Measurement of Fiber Board Poisson's Ratio using High-Speed Digital Camera

  • Purpose: The finite element method (FEM) is advantageous because it can save time and cost by reducing the number of samples and experiments in the effort to identify design factors. In computational problem-solving it is necessary that the exact material properties are input for achieving a reliable analysis. However, in the case of fiber boards, it is difficult to measure their cross-directional material properties because of their small thickness. In previous research studies, the Poisson's ratio was measured by analyzing ultrasonic wave velocities. Recently, the Poisson's ratio was measured using a high-speed digital camera. In this study, we measured the transverse strain of a fiber board and calculated its Poisson's ratio using a high-speed digital camera in order to apply these estimates to a FEM analysis of a fiber board, a corrugated board, and a corrugated box. Methods: Three different fiber board samples were used in a uniaxial tensile test. The longitudinal strain was measured using the Universal Testing Machine. The transverse strain was measured using an image processing method. To calculate the transverse strain, we acquired images of the fiber board before the test onset and before the fracture occurred. Acquired images were processed using the image processing program MATLAB. After the images were converted from color to binary, we calculated the width of the fiber board. Results: The calculated Poisson's ratio ranged between 0.2968-0.4425 (Machine direction, MD) and 0.1619-0.1751 (Cross machine direction, CD). Conclusions: This study demonstrates that measurement of the transverse properties of a fiber board is possible using image processing methods. Correspondingly, these processing methods could be used to measure material properties that are difficult to measure using conventional measuring methodologies that employ strain gauge extensometers.

A novel approach in analyzing agriculture and food systems: Review of modeling and its applications

  • For the past decades, advances in computational devices have propelled mathematical modeling to become an effective tool for solving the black box of complex biological systems because of its prominent analytical power and comprehensive insight. Nevertheless, modeling is still limitedly used in the fields of agriculture and food which generally concentrate on producing experimental data rather than processing them. This study, hence, intends to introduce modeling in terms of its procedure types of structure, formulation, analyses, and software, with reviews of current notable studies from micro to macro scales so as to propose the modeling technique as a novel approach in discerning conundrums in agriculture and food systems. We expect this review to provide an eligible source for researchers who are willing to apply modeling techniques into the unexplored fields related to bio-systems that comprehensively include biology, nutrition, agriculture, food, animal science, and ecology.

Crossover Food Businesses in Louisiana, United States: A Descriptive Study of Their Characteristics and Food Safety Training Needs From Public Health Inspectors' Perspective

  • Objectives: Integrating retail and manufacturing enables limitless potential for food businesses, but also creates challenges for navigating within complex food safety regulations. From public health inspectors' (PHIs) perspective, this study aimed (1) to describe the characteristics of crossover businesses in Louisiana, and (2) to evaluate regulation awareness and food safety education needs for business owners and PHIs who inspect crossover businesses. Methods: A self-administered questionnaire was administered to Louisiana Department of Health PHIs using Qualtrics®. A descriptive analysis was performed, focusing on the frequency of each item. Results: In total, 1774 retailers were conducting or planned to conduct specialized processes, while 552 food manufacturers were performing or planned to perform retail functions. Reduced oxygen packaging, the use of additives such as vinegar as a method of preservation, and smoking food as a method of preservation were observed by 62%, 36%, and 35% of the PHIs, respectively. The PHIs perceived crossover businesses as "not aware" or "somewhat aware" of the food safety regulations. The current food safety training level for these businesses was reported to range from "no training" to "some training but not sufficient." When asked for a self-assessment, the majority of PHIs reported themselves as being "familiar" with the variance requirement for specialized processing. Their confidence in inspecting crossover businesses, however, leaned towards "not confident" or "somewhat confident." Conclusions: To better guard public health, food safety training is needed for crossover food business owners, as well as PHIs, on regulations and conducting or inspecting specialized processes.

