An experiment was conducted using 160 Arbor Acres broiler strain of chickens to evaluate the effects of partial replacement of soyabean meal with feather meal on the diets of broiler chickens raised from day old to 8 weeks of age. Feathers, obtained from a local poultry processing plant, were boiled in water for 30 minutes, sun-dried and ground using a 2 mm sieve for inclusion into the experimental diets at 0, 1.5, 3.0 and 4.5% levels at the expense of soyabean meal. The feather meal was assayed and found to contain 86.5% crude protein and to be low in lysine, methionine and histidine amino acids. The inclusion of such processed feather meal up to 3% in the diet did not (p>0.05) affect growth or feed conversion ratio. However, the highest level of inclusion of feather meal in the diet, 4.5%, significantly reduced both growth rate and feed conversion ratio of the birds. The results of this experiment showed that up to 3% of water-boiled feather meal, which represents 12% of dietary protein, the equivalent of 6% level of use of soyabean meal in the diet, can be successfully included as a protein source in the diets of broiler chickens.
In this study, 419 students of the 6th grade in three schools in Masan were surveyed. The students having less than 24 items among 48 protein-rich foods easily obtained were considered as unbalanced-diet students. Their general circumstances, character, status of growth and development and school performance were compared with those of balanced-diet students. The results were following. 1. The actual condition of unbalanced diets of protein-rich food 1) Female showed high degree of unbalanced diet in meat food while male in shell-food. Both sexes liked processed food stuffs such as ham, sausage and boiled fish paste but not salted. Both of them disliked beans. 2) The reason for unbalanced diet, they answered, was bad taste and smell of some foods. The reason, their mothers amswered, was they fed their children some particualr foods. 3) The attitudes of the mothers against unbalanced diets were coaxing their children to eat some foods for they are good for health or forcing their children to eat some foods. The most effective method on the children was coaxing and the next was changing cuisines. 2. The general circumstances of the students. 1) 168 students (male: 85, female:83) among 419 students who were studied were unbalanced-diet students and the extent of unbalanced diet was similar in both sexes. 2) The rate of unbalanced-diet students was higher among the students who were the first child in the family, had a small family or were fed milk or mixed milk. 3) The school career of unbalanced-diet student's mothers was higher and the rate of unbalanced-diet students was higher among the students who have rich families or career mothers. 3. The status of physical condition 1) The height and weight of unbalanced-diet students were lower than those of the standard of Korean children. The status of balanced-diet students were better than that of the standard. 4. Degree of school performance 1) The school records of unbalanced-diet students was 81.4 points in average, which was 1.3 points lower than the average of city students and that of balanced-diet students was 2.8 points higher than average. There was a significant gap between the two groups. 5. The relation between unbalanced diet and character 1) Compared balanced-diet students, unbalanced-diet students showed high degree of nervousness and coldheartedness and low degree of self-reliance and self-possession. There was a significant gap between the two groups and it showed that unbalanced diets affected the formation of character.
The purpose of this study was to explore the marketability by developing a fresh HMR product for improving hyperlipidemia and dieting for elderly chronic disease patients and young people pursuing healthy beauty. The diet menu increased the ratio of fresh vegetables and mushrooms, and chicken breast and cheese were used as protein sources. By using whole grains, the supply of vitamins and minerals was strengthened while minimizing calories. Regarding the recipe, the diet menu was mainly prepared in the form of salads, risotto, and pasta. In the hyperlipidemia improvement menu, the proportion of fresh vegetables was increased, and as protein sources, pork shank, tofu, seafood, etc. with minimal fat were used. As a carbohydrate source, whole grains were mainly used to minimize calories while strengthening the supply of vitamins and minerals. In the recipe, it was prepared in the form of steamed or bibim-myeon, and it was also produced in a form such as paella. As a result, the developed menu was analyzed as low-calorie and evenly comprised of essential nutrients, which can satisfy palatability and nutrition.
