Physicochemical and Sensory Properties of Appenzeller Cheese Supplemented with Powdered Microcapsule of Tomato Extract during Ripening

  • The objective of this study was to determine the physicochemical and sensory properties of Appenzeller cheese supplemented with different concentrations (0, 1, 2, 3, and 4%, w/w) of powdered microcapsules of tomato extracts (PMT) during ripening at 14℃ for 6 mon. The particle sizes of PMT ranged from 1 to 10 m diameter with an average particle size of approximately 2 m. Butyric acid (C4) concentrations of PMT-added Appenzeller cheese were significantly higher than that of the control. Lactic acid bacteria counts in the cheese were not significantly influenced by ripening time from 0 to 6 mon or the concentrations (0-4%, w/w) of PMT. In terms of texture, the hardness of PMT-added Appenzeller cheese was significantly increased compared to the control. The gumminess and chewiness of PMT-added Appenzeller cheese were similar to those of the control. However, both cohesiveness and springiness of PMT-added Appenzeller cheese were slightly decreased. In sensory analysis, bitterness and sourness of Appenzeller cheese were not significantly changed after supplementation of PMT, but sweetness of the cheese was significantly increased after increasing the ripening time from 0 to 6 mon and increasing the concentration from 1 to 4% (w/w). Based on these results, the addition of the concentrations (1-4%, w/w) of PMT to Appenzeller cheese can be used to develop functional Appenzeller cheese.

  • The proposed hypothesis that the effects of climatic factors during ripening period (from 10 days before heading to 30 days after heading) on ripened grain ratio are equal on the level of canopy and on the level of tiller in that canopy of rice plant appeared to be agreeable. The followings were found according to the analysis of ripening structure at tiller level. 1. The optimum ripening temperature (mean air temperature during ripening period) was $21^{\circ}C$ for Jinheung and $22^{\circ}C$ for IR667-Suwon 214. 2. The minimum mean solar radiation ($cal\;cm^{-2}\;day^{-1}$) of ripening period was not greater than 240 for Jinheung and greater than 270 for IR 667-Suwon 214. 3. The ripened grain ratio was not different from main culm to first tillers of second order of main culm in Jinheung but greatly decreased from 4th tiller of first order of main culm in IR667 and the number of grain per main culm was greater in IR667 than in Jinheung indicating that yield of IR667 could be increased by increasing the number of main culm. 4. The last heading date insuring optimum ripening period appeared to be 25th in August for Jinheung and 30th in August for IR667 in Suweon.

Ultrastructural changes of Endosperm Cells in Ginseng (Panax ginseng C.A. Meyer) Seeds during After-Ripening (인삼(Panax ginseng C.A. Meyer) 종자의 후숙에 따른 배유세포의 미세구조 변화)

  • This study has been carried out to investigate the ultrastructural changes in the associated with the disintegration of the storage materials in endosperm cell of ginseng (Panax ginseng C.A. Meyer) seed during after-ripening with light and electron microscope. The protein body of endosperm cells near the umbiliform layer showed various degenerative patterns, and so electron density of proteinaceous matrix was gradualJy decreased during afterripening. These results indicate that the decomposition of endosperm was already initiated during after-ripening. As the degeneration of endosperm was more progressed after the dehiscence of seed, non-decomposed part of protein body appeared amorphously with high electron density. Decomposed protein bodies were vacuolized with the loss of their matrix and gradually expanded by fusion. Also, spherosomes were gradually dissolved with the lowered electron density during the degeneration of endosperm. The vesicles of dictyosomes near the cell wall are observed in endosperm contacting with umbiliform layer and are fused with plasma membrane. Umbiliform layer which was the complex of the decomposed remnants of lysis and materials has strong stainability for toluidine blue and basic fuchsin.

