regression analysis with the SPSS/WIN 22.0 program. Results: Results of regression analysis showed that significant factors influencing successful aging were post-traumatic growth and social support. This regression model explained 48% of the variance in successful aging. Conclusion: Findings show that the concept 'post-traumatic growth' is an important factor influencing successful aging in middle-aged women. In addition, social support from friends/co-workers had greater influence on successful aging than social support from family. Thus, we need to consider the positive impact of post-traumatic growth and increase the chances of social participation in a successful aging program for middle-aged women.

  • Purpose: The purpose of this study was to investigate expectations regarding aging by middle-aged women in the community, and identify factors contributing to their expectations about aging. Methods: Participants in the survey for this study were 303 middle-aged women from community health centers and religious facilities in Seoul, Gyeonggi Province, and Chungcheongbuk Province. Data were collected from March 2 to April 17, 2012 using self-report structured questionnaires. The instruments were the Health Perceptions, Rosenberg Self-esteem Scale (RSES), Family APGAR, Expectations Regarding Aging (ERA-12). The data were analyzed using t-test, one-way ANOVA, Scheffe test, Pearson correlation coefficients and hierarchical multiple regression with IBM SPSS/WIN 20.0 program. Results: Perceived health status (${\beta}$=0.16, p=.009) and self-esteem (${\beta}$=0.20, p=.001) of middle-aged women were identified as significant predictors of expectations regarding aging, after adjusting for age, education, occupation, monthly income and menstrual status. Conclusion: These results suggest that nurses should make an effort to improve expectations about aging among middle-aged women. Ultimately, community health programs for middle aged women need to be developed to achieve successful aging.

간호사의 노인간호 스트레스, 노화인식, 노화불안이 노후준비에 미치는 영향 (The Influence of Care Stress for Older Patients, Self-perceptions of Aging, Aging Anxiety on Retirement Preparation in Nurses)

  • Purpose: The purpose of this study was to explore the influence of care stress for older patients, self-perceptions of aging, and anxiety about aging on preparation for retirement in clinical nurses. Methods: This was a cross-sectional descriptive study in which participants were 222 nurses who had at least six months of work experience and were involved in caring for older patients in the last six months at the work site. Data were collected from August to September, 2020 using an online survey questionnaire. Data were analyzed using the IBM SPSS/WIN 25.0 program. Results: The mean level of preparation for retirement in the participants was moderate (3.21 out of 5 points). Among the sub-domains of preparation for retirement, financial preparation had the lowest score. Self-perceptions of aging and aging anxiety were significant predictors for retirement preparation in nurses, accounting for 16% of the variable's total variance. Conclusion: A greater level of preparation for retirement was associated with a positive perception of aging and a decreased level of aging anxiety in the clinical nurses. Further research should focus on exploration of specific determinants of financial preparation for retirement and development of intervention strategies for improving preparation for retirement in the nursing workforce.
