Appraisal of the Special Production Area Development Project in Rural Area and Countermeasures for Off-farm Income Increase (The Case of Chungnam Province) (농어촌(農漁村) 특산단지개발사업(特産團地開發事業)의 평가(評價)와 농외소득증대방안(農外所得增大方案) (충청남도(忠淸南道)를 중심(中心)으로))

  • Korean agriculture has encountered two problems. One is internal income disparity between rural and urbarn area and the other is external Uruguay Round trade problems as an abolition of direct and indirect import barriers, reduction in export subsidies and to reduce internal price supports. These problems will be brought severe farm problems such as decreasing farm household income and repressing agricultural growth in the near future. Considering the above inevitable facts Korean government has implemented several development projects such as rural industrial area development project, rural special production area development project, leisuresight seeing farm development project, traditional food development project, unskilled labor training project for off-farm employment and so on, to increase farm household income through off-farm income increase. This study was mainly concentrated on the identification of operational problems and post evaluation of the rural special production area development projects which aimed at increasing non-farm incomes and giving employment opportunity for rural farmers in small factories processing regional special farm products and mine products. The main findings and problems to be solved for the successful project implementation are as followed ; 1. Total number of the special production area development projects as of the end of 1991 was amount to 138, and total number of farm household participated were estimated at 2,079, and total amount of off-farm income per farm household was reached to 3,011 thousand won. 2. The total number of processed special products have increased from 21 items in 1981 to 56 items in 1991. On the other hand the total number of farm household participated in the projects have decreased from 2,518 to 2,079 during same period. 3. Total amount of investment for the projects has increased from 1,429 million won in 1981 to 24,760 million won in 1991 but the rate of G'T loan of the total investment has reduced from 24.5% to 5.2% during same period. 4. 138 special production area development project are classified into 6 kinds of commodity groups such as 19 of general industrial good production areas, 52 of folks-industrial art objects production areas, 39 of food processing areas, 9 of fiber and texstile processing areas, 18 of agricultural and fishery inputs processing areas and 1 of stone processing area. 5. The total production value in 1990 was estimated 20,169 million won of which export was amount to 2,627 million won. 6. The finacial rate of return of the UNGOK KUGIJA Tea processing Project operated by UNGOK coops and BAKSAN ginseng tea processing project were estimated at 45.4% (B/C Ratio=1.17, NPV=152.5 million won) and 17.7% (B/C Ratio=1.12, NPV=120.2 million won) respectively. 7. More favorite terms and condition of the loan including collateral problems have to be given to farmers participated. Heavy investment and G'T subsidy policies should be started for the successful project implementation anf farm household income increase. 8. To expand market demand of the rural special goods G'T have to provide special program of TV or other mass media for commodity propaganda and the total cost concerned must be supported by G'T subsidy. 9. The special farm products as GUGUJA,MOSI'Ramie', Ginseng. SOGOKJU,HEMP,Mushroom.DUGYUNJU and Chesnut processing projects have to be propelled and expanded for off-farm income increase in Chung Nam Province. 10. Direct operational pattern of the special production area by coops is more favorable to farmers and recommendable considering with off-farm income increase and market demand creation throughout Korea. 11. In rural area, special organizations for project appraisal are not exist. Accordingly special training program, project appraisal, formulation and preparation for civil servants concerned have to be prepared for project selection and sound implementation under limited budget and financial support.

Effect of Domestic Rose Flower Extracts on the Growth of Chinese Hamster Ovary Cells (국내산 장미꽃 추출물이 Chinese Hamster Ovary 세포 증식에 미치는 영향)

  • The effects of rose flower extracts on the growth of CHO cells were examined. Rose flower extracts were prepared by solvent extraction with hexane, ethylacetate and ether from five domestic rose cultivar, Rosa hybrida L. cv. Mihyang, Noeul, Redqueen, Whitelady and Pinklady, respectively. The effects of rose flower extracts on the growth of CHO cells were measured using MTT colormeteric assay and compared with control. Extracts of rose flowers showed stimulative effect or inhibitory effect on the growth of CHO cells depending on the kinds of solvent and concentration of extracts. Ether extracts of rose flower showed a more effective stimulative effect on the growth of CHO cells at the concentration of 5 ${\mu}g{\cdot}ml^{-1}$. These results suggest that rose flower has the simulating activity on the growth of CHO cells and a potential as new functional food source.