  • 농산업을 포함한 식품산업은 미얀마에서 가장 큰 산업분야로서 미얀마 정부와 산업계는 비록 투자와 생산, 기술수준의 제약사항에도 불구하고, 식품제조업을 발전시키고자 하는 의지가 강하다. 특히 미얀마 정부는 농산물 기반의 식품산업이 국가 경제성장의 필수요소임을 인식하고, 산업발전을 위해 다양한 정책적 노력을 추진 중이다. 이에 미얀마 식품산업의 전반적인 현황을 살펴보고, 공적개발원조(ODA)로서 식품가공산업 분야의 TASK(Technology Advice and Solutions from Korea) 사업에 대해 사업추진 배경, 목표 및 전략, 주요내용, 추진체계, 기대효과 등을 상세하게 소개하는 동시에, 사업 수행을 통해 식품산업 분야의 한-미얀마 상호협력 강화 방안을 제시하고자 한다.

Bioactivities of the Herb Extracts Used for Gamhongroju, a Korean Liqueur

  • In this study, antioxidative and anti-inflammatory activities of the herb (cinnamon, clove, glehnia root, ginger, violet-root cromwell, licorice, citrus peel and longan) extracts used for gamhongroju, one of the popular liqueurs in Korea, were investigated. Twenty grams of individual herbs were extracted in 60% purified ethanol and freeze-dried. A mixture of the individual herb extracts (HEM) was separately prepared. Cytotoxicity of the individual extracts and HEM on murine RAW264.7 macrophage cells were examined along with their recovering activity on $H_2O_2$-treated RAW264.7 cells. Antioxidant and anti-inflammatory activities of the extract-treated cells were determined by measuring superoxide dismutase (SOD) and glutathione peroxidase (GPx) activities, and Trolox equivalent antioxidant capacity (TEAC), nitric oxide (NO) and prostaglandin E2 (PGE2) levels. Violet-root cromwell extract showed the least cytotoxicity in terms of treated concentration. Most of the extracts, below levels of cytotoxicity, recovered the $H_2O_2$-treated cells. Treatment with some of the extracts increased SOD and GPx activities and TEAC levels while a majority inhibited the production of NO and PGE2 in lipopolysaccharide (LPS)-treated cells.

  • Domestic production of agricultural machinery has come to be seen as appropriate entry route in the capital goods industry for most African countries, including Ghana, which has purely and strongly agricultural -based economics with a weak industrial infrastructure. Recent studies in Ghana do indicate that in addition to possessing technological capability in the manufacture of handtools, there is evidence of increased production of machinery for the primary food processing sector. Local manufacture of tractors and associated implements is embryonic, with an average domestic production of agricultural machinery in Ghana and analyses the available technologies and economic indicators in the local agricultural machinery industry. Areas for indicators in the local agricultural machinery industry. Areas for future development are identified.

  • BACKGROUND: Soy isoflavones, structurally similar to endogenous estrogens, may affect human body through both hormonally mediated and non-hormonally related mechanisms. Heat processing could change chemical compositions. The effects of different thermal processes, boiling and HTHP(high temperature and high pressure) on the composition of isoflavone compounds and total amount of domestic soybeans were investigated in this study. METHOD AND RESULTS: Three different kinds of soybean samples were collected from RDA-Genebank. The samples were extracted using methanol, distilled water, and formic acid based solvent. Also the same solvents were used for mobile phase in UPLC/ToF/MS. All of the isoflavone compounds were analyzed based on the aglycone type of external standard for quantification. The standard calibration curve presented linearity with the correlation coefficient R2 > 0.98, analysed from 1 to 50 ppm concentration. The total isoflavone contents does not change by treatment within the same breed. While "boiling" and "HTHP" processes tend to increase the contents of aglycone and ${beta}$-glucosides, "fresh" soybeans retained the high concentration of malonylglucosides. CONCLUSION: These results have to be considered while developing an effective functional food, from the health while point of view using soybeans.

