Commercial Wheat Flour Quality and Bread Making Conditions for Korean-style Steamed Bread (한국형 찐빵 제조에 적합한 시판 밀가루 품질 밑 적정 제빵 조건)

  • This study was to investigate the flour quality and bread making condition required for Korean-style steamed bread, using 5 commercial wheat flours (protein content from 8.2 to 12.5%), They were compared in making steamed bread (SB) and baked roll bread (BRB). Straight dough method was used and the temperatures of dough and fermentation were controlled at 26$^{\circ}C$ and 32$^{\circ}C$, respectively. The first fermentation was conducted at various times (0, 20, 40 and 60 min) and then forty min of proofing (2nd fermentation) was used for all bread dough. As the 1st fermentation time increased, volumes of both SB and BRB increased 4.3 ~8.7% and 27~40%, respectively, but the SB flattened and the total bread scores of SB decreased due to the lack of smoothness and shininess of the bread surface and poor grain. Contrary to that, the total bread scores of BRB increased. SB made from the flour containing 10.5% of protein, was of its highest quality: relatively high volume, smooth, semiglossy and white surface, good texture, followed by SB made from flours containing 10.9%, 9.5%, 12.5%, and 8.2% of protein content, respectively These results suggest that the 1st fermentation process was not needed for SB making. Total bread scores of SB were better correlated with farinograph dough stability than protein contents and volumes of SB were correlated with farinograph development time. Therefore, in steamed bread making, flour dough rheology is important as well as protein content.

  • $3{\sim}5$ types of proteins were expressed by toluene and heat during $30{\sim}60$min. Generally it is reported that proteins below 10kDa function as transcription factor. In this study we certified that 7kDa was induced by organic solvent and the rate of expression was 2 folds at $30{\sim}45$min.

  • 분산능력은 나노콤포지트의 제반적인 물성에 큰 영향을 준다. 그러나 유기용매를 사용한 분산능력은 전기적 절연특성에 불순물케리어로 작용되는 경우가 있어 오히려 절연성능 즉, 결합이 약하게 작용되는 결과를 가져오게 된다 이런 이유로 물리적인 분산법인 강력초음파법을 이용하여 Epoxy/Organoclay_93A 나노콤포지트를 제조하였다. 최적의 초음파 적용시간을 연구하기위해 강력초음파를 15,30,60,120분 각각에 대해 적용하였다. 적용시간은 기계적,전기적인 물성에 독립적인 특성을 나타내었다. 그러나 전반적인 물성의 비교에서 최적의 초음파 적용시 60분의 경우가 가장 양호한 결과를 얻었다. 기계적, 전기적인 물성에서 1차경화만으로 측정자료로 최적의 2차 경화를 가져가하면 더욱 높은 물성을 가져오게 될 것이다.

Saccharification of Raw Starch in Ethanol Fermentation (에탄올발효에서 전분질무증자당화의 가능성연구)

  • The possibility of the ethanol fermentation from raw cassava starch without cooking was investigated. Saccharification yield in the simultaneous saccharification-fermentation (SSF) system was compared with that in saccharification of raw cassava starch, using glucoamylase of Aspergillus shirousmi. Although the saccharification yield of raw cassava starch with 10 folds of the enzyme was 60% compared to cooked cassava starch, higher saccharification could be obtained by SSF This result is maybe due to the elimination of end product inhibition in saccharification of raw starch by glucoamylase. Final ethanol yield from raw cassava starch was about 88% under the condition of 3$0^{\circ}C$, 120 rpm shaking after 3 days in the SSF system.

  • The protoplast formation of Streptomyces mitakaensis was monitored with scanning electron microscopy and transmission electron microscopy. The normal cells formed regular mycelium and spore, and their cell wall and cell membrane appeared to be normal, but the cell wall of the lysozyme treated cells (1 mg/$m\ell$) was damaged, which was finally disappeared from cells to become protoplast in 30 to 60 minutes.

  • At frequencies above 10 GHz, rain is a dominant propagation phenomenon on satellite link attenuation. The prediction of rain attenuation is based on the point rainfall rate for 0.01 % of an average year with one minute integration time. Most of available rain data have been measured with 60 minutes integration time, and many researchers have been studying on converting the rainfall rate data from various integration times to one minute integration time. This paper proposes a new Multiple Regression model for the conversion, and the proposed schemes show better performance than the existing schemes.