This study compared the effects of two levels of crude protein (CP) supplementation during a close-up dry period on the productive performance, nitrogen balance, and blood profiles of Holstein cows. Eighteen cows (8 primigravid and 10 multiparous), 21 days prior to calving, were divided into four groups and fed a diet containing a low (11.5 to 12.7% CP) or high (14.1 to 15.3% CP) level of protein. Following parturition, all cows were offered the same diet. Nitrogen balance was measured 12 d to 10 d prior to the expected calving date. Whole feces and urine were collected. The higher close-up CP did not improve milk production during the early lactation period (14 w) in multiparous cows but tended to increase production by 2 kg of milk per day in primigravid cows. There were no differences in the weight of calves, the weight of the placenta, or the incidence of calving difficulty. Nitrogen intake, urine nitrogen and nitrogen retention were increased by the higher CP diet in primigravid and multiparous cows. All groups of cows showed a positive nitrogen balance. In particular, higher nitrogen retention was observed in primigravid cows fed the higher CP diet. With the exception of plasma urea nitrogen (PUN), non of the blood profiles were influenced by the CP level. The higher close-up CP increased the PUN during the period studied in primigravid and multiparous cows. These results indicate that a CP level of 14% during a close-up dry period is optimal for primigravid cows, and 12% CP level is sufficient for multiparous cows.
A total of 120 pigs $(L\;{\times}\;LW\;{\times}\;D)$ averaged 14.16 kg of body weight were reared under six dietary treatments to evaluate the effects of amino acid supplementation on their performances. Treatments were 1) 18% CP diet (control); 2) 15% CP+0.28% Lys (B, 15L); 3) B+0.06% Met (15LM); 4) B+0.13% Thr (15LT) ; 5) B+0.06% Met+0.13% Thr (15LMT); 6) B+0.06% Met+0.13% Thr+0.05% Trp (15LMTT). Each treatment had 4 replicates with 5 pigs per replicate. The daily weight gains were statistically similar in 15LMT, 15LMTT and control groups. Threonine and methionine supplementation resulted in improved growth performance and nutrient digestibilities, while tryptophan supplementation had little beneficial effect. However, the best feed conversion was found in the control group. Dry. matter and CP digestibilities were improved in the 15LMT and 15LMTT groups. Gross energy, crude fat and phosphorus digestibilities were not affected by the treatment. Among the 15% CP groups, nitrogen digestibility showed the tendency to be increased as the more synthetic amino acids were added. Dry matter and nitrogen excretions were significantly reduced by feeding low protein, amino acid fortified diets, while phosphorus excretion was not influenced. Essential amino acids digestibility was higher in 15LT, 15LMT and 15LMTT groups and lower in the control. The 15LT group showed the best lysine digestibility, and methionine digestibilities were higher in all treated groups than control one. Threonine digestibilities higher in 15LT 15LMT, and 15LMTT than the control. The result shows that threonine and methionine should be added to the diet containing 15% CP diet, fortified with lysine to get same performance of 18% CP diet.
Dried carrot meal (DCM) prepared from fresh carrot was found to be a good source of xanthophyll (54 mg/kg) and morderate source of protein (188.3 g/kg) and energy (2,510 kcal/kg) with low level of fibre (80 g/kg). DM, EE and NFE content of DCM were 895, 35 and 661.7 g/kg respectively. The ingredient was used in laying hen diet to evaluate its pigmenting value for egg yolk. Thirty-two laying hens from Starcross strain were divided into four groups and fed four different diets: a control diet containing 62% ground wheat, a corn-based diet (50% ground yellow corn), control + 4% DCM and control + 8% DCM. Use of DCM at 8% level in layer mash significantly improved yolk colour at 3rd, 6th and 9th week of supplementation in comparison with wheat-based control diet. This improvement was statististically similar to that obtained from yellow corn-based diet. DCM at 4% level also improved yolk colour score. Wheat-based diet significantly increased feed consumption compared to yellow corn and diet supplied with 8% DCM. Body weight gain, egg production, feed conversion were not significantly affected due to dietary addition of DCM and no mortality was observed during 63-day experimental period. Further works on DCM are suggested.
