구이용 전기팬과 과열증기로 열처리한 고등어구이의 이화학적인 품질특성 및 기호도 비교평가 (Comparison on Physico-Chemical and Affective Properties in Mackerel Cooked by Electric Pan and under Superheated Steam)

  • Purpose: This study analyzed and compared the physico-chemical and affective properties between mackerels cooked by an electric pan and under superheated steam. Methods: Mackerel were cooked by an electric pan ($95^{\circ}C$) for 10 min and mackerel cooked under superheated steam ($250^{\circ}C$) for 5 min to be internal temperatures of $75{\pm}5^{\circ}C$ and tests to measure proximate composition, color values, texture profiles, microorganism counts and sensory acceptance were performed. Results: The moisture contents were 60.30% and 73.81% in mackerels cooked by electric pan and under superheated steam, respectively. The rate of weight loss in mackerel cooked by electric pan was 39%, whereas it was 29% in mackerel cooked under superheated steam. Mackerel cooked under superheated steam exhibited more yellowness, higher springiness, cohesiveness, gumminess, chewiness, and resilience with more acceptable preferences (appearance, odor, taste, and texture) compared to the mackerel cooked by electric pan. Conclusion: The application of superheated steam technology to fish products could reduce the cooking time and nutritional loss. Also, it could produce highly preferred fish products compared to that prepared by conventional electric pan.

  • ASCE/SEI 41-13 provides modeling parameters and numerical acceptance criteria for various types of members that are useful for evaluating the seismic performance of reinforced concrete (RC) building structures. To accurately evaluate the global performance of a coupled wall system, it is crucial to first properly define the component behaviors (i.e., force-displacement relationships of shear walls and coupling beams). However, only a few studies have investigated on the modeling of RC coupling beams subjected to earthquake loading to date. The main objective of this study is to assess the reliability of ASCE 41-13 modeling parameters specified for RC coupling beams with various design details, based on a database compiling almost all coupling beam tests available worldwide. Several recently developed coupling beam models are also reviewed. Finally, a rational method is proposed for determining the chord yield rotation of RC coupling beams.

  • 직장이나 가정의 하수를 처리하기 위하여 배수구를 이용할 수 있다. 본 실험에서는 침전처리를 하지 않은 폐수를 반송슬럿지가 없는 구에서 처리할 경우 유기물 처리를 조사하였다. 유기물 처리효율은 온도에 영향을 받고 있으며 16$^{\circ}C$이상에서는 효율이 온도상승에 따라 증가하나 16$^{\circ}C$이하에서는 온도변화에 따른 효율의 차이는 크게 나타나지 않았다.

정량적 게이트 심근관류 SPECT (Quantitative gated myocardial perfusion SPECT)

  • Myocardial perfusion imaging has been increasingly used to provide prognostic data and guidance on the choice of appropriate management of patients with known or suspected coronary artery disease. The electrocardiogram gated myocardial SPECT program is corning into wide use with an advent of $^{99m}Tc-labeled$ tracers and an improvement of SPECT machines. The gated technique permits measurement of important cardiac prognostic indicators without any further discomforts or radiation burden in patients underwent standard myocardial perfusion SPECT. In addition, gated study significantly improves diagnostic yield by reducing the number of borderline interpretations and could find myocardial stunning and viable myocardium. Gated single photon emission computed tomography (SPECT) imaging allows the automated calculation of end-diastolic volume, end-systolic volume, ejection fraction, myocardial mass and the assessment of regional wall motion and thickening, and it have dramatically improved assessment of coronary artery disease in routine nuclear practice. This allows the simultaneous assessment of both perfusion and function within the same acquisition, and serves as a cost-effective technique for providing more diagnostic data with fewer diagnostic tests. Because the diagnostic and prognostic power derived from knowledge of left ventricular function can be added to that provided by assessing myocardial perfusion, gated SPECT imaging has rapidly gained widespread acceptance and is now used on a routine clinical basis in a growing number of laboratories, including South Korea. The gated SPECT technique for measurement of left ventricular parameters has been validated against a variety of well established techniques. In this work, overview of gated myocardial perfusion SPECT focus on functional parameters is presented.

Loss of a Main Feedwater Pump Test Simulation Using KISPAC Computer Code

  • Among those tests performed during the Yonggwang Nuclear Power Plant Units 3 and 4 (YGN 3&4) Power Ascension Test period, the Loss of a Main Feedwater Pump test at l00% power is one of the major test which characterize the capability of YGN 3&4. In this event, one of the two normally operating main feedwater pumps is tripped resulting in a 50% reduction in the feedwater flow. Unless the NSSS and Turbine/Generator control systems actuate properly, the reactor will be tripped on low SG water level or high pressurizer pressure. The test performed at Unit 3 was successful by meeting all acceptance criteria, and the plant was stabilized at a reduced power level without reactor trip. The measured test data for the major plant parameters are compared with the predictions made by the KISPAC computer code, an updated best-estimate plant performance analysis code, to verify and validate its applicability. The comparison results showed good agreement in the magnitude as well as the trends of the major plant parameters. Therefore, the KISPAC code can be utilized for the best-estimate nuclear power plant design and simulation tool after a further verification using other plant test data.

