  • The era of mass production of agricultural and dairy systems inevitably causes a huge amount of biowastes during their processes. Modern consumption patterns of the general public also contribute to biowaste formation. Thus, processing biowastes has attracted much attention. The introduced black soldier fly (BSF) (Hermetia illucens) is considered as one of environmentally friendly management options for solving biowaste issues. However, an indigenous species, Ptecticus tenebrifer, is also a powerful decomposer that has been largely neglected. This species can be easily found on biowastes such as manure dump, agricultural wastes, and human food wastes. It can be also easily found in the field. It is even attracted to a food trap. To the best of our knowledge, this is the first ecological study on this species.

  • Animal muscles are stored for specific period (aging) at refrigerated temperatures, during and after which the living muscles start to convert into meat and thus, attain certain superior properties in the final product. Proteolysis, lipolysis, and oxidation are the major biochemical processes involved during the postmortem aging of meat that affect the tenderness, juiciness, and flavor, as well as sometimes may introduce certain undesirable traits. This review analyzes the role of pre- and post-mortem factors that are important for aging and their effect on the chemical and physical changes in the “dry- and wet-aged meat.” Thus, if the meat processing manufacturers optimize the effects of aging for specific muscles, the palatability, color, and the shelf life of the aged meat products could be significantly enhanced.

Changes in the quality characteristics of cricket (Gryllus bimaculatus) under various processing conditions (가공조건에 따른 귀뚜라미의 식품학적 품질 특성 변화)

  • Crickets have been used as crude drug for treating fever and hypertension in East Asia. This study was carried out to investigate the quality characteristics such as the microbial and nutrient contents of crickets (Gryllus bimaculatus) prepared with various processing conditions for use as food. These conditions included the lyophilization process (LP), hot-air process (HP, $90^{\circ}C$ for 7 hr), roasting process (RP, $160^{\circ}C$ for 40 min), and frying process (FP, $180^{\circ}C$ for 30 sec). The total bacterial population of the crickets was 5~7 log CFU/g, but Coliform and E. coli were not detected. The major fatty acids in all the samples were palmitic acid (C16:0), oleic acid (C18:1), and linoleic acid (C18:2). The level of polyunsaturated fatty acids was highest (63.55 g/100 g) in the LP-processed crickets. As for the amino acid content, the glutamic acid level was highest in all the samples, and the RP and FP decreased by 12.01% and 53.88%, respectively, compared to that of the LP. The mineral contents were highest in the LP-processed crickets. Hg was detected at about 1.0 ppb in all the samples, but its level was lower than the residue tolerance level in the Korean Food Code. Such conditions should be considered to better understand the quality characteristics of crickets in food processing.

  • Imaging technique or computer vision (CV) technology has received huge attention as a rapid and non-destructive technique throughout the world for measuring quality attributes of agricultural products including meat and meat products. This study was conducted to test the ability of CV technology to predict the quality attributes of beef. Images were captured from longissimus dorsi muscle in beef at 24 h post-mortem. Traits evaluated were color value (L*, a*, b*), pH, drip loss, cooking loss, dry matter, moisture, crude protein, fat, ash, thiobarbituric acid reactive substance (TBARS), peroxide value (POV), free fatty acid (FFA), total coliform count (TCC), total viable count (TVC) and total yeast-mould count (TYMC). Images were analyzed using the Matlab software (R2015a). Different reference values were determined by physicochemical, proximate, biochemical and microbiological test. All determination were done in triplicate and the mean value was reported. Data analysis was carried out using the programme Statgraphics Centurion XVI. Calibration and validation model were fitted using the software Unscrambler X version 9.7. A higher correlation found in a* (r=0.65) and moisture (r=0.56) with 'a*' value obtained from image analysis and the highest calibration and prediction accuracy was found in lightness (r2c=0.73, r2p=0.69) in beef. Results of this work show that CV technology may be a useful tool for predicting meat quality traits in the laboratory and meat processing industries.

Assessment of Nutritional Components, Antioxidant Contents and Physiological Activity of Purple Corn Husk and Cob Extracts (자색옥수수 포엽과 속대 혼합 추출물의 영양성분, 항산화 활성 물질 함량분석 및 생리활성 평가)

  • The objective of this study was to investigate the worth of extract husk and cobs of the Seakso 1 (EHCS) for the functional foods. We aimed to investigate the proximate composition, fatty acids, amino acids, antioxidant active substance contents, antioxidant activity, inhibitory activity of the ${\alpha}-amylase$ and ${\alpha}-glucosidase$. The proximate composition of the EHCS have represented 6.90% moisture, 7.31% crude ash, 0.52% crude fat and 7.07% crude protein. Among the 17 kinds of amino acids that were analyzed in thd EHCS, the glutamic acid was the highest, with 736.08 mg / 100 g. The fatty acids detected in the EHCS were palmitic acid oleic acid and linoleic acid. The proportion of the unsaturated fatty acids was 83.33%. We determined the contents of the antioxidant active substance by the total polyphenol and flavonoid. The total polyphenol and flavonoid contents were 99.87 mg/g and 25.02 mg/g, respectively. The antioxidative activity of the EHCS were determined using a DPPH and ABTS assay. In the antioxidative activity determination, the DPPH and ABTS radical scavenging activities were 95.62% ($1,000{\mu}g/mL$) and 92.00% ($10,000{\mu}g/mL$), respectively. The inhibitory activity of ${\alpha}-amylase$ and ${\alpha}-glucosidase$ (10 mg/mL) were 95.86% and 76.92%, respectively. These results suggest that the EHCS could be potentially used as a resource for the bioactive materials for health functional foods.

