조선전기 고문헌에 수록된 식품저장법에 대한 문헌고찰 (Review of Literature on Food Preservation of the Early Joseon Dynasty)

  • This study aims to investigate the food preservation methods adopted by the Joseon Dynasty, which existed before the 17th century. A total of 232 food preservation methods were discovered in 25 books, and could be classified by their targeted food types: vegetables (84), sea foods (60), meats (41), fruits (37), and others (10). Depending on the preservation method applied, they are classified as food drying, soaking, mud cellar preservation, and other preservation. Food drying is further classified into 8 sub-types: drying, sun-drying, shadow-drying, wind-drying, dry heat, combined drying, smoking, and others. Soaking could be sub-divided into using salt, ash, dry sand, bran, fermented paste, wet distillers grains, oil, and others. Mud cellar preservation is sub-classified into installing shelf inside the mud cellar, making the mud cellar for food preservation, and making hole or underground tunnel for food preservation. Other food preservation methods include minimizing moisture loss by applying beeswax on a section of the vegetable stem, and cutting the vegetables or fruits with their branches and leaves for food preservation.

NTIS 국가연구개발사업 정보를 활용한 치유농업 국가 R&D 동향 분석 (Analysis on the National R&D Trends Related to Agro-Healing Using NTIS R&D DATA in Korea)

  • As the paradigm of green has been expended as the core of sustainable development in Korea, agro-healing projects increasingly have been a priority at the national policy and investment area. But little is known about the current overview of national research and development(R&D) related to agro-healing. The aim of this study was generally to investigate the research trends of national R&D related to agro-healing over the past five years. Dataset were gathered from provided by National Science & Technology Information Service(NTIS), word cloud techniques were applied. The main results showed that amounts of number and funding related to agro-healing projects have been increasing. In particular, the Rural Development Administration had the highest number of research, and it was found that the Ministry of Trade, Industry and Energy have spended a lot of money on agro-healing. As a results, it is necessary to expand the scope of the field of agro-healing projects, especially at the multisectoral and intersectoral level for improving health, well-being and a sustainable future.

환율변동에 따른 농식품산업 무역적자 관리방안에 관한 연구 (A Study on Foreign Exchange Risk Managements in the Korean Agro-food Industry)

  • 본 연구는 농식품 무역적자 심화의 원인을 환율변동 위험에서 찾고, 최근 환율변동이 급격했던 2009~2013년 구간의 미국의 달러 약세 및 일본의 엔화 약세 현상이 한국 농식품 무역수지에 미치는 영향을 살펴보았다. 그 결과 일본의 양적완화가 실시된 2012년 이후 농식품 수출액이 감소하여 무역적자가 확대되었으며, 2008년 미국의 양적완화 조치로 2009~2011년 한국의 대미 수입액이 급격히 늘어 무역적자가 심화되었다. 장기적인 환율하락은 한국 농식품 수출의 감소와 수입 증가를 야기하여 한국 경제 상황에 악영향을 미치고 있었다. 따라서 정부는 농식품 수입 관리 방안을 마련해야 할 것이며, 생산농가들도 외환손실 방지를 위해 사전에 직접 환율변동 위험을 대비해야 할 것이다. 이를 위해 정부는 콘트롤타워 역할을 통해 새로운 환율변동 정보를 실시간으로 제공하여 무역상대국의 환율 공세에 효과적으로 대처해야 할 것이며, 환율상담과 교육 등 다양한 프로그램을 도입하는 동시에 환위험 관리의 중요성에 관한 홍보를 실시해야 할 것이다.

Current situation and future prospects for beef production in Europe - A review

  • The European Union (EU) is the world's third largest producer of beef. This contributes to the economy, rural development, social life, culture and gastronomy of Europe. The diversity of breeds, animal types (cows, bulls, steers, heifers) and farming systems (intensive, extensive on permanent or temporary pastures, mixed, breeders, feeders, etc) is a strength, and a weakness as the industry is often fragmented and poorly connected. There are also societal concerns regarding animal welfare and environmental issues, despite some positive environmental impacts of farming systems. The EU is amongst the most efficient for beef production as demonstrated by a relative low production of greenhouse gases. Due to regional differences in terms of climate, pasture availability, livestock practices and farms characteristics, productivity and incomes of beef producers vary widely across regions, being among the lowest of the agricultural systems. The beef industry is facing unprecedented challenges related to animal welfare, environmental impact, origin, authenticity, nutritional benefits and eating quality of beef. These may affect the whole industry, especially its farmers. It is therefore essential to bring the beef industry together to spread best practice and better exploit research to maintain and develop an economically viable and sustainable beef industry. Meeting consumers' expectations may be achieved by a better prediction of beef palatability using a modelling approach, such as in Australia. There is a need for accurate information and dissemination on the benefits and issues of beef for human health and for environmental impact. A better objective description of goods and services derived from livestock farming is also required. Putting into practice "agroecology" and organic farming principles are other potential avenues for the future. Different future scenarios can be written depending on the major driving forces, notably meat consumption, climate change, environmental policies and future organization of the supply chain.

Production of high molecular weight of pullulan with agro-industrial byproducts

  • Production of pullulan by Aureobasidium pullulans HP-2001 with agro-industrial byproducts was investigated. Agro-industrial byproducts from the rice processing industry for the traditional Korean food (AIB-A), apple juice production (AIB-B), and soybean sauce production (AIB-C) were used for carbon and nitrogen source for production of pullulan. Major components of AIB-A were glucose, maltose, maltotriose, and dextran. AIB-A and B were found to be good substitute to glucose as carbon source. Productivity of pullulan with AIB-A and B as carbon source was similar to that glucose. Molecular weight of pullulan produced with AIB-A and B was higher than that with glucose. Major components of AIB-B and C were carbohydrate, protein, fat and ash. AIB-C was also a good substitute to yeast extract as nitrogen source. Some of physiological conditions were examined for the large scale production of pullulan.

한국 치유농업의 현황 및 특성 분석 (Analysis on the Present Status and Characteristics of Agro-healing in Korea)

  • 이 연구는 최근 네덜란드와 벨기에 등 농업분야 선진국에서 관심과 투자가 증대되고 있는 치유농업(Agro-healing)의 개념을 정립하였고, 우리나라 치유농업의 현황 및 특성 분석을 통해 발전 방안을 제시하였다. 연구목적 달성을 위해 치유농업 선진국의 정책과 제도, 조직, 관련 법, 인력 등에 대한 문헌분석(내용분석)을 하였으며, 농업, 건강, 교육, 원예 및 동물 매개치료, 민간, 농업정책 집행 분야별 전공 교수, 연구원, 대표 및 담당자 9인으로 구성된 전문가 포커스 그룹 인터뷰를 진행하였다. 또한 치유농업 분야 종사자 165명을 대상으로 설문조사를 실시하였다. 연구결과 우리나라 치유농업의 개념은 '농업 농촌자원(식물, 동물, 농촌환경, 농촌문화) 또는 이와 관련된 활동 및 산출물을 통하여 모든 국민의 심리적 사회적 신체적 인지적 건강을 도모하는 산업 및 활동'으로 정의하였으며 정립된 개념과 연계하여 치유농업의 목적, 자원, 대상을 설정하였다. 또한 우리나라 치유농업의 정착과 발전을 위한 제언을 제시하였다.
