Characteristics of Gouda Cheese Supplemented with Chili Pepper Extract Microcapsules

  • In this study, the physicochemical and sensory properties of Gouda cheese supplemented with microcapsules of chili pepper extract were evaluated. Microcapsules of pepper extract were prepared by coacervation technique using gum acacia-gelatin wall and chili pepper oil core. Changes in pH, lactic acid bacteria (LAB) population, and free amino acid (FAA) content after supplementation of Gouda cheese with chili pepper capsules were monitored during ripening. Texture and sensory characteristics of the Gouda cheese ripened for 6 months were evaluated. The supplementation of pepper extract microcapsules (0.5% or 1%, w/w) did not influence the pH values and LAB content of the Gouda cheese (p<0.05) during the ripening period. While the content of total FAA increased with the ripening process in all the cheese groups (p<0.05), no significant difference (p<0.05) in the content of total FAA was observed among the sample groups at each time point. The addition of pepper extract microcapsules (1%, w/w) to Gouda cheese significantly decreased hardness (p<0.05) and negatively affected sensory attributes in terms of taste and texture (p<0.05). The results demonstrated that supplementation with 0.5% pepper extract microcapsules could provide additional bioactive ingredients, along with maintenance of the quality of Gouda cheese.

The Ripening of Camembert Cheese Made with Mucor Miehei Rennet (Mucor Miehei 응유효소(凝乳酵素)로 제조(製造)한 Camembert Cheese의 숙성(熟成)에 관(關)한 연구(硏究))

  • Mucor miehei rennet(MR) was added as calf rennet(CR) substitutes in the fixed amounts of mixed rennets in making Camembert cheese. The conditions in the variations of chemical composition: water-soluble nitrogen, non-caseinic nitrogen, non-proteinic nitrogen, amino nitrogen, ammoniacal nitorgen, electrophoresis, molecular fractionation, mineral distribution, texture characterisitics, free amino acids and free fatty acids, were checked up with the sensory test and the chesse yields at each ripening period. The results obtained by investigating the utility of Mucor rennet were summarized as follows: 1. CR chesse, MR cheese and the mixed-rennet chesse failed to show any significant difference in their yields of 15%. 2. The contents of protein, fat and ash in MR cheese gave lower value than CR cheese did and with progress of ripening lactose decreased rapidly after 14 days of ripening. The difference among the rate of addition of mucor rennet was not recognized. 3. The WSN contents of 5 fresh sample chesse were from 14.7% to 17.3% and WSN increased from 39.7% to 41.0% with progress of ripening. After 21 days of ripening MR chesse had more WSN than CR cheese did. In NCN and ammoniacal nitrogen MR cheese showed higher value. 4. As the ripening progressed, MR chesse showed more cystein, phenylalanine and proline than CR chesse did but it failed to show any increase in aspartic acid, threonine and glutamic acid etc. 5. In the content of free fatty acid MR chesse showed higher value than CR cheese did and with the progress of ripening fatty acids increased from 8.36 mEq to 26.36 mEq but did not show any significant difference in the cheese types by the coagulant ratio. 6. Ca contents in the sample chesse were 0.238-0.27%, Mg 0.019-0.022%, Na 0.910-1.047%, and K 0.175-0.200%. The important non-sedimentable Ca in casein remained from 61 % to 77% without regard the ripening periods and added-rennets and Mg remained from 59.1% to 92.5% in non-sedimentable and water-soluble conditions. 7. In the fractionation of protein by ultrafilteration, MW> $5{\times}10^4$ decresed from 95% at the beginning period of ripening to 45% and MW< $10^4$ increased from 0.2% to 38% and definite caseinolysis was shown in all samples. 8. All the cheese showed to different electrophoretic patterns for the added-amounts of mucor rennet in the 14 days of ripenig. In the 28 days or ripening, MR cheese kept some bands on the patterns compared with CR cheese. 9. In vitro digestibility increased from 81.48-94.81 % to 94.47-98.61% but failed to show any significant difference in the cheese types by the coagulant ratio. 10. In hardness, MR cheese showed lower value compared with CR cheese as the ripening progressed. 11. The results of the sensory test failed to show any difference in flora rind, feelings in mouth and hands, deep structure, flavor and bitterness between CR Camembert cheese and MR Camembert chesse.

