Adequate nutrients intake and regular eating habit are so important for the students to develop physical and mental health, and they contribute significantly for the development of intellectual capacity. The intake of simple sugar contained in the processed foods is known to have been related not only with such physical problems as obesity and diabetes but also with hyperactivity during growing period. This study analysed the effects of carbohydrate processed snacks on the middle school students' emotional intelligence and intended to demonstrate the correlation and the influence of the foods. The subjects of this study were 476 the 1st grade middle school students sampled from two public middle schools of Gyeonggi Province, Korea. Questionnaire contained 47 questions including the kinds of sugar containing processed foods, the frequency of intake, the frequency of normal diet, and the emotional test. All data obtained in this study were processed by SAS 8.2 program. 77.9% of the students had snacks more than once a day and the favored foods were in the order of bread, cookies, fruit, milk and dairy products, flour foods, ramen and ice cream. Less of the sugar contained processed snacks consumed high emotional intelligence showed(p<0.001). And low intake of carbohydrate processed snacks linked with having more regular meals and the higher levels of emotional intelligence. There was no gender difference in consuming simple sugar containing processed foods, however, out of these foods, carbonated drinks, ramen and pizza affected significantly the emotional intelligence of the male students. It was found that sugar contained processed snacks affect the eating habits like meal skipping and the emotional intelligence. It is determined that the effects of carbohydrate processed snacks on emotional intelligence can not be denied.
The purpose of present study was to assess the change of bone mineral density (BMD) by age and the dietary factors influcencing on BMD in Korean women in Taegu. The subjects were 242 healthy female in the range of 7-67 years old, and were divided into 4 age groups. BMD of lumbar of lumbar spine, femur(neck, ward's triangle, trochanter)and total body was measured by dual energy X-ray absorptionmetry. The nutrient intake measured by convenient method was similar to or more than the level of RDA. The significant relationship between nutrient intake and BMD was observed. Particularly for lumbar spine and total body in group 4 (50-60yr), such as energy, carbohyrate, protein, fat, Ca, animal Ca, meat Ca, Fe, thiamin and niacin were found significantly positive correlations. By analysis of multiple regression, significant relationships were shown between protein and lumbar spine and total body BMD in group 4, between ascorbic acid and total body BMD in group 2(17-34 yr). Energy expenditure showed better corrlations with BMD rather than nutrient intake. BMD was significantly greater in subjects consuming a mean dietary Ca intake more than 125% of RDA compared with less than 75% of RDA. In high Ca intake group ($\geq$125% of RDA), there were the significantly negative correlations between animal (meat) Ca and BMD in each bone of 7-9 years. The excessive intake of animal protein in this age group was found. And the correlations between BMD and past milk consumptin were significant in all skeletal sites of group 1(7-16 yr). This study confirms that the most effective way of preventing osteoporosis and the fractures is to maximize peak bone mass in early life and to minimize bone loss through the balanced adequate intake of Ca and other nutrients and regular physical activity.
This study was investigated the synergistic effects from the combination of cefalexin and gentamicin (CCG) against Staphylococcus spp. isolated from bovine milk. Minimum inhibitory concentrations (MICs) and fractional inhibitory concentration (FIC) index were determined for 16 bacteria from 13 bovine farms in Gyeongsangnam province by the National Committee for Clinical Laboratory Standards broth microdilution procedure. Antimicrobial agents tested included cefalexin, gentamicin and CCG. Against Staphylococcus spp. tested, the MIC ranges of cefalexin, gentamicin and CCG were 0.25~1.0, 0.5~0.125 and $0.06{\sim}0.125{\mu}g/mL$, respectively. In addition, the FIC index ranges of CCG against most of the isolates was 0.28~0.43 and the FIC index of CCG against 2 strains of Staphylococcus haemolyticus (S. haemolyticus) was 0.59. In conclusion, CCG has a high antibacterial activity against Staphylococcus isolates, then the combination may be applied for the treatment of bovine mastitis caused by Staphylococcus spp.