Detection Algorithm for Cracks on the Surface of Tomatoes using Multispectral Vis/NIR Reflectance Imagery

  • Purpose: Tomatoes, an important agricultural product in fresh-cut markets, are sometimes a source of foodborne illness, mainly Salmonella spp. Growth cracks on tomatoes can be a pathway for bacteria, so its detection prior to consumption is important for public health. In this study, multispectral Visible/Near-Infrared (NIR) reflectance imaging techniques were used to determine optimal wavebands for the classification of defect tomatoes. Methods: Hyperspectral reflectance images were collected from samples of naturally cracked tomatoes. To classify the resulting images, the selected wavelength bands were subjected to two-band permutations, and a supervised classification method was used. Results: The results showed that two optimal wavelengths, 713.8 nm and 718.6 nm, could be used to identify cracked spots on tomato surfaces with a correct classification rate of 91.1%. The result indicates that multispectral reflectance imaging with optimized wavebands from hyperspectral images is an effective technique for the classification of defective tomatoes. Conclusions: Although it can be susceptible to specular interference, the multispectral reflectance imaging is an appropriate method for commercial applications because it is faster and much less expensive than Near-Infrared or fluorescence imaging techniques.

최소 가공용 사과의 품종별 갈변정도 (Browning Degree of Various Apple Cultivars for Minimal Processing)

  • This study was carried out to select apple cultivars suited for the fresh cutting or minimal processing as investigating correlation between total phenol and ascorbic acid as browning factors and the enzymatic browning degree. In soluble solid-acid ratio, 'Gamhong' and 'Arisoo' were highest value of 71.69 and 71.52 compared with other cultivars. And the change of lightness (${\Delta}L$) and color (${\Delta}E$) in 'Gamhong' and 'Arisoo' showed lower than other cultivars while 'Arkansas black' was highest change of lightness and color as ${\Delta}L$ 8.27, ${\Delta}E$ 13.86 respectively. Total phenol and ascorbic acid contents in 'Arkansas black' were highest such as 334.3 mg GAE/100 g and 9.22 mg/100 g, respectively. And polyphenol oxidase (PPO) activity also was the highest such as 14.43unit in 'Arkansas black'. The correlation test showed browning of apple was significantly dependent on ${\Delta}L$, ${\Delta}E$, total phenol, ascorbic acid contents and PPO activity (p<0.01). On the contrary, no significant correlation had been determined between the browning and ascorbic acid oxidase (AAO) activity. Thus, it seemed that the browning of apple was not only due to oxidation of ascorbic acid but also total phenol. It was suggested that 'Gamhong' and 'Arisoo' were suitable for fresh cutting or minimal processing.

Using Hyperspectral Fluorescence Spectra of Deli Commodities to Select Wavelengths for Surveying Deli Food Contact Surfaces

  • Purpose: The inability to adequately judge the efficacy of cleaning and sanitation procedures in deli departments is a recognized food safety concern. In a prior study, our research group demonstrated that visual inspection of cleaned produce processing surfaces could be enhanced through the use of a portable fluorescence imaging device that detected residual produce residues. Methods: To explore the feasibility of using fluorescence imaging to similarly detect residual deli residues, spectra of American, Cheddar, Provolone, and Swiss cheeses and of processed chicken, ham, roast beef, and turkey were acquired using a laboratory hyperspectral imaging system. Circular punches of these commodities were placed onto stainless steel and high density polyethylene coupons for imaging. The coupon materials were selected to represent common surfaces found in deli departments. Results: Analysis of hyperspectral fluorescence images showed that cheeses exhibited peaks in the blue-green region and at around 675 nm. Meats exhibited peaks in the blue-green region with one of four ham and one of four chicken brands exhibiting peaks at around 675 nm, presumably due to use of plant-derived additives. When commodities were intermittently imaged over two weeks, locations of spectral peaks were preserved while intensity of peaks at shorter wavelengths increased with time. Conclusion: These results demonstrate that fluorescence imaging techniques have the potential to enhance surface hygiene inspection in deli departments and, given the immediate availability of imaging results, to help optimize routine cleaning procedures.