Studies on Ripening Physiology of Rice plant. -I Difference in Ripening Structure between Jinheung and IR667 (수도(水稻)의 등숙생리(登熟生理)에 관(關)한 연구(硏究) -I 진흥(振興)과 IR667의 등숙구조비교(登熟構造比較))

  • A local rice variety, Jinheung and newly bred IR667-Suwon 214 were grown in $5m^2$ concret pot with two spacings and two nitrogen levels and their ripening structure and its function were comparatively investigated to elucidate the causes of unusually low ripened grain ratio of IR667 lines. The following differences between two varieties were found. 1. Though IR667 had much lower ripened grain ratio (64%) than Jinheung (85%) grain yield(790 kg/10a) of IR667 was higher than that (760 kg/10a) of Jinheung. 2. Number of ripined grain per net assimiration rate (NAR) at 10 days after heading was a little higher in IR667 (6,490) than in Jinheung (6,360) consiting to lower grain weight ($29.9{\times}10^{-3}g$) in IR667 than $31.2{\times}10^{-3}g$ of Jinheung. But number of total grain per NAR was much higher (10,530) in IR667 than 7,290 of Jinheung indicating that it was the probable cause of low ripened grain ratio of IR667. 3. Extinction coeificient (K) was 0.115 in IR667 and 0.200 in Jinheung, thus IR667 could construct greater ripening structure per unit area. 4. Number of grain per LAI was decreased with increasing LAI at heading and the decreasing rate was similar for both IR667 and Jinheung. 5. Critical leaf area index at which crop growth rata (CGR) is maximum was 6.5 for IR667 and 5.2 for Jinheung. Below 5.2 of LAI net assimilation rate was always higher an Jinheung throughout the growing season. 6. The estimated optimum leaf area index having maximum grain yield was 7.4 for IR667 and 6.2 for Jinheung at 10 days after heading. However, actual leaf area index was 6.2 for IR-667 and 4.7 for Jinheung and these were even below critical leaf area index. 7. The decrease of LAI during ripening period was great in IR667 but photosynthesis per $m^2$ was decreased more rapidly in Jinheung. 8. Net assimilation rate (NAR) decreased with the increase of LAI at any time of ripening period. The decreasing rate of NAR with the increase of LAI was greater in IR667 with ripening. The greater decreasing rate of NAR in IR667 seemed to be attributed to low photosynthetic activity and high respiratory loss due to the requirement of higher optimum temperature of ripening. 9. Grain yield-ripened grain ratio curve showed less contribution of dry matter yield after heading to grain yield in IR667 than in Jinheung due to unfavorable ripening environment(specialy air temperature) indicating that yield of IR667 could most effectively increased through the improvement of ripening environment.

A Study on the Changes of Fatty Acid Composition in Seeds of Mung Bean during the Ripening Process (한국산녹두(韓國産綠豆)의 성숙중(成熟中) 지방산함량변화(脂肪酸含量變化)에 관(關)한 연구(硏究))

  • For the purposes of clarifying the changes of fatty acid content in seeds of korean mung bean during the ripening process, samples ranging in five stages-10.15,20,25 and 30 days after blooming were collected and analyzed by gas liquid chromatography (GLC). The results obtained were as follows; The content of crude fat increased as ripening. Fatty acids detected in all stages were myristic acid palmitic acid, stearic acid, oleic acid, linoleic acid and linolenic acid. Myristic acid and palmitic acid were not almost detected above the 3rd stage. Linoleic acid was the largest and the content of oleic acid and linolenic acids was similar. The saturated and unsaturated fatty acid ratio during the ripening process was 16-19/81-84%.

Climate Change Impacts on Optimum Ripening Periods of Rice Plant and Its Counter-Measure in Rice Cultivation (기후변화에 따른 벼 적정 등숙기간의 변동과 대책)

  • It was unusual crop weather for 1998 and 1999 compared with normal in Korea. The consecutive days of the optimum ripening period for rice plant that had daily mean temperature 21-23C for 40 days after heading, increased with long anomalies in 1998-99. The air temperature during ripening period was much higher than the optimum temperature and lower sunshine hour than normal in the local adaptability tests of newly developed rice lines during those years. In response of rice cultivation to warming and cloudy weather during crop season, the yield shall be decreased. Most scientists agree that the rate of heating is accelerating and temperature change could become increasingly disruptive. Weather patterns should also become more erratic. Agrometeorologists could be analyzed yearly variations of temperature, sunshine hour and rainfall pattern focused on transient agroclimate change for last a decade. Rice agronomists could be established taking advantage of real time agricultural meteorology information system for fertilization, irrigation, pest control and harvest. Also they could be analyzed the characteristics of flowering response of the recommended and newly bred rice cultivars for suitable cropping plan such as cultural patterns and sowing or transplanting date. Rice breeders should be deeply considered introducing the characteristics of basic vegetative type of flowering response like Tonsil rices as prospective rice cultivars corresponding to global warming because of the rices needed higher temperature at ripening stage than Japonica rices, photoperiod sensitive and thermo-sensitive ecotypes