The objective of this study was to assess the reliability and validity of food security measures, which was developed based on the US household food security survey module (US HFSSM) with content validity in the Korean population. The reliability and validity were assessed by internal consistency, construct validity and criterion-related validity. The study included 446 households. Among those, 46.2% were households with children. The proportion of food insecure households was 33.3%. Among those, 35.4% and 64.6% households were food insecure with hunger and without hunger, respectively. The Cronbach's alpha coefficients were 0.84 and the infit value by the Rasch model analysis ranged from 0.68 to 1.43. The scale item response curves by food insecurity severity explained well the nature and characteristics of food security, indicating the highest proportion of "yes" for the items on diet quality, followed by those with diet quantity. The result of criterion-related validity showed that food insecurity status was significantly related in a dose-response manner with the household income level, food expenditure, subjective health state, subjects' educational level. Household food security status was also related to dietary diversity regarding protein foods, fruits and fruit juice, and milk and dairy product. These findings suggest that the food security instrument is reliable and valid and would be used to assess food security status in the Korean population.
Objective: This study aimed to determine the effect of crude oligosaccharide extract from coconut milk meal (CMM) and spent tea leaves (ST) on the performance and gut development of broiler chickens. Methods: A total of 240 one-day-old unsexed broiler chicks (ROSS 308) were raised on litter-floored pens and had ad libitum access to water for 42 days. The experiment was conducted on chicks fed with basal diet (CON), commercial mannan-oligosaccharides (MOS), crude oligosaccharide extract from CMM, and crude oligosaccharide extract from ST. The experimental diets were supplemented with 2 and 1 g/kg oligosaccharides during the starter and grower periods, respectively. Results: The body weight gain (BWG) of birds in the MOS group was higher than that of birds in the other groups (p<0.05) in the starter period. However, during the grower period, ST significantly improved the BWG compared to the MOS (p<0.05). MOS, CMM, and ST showed no influence on the carcass and visceral organ weight and the weight and length of intestine (p>0.05). The digestibility of gross energy was greater (p<0.05) in the CMM group than in the CON group during the grower period. Morphological changes were absent in the dietary treatments (p>0.05). Conclusion: The improvements in the growth performance were partly driven by nutrient digestibility of such oligosaccharides having prebiotic properties. This result can indicate that supplementing broiler diets with crude oligosaccharides from CMM and ST had no negative effect on the growth performance and gut development of broilers.
This study was conducted to evaluate the food habits and nutrient intake of preschool children by investigating their food and snack consumption. To accomplish this, a food habit questionnaire and dietary intake survey was administered to 148 children between 2 and 6 years of age (average 4.8 years). According to the Kaup index, the underweight, normal, overweight and obesity levels of the subjects were 4.7, 60.1, 26.4, and 8.8%, respectively. In addition, the total energy intake met the EAR ($1433.94{\pm}369.70kcal$), whereas the protein, iron, phosphorus, vitamin B and vitamin C levels exceeded the EAR and the RI. Furthermore, the nutrient intake profile revealed that the mean caloric value of breakfasts consumed by preschool children in Daegu (403 kcal) was significantly (p<0.001) higher than that of preschool children in the Gyeongbuk area (271 kcal). Additionally, preschool children in Daegu ($382.96{\pm}255.79kcal$) usually consumed significantly (p<0.01) less food than those in the Gyeongbuk area ($413.82{\pm}275.43kcal$). The preferred snacks among subjects (in descending order) were milk, bread, fruit, potato or sweet potato and cookies. The mean score of the Food Habit was $3.72{\pm}0.35$ out of 5, although the score of preschool children in Daegu ($3.77{\pm}0.32$) was significantly (p<0.05) higher than that of children in the Gyeongbuk area ($3.65{\pm}0.32$). Taken together, these results indicate that there were significant differences in the Food Habit and nutrient intake level of children in Daegu and the Gyeongbuk area. Therefore, parents and caregivers should be aware of the importance of the nutritional status of preschool children and choose healthy snacks for them.
Importance: Identifying bovine mastitis agents using molecular methods to reveal their phylogenetic relationships and antimicrobial resistance profiles is essential for developing up-to-date databases in mastitis cases that cause severe economic losses. Objective: This study examined bacterial mastitis agents in cows with clinical and subclinical mastitis observed in various dairy cattle farms to reveal their phylogenetic relationships and antibiotic resistance properties. Methods: Sixty-two clinical and subclinical bovine mastitis milk samples were collected from 15 dairy farms. The polymerase chain reaction (PCR) was used to amplify the 16S rRNA gene regions of the bacteria. The 16S rRNA gene sequences obtained from sequencing include the V4-V6 regions. The strains were compared using a similarity analysis method that produced phylogenetic trees using the Molecular Evolutionary Genetics Analysis 11 program. Antibiotic susceptibilities were determined using the Kirby-Bauer disk diffusion method. Results: Sixty-three bacteria were isolated and identified in this study. The most isolated bacteria from all mastitis cases were Staphylococcus spp. (30.2%), Escherichia coli (25.4%), Streptococcus spp. (14.3%), and Aerococcus spp. (7.9%), respectively. The phylogenetic trees were drawn from the 16S rRNA sequences. Some of these bacteria showed resistance to different types of antibiotics at varying rates. Conclusions and Relevance: The bacteria isolated in this study originated from environmental sources. Regular cleaning of barns and proper hygiene practices are essential. Regular screenings for mastitis should be conducted in herds instead of the random or empirical use of antibiotics.