  • Effects of commercial food grade porcine pancreatic lipase on the neutral volatile compounds in Cheddar cheese were studied The enzyme was incorporated into the cheese at two different levels of concentration and ripened at various temperatures. The production of 2-butanone increased at higher amount of lipase and higher temperature, but the production of 2-pentanone was inconsistent trends during ripening periods. The concentration of acetaldehyde was the highest among aldehydes and was increased consistently during ripening Periods. In alcohol production ethanol was the most abundant but no further consistent trend was observed after 6 wk. The production of ethyl butyrate was the most abundant ester and related io lipase activities as well as ripening temperatures. Dimethyl sulfide was the only sulfur compound and appeared not to be related to the addition of lipase or ripening temperatures . Statistical analysis suggested that ethyl butyrate was most correlated to aged Cheddar flavor during cheese ripening.

The Effect of Evening Primrose Oil on Chemical and Blood Cholesterol Lowering Properties of Cheddar Cheese

  • The present study was carried out to investigate the changes in chemical and sensory properties, and cholesterol lowering effect of evening primrose oil (EPO) addition in cholesterol-reduced Cheddar cheese. The cholesterol removal rate reached 92.07% by ${\beta}$-cyclodextrin in the cheese before EPO addition. The thiobarbituric acid (TBA) value of cholesterol-reduced and EPO-added cheese increased with both ripening time and amount of EPO addition. Addition of 5% EPO resulted in a significant difference in TBA value after 4-week ripening, compared with no addition of EPO. The production of short-chain free fatty acids (FFAs) increased with ripening period in all treatments. From 4 week of ripening, the amounts of short-chain FFA in 3 and 5% EPO-added groups were significantly higher than those in other groups. Among sensory characteristics, rancidity was mostly affected by EPO addition, however, the rancidity value of 1% EPO-added was not significantly different from that of EPO-free and cholesterol-reduced cheese. Also, Cheddar cheese flavor was not profoundly affected by 1% EPO addition in all ripening periods. Total blood cholesterol dramatically decreased from 184.0 to 137.1 mg/dL with 5% EPO-added and cholesterol-reduced cheese following 8 weeks of feeding. The present results indicated that 5% EPO addition resulted in a profound lowering effect on blood total cholesterol with some adverse effects on chemical and sensory properties.

Refinement of Low-grade Clay using Iron-reducing Bacteria [I] : Comparison of Traditional Ripening and Biotechnological Ripening (철환원세균을 이용한 저품위 점토의 개량[I] : 전통적 수비법과 생물공학적 숙성법의 비교)

  • The traditional ripening method of clay was analyzed. An advanced refining method of clay using enrichment cultures of iron r reducing bacteria was developed. After the traditional ripening, the whiteness of the clay was increased due to removal of | iron impurities by inhabitant dissilmaltien with iron reducing bacteria. Other characteristics of the refined clay such as v viscosity, plasticity, and strength were also improved by iron reducing bacteria. An advanced method of clay refinement with a anaerobic enrichment cultivation of iron reducing bacteria supplemented with an extra carbon source such as glucose was s suggested. When the clay was treated by the advanced method. the refinement time could be reduced to 1/6 of that r required by the traditional method. The physical properties of the refined clay by the advanced method were better than t those of the traditionally refined clay.

Analysis of Metabolite and Sensory Evaluation on Kunrak, for Reproduced Manufacturing from Old Literature of 「Imwonsibyukji」 (「임원십육지」의 조리법에 기초하여 재현한 건락의 대사체 분석과 관능평가)

  • Kunrak, a type of Korea traditional cheese, is made using Tarak, a yogurt produced with makgeolli as the fermentation source. Kunrak is produced by removing whey from Tarak, followed by drying process for safe storage and consumption over a longer period. In this study, we produced kunrak based on the method described in "Imwonsibyukji". Prepared Kunrak was ripening for 96 hours at 20, 30, and $40^{\circ}C$. In order to study characteristics of Kunrak, physiochemical properties (pH, acidity, water contents) and contents of metabolites (organic acids, sugars, amino acids, and fatty acids) were analyzed. During ripening, water contents decreased. The main organic acids in Kunrak were citric acid and lactic acid, and the main free sugar was lactose. Main amino acids were glutamate and phenylalanine, and main fatty acid was saturated capric acid. At later ripening, all metabolites increased immediately after preparation. The sensory evaluation score of overall preference was highest for Kunrak, which was ripening at $40^{\circ}C$ for 96 hours. This study was aimed to assay metabolites of Kunrak under various ripening conditions. The results provide basic data to produce conditions for standardized manufacturing of Kunrak.

