Measuring the social benefit of an egg processing center in Korea

  • In 2018, 647 thousand tons of eggs were produced and consumed. However, the issue of pesticides used for egg in 2017 made Korean consumers worry about the food safety of eggs, and the volume of egg consumption decreased. The Korean egg industry also has another problem due to an unclear and inefficient marketing structure at the farm level. This marketing situation of eggs at the farm level in Korea needs a large-scale restructuring of the market structure, including introducing an EPC (egg processing center). Especially, the introduction of an EPC has been discussed by government officers and specialists, but the social benefit of an EPC, which will be the driving point for approving an EPC, has not been measured yet. The purpose of this study was to measure the effect of introducing an EPC in Korea. Through an analysis using EDM (equilibrium displacement model), a few findings are presented. First, the introduction of an EPC may increase the transparency of price discovery and decrease the transaction cost. And thus, it results in a higher producer price, lower consumer price, and larger quantity at market equilibrium. Second, an EPC will improve the level of food safety of eggs, which can increase the satisfaction of domestic producers and consumers. Third, the introduction of an EPC may create new consumption of eggs. Based on these three effects, the new social benefits in monetary terms from the introduction of an EPC in Korea could be 23.9 - 35.2 billion won.

Development and Validation of Analytical Method for Decursin in Aerial Parts of Angelica gigas Nakai Extract (참당귀 지상부 추출물의 지표성분 decursin의 분석법 개발 및 검증)

  • Method development and validation of decursin for the standardization of Angelica gigas Nakai as a functional ingredient and health food were accomplished. The quantitative determination method of decursin as a marker compound of aerial parts of Angelica gigas Nakai extract (AAGE) was optimized by HPLC analysis using a C18 column ($3{\times}150mm$, $3{\mu}m$) with 0.1% TFA in water and acetonitrile as the mobile phase at a flow rate of 0.5 mL/min and detection wavelength of 330 nm. The HPLC/PDA method was applied successfully to quantification of the marker compound in AAGE after validation of the method with linearity, accuracy, and precision. The method showed high linearity in the calibration curve at a coefficient of correlation ($R^2$) of 0.9994 and the limit of detection and limit of quantitation were $0.011{\mu}g/mL$ and $0.033{\mu}g/mL$, respectively. Relative standard deviation (RSD) values of data from intra- and inter-day precision were less than 1.10% and 1.13%, respectively. Recovery of decursin at 0.5, 1, 5 and $10{\mu}g/mL$ were 92.38 ~ 104.11%. These results suggest that the developed HPLC method is very useful for the determination of marker compound in AAGE to develop a health functional material.

Heterologous Expression of a Thermostable α-Galactosidase from Parageobacillus thermoglucosidasius Isolated from the Lignocellulolytic Microbial Consortium TMC7

  • α-Galactosidase is a debranching enzyme widely used in the food, feed, paper, and pharmaceuticals industries and plays an important role in hemicellulose degradation. Here, T26, an aerobic bacterial strain with thermostable α-galactosidase activity, was isolated from laboratory-preserved lignocellulolytic microbial consortium TMC7, and identified as Parageobacillus thermoglucosidasius. The α-galactosidase, called T26GAL and derived from the T26 culture supernatant, exhibited a maximum enzyme activity of 0.4976 IU/ml when cultured at 60℃ and 180 rpm for 2 days. Bioinformatics analysis revealed that the α-galactosidase T26GAL belongs to the GH36 family. Subsequently, the pET-26 vector was used for the heterologous expression of the T26 α-galactosidase gene in Escherichia coli BL21 (DE3). The optimum pH for α-galactosidase T26GAL was determined to be 8.0, while the optimum temperature was 60℃. In addition, T26GAL demonstrated a remarkable thermostability with more than 93% enzyme activity, even at a high temperature of 90℃. Furthermore, Ca2+ and Mg2+ promoted the activity of T26GAL while Zn2+ and Cu2+ inhibited it. The substrate specificity studies revealed that T26GAL efficiently degraded raffinose, stachyose, and guar gum, but not locust bean gum. This study thus facilitated the discovery of an effective heat-resistant α-galactosidase with potent industrial application. Meanwhile, as part of our research on lignocellulose degradation by a microbial consortium, the present work provides an important basis for encouraging further investigation into this enzyme complex.