This study was executed to find the effects of dietary control and oral health care on dental caries and oral problems in elementary school students, including the effects of nutritional and oral health education on the prevention of dental caries. 1. The oral health study found that 88.9% of students brushed their teeth everyday, 63.7% 2 times a day, and 50.4% in the morning and at night. 2. According to the general characteristics whether or not, the female students had more dental caries than the males, and 29.1% of the students that had dental caries ate snacke 1 or 2 times a day. 3. After the nutritional education, more students brushed their teeth in the after meal 4. According to gender, grade and nutritional education for oral health care, male students and higher grade students were more aware that “brushing teeth after meals is better than before”. The male and higher grade students, after the nutritional education, were more aware that “Bones and teeth are made from calcium”, and “Fluorine prevents teeth from dental caries” and the differences between the genders were statistically significant in relation to both these facts (p〈0.05) and before and after education (p〈0.01). The male and higher grade students, and those nutritionally educated were more conscious that “vegetables and fruits are good for teeth”, with the differences before and after the nutritional education were statistically significant (p〈0.05). The male and higher grade students were well aware that “Foods that have sugar cause dental caries”, and significant differences were shown between grades (p〈0.05). The male and higher grade students, after the nutritional education and were well aware that “Milk is good for teeth”, with a significant gender difference (p〈0.05). The female and higher grade students, and those after nutritional education were well aware that “Dental caries can not be perfectly cured once it had already occurred”. after nutrition, but not much differences.
Conditions for enzyme-protein binding assay (EPBA) were established in order to detect biotin more rapidly and reproducibly than traditional microbiological assay (MBA). EPBA with streptavidin and biotin-KLH conjugate showed cross-reactivities on biocytin, a derivative with biotin activity, at the rate of 109% $(IC_{50}=0.3\;ppb)\;and\;197%\;(IC_{50}=0.8\;ppb)$, respectively, but not on other derivatives with no biotin activities, such as desthiobiotin, diaminobiotin and 2-iminobiotin. Detection ranges of biotin by EPBA with streptavidin and biotin-KLH conjugates were $0.01{\sim}30\;ng/mL\;and\;0.01{\sim}1.0\;ng/mL(ppb)$, respectively. In the spike test with milk, fruit flake and pine-carrot juice, the correlation coefficience between MBA and EPBA with biotin-KLH conjugates was r=0.994. But MBA showed cross-reactivities both on biocytin and desthiobiotin at the rate of 80.1% and 66.7%, respectively. Detection range of biotin by MBA was $0.1{\sim}0.5\;ng/mL(ppb)$. These results strongly suggest that EPBA is efficient for biotin detection in sensitivity, detection range, cross-reactivity and time consuming.

The object of this experiment was to suggest the optimum autumn sown small forage crops as next forage crops harvested maize in Daejeon area. The field trials was conducted from 2002 to 2004 at Chungnam National University in order to evaluate the dry matter yield and qualities of the autumn sown small forage crops. The experiment was consisted of split plots (main plot : forage crops as rye, barley and wheat, and sub plot 4 harvest stages as boot, heading, milk and dough) design with three replications. The average DM yield for 2 years of rye was higher than that of other forage crops (p<0.01). As stages proceed, the DM yield tended to increase in all forage crops (p<0.01). In chemical composition, they had a difference on forage crops and stages. The crude protein (CP) was higher in barley (p<0.01), but fibrous contents such as NDF, ADF, cellulose and lignin were lower in wheat than in the other forage crops (p<0.01). In Daejeon area, although barley and wheat at milk and dough stages were observed with maximum yield and high quality as autumn sown forage crops, due to late harvesting periods, it is difficult to utilize them as previous forage crops seeded in maize. Based on the result mentioned above, it is concluded that rye harvested at boot to heading stages is the most suitable fur autumn sown small forage crops in Daejeon area. Meanwhile, in order to have the option of nutritional value in wheat and barley, they need to be supplied early maturing and high-yield variety of wheat and barley.