According to the dietary surveys and national food balance sheets, the dietary state of person living in Korea is ingesting a high level of grain and vegetable diet and very low animal sources. The daily calory intake is about 2,300-2,600 Cal. per head in which a total protein intake is 69-86 gm respectively. These data indicate no shortage of calory and total protein intake. However, the intake of animal protein is only 4-11 gm and the fat is 8-18 gm, both of which are far below the requirment. The low fat intake brings about a low level of fat soluble vitamins, and that V-A intake is as short as the half amount of the allowance. Riboflavine is also about a half of dietary requirment. Both thiamin and ascorbic acid intake are sufficient. The calcium intake is 0.26-0.5 gm per day which is inadequate. In fact, biochemical findings through field survey show; serum protein 6.7 gm, hemoglobin 13.1 gm and hematocrite 41.5% all of which are lower than the Kwon's report. The serum V-A and uunrinary riboflavin value are also lower than the Williams'es report. Clinically, inflamation of the eyes, cheilosis, pathological signs of tangue, xerosis of the hand and arm, or the like are frequently seen. On the other hand, there is no suitable diet available for the weaning infant and delayed weaning is a common practice. A school lunch program is still in an early stage of development. Another example can be cited that the Korean infant grows faster than the Japanese until one year of age, and no difference is noted between the Korean and the American infants up to six monthes of age, thereafter the former lags in the growth rate. This might be mainly due to the nutritional reasons as mentioned above, and in part due to the high inidence of intestinal parasitism and others.
BACKGOUND/OBJECTIVES: This study investigated nutritional status of the elderly with dementia in a care facility with the aim of improving the meal quality of the facility. SUBJECTS/METHODS: Data were collected from 30 dementia patients aged more than 65 years in a long-term care facility in Hongseong. The data were obtained from questionnaires and medical records. The food intake data was obtained using food photographs and the nutrient intakes were calculated using the CAN-Pro 5.0. The data were compared with the dietary reference intakes for Koreans (KDRIs). The nutrient density, diet quality such as nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ), as well as dietary diversity score (DDS) were evaluated. The data were analyzed using SPSS statistical programs. RESULTS: The average daily energy intakes for men and women were much lower than the estimated energy requirements of the KDRIs. The average intakes of energy and most nutrients in the general diet group were significantly higher than those of the other two groups. Significant differences in diet quality and diet diversity were observed according to the meal type groups. The NARs of some minerals (calcium, iron, and zinc) and vitamins (vitamin $B_6$ and folic acid) were less than 0.5 in all study groups. The NARs of protein, iron and MAR of the general diet group were significantly higher than those of the liquid diet group. The DDS scores of meats, fruits and diary food group were very low in all meal type groups, meaning that the diet qualities of the study subjects were not appropriate in all meal type groups. CONCLUSIONS: The food intakes of the study groups showed some limitations by a direct comparison with KDRIs because of the very low physical activities of the study subjects. The diet quality and diet diversity indices suggest the need for improvements in the nutritional quality in all types of diet. Overall, new intervention strategies targeting facility residents with dementia in Korea are needed as soon as possible.
The study was performed to investigate the effects of whey protein-rich meal substitute added with vitamins, minerals, and lactobacillus powder probiotics on weight loss, body fat, and body composition in 24 female volunteers for 4 weeks. Whey protein-rich meal substitute was consumed with low-fat, high calcium milk (1% fat, 260 mg/200 mL) twice a day. Subjects submitted 3-day diet records and a life-style questionnaire before the study. During the study, subjects were required to turn in a diet record every day and consume the meal substitute formula in the metabolic ward at C university for 4 weeks. Anthropometric measurements were carried out weekly by Inbody 7.0. The dietary intake and anthropometric data were analyzed to compare changes before and after the study by paired t-test with SPSS version 23.0. The subjects were mostly early 20's and either overweight or obese and highly motivated to lose weight. Most of the subjects consumed three meals per day regularly and spent mostly 10~15 minutes for a meal. Their caloric intake was relatively low and decreased from 1,360 kcal at week 0 to 1,100 kcal after 4 weeks. However, total protein intake increased while carbohydrate and fat intakes decreased (p<0.05) after the trial. Nine vitamin intakes after the study improved compared to those before the study (p<0.05). After the study, subjects showed lower body weight (-1.8 kg), body fat (-0.94 kg), percent body fat (-0.86%), as well as waist circumference (-4.52 cm), hip circumference (-0.44 cm), waist hip ratio (-0.05), and triceps skinfold thickness (-2.39 mm) compared to those at week 0 (p<0.05). Muscle mass tended to be less compared to week 0, although there was no significant differences between weeks 0 and 4. In conclusion, diet trial with whey protein-rich meal substitute induced weight loss and positively changed body fat parameters and body composition.