Study on the Dietary Behavior and Local Products for Menu development of the Elerly in Yeongi Chungnam (충남연기군 장수노인의 식생활 및 지역 특산물조사 활용 노인정 식단개발)

  • Dietary behavior of the elerly over 65 and local products in Yeongi Chungnam were studied during busy farming season and meal menu was developed based upon the information surveyed. In allowance, 45% of them lived with less then one hundred thousand won but 95% had their own residence(P<0.001). The dental health conditions of the male and female elderly did not show significant differences but had tendencies of bad conditions with 68% and 80%, respectively. Percentage of using denture at least one side was only 48%(P<0.05). Meal preparation was mostly done by 75% of the female elderly and only 64% of the elderly in the area took meals regularly. Recommended intakes(RIs) of calorie, protein, dietary fiber, calcium for the elderly were significantly very low(P<0.001), but those of sodium were high(P<0.05). Meal menu was developed for the meal service introduction in the pavilion of the elderly with considerations of the food habits, nutritional status, and local products studied.

Effect of Ultraviolet Irradiation on Molecular Properties of Ovalbumin (자외선 조사가 Ovalbumin의 분자적 성질에 미치는 영향)

  • To elucidate the effects of ultraviolet (UV) irradiation on molecular properties of ovalbumin, the molecular weight profile, secondary structure and tertiary structure of proteins were examined after irradiation by UV with 254 nm wavelength for 4, 8, 16 and 32 hrs, respectively. UV irradiation of protein solution caused the disruption on the native state of protein molecules. SDS-PAGE and gel permeation chromatography indicated that radiation caused initial fragmentation of polypeptide chains and as a result subsequent aggregation due to cross-linking of protein molecules. Circular dichroism (CD) study showed that UV irradiation caused the change on the secondary structure resulting in decrease of helical structure or compact denature on structure of protein depending on irradiation period. Fluorescence spectroscopy indicated that irradiation quenched the emission intensity excited at 280 nm. These results suggest that UV irradiation affect the molecular properties of ovalbumin and may have potential as a means to change the antigenicity of protein allergen.

Storage Trial of Tentatively Thermal-processed Orange Sac (오렌지 과립 1차가공품의 저장성)

  • In order to provide orange sac for off-season processing of sac-suspended orange juice, orange was processed into intermediate form of orange sac or segment, stored at $20^{\circ}C$ and after 5 months of storage the intermediate product was finally processed into sac-suspended orange juice. Adaptability of various process and packaging was assessed. Pasteurized orange sac and segment could be relatively stable in view of microbiological spoilage during 5 months of storage. Between pasteurization methods of hot fill process and each of in-pouch or in-can process, there is no difference in quality of preliminary processed product during storage and final sac-suspended orange juice. In packaging method, metal can gave the best result and the next was 3 ply (PE/AL/PET) pouch and the last 2 ply (PE/PET) pouch. Storage in segment form was superior to sac storage. Sensory evaluation revealed better scores in final product processed from stored orange sac or segment than in control (initially processed sac-suspended orange juice) except 2 ply packaged sac.

A Study on the Improvement of Agricultural Facility Legislation (농업용 시설의 건축 및 이용 법령 개선연구)

  • As facilities performing the production, processing, preservation, and shipment of agricultural products; agricultural facilities are categorized into planting facilities and livestock facilities based on the management target. Agricultural facilities are set in farmlands, and facility users mainly complain about the legal or institutional restrictions on farm rather than their own facilities itself. From 2009 to 2012, the Ministry of Agriculture Food and Rural Affairs (MAFRA) published the "Casebook of farmer Complaints on Farmlands" in order to help answer farmers' questions and support public workers' workloads. However, contents related to agricultural facility installed in farmland are currently not dealt with in particular. Among agricultural facilities, demands of property rights with livestock facilities have risen due to construction permissions, operational restrictions, and high initial investment costs; and relevant laws were revised and are now being executed. However, for planting facilities such as mushroom facilities, ginseng facilities, and greenhouses; farmer complaints related to property rights are constantly increasing because revisions to relevant laws are not being made despite the rising diversity of construction materials through technical developments as well as the rising scale of assets-i.e. mechanization, automation, and the application of New Regeneration Energies according to capital influx. In this study, the current state of relevant agricultural facility legislation were organized and their drawbacks deduced in order to propose improvements of Agricultural Facility Legislation. The result of interviewing with public workers and farmers show that agricultural facilities should be regarded as extensions of farmlands rather than as facilities built in land where development actions were being taken. Alternatives able to reflect these opinions were suggested through expert consultation.

