Evaluation of Two Levels and Types of Acorn Powder on Product Quality of Low-fat Sausages as a Fat Replacer (도토리 가루의 첨가량과 첨가 형태가 지방대체제로서 저지방 소시지의 품질에 미치는 효과)

  • Product quality of low-fat sausages(LFSs) manufactured with two types(powder and hydrated) and two levels(0.5 and 1.0%) of Acorn powder was evaluated as a potential fat replacer. The addition of Acorn powder did not affect the product quality of LFSs (P>0.05), however 0.5% and hydrated Acorn was better sensory flavor than 1.0% and powder counterparts. The addition of Acorn into the LFSs decreased the expressible moisture(%) except for 0.5% powder type and decreased Hunter L-values in LFSs. The addition of 1.0% hydrated Acorn lowered sensory saltiness than those of other LFSs and regular-fat control. These results indicated that Acorn powder can be used to manufacture LFSs as a fat replacer and 0.5% with hydrated form had better characteristics than 1.0% and powder counterparts. Future research will be performed to prevent the color change with the addition of Arcon powder in LFSs.

Sensory and Mechanical Characteristic of Sang-ja-byung by Different ingredient (상자병(橡子餠)의 재료배합비에 따른 Texture특성)

  • This study aimed for exploring the best recipe of Sangjabyung to increase its utility value and to develop traditional Korean rice cake industry for next generation. The best recipe was determined after several tests such as sensory evaluation and mechanical measurements for texture, moisture content, and colorimetry. The samples prepared with 5% of acorn starch with honey showed the best scores in sensory evaluation for color and flavor, 5% of acorn powder with sugar for grain, 15% of acorn powder with sugar for moistness and chewiness, 15% of starch with honey for sweetness, and non-glutinous rice flour mixed with 10% of acorn powder and sugar for overall quality. Every item except for flavor was significantly different from that of control (P<0.05). The highest score for springiness was obtained from the samples prepared with 10% of acorn starch with sugar, cohesiveness with 5% of acorn starch with sugar, chewiness with 15% of acorn starch with honey, gumminess with 15% of acorn starch with honey, adhesiveness with 5% of acorn starch with honey, and hardness with 15% of acorn starch with honey. All items were significantly different from that of control (P<0.05). The overall quality of sensory evaluation was correlated with moistness(P<0.05), springiness, cohesiveness(P<0.01), and adhesiveness(P<0.01) in mechanical test. Moisture contents of rice flour, acorn starch, and acorn powder were 32.93%, 8.52%, and 13.26%, respectively. The desirable moisture content in Sangiabyung was 44.11% in the case of using rice flour with acorn starch or 44.33% for rice flour with acorn powder. As a result of colorimetry, the best L, a, and b values were obtained from the rice cakes with 5% acorn starch and oligosaccharides, with 15% of acorn powder and sugar, and with 15% of acorn starch with oligosaccharides, respectively. Overall. the most desirable recipe for Sangjabyung was determined as rice flour 315 g, acorn starch or acorn powder 35 g, sugar 60 g, salt 3.5 g, and water 130 ml.

The Quality Properties of Dotoridasik with added Acorn Powder (도토리가루를 첨가한 도토리다식의 특성)

  • The objective of this study was to evaluate the quality characteristics of Dotoridasik prepared by the addition of acorn powder (0%, 20%, 40%, 60%, 80%). The Proximate components were 85.89% carbohydrate, 1.38% crude fat, 0.84% crude protein and 0.32% crude ash. The moisture content of Dotoridasik showed no significant difference between the added acorn powder and control groups. The following Hunter color values are not part of the sensory evaluation testing in the results of for Dotoridasik, decreased while the a and b values increased with increasing acorn powder addition. The bitter taste was evaluated as being improved with increasing acorn powder addition. Dotoridasik with 40% acorn powder showed the highest acceptance. In the mechanical evaluation, hardness recording which from control Will increase with acorn powder it shows a high shame(p<0.05), the adhesiveness result springiness it was not visible a consider difference especially also utterly unintelligible).