Comparison of the Fatty Acid Composition and Small Molecular Metabolites between Yanjin Blackbone Chicken and Piao Chicken Meat

  • The fatty acid composition and small molecular metabolites in breast and leg meat of Yanjin blackbone chickens (YBC) and Piao chickens (PC) were detected by gas chromatography-mass spectrometry and liquid chromatography-quadrupole static field orbital trap mass spectrometry. Thirty-two fatty acids were detected, and the total fatty acid content of PC was significantly higher than that of YBC (p<0.05). Oleic acid, linoleic acid, palmitic acid, stearic acid, and arachidonic acid were the main fatty acids in the two chicken varieties, and the composition of fatty acids in the two varieties were mainly unsaturated fatty acids, being more than 61.10% of the total fatty acids. Meanwhile, 12 and 16 compounds were screened out from chicken legs and chicken breasts of YBC and PC, respectively, which had important contributions to the differences between groups.

Dietary corn resistant starch regulates intestinal morphology and barrier functions by activating the Notch signaling pathway of broilers

  • Objective: This study was conducted to investigate the effects of dietary corn resistant starch (RS) on the intestinal morphology and barrier functions of broilers. Methods: A total of 320 one-day-old broilers were randomly allocated to 5 dietary treatments: one normal corn-soybean (NC) diet, one corn-soybean-based diet supplementation with 20% corn starch (CS), and 3 corn-soybean-based diets supplementation with 4%, 8%, and 12% corn resistant starch (RS) (identified as 4% RS, 8% RS, and 12% RS, respectively). Each group had eight replicates with eight broilers per replicate. After 21 days feeding, one bird with a body weight (BW) close to the average BW of their replicate was selected and slaughtered. The samples of duodenum, jejunum, ileum, caecum digesta, and blood were collected. Results: Birds fed 4% RS, 8% RS and 12% RS diets showed lower feed intake, BW gain, jejunal villus height (VH), duodenal crypt depth (CD), jejunal VH/CD ratio, duodenal goblet cell density as well as mucin1 mRNA expressions compared to the NC group, but showed higher concentrations of cecal acetic acid and butyric acid, percentage of jejunal proliferating cell nuclear antigen-positive cells and delta like canonical Notch ligand 4 (Dll4), and hes family bHLH transcription factor 1 mRNA expressions. However, there were no differences on the plasma diamine oxidase activity and D-lactic acid concentration among all groups. Conclusion: These findings suggested that RS could suppress intestinal morphology and barrier functions by activating Notch pathway and inhibiting the development of goblet cells, resulting in decreased mucins and tight junction mRNA expression.

Studies on Production of Modified Yoguhrt (Soy Cream) from Soybean Milk (I) (두유를 이용한 변형요구르트의 제조에 관한 연구(I))

  • To investigate the feasibility of producing yoguhrt from soybean milk which will be acceptable for Korean this experiment was carried out. The addition of pasteurized milk into soybean milk speeded up acid production by L. casei and also demonstrated the improvement of acceptability of the product. Certain additives like glucose, lactose and yeast extract also stimulated acid production. It was found that the yoguhrt of pH range of $4.2{\sim}3.7$ was well agreed to Korean preference. It was also observed by panel test in this study that the acceptability of Korean for yoguhrt increased through repeated tasting, and in consequence, this would turn out to be an ordinary acceptable food item, even though it is felt quite objectionable at the beginning of taste.