Vermistabilization of Organic Sludge (유기성 슬러지의 Vermistabilization)

  • The objective of this study was to investigate the effect of bulking agents including cow manure, saw dust and rice straw in the ripening of leather sludge for vermistabilization. The changes of the waste properties for ripening time for 50 days were observed according to the various mixture ratios of leather sludge and bulking agents. The pH values of the mixture wastes were decreased from 7.5-8.0 to 6.4-7.3 with the ripening time for 50 days, and it was indifferent of the mixture ratio and type of the bulking agent. The initial value of oxidation-reduction potential(Eh) of the mixture waste was a negative(-)value indicating an unfavorable condition for earthworm life, but the values of Eh were increased with the ripening time. The increase rate of Eh value was proportional to the mixture ratio of bulking agents, but the increase rate for saw dust was higher than that of the cow manure and the rice straw. The value of alkalinity was also changed into the favorable range for earthworm after 50 days except for 10% of the mixture ratio of the bulking agents. When the mixture ratios of the bulking agents were increased from 10% to 40%, the growth characteristics of earthworms were increased from 31.7% to 95% for the survival rate, 103% to 225% for the liveweight increase rate and 32% to 91% for hatching rate of the cocoons. It can be concluded that the proper content of the bulking agents in the leather sludge to ensure effective vermistabilization was over 30%, when the mixture was ripened during 50 days. The contents of heavy metals in the ripened sludge were lower than the other regulatory standards for compost.

The Changes of Volatile Basic Nitrogen and Browing in Salt Fermented Squid Affected by Adding to Squid Ink (오징어 먹즙 첨가에 따른 오징어 젓갈의 휘발성 염기질소 및 갈변도의 변화)

  • Squid ink was added to the salt fermented squid by 2% or 4% of concentration and ripened at $10^{\circ}C$ for 8 weeks and at $20^{\circ}C$ for 32days. The effects of the squid ink on the volatile basic nitrogen and browning activities of salt fermented squid were investigated. The results are as follows; As the salt concentration was decreased and the fermentation temperature raised, volatile basic nitrogen in the salt fermented squid without addition of the squid ink was significantly increased to the latter stage of the ripening and hence fermentations were enhanced. It was found that the browning has decreased from the mid-stage of the ripening, after showing the increasement during the early stage. The volatile basic nitrogen content in the salt fermented squid addition of the squid ink has increased to the latter part of the ripening but the range was smaller than no treatment groups.

Effects of Ethrel on Tobacco-Leaf Maturity -Influences by Different Levels of the Chemical, Soil Nitrogen and Time of the Chemical Application- (Ethrel의 농도, 처리시기 및 질소농도별 시비의 잎담배 성숙에 미치는 영향)

  • The most commonly grown economical and flue-cured tobacco cultivar Yellow Special A was used in pot-culture tests in order to study Ethrel (2-chloroethyl phosponic acid) effects on accelerating maturity of tobacco leaves in relation to the most adequate level of the chemical useful for field growing, nitrogen level in soil for the most pronounced response, and the most suitable spray period during the growth stages of pre-, post- and topping periods. The following conclusions, thus, were obtained from the present studies; 1. 500ppm Ethrel spray was reconfirmed to be adequate in the practical applications, although the extent of yellow-ripening of tobacco leaves was increased as the Ethrel level increased. The highest leevel treated resulted in causing chemically damaged lesions on leaves and early defoliation. 2. Ethrel-treated leaves showed deeper yellowish tinge to them than those without treatment, while different levels of the chemcial had less influence on the tinge. 3. An adequate level of nitrogen supply to plants favored the Ethrel response, whereas either very low or high level of nitrogen in the soil lowered the chemical effect on accelerating the yellow-ripening. When carbohydrates versus total nitrogen ratio became relatively high, the condition brought out some outstanding Ethrel effects. 4. Chlorophyll level of leaves increased as soil applications of nitrogen level increased, and that also increased carotenoid level of the tobacco leaves. Ethrel-treated leaves showed deeper orange tinge than those without treatment, while the highest level of nitrogen application showed the deepest orange tinge to tobacco leaves. 5. Pre-topping treatment (12 days before topping and flowering) resulted in almost no Ethrel response, and that treatment right on the day of topping, showed response of yellow-leaf ripening at nearly bottom-half leaves of a tobacco plant. The post-topping treatment (12 days after topping) made plants showing full response of Ethrel from bottom to the top leaves of tobacco plant in accelerating the leaf maturity. 6. The extent of Ethrel responses on accelerating yellow-ripening of tobacco leaves was discussed for the modifying influences brought about by certain environmental factors. Discussions were also made about the possible practical applications (particularly for pre-rice planting) and quality difference that may be caused by such growth environments.