The Effects of Cultivars and DAPs(Days After Planting) of Kenaf Plants on Lignin Contents and Dyeability of Their Fibers (품종과 재배기간이 다른 케나프 섬유의 리그닌 함량과 염색성)

  • The effects of cultivar and DAPs on the lignin content and dyeability of the kenaf fibers were investigated. Four kenaf fiber samples were prepared from two cultivars, Tainung 2 and Everglades 41, and their 60 and 120 DAPs(days after planting) for the experiments. The lignin contents of the kenaf fibers of Tainung 2(T2) and Everglades 41(E41) were $11.29{\sim}12.78%$. Both T2 and E41 kenaf fibers had comparable amount of lignin, and klason lignin of the fibers was $2.5{\sim}3$ times as much as much as acid-soluble lignin. In both T2 and E41, 120 DAPs kenaf have 1% more lignin than 60 DAPs kenaf. The moisture regains of the four kenaf fiber samples were almost the same as $10.25{\pm}0.05%$. The absorbances of residual solution after dyeing for $1{\sim}180$ minutes with Red 81 at maximum wavelength 520 nm and Green 26 at 600 nm were measured. Comparing to Green 26, the dyeing rate of Red 81 was rapid and equilibrium state was reached in 12 minutes. The CIE $L^*,\;a^*, \;b^*,\;{\Delta}E$ and K/S values of the kenaf fibers dyed with Red 81 and Green 26 were measured as well. The dye exhaustion ratio of 60 DAPs kenaf was higher than that of 120 DAP.

Quality Characteristics of Garaetteok with Different Ratios of Non-glutinous Germinated Brown Rice Flour (멥쌀 비율에 따른 발아현미 가래떡의 품질특성)

  • This study was performed to evaluate the physicochemical and sensory evaluation properties of Garaetteok changed with non-glutinous at different ratios germinated brown rice(GBR). Changes in the moisture content of GBR occurred with increasing non-glutinous levels of(1~3%) increase in the level. The color value decreased by with increasing the GBR, whereas the and b values were both increased. As the result of the measurement using the texture analyzer, hardness, cohesiveness, gumniness, and chewiness of Garaetteok tended to decreased in proportion to the amount of GBR in the formula. In the sensory evaluation, 40% GBR and 60% GBR in color, hardness, springiness, chewiness and overall acceptability than that of add compared to 100% and 80% GBR. And Garaetteok with 40% and 60% GBR showed the highest overall acceptability scores in overall acceptability. Therefore, we concluded that the addition of GBR on to Garaetteok improved the sensory characteristics as well as and delayed the retrogradation.

  • To exploit a suitable vector and recipient strain for molecular cloning in Bacillus subtilis, oxytetracycline-resistant plasmic DNA has been prepared from Streptomyces rimosus by phenol-buffer extraction of lysozyme-lysed cells and introduced into B. subtilis KPM 60 [St $r^{R}$-mutant of RM 125 (leu A8, arg 15, hsm $M^{-10}$ , hsr $M^{-10}$ )] by transformation. Oxitetracycline-resistant plasmid was well transferred into B. subtilis KPM 60 with average frequency of 10$^{-4}$ per $\mu\textrm{g}$ of DNA. The highest frequency of plasmid transformation was obtained after 3 hours incubation of recipient cells in the growth medium and 30 to 60 minutes incubation in the competence medium, and then 20 minutes contact of DNA and host cells. Optimum pH for competence was 7.5, and optimum temperature for transformation was 2$0^{\circ}C$.>.

  • The purpose of this study was to investigate the effects of aerobic exercise(folk dance) with resistance exercise(elastic band) for 12 weeks on blood MDA concentration and SOD GPx activities in the elderly women. The subjects consisted 12 elderly women between 65-75 years exercise were folk dance(HRmax 50-60% levels, 60min, two per a week) and elastic band(yellow band, 60min, two per a week) program for 12 weeks. SOD, GPx activities in the before combined exercise were significantly increased than that in after combined exercise. These results show that aerobic exercise with resistance exercise program in considered to contribute enforced of antioxidant enzyme system by increased SOD and GPx activities in elderly women.