Attributes of consumer preferences for black garlic

  • Food consumption trends in Korea are becoming more health-oriented, and consumers have become interested in high-quality foods that are also beneficial to health. The goals of this study are to examine consumers' impressions of black garlic and to investigate the preferred optimal attribute combinations related to black garlic. To do this, a survey of 352 consumers was used to analyze the current status of consumer purchases of black garlic. A conjoint analysis was conducted to analyze certain aspects of consumer preferences, such as price, health functional food certification status, processing type, and taste. Consumers' purchase experiences with black garlic were relatively few, but those with purchase experience reported that they consumed it mainly for their health. The results show that consumers are not satisfied with the taste and flavor of black garlic despite their perceiving it as a beneficial food for health. Despite the fact that consumers' purchase intentions were found to be low, it can greatly increase if improvements in price, flavor, and taste can be realized and if offering substantial benefits. The results of the conjoint analysis of the preference attributes of black garlic products are as follows. Consumers considered price among the four attributes as most important. The taste of black garlic and the processing style were similar in terms of importance, and health functional food certification was less important. Finally, the results suggest that continuous improvements in price and flavor are needed to spread the consumption of black garlic.

Machine Vision Technique for Rapid Measurement of Soybean Seed Vigor

  • Purpose: Morphological properties of soybean roots are important indicators of the vigor of the seed, which determines the survival rate of the seedlings grown. The current vigor test for soybean seeds is manual measurement with the human eye. This study describes an application of a machine vision technique for rapid measurement of soybean seed vigor to replace the time-consuming and labor-intensive conventional method. Methods: A CCD camera was used to obtain color images of seeds during germination. Image processing techniques were used to obtain root segmentation. The various morphological parameters, such as primary root length, total root length, total surface area, average diameter, and branching points of roots were calculated from a root skeleton image using a customized pixel-based image processing algorithm. Results: The measurement accuracy of the machine vision system ranged from 92.6% to 98.8%, with accuracies of 96.2% for primary root length and 96.4% for total root length, compared to manual measurement. The correlation coefficient for each measurement was 0.999 with a standard error of prediction of 1.16 mm for primary root length and 0.97 mm for total root length. Conclusions: The developed machine vision system showed good performance for the morphological measurement of soybean roots. This image analysis algorithm, combined with a simple color camera, can be used as an alternative to the conventional seed vigor test method.

Characteristics of $Gammakgeolli$ Added with Processed Forms of Persimmon (첨가하는 감의 가공형태에 따른 감막걸리 품질특성)

  • To investigate the characteristics of $Gammakgeolli$ to which processed forms of persimmon were added, $Gokkam$, $Gammalaengi$, whole powder, peel powder, and paste were used as various processed forms. The moisture, total polyphenol, and soluble-solid contents of the persimmon used for making $Gammakgeolli$ showed a big difference according to the processed form of persimmon, and influenced the total polyphenol and alcohol contents of the $Gammakgeolli$. The pH and total acid of the $Gammakgeolli$, which were 3.7~4.1 and 0.20~0.29% (w/v), respectively, were similar to those of commercial $Makgeolli$. The amino acidity increased on the fifth day after fermentation from that on the third day, and showed relatively high levels in the whole power, peel power, and paste. The volatile-acid contents of the $Gammakgeolli$s were within the range of 80~100 ppm and showed the highest level in the persimmon-paste-treated sample. Among the major organic acids of $Gammakgeolli$ (oxalic, citric, tartaric, malic, succinic, lactic, and acetic acid), lactic acid had the highest concentration. The $Gammakgeolli$ to which hole power or paste was added showed a high level of yellowness and a good color in the sensatory evaluation. In the sensory evaluation (selection rate) of the taste and overall acceptability, the $Gammakgeolli$ treated with $Gammalaengi$ was the best.

Analysis on Food Material Industry in Korea (식재료 산업의 현황 및 발전 방안)

  • In Korea, food material industry encounters the emerging market which results from the growth of food service industry and food processing industry. Food material suppliers think that the total sales in Korean market may be around 20 trillion won. However, very small numbers of studies about Korean food material industry have been conducted. This paper analyzes the current status of food material industry and the market structure in Korea, and presents several suggestions for the development of Korean food material industry as following: building up the function of fresh-cut in production area, improving market structure, settling down the cold-chain system, enforcing the certification program for food safety.