Effects of Gibberellin Application and Bagging on Ripening and Quality in 'Delaware' Grape Berries (Delaware 포도에서 Gibberellin 처리와 봉지씌우기가 과립의 성숙과 품질에 미치는 영향)

  • This experiment was carried out to clarify the effects of gibberellin(GA) aplication and bagging on repeening and quality in 'Delaware' grape berries. Treatments are 4 plots(2X2 factorial experiment); GA, GA+bagging, bagging and control. The clusters were dipped twice in 100 ppm GA with GA treatment : 10 days before and after the full bloom. The results obtained as follows: 1. GA treatment made the seedless grape berry reduced in the fresh weight but it hastened the ripening period about 2 weeks. 2. Total soluble solid(TSS), viscosity and pH value of berry juice increased with maturation. The concentration of TSS and viscosity were higher in GA treatment plot than GA non-treatment. 3. Berry-hardness, titratable acidity and alcohol inslouble solid(AIS) decreased with maturation. Expically berry-hardness and AIS decreased more greatly in GA non-treatment than GA treatment. 4. The concentration of anthocyanin increased with ripening but pectic substance didn't fluctuate nearly. These of anthocyanin and pectin were higher in GA non-treatment plot than GA treatment. 5. By analysis of factorial experiment GA treatment was highly significant with the $^{o}$Brix/Acidity ratio, juice viscosity and AIS, but high negatively, significant with berry-hardness and berry fresh weight. And it was significant with T S S and negatively, titratable acidity. Bagging was significant with $^{o}$Brix/Acidity ratio and AIS content, but negatively, titratable acidity. 6. Qualitative characters were high correlated with the $^{o}$Brix/Acidity ratio in simple correlation but direct effect by the path-coefficient analysis didn't coincide with simple correlation. The direct effect of pH was large and juice viscosity, the next. And that of berry-hardness was negligible but, AIS, small negatively.

Varietal Difference in Changing Aspect of Daily Sink Filling During the Grain Filling Period in the Rice Plants (수도증열기간중 Sink충전의 경시적 변화와 그 품종간 차이)

  • The experiment was conducted to know the varietal difference in changing aspect of daily filling sink during of rice using three cultivars; ‘Suweon 295’ (japonica), ‘Suwoen 264’ and ‘IR 1317-70-1’ (semi-dwarf indica) cultivated in the field and green house of the Crop Experiment Station in 1983. There was not significant varietal difference in flowering habit and duration of flowering period each panicle. Semi-dwarf indica cultivars showed shorter days to physiological maturity of rice kernel than the japonica one. The former also displayed earlier decrease in water content of rice grain during ripening than the latter. Japonica variety revealed larger difference in ripening advancement between vigorous florets and inferior one than semi-dwarf indica varieties. The semi-dwarf indica rice cultivars expressed significantly shrewder parabola of daily filling of sink per panicle during ripening than the japonica one. The time showing maximum capacity of daily filling of sink per panicle during ripening was 10-12 days after anthesis. The filling capacity of daily sink filling per panicle for 'IR 1317-70-1', 'Suweon 264' and 'Suweon 265' at this time were about 240 mg, 165 mg and 145 mg, respectively. Pattern of sink filling per panicle during ripening was slightly changed by the cultural environment. ‘Suweon 295’ showed slightly sharper parabola and 2-3 days earlier time showing maximum capcity of daily sink demand per panicle during ripening in the field than those in the green house.