Current Status of GM Crop Discrimination Technology Using Spectroscopy (분광분석법을 이용한 형질전환 작물 판별 기술 현황)

  • BACKGROUND: This paper describes the successful discrimination of GM crops from the respective wild type (WT) controls using spectroscopy and chemometric analysis. Despite the many benefits that GM crops, their development has raised concerns, particularly about their potential negative effects on food production and the environment. From this point of view, the introduction of GM crops into the market requires the development of rapid and accurate identification technologies to ensure consumer safety. METHODS AND RESULTS: The development of a GM crop discrimination model using spectroscopy involved the pre-processing of the collected spectral information, the selection of a discriminant model, and the verification of errors. Examples of GM versus WT discrimination using spectroscopy are available for soybeans, tomatoes, corn, sugarcane, soybean oil, canola oil, rice, and wheat. Here, we found that not only discrimination but also cultivar grouping was possible. CONCLUSION: Since for the determination of GM crop there is no pre-defined pre-processing method or calibration model, it is extremely important to select the appropriate ones to increase the accuracy in a case-by-case basis.

  • To use of industrial wastes as sources of fertilizer, the waste materials from 75 factories through-out the country were collected and analyzed. The wastes from fermentation, paper manufacture, food processing and textile industries might be useful sources of fertilizer. They contained high organic matters, nutrients and relatively low heavy metals.

Isolation of Isoamberboin and Isolipidiol from Whole Plants of Youngia japonica (L.) DC. (뽀리뱅이 전초로부터 Isoamberboin과 Isolipidiol의 분리)

  • Two sesquiterpene lactones were isolated from methanol extracts of the whole plants of Youngia japonica (L.) DC. by the silica gel column chromatography and recrystallization. On the basis of spectrometric studies including $^1H-NMR,\;^{13}C-NMR,\;DEPT,\;^1H-^1H\;COSY,\;^{13}C-^1H\;COSY$, IR and MS, compounds 1 and 2 were identified as derivatives of 10(14)-guaien-12, 6-olide, isoamberboin and isolipidiol, respectively. This is the first report on the isolation of isoamberboin and isolipidiol from Youngia japonica (L.) DC.

New Processing Technology For Steamed-mature Silkworms (HongJam) to Reduce Production Costs: Employing a High-Speed Homogenization and Spray Drying Protocol (생산비용 절감을 위한 익힌숙잠(홍잠, 弘蠶) 신 가공기술: 초고속 균질화와 분무건조 활용법)

  • Produced by steaming mature silkworms, HongJam is a natural functional food with various health-promoting effects. The current standard HongJam production protocol involves freezing and freeze-drying steamed mature silkworms for convenient long-term storage and/or selling it to customers. However, freeze-drying HongJam requires a range of processes and costs, which have contributed to its high resale value. In this study, we found that the cost of manufacturing HongJam powder could be reduced by homogenizing steamed mature silkworms using a high-speed blender and digital homogenizer, followed by spray drying. After the homogenized HongJam solution was digested by directly adding food-graded proteases, food-graded protease-digested homogenized HongJam solution was spray-dried. Food-graded digested protease or non-digested homogenized HongJam solutions could be used to produce food for special medical use for patients with general or specific diseases. This more efficient HongJam processing protocol proposed in this study can facilitate the development of sericulture farms and related industries by reducing the production costs of HongJam and its associated products.

Color Developing Capacity of Plasma-treated Water as a Source of Nitrite for Meat Curing

  • The interaction of plasma with liquid generates nitrogen species including nitrite (NO2). Therefore, the color developing capacity of plasma-treated water (PTW) as a nitrite source for meat curing was investigated in this study. PTW, which is generated by surface dielectric barrier discharge in air, and the increase of plasma treatment time resulted in increase of nitrite concentration in PTW. The PTW used in this study contains 46 ppm nitrite after plasma treatment for 30 min. To evaluate the effect of PTW on the cured meat color, meat batters were prepared under three different conditions (control, non-cured meat batter; PTW, meat batter cured with PTW; Sodium nitrite, meat batter cured with sodium nitrite). The meat batters were vacuum-packaged and cooked in a water-bath at 80℃ for 30 min. The typical color of cured meat developed in cooked meat batter treated with sodium nitrite or PTW. The lightness (L*) and yellowness (b*) values were similar in all conditions, whereas, the redness (a*) values of cooked meat batter with PTW and sodium nitrite (p<0.05) were significantly higher than the control. These data indicate that PTW can be used as a nitrite source in the curing process of meat without addition of other nitrite sources.