Effects of Alcohol Concentration on Quality Changes of Maesil (Prunus mume) Liqueur during Leaching and Ripening (알코올 농도가 매실 리큐르의 제조 중 성분 변화에 미치는 영향)

  • The effects of alcohol concentration (30% 45% and 60%) on quality changes of maesil (Prunus mume) liqueur during leaching and ripening for 5 months were examined. Total acidity, pH and color of the liqueur generally increased with an increase alcohol concentration for 2 months. Thereafter the significant change did not occur. The contents of reducing sugar and polyphenol in the liqueur increased with an increase alcohol concentration and ripening periods. The major components of free sugar in maesil liqueur were fructose, glucose, sucrose and maltose. The content of fructose and glucose were higher than those of sucrose and maltose regardless alcohol concentration. Sucrose and maltose did not detect in the liqueur after leaching and ripening for 2 months. The major components of organic acid in maesil liqueur were citric, lactic, malic, and acetic acids. The optimal alcohol concentration was 45% and the duration of leaching and ripening was about 2 months for production of high-proof maesil liqueur.

Effects of Ripening on the Quality of Kimchi or Freeze-Dried/Rehydrated Kimchi (김치의 숙성이 김치 또는 동결건조/복원 제품의 품질에 미치는 영향)

  • The objective of this study was to investigate the effect of ripening on the quality of kimchi or freeze-dried/rehydrated kimchi. Kimchi stored/ripened at 0$\^{C}$ for 120 days was taken at an interval of 10 days and freeze-dried/rehydrated with water. The number of lactic acid bacteria(LAB), shearing force and sensory properties of kimchi ripened (Raw sample) or kimchi ripened/freeze-dried/rehydrated (F/D sample) were observed. The results were as follows: (1) The number of LAB of Raw and F/D samples decreased slightly during ripening for 120 days, while the pH of both samples decreased. The number of LAB in kimchi decreased up to 6∼16% of the original value by freeze-drying. (2) Ripening for 120 days did not affect shearing force of kimchi while freeze-drying increased markedly its shearing force. (3) Although overall acceptability and taste of Raw and F/D samples decreased gradually, the degree of change between two samples was different. The odor of Raw and F/D samples decreased slightly during ripening for 120 days while the degree of change between two samples was similar after 70 days of ripening. Moistness of Raw and F/D samples was maintained relatively stable during ripening. Chewiness of Raw sample decreased during ripening for 120 days while that of F/D sample was not affected by ripening. Color of Raw and F/D sample was changed during ripening while the degree of change between two samples was not significant. It can be concluded that the change of some sensory properties between Raw sample and F/D sample was affected by ripening for 120 days while the change in the number of LAB, pH and shearing force between both samples was not affected markedly by ripening.

Characteristics of Fermented Sausages with korean Native Spices (국내산 향신료로 제조한 발효소시지의 특성)

  • the objective of this study was to develop the Korean style fermented sausage by addition of Korean native spices(Mugwort Artemisaia asiatica ;pine needles pinus thunbergii ; Japanese pepper Zanth-oxylum prperitum ; Arrowroot pueraria hirsuta) instead of foreign-original spices(white pepper corian-der)pH of all sausages was lowered rapidly during ripening. pH reductio of sausages with foreign spices was mere rapid than that with Korean native spices except for the sausages with all mixtured Korean native spices. Aw was not affected by differentiated spices. The "a" value among Hunter Color Value of sausages that produced with mixed Korean native spices was higher than sausages with foreign spices Lactic acid bacteria rapidly increased and reached to 108cfu/g after 2 days of ripening. Korean native spices used to this work did not inhibit the inhibit of lactic acid bacteria in fermented sausages but enterobacteria did not detected after 10 days of fermentation in the sausages with mixed Korean native spices.