Experimental Manufacture of Acorn Wine by Fungal Tannase (미생물(微生物) Tannase를 이용한 도토리주(酒)의 실험적(實驗的) 제조(製造))

  • Acorn wine was manufactured experimentally with koji inoculated the strain producing acorn tannin hydrolyzing enzyme in order to apply fungal tannase to food processing. Starch value of several Korean acorns was found to be 72.84 and the acorns were worthy of use as a carbohydrate food. Mixed koji was prepared by combination of rice and acorn powder at a ratio of 50to 50 and inoculation of Aspergillus oryzae producing amylase and Aspergillus sp. AN-11 producing tannase into the mixture in order to hydrolyze efficiently acorn tannin inhibiting alcohol fermentation in the medium, and then the mixed koji was used as a suitable koji to manufacture acorn wine. Acorn wine brewed with medium of the acorn powder treated with water and cooked and the mixed koji prepared was superior about two times to that brewed with medium of untreated acorn powder and general koji with respect to the rate of alcohol production and sugar fermentation during the 1st and 2nd brewing.

  • This study aimed to investigate the effect of acorn powder and starch on the blood parameters of mice fed a high-fat diet. The moisture, crude ash, crude protein, and crude fat contents of acorns were $37.99{\pm}0.37%$, $1.61{\pm}0.06%$, $4.36{\pm}0.18%$ and $3.22{\pm}0.15%$, respectively. Acorn powder and starch contains antioxidant minerals such as selenium and zinc. The iron content was significantly higher in acorn powder than in acorn starch (p<0.05). The total cholesterol concentration was $148.50{\pm}29.72mg/dL$ in the high-fat starch diet (HFS) group, while in the high-fat diet (HF) group it was $201.50{\pm}39.15mg/dL$ (p<0.05). Serum LDL-cholesterol concentrations were significantly lower in the HFS group ($50.50{\pm}10.79mg/dL$) than in the HF group ($62.00{\pm}20.85mg/dL$; p<0.05). The serum $IL-1{\beta}$ levels in mice were not significantly different between the groups. IL-10 levels were higher in the HFP group than other groups. There is a need for strong recognition that acorns are good ingredients worldwide. It is required to develop various products using acorn powder and starch powder. There is also a need for a strategy to globalize food using acorns.

Study on the Quality Properties of Hardtack Added with Acorn Jelly Powder and Acorn Ethanol Extract (도토리묵가루 및 추출물을 첨가한 건빵의 품질특성)

  • This study examined the effects of acorn (Quercus. acutissima CARR.) jelly powder (0%, 25%, 50%, and 75%) and acorn extract (0%, 0.1%, 0.5%, and 1.0%) addition on the quality characteristics of hardtack. In the sensory test, acorn jelly powder added group scored 50% higher than the other added group. Regarding hardtack color, L (lightness) and b (yellowness) values decreased with increasing acorn powder and acorn extract addition. Hardness of hardtack increased with added acorn jelly powder, but no significant difference was observed with acorn extract. The taste and texture of the hardtack 0.1% acorn extract added group significantly increased. Overall, preferences decreased with increasing acorn extract but not significantly. In conclusion, the results of this study suggest that addition of 50% acorn jelly powder in combination with addition of less than 0.1% acorn extract to hardtack was the most desirable.

Physicochemical and Sensory Properties of Restructured Jerky with Four Additives

  • This study was carried out to evaluate the effect on properties of restructured jerky by the addition volume of additives. The treatments were divided into glutinous rice flour, potato starch, soybean and acorn powder. Moisture content, water activity ($a_w$), thiobarbituric acid reactive substances (TBARS), color, yield and sensory evaluation were performed. The moisture contents of four types of restructured jerkies were in the range of 8.92-12.47%, and were lower than that of the control (17.92%). Water activity tended to decreased with increasing addition of all treatments. The restructured jerkies containing glutinous rice flour, potato starch, soybean and acorn powder had lower TBARS than the control. The drying yield tended to increase with increasing amount of additives. In the sensory evaluation results, the highest overall acceptability was found in jerky containing glutinous rice flour, potato starch, and acorn powder when the addition was 9%, while that for soybean powder was determined to be 5%. These results suggest that 9% additions of glutinous rice flour, potato starch or acorn, or 5% soybean powder are optimal addition volumes for the preparation of restructured jerkies.

