We investigated the optimum formulation to improve the gelling ability of squid, Dosidicus gigas, surimi. The solubility of minced squid muscle was highest at pH 10.7, and lowest at pH 5.0. The yields of conventional surimi and protein recovery after alkaline pH-shift processing were $68.1{\pm}2.4%$ and $65.3{\pm}2.6%$, respectively, whereas the protein recovery with acidic pH-shift processing was only $21.2{\pm}1.6%$. The addition of 5% starch decreased the breaking force regardless of the kind of starch, while the mixture of corn, potato, and wheat starch (total 15%) increased the breaking force by up to 1.9 fold. The addition of 5% egg white, 5% porcine plasma protein, 0.3% $CaCl_2$, and 0.3% Polymix GA significantly increased the breakingforce (P<0.05). None of the ingredients examined in this study significantly affected the deformation value (P<0.05). The optimum concentrations of egg white and $CaCl_2$ to obtain a breaking force of 55 g and a whiteness of 70 were 2.69% and 0.22%, respectively.

This is a study on the removal of nitrate nitrogen from wastewater by oxidation and reduction reaction of zinc in an acidic atmosphere. The optimum removal rate of nitrate nitrogen and the optimum pH were studied by controlling the amount of zinc and sulfamic acid. The oxidation efficiency was higher at pH 2.0 in the range of pH 2.0 ~ 4.0 because the reaction occurred more strongly in strong acidic atmosphere. It is advantageous to reduce the nitrate ion to the final nitrogen gas by adding the sulfamic acid to the sulfurous acid because it consumes less $H^+$ ion than when the sulfamic acid is not present. According to the same amount of zinc, nitrate nitrogen was removed by 46.0% while sulfamic acid was not added, whereas nitrite nitrogen was removed by 93.0% by adding sulfamic acid. In addition, In this experiment, zinc was prepared in powder form and its reactivity was larger than that of other common zinc metal, so the removal efficiency was very high, about 80.0%, within one minute after the reaction.
The result of isolated and selected to the strain having the emulsifying activity from soil's strain the strain was identified as Candida genus. The strain was investigated with culture condition at pH culture temperature, flow rate of air, strring rate etc., and physicochemical properties of the biosurfactant were examined. The optimum composition of medium for a strain cultivation were obtained as follow : glucose ; 100g/L, yeast extract ; 10g/L, urea ; 1.0g/L, KH$_{2}$PO$_{4}$ ; 50mg/L, MgSO$_{4}$ ; 500mg/L, and the op condition of cultivation was as follow : pH ; 3.0, temperatlue ; 24$\circ $C, strring rate ; 40rpm. The maximum yield of biosurfactant was obtained by pH ; 3.0-3.5, and temperature ; 25$\circ $C. The degree of emulsification of syntesized biosurfactant was increased clearly by increasing concentration of biosurfactant and it's stability was maintained for a long time. The surface tension of biosurfactant was varied with pH, especially it was showed that the surface tension was high at acidic pH.
Several new ion exchange resins have been synthesized from chloromethyl styrene-1,4-divinylbenzine with 1%, 2%, 5% and 105-crosslink and macrocyclic ligands of cryptand type by interpolymerization method. The adsorption characteristics and the pH, time, solvents and concentration dependence of the adsorption of uranium ion by this resins were studied. The resins were very stable in both acidic and basic media and have good resistance to heat at $300^{\circ}C$. The uranium ion are not adsorbed on the resins below pH 3.0, but the power of adsorption of it increased rapidly above pH 4.0. The optimum equilibrium time for adsorption of uranium ion was two hours and adsorptive power decreased in proportion to crosslink size of the resins and order of dielectric constants of solvents used and the adsorption for uranium ion was bin the order of $OdienNtn-H_4$ > $OtnNen-H_4$ > $OtnNen-H_4$ > $OenNen-H_4$.

