Undressed fresh produce, consisting of washed, disinfected and peeled fruits and vegetables that either sliced or grated, are currently increased in demand by retail and institutional market which use them as salad components or in ready-to use foods, Main attributes of minimally processed fruits and vegetables are convenience and fresh-like quality. Minimally processed Products readily deteriorate in quality, especially color and texture, as a result of endogeneous enzyme enhanced respiration and microorganisms which lead to reduced shelf Iife. As a result, accelerated senescence and enzymatic browning OCCUI', Recent l'esearch on minimally processed fl'uits and vegetables has mainly focused on methods to inhibit browning, due to ban on use of sulfur dioxide, In order to retard or prevent these physiological changes, val'ious al ternatives, reducing agents. acidulants, chelating agents and inol'ganic sal ts have been evaluated for use on fresh cut fl'ui ts. Al though some agents were effective replacement for sulfur dioxide. consum$\textregistered$I'S demandless use of chemical on such products. Shel~ life of minimally processed products has been extended by inhibition of metabolic reactions associated with loss of quality and by inhibition of aerobic spoilage caused by wide variety of microorganisms. Appl ication of ~I.-\ packaging, including vacuum packaging, retards the rate of respiration, prevents growth of aerobic spoilage organisms, inhibits oxidation and color deterioration. Tissue softening is another major problem in minimally processed products because enzymes re 1 a ted to ce 11 wa 11 degrada t i on are not inactivated. Various treatments have been investigated for retardation of the softening of sliced products. Some studies have concentrated on the application of an active packaging system with ~I, l. packaging and calcium infi 1 tration as possible measures to retain firmness of processed products. In my opinion, one important step for production of minimally processed frui ts wi th favorabl e color of cut surface and firm texture is the selection of better cultivar. As the view, changing tendency of fresh color by apple cultivars and relationship between the tendency and PPO activity will be discussed in the seminar. In addition to the topic, research result on quality enhancement of fresh apple slices by heat shock treatment will be introduced.

Vertical Profiles and Assessment of Trace Metals in Sediment Cores From Outer Sea of Lake Shihwa, Korea (시화호 외측 해역 주상 퇴적물 내 미량금속 수직분포 특성 및 오염도 평가)

  • Trace metal concentration in sediment cores from the outer sea of Lake Shihwa were determined to study the vertical profiles of metal concentrations and to evaluate the levels of metal contamination. Sediment pollution assessment was carried out using enrichment factor (EF) and geo-accumulation index (Igeo). The mean concentration of metals were 58.8 mg/kg for Cr, 10.3 mg/kg for Co, 22.8 mg/kg for Ni, 18.1 mg/kg for Cu, 74.0 mg/kg for Zn, 6.75 mg/kg for As, 0.14 mg/kg for Cd, 27.4 mg/kg for Pb and 0.026 mg/kg for Hg, respectively. The mean EF values for Cu, Zn, As, Cd and Hg were greater than 1.5 in sediment cores, indicating that these metals in sediments are slightly enriched by anthropogenic activities. The geo-accumulation index (Igeo) suggested unpolluted status for metals of sediments collected from outer see of Lake Shihwa. Igeo values for Cu and Hg nearby LNG station (site C, D, E) ranged from 1 to 2, indicating moderately to unpolluted pollution status for those metals. Even if the higher concentrations of trace metals nearby LNG station were observed, there is significantly positive relationship between Al and trace metals. Thus, the sediment grain size plays an important roles in influencing the distribution of trace metals in sediment cores from the outer sea of Lake Shihwa. Based on the comparison with sediment quality guidelines such as threshold effect level and probable effect level in Korea, the concentration of metals in sediments from outer sea of Lake Shihwa are likely to result in no harmful effects on sediment-dwelling organisms.

The Role of Chest CT Scans in the Management of Empyema (농흉에서 전산화 단층촬영의 의의)

  • Background: To decide the optimal antibiotics and application of chest tube, examination of pleural fluid is fundamental in the management of empyema. Some criteria for drainage of pleural fluid have been recommended but some controversies have been suggested. Recently, newer radiologic methods including ultrasound and computed tomography scanning, have been applied to the diagnosis and management of pleural effusions. We undertook a retrospective analysis of 30 patients with pleural effusion who had CT scans of the chest in order to apply the criteria of Light et al retrospectively to patients with loculation and to correlate the radiologic appearance of pleural effusions with pleural fluid chemistry. Method: We analyzed the records of 30 out of 147 patients with pleural effusion undergoing chest CT scans. Results: 1) Six of the pleural fluid cultures yielded gram negative organisms and three anaerobic bacterias and one Staphylococcus aureus and one non-hemolytic Streptococci. No organism was cultured in ninteen cases(63.0%). 2) The reasons for taking chest CT scans were to rule out malignancy or parenchymal lung disease(46.7%), poor response to antibiotics(40.0%), hard to aspirate pleural fluid(10.0%) and to decide the site for chest tube insertion(3.3%). 3) There was no significant correlations between ATS stages and loculation but there was a tendency to loculate in stage III. 4) There was a significant inverse relationship between the level of pH and loculation(p<0.05) but there appeared to be no relationship between pleural fluid, LDH, glucose, protein, loculation and pleural thickening. 5) In 12 out of 30, therapeutic measures were changed according to the chest CT scan findings. Conclusion: We were unable to identify any correlations between the plerual fluid chemistry, ATS stages and loculations except pH, and we suggest that tube thoracotomy should be individualized according to the clinical judgement and serial observation. All patients with empyema do not need a chest CT scan but a CT scan can provide determination of loculation, guiding and assessing therapy which should decrease morbidity and hospital stay.

The Physiochemical Characteristics of Seawater and Sediment of Marine Shellfish Farm in Jindong Bay (진동만 패류양식해역의 환경특성)

  • Seawater and sediment quality analysed was calculated to examinate the present environmental characteristics and pollution load was also calculated to evaluate the effect of farming area on the coastal environment. The measurements for seawater quality demonstrate the coastal environment has relatively eutrophicated with significantly decreased DO (0.2-8.5 mg/l) and elevated COD (9.6-31.2 mg/l) in summer. It was also evident that the water quality in Jindong Bay has been influenced by residues tide from Masan Bay with high metal concentration in August of 2002. Annual total pollution load (land and farm-driven) was estimated at 37,316 ton (SS) /yr: 9,809 ton/yr (26.3%) of land-driven load, 23,576 ton/yr (63.2%) of coastal sedimentation and 3,932 ton/yr (10.5%) of feces of cultural organisms. When all ark shell seedling farms are permitted species conversion to ascidian farm, the pollution load would increase by 196%, which may be another source for accelerating the eutrophication of the environment in Jindong Bay.