Effect of Acorn Powder on the Biomass Productivity of Microalgae (도토리 가루가 미세조류 증식에 미치는 영향)

  • The focus of this study was to observe the growth of Chlorella vulgaris and Botryococcus braunii under mixotrophic conditions (i.e., added acorn) with the aim of increasing biomass and triacylglycerols (TAGs) content. The result of investigation indicated that the acorn contains a lot of carbonate (87.29%) and glucose (97.99 mg%). A significant growth of biomass was obtained when grown in acorn rich environment comparing to autotrophic conditions. 3 g/L acorn yielded the highest biomass concentration for these strains. Thus, the biomass productivity with 3 g/L acorn was obtained 2.31 times and 2.10 times higher than that of authotrophic conditions for Chlorella vulgaris and Botryococcus braunii, respectively. The maximum amount of TAGs was reached 14.35% and 18.41% for Chlorella vulgaris and Botryococcus braunii, respectively, in the growth medium with 5 g/L acorn. The effect of acorn could enhance the investigated microalgae growth, biomass productivity and TAGs content. This provides a feasible way to reduce the cost of bioenergy production from microalgae.

A Study on the Literature Review of Acorn in Korea (도토리에 대한 국내의 연구 동향)

  • This study was surveyed and compiled the contribution about acorn in korea .the physico-chemical properties of acorn and acorn starch. preparation of acorn starch and elimination of the acorn tannin, the rheological properties of acorn starch gel. Nutrition of acorn and antioxidative activity of tannin in acorn extract. The result obtained were as follow. 1. The chemical compositions of acorn were water 6.5∼13.7%, crude ash 1.9∼3.4%, crude fat 1.1∼5.0%, crude protein 5.8∼7.8%, crude fiber 2.1∼3.6%, N-free extract 71∼77.5%, total tannin 4.6∼9.3%, Ca 92.7∼460.9mg%, p 80.0∼740.9mg%, Na 66.2∼93.9 mg%, and K 867.9∼983.1mg%. 2. The acorn tannin was extracted with water, acetone, and ethanol. The generation method was wash SE settling method with water. 3. The shape of acorn starch granule was rounded triangular and some elliptical, rasing power 12.4∼12.5, Blue value 0.43∼0.47, Alkali number 10.8∼11.3, Amount of Arnylose 28.8∼30.50% Tannin contents on the initial go tim-zation temperature of acorn starch were not influenced but maximum and cooling viscosity o the acorn starch were decreased. 4. Nutritional effect and diet absorption rate were not influence, by rice and 20% T-A(elimination of tannin from the acorn) mixed diet, and the content of lipid in s rum were not influenced by rice 40% and T-A (elimination of tannin from the acorn) mixed diet. 5. jallic acid, digallic acid, gallotannin were contained in acorn powder extract. The main antioxidative : stlvity was speculated due to the gallic acid.

  • Tannin from acorn was identified by TLC and gallic acid in the tannin was determined by HPLC. The tannin extracted with methanol-butanol was not dissolved in ethanol, methanol for HPLC and water, while the tannin extracted with acetone-ethylacetate was so pure that it could be used for HPLC-running. The gallic acid showed a Rf -value of 0.39, the digallic acid of 0.21, the trigallic acid of 0.09, and the gallotannin of 0.00 respectively. The content of gallic acid in the tannin from acorn powder was 3.04%, from acorn starch, 0.90%, and from acorn starch gels, 0.64-0.86% respectively. The effect of tannin contents on the viscosity of acorn atarch was also studied. The maximum and cooling viscosity of the starch were decreased as the contents of tannin increased.