피자 크러스트의 특성과 소비자 기호 유도 인자 (Sensory Properties and Drivers of Liking for Pizza Crust)

  • This study identified the sensory properties of samples of pizza dough at three pizza companies and three masonry oven pizzerias from Seoul, Korea and compared consumer acceptability among panels of university students. Six pizza dough samples were prepared (pan pizzas from Pizza Hut, Mr.pizza, and Dominos pizza, masonry oven baked pizzas from Appleteen, Mr.Lee's, and Pizza factory). Consumer tests were employed involving 97 Korean consumers. Consumers evaluated overall liking (OL), liking of appearance (APPL), odor (ODL), flavor (FLL), and texture (TXTL), willing to try (WT), and willing to recommend (WR) for the samples using a nine-point hedonic scale. Analysis of variance (ANOVA) indicated that HutP, MrP, and DomP samples had significantly (p<0.05) high scores for roughness, porosity, crust color, grain size, brownness, dairy food aroma, savory taste, and yeast aroma, which had the highest OL, ODL, and FLL scores. LeeP, ATeenP, and PFacP samples had high elasticity, cohesiveness, and adhesiveness. Consumers favored the appearance characteristics and color, dairy product flavor, and savory flavor of the pan pizza and preferred cohesiveness, toughness, and stickiness of masonry oven baked pizza.

가열시간에 따른 Beef Consomme의 기호도 및 이화학적 특성에 관한 연구 (The Study of Acceptance and Physicochemical Characteristics of Beef Consomme by Boiling Time)

  • This study was conducted to investigate the sensory and physicochemical properties of beef consomme made with different boiling times (1, 2, 3 and 4hrs). The sensory properties were evaluated with respect to both the acceptability (color, smell, mouth feel, taste, overall acceptability) and intensity characteristics (color, smell, clarify, taste). From the results, the 3hr treatment was most favored for color, smell, mouth feel, taste and overall acceptability, from the sensory evaluation tests. According to a quantitative descriptive analysis of the sensory evaluation for the product, the color, smell and taste gave higher scores with increases in the boiling time. As for the physicochemical characteristics, the pH was increased with increasing boiling time. The reducing sugars, turbidity and viscosity increased with increasing boiling time. The colorimetric lightness values (L) decreased, and redness (a), yellowness(b) and color difference values (ΔE) increased with increasing boiling time. There were 18 free amino acids identified; the alanine, glutamic acid, arginine and leucine contents were high in the free amino acids of the consomme made with different boiling times. There were 3 free sugars identified, glucose, fructose and sucrose. The free sugar contents increased with increasing boiling time. There were changes in the mineral contents of the consomme made with different boiling time; with high K, Na and P contents. The mineral contents increased with increasing, boiling time. The results showed the consomme made by boiling for 3hrs was superior in both its sensory and physicochemical qualities.

가스발생기 사이클 액체로켓엔진작동 모드 해석의 보정 방법 (A Correction Method for Operating Mode Analysis of Gas Generator Cycle Liquid Propellant Rocket Engine)

  • 액체로켓엔진 작동 모드 해석은 엔진 개발과정에서 설계/시험/분석을 위한 필수 도구이다. 구성품 수락시험 결과를 반영한 엔진 작동 모드 해석은 엔진 시험 결과와 차이를 보인다. 가스발생기 사이클 엔진 작동점 해석 모델에서 엔진 시험 결과를 재현하기 위한 성능 인자를 파악하고 보정 방법을 정의하였다. 연소기, 가스발생기, 터보펌프의 성능과 연소기 배관, 가스발생기 배관의 유량 계수를 보정하여 시험결과와 같은 유량, 압력, 터보펌프 회전수 등 엔진 성능 변수에 상응하는 엔진 해석 모델을 얻었다. 성능 인자 보정을 적용하여 한국형 발사체용 75톤급 엔진의 시스템 해석 모델을 획득하였다.

  • 아음속 순항 유도탄의 추진시스템은 소형 가스터빈 엔진을 중심으로 공기흡입관, 탄내 연료이송계통 등으로 구성된다. 이는 엔진의 수락시험으로부터 시작하여, 엔진의 여러 기능 및 보기류의 설계수정, 엔진과 연동되는 각종 탄내 장비들의 설계/개발 및 상호 인터페이스 확인을 위한 해석과 통합시험 등으로 완성된다. 여기서는 이와 같은 소형 가스터빈 엔진을 이용한 유도탄 추진시스템 체계통합기술의 구성과 각 단계별 요소기술의 개요를 서술한다.

DetGas: A Carbon Monoxide Gas Leakage Detector Mobile Application

  • Many incidents of Carbon Monoxide (CO) poisoning have occurred because of people being unaware of its presence. There are currently available systems on the market, but they are limited to measuring CO in a certain area and lack vital functions. Additionally, little to no evidence-based information on their quality was available. Thus, a mobile application for detecting CO gas leakage in a vehicle and critical features to assist victims was developed. A usability and functionality test were conducted to determine the product's quality utilizing nine usability and six functionality task scenarios (n=5). Then, a System Usability Scale test was performed to obtain system satisfaction, usability, and learnability (n=50). The usability and functionality test shows that all the tasks given for both tests were 100% successful. The overall score obtained for SUS was 71.4, which indicates good acceptance and usability. Around 20% of respondents claimed that they would need the support of a technical person to be able to use the application and that they needed to learn a lot of things before they could use the application, which indicates the overall high learnability of the application. The result provides empirical evidence that the CO gas leakage detection mobile application is successful and receives good usability, functionality, acceptability, learnability, and satisfaction assessments. DetGas could benefit automobile owners and other stakeholders by mitigating the risk and harm associated with gas leaking that exceeds the safe limit.