We used the electrophoretic deposition (EPD) process to fabricate a glass composite and investigated the EPD parameters to find the optimum deposition time by understanding the relationship among the process parameters of zeta potential (ZP), pH, deposition yield and saturation point. A binder and a dispersing agent were mixed properly with glass frit ($0.2{\sim}25{\mu}m$, d50=$8.77{\mu}m$) in an ethyl alcohol medium for the preparation of the slurry. The pH and ZP were in an inverse relationship to each other due to the generation of $H_3O^+$ ions with the addition of the dispersing agent in the slurry. The acidic nature of the dispersing agent was resulted in a decrease of the pH and an increase of the ZP. Otherwise, the pH increased with the addition of the glass frit in the slurry because $H_3O^+$ ions were absorbed on the glass frit. Therefore, the $OH^-$ ions correspondingly increased. The saturation point of EPD was strongly correlated with the variation of the pH in the slurry; this is caused by a chemical reaction between the ethyl alcohol and the ions that make up the glass frit. An adjustment of the pH variation and the saturation point in the slurry can be established with respect to the optimum deposition time in the slurry.
Psychrophilic phytases suitable for aquaculture are rare. In this study, a phytase of the histidine acid phosphatase (HAP) family was identified in Morchella importuna, a psychrophilic mushroom. The phytase showed 38% identity with Aspergillus niger PhyB, which was the closest hit. The M. importuna phytase was overexpressed in Pichia pastoris, purified, and characterized. The phytase had an optimum temperature at $25^{\circ}C$, which is the lowest among all the known phytases to our best knowledge. The optimum pH (6.5) is higher than most of the known HAP phytases, which is fit for the weak acidic condition in fish gut. At the optimum pH and temperature, MiPhyA showed the maximum activity level ($2,384.6{\pm}90.4{\mu}mol{\cdot}min^{-1}{\cdot}mg^{-1}$, suggesting that the enzyme possesses a higher activity level over many known phytases at low temperatures. The phytate-degrading efficacy was tested on three common feed materials (soybean meal/rapeseed meal/corn meal) and was compared with the well-known phytases of Escherichia coli and A. niger. When using the same amount of activity units, MiPhyA could yield at least $3{\times}$ more inorganic phosphate than the two reference phytases. When using the same weight of protein, MiPhyA could yield at least $5{\times}$ more inorganic phosphate than the other two. Since it could degrade phytate in feed materials efficiently under low temperature and weak acidic conditions, which are common for aquacultural application, MiPhyA might be a promising candidate as a feed additive enzyme.
A marine Streptomyces sp., which produce water-soluble blue pigment was isolated from shallow-sea muds. The effect of various nutritional conditions on growth of isolated strain were investigated to facilite the potential use of this organism in industry. The effect of carbon source was characterized as a 10g/1 of soluble starch. Growth was optimum at pH 7.0 and slightly affected with more alkaline range but was shown to decrease dramatically in acidic range. Under the optimum growth conditions, isolated strain produced substantial amounts of blue pigment and biomass.

Mycelia of Streptomyces viridochromogenes grown under different pH were analysed for the fatty acid composition. The low relative proportion of 12-methyltetradecanoic acid and the high relative proportion of palmitic acid were characteristic for the young culture under slight acidic pH that caused delay of the aerial mycelium formation. The addition of L-arginine to the culture medium enabled an arginine auxotroph with bald phenotype to have the fatty acid composition similar to that of the wild type and to develop aerial mycelium. The ratio of 12-methyltetradecanoic acid to palmitic acid might be used as a parameter to explain the optimum grwoth in the respect of membrane fluidity.

This experiment was conducted to examine the ideal condition for multiple colors dyeing of cut rose, 'Akito'. Four different colors of dye were applied to make multiple flower colors in cut rose by absorption method. Acidic condition around pH 3.5 showed the fastest absorption speed in all four colors. There is no difference at each pH levels, at part of leaves dyeing, it is more affected colors rather than pH levels in purple and blue colors. From vary concentration of each dyes, $10g{\cdot}L^{-1}$ concentration of dyeing solution gave the best color definition. But it's not significant and result was different by each color in a same concentration. 10 minutes of dyeing performed pastel color and 30 minutes performed the best color definition, but the 30 minutes treatment accompanied with significant dyeing on the leaves also. As a result of this experiment, optimum condition for dyeing cut rose, 'Akito' requires pH 3.5, $5-10g{\cdot}L^{-1}$ of dye concentration and 10-30 minutes treatment.
A bacterium producing acidic cellulase was isolated from pig feces. The isolate, ATC6 strain, was found to be Gram-positive, non-motile, catalase-positive, and spore-forming stain. Under an electron microscope, the cells were observed to be rod-shaped. The isolate was identified as Bacillus amyloliquefaciens ATC6 on the basis of morphological and biochemical properties as well as 16S rRNA gene sequences. Optimum pH and temperature for the cellulase activity of the culture supernatant of B. amyloliquefaciens ATC6 were found to be pH 4.5 and $55^{\circ}C$, respectively. More than 80% of its maximum activity was maintained at pH 4.0. The cellulase activity was maintained at temperatures ranging from 35 to $55^{\circ}C$ after 2 h incubation at pH 4.5, whereas it's activity decreased rapidly at $65^{\circ}C$.