Multispectral Wavelength Selection to Detect 'Fuji' Apple Surface Defects with Pixel-sampling Analysis

  • Purpose: In this study, we focused on the image processing method to determine the external quality of Fuji apples by identifying surface defects such as scabs and bruises. Method: A CCD camera was used to capture filter images with 24 different wavelengths ranging between 530 nm and 1050 nm. Image subtraction and division operations were performed to distinguish the defect area from the normal areas including calyx, stem, and glaring on the apple surface image. All threshold values of the image were examined to reveal the defect area of pretreated filter images. Results: The developed operation methods were [image (720 nm) - image (900 nm)]/image (700 nm) for bruise detection and [image (740 nm) - image (900 nm)]/image (590 nm) for scab detection, which revealed 81% and 90% recognition ratios, respectively. Conclusions: Our results showed several optimal wavelengths and image processing methods to detect Fuji apple surface defects such as bruises and scabs.

Basic study on a garlic (Alliumsativum L.) upright planter

  • Garlic is one of the most popular seasoning bulb vegetables in Korea and is the most commonly used food ingredient. However, the cultivation areas are decreasing every year as the price drops due to imported garlic, and labor is insufficient to produce garlic by conventional methods. Cultivation requires various tasks until garlic is harvested. Seeding is one of the important and laborious tasks; thus, mechanization is necessary. When seeding garlic, the sprout should face upwards; otherwise, it may rot or produce poor quality garlic. This study investigated the extent of growth of northern- and southern-type garlic in eight different positions. The results show when the roots were not planted properly, the stems were weak, and the garlic bulbs were small. A simple garlic planter was manufactured with a crank-press mechanism to plant garlic in an upright position. Using this machine, a three-fold experiment was carried out with 100 strips of garlic. The test results showed that 99.4% of the planted garlic strips were positioned upright or close to being upright, and 0.6% failed to take root. An image processing algorithm was developed to locate the root part of the garlic, and the result showed a success rate of 81%. A future study will develop an automatic garlic upright planting system with a viewing system.

  • Air pollution caused by particulate matters (PM) has become a global issue. PM is known to threaten human health by causing respiratory and cardiovascular disease. PM can be introduced to human gastrointestinal track through food intake, causing inflammation and changes in gut microbiota. Even at low PM concentrations, prolonged exposure to PM can cause significant accumulation of PM in food products. The adsorption of PM onto food surfaces is expected to be strongly influenced by the properties of food surfaces, but few studies have been reported. This paper examines several important food surface properties that may affect the interactions between PM and food surfaces, including surface wettability, surface charge, and surface microstructure. Understanding the adsorption of PM onto food surfaces can provide useful guidance for classifying PM-sensitive foods and controlling food chains, including cultivation, processing, preservation, and cooking, to ensure food safety against PM.

Quality Characteristics of Pork Cutlet Sauce Added with Rice Soybean Paste Powder (쌀된장 분말을 첨가한 돈가스 소스의 품질특성)

  • In order to assess the possibility in utilizing the rice soybean paste(rice Doenjang) powder as food processing materials, the quality of pork cutlet sauce added with 0, 1, 3, 5, and 7%(w/w) of rice soybean paste powder was investigated. Viscosity of pork cutlet sauce ranged from 584 to 776 cP as soybean paste powder amounts increased. Lightness, redness and yellowness of pork cutlet sauce decreased with increasing rice soybean paste powder. Approximate composition of pork cutlet sauces containing rice soybean powder was $62.1\sim73.0%$ of moisture, $3.2\sim7.6%$ of crude protein $0.2\sim0.5%$ of crude fat $1.5\sim2.3%$ of crude fiber and $9.9\sim12.2%$ of crude ash. In sensory evaluation, the pork cutlet sauces added with 1% and 3% soybean paste powder showed more acceptable scores than market sauce.
